The origins of each type of these bite-sized delicacies are hard to trace as many have a few Malay influences, a few Indian influences and a few Chinese influences, making them a truly Malaysian delicacy although many of these kuih are often labelled as Nyonya kuih. Our local kuih is still very much a part of the diet of a typical Malaysian as they can still be found at roadside stalls, in wet markets, in some modernised cafes, at some restaurants and even coffee shops. Soft, creamy, colourful and sweet, our many varieties of Malaysian kuih are the result of an interesting mix of delicacies with ‘Malay’ and ‘Peranakan’ origins. The local kuih, some are Malay, and some are Nyonya/Peranakan comes in many forms, shapes, sizes, colours, styles and flavours. Some are sweet, some are savoury, some are rich & thick, some are smooth & light, and some are even spicy & fragrant.

- SHC TOP 10 TIPS FOR BAKING THE BEST CUPCAKES
I compiled a list of my ‘TOP 10 TIPS FOR BAKING THE BEST CUPCAKES’, all geared toward helping you bake a better batch. Get your ovens preheated, my darling bakers because you’ll have the baking itch after reading my post!
TIP #1: FOLLOW THE RECIPE
This sounds obvious, right? Well actually… NO! We often substitute ingredients in recipes based on what we have. Subbing out eggs, reducing sugar, using a liquid sweetener instead, all-purpose instead of cake flour, baking soda for powder (No! don’t do it!), egg whites instead of whole eggs, etc. I do not recommend doing this unless the recipe states. Don’t sabotage your time, effort, and money! Ingredients are needed for a reason and, often, a cupcake recipe fail is because the recipe wasn’t properly followed. I’m guilty too! I always recommend following a recipe the first time you try it, then making alterations as you see fit the next time.
TIP #2: ROOM TEMPERATURE INGREDIENTS
This one could get a little too long so I’m just going to sum it up: “Room temperature” isn’t listed next to ingredients for fun. There are science and a legitimate reason behind it. If a recipe calls for room temperature ingredients, use room temperature ingredients.
TIP #3: DON’T OVER-MIX, DON’T UNDER-MIX
Not too much, not too little. Make sure you’re mixing the cupcake batter together just until the wet and dry are combined. Overmixing batter, whether that’s for cakes, cupcakes, bread, muffins, etc, lends a tough-textured baked good. Don’t turn on the mixer then leave the room. Goodness NO!
Not to get all NERDY on ya or anything but if you overmix the batter, you run the risk of over-developing the gluten. This results in squat-looking cupcakes, dense-textured cupcakes, and heavy-tasting cupcakes. Mix just until there are no more pockets of flour. And maybe a few more seconds to rid any big lumps. Likewise, DON'T UNDERMIX, obviously, we want all the ingredients incorporated together.
TIP #4: HIGH-QUALITY CUPCAKE LINERS
Did you know that a cupcake liner is kind of a big deal?!?! Seems silly, right? I started using higher quality + grease-proof liners a few years ago. My cupcakes stopped sticking to the sides of the wrapper (ugh I hated that!!) and the liners no longer oozed grease. If the cupcake liner feels cheap, it probably is cheap. I swear by these parchment paper liners or any quality liners labelled “grease-proof”.
TIP #5: FILL CUPCAKE PANS APPROPRIATELY
Did you know this one simple step can make or break your batch? It’s often something we overlook completely– just pour/scoop batter into the cupcake wrappers and bake. Well, depending on the recipe, you could be over-filling or under-filling the liners. This leads to:
Cupcakes that rise, then sink
Cupcake “mushroom tops”
Unfortunately, most recipes don’t tell you how far to fill your liners. My general rule? 2/3 full (about 3 scant tbsp). All my cupcake recipes turn out when filled this high except for my chocolate cupcakes. 1/2 full is imperative there! If the batter is very thin, use a bowl that has a spout and pours the batter into each cup. If the batter is thick, use a large spoon or an ice cream scoop if you prefer.
TIP #6: OVEN THERMOMETER, EVERY TIME
Unless you have a brand new or regularly calibrated oven, your oven’s temperature is likely inaccurate. Isn’t that crazy?? When you set your oven to 350°F, it might not really be 350°F inside. It could only be off by a little – 10 degrees or so. Or more than that – 100 degrees or even more. While this might not seem like a big deal to you, it is a huge problem for baked treats!
A temperature mismatch results in dried-out baked goods. Burnt uneven cakes and cupcakes. Heavily browned or undercooked in the centres. And as you know, when it comes to baking accuracy is everything, there is little room for error. Having an oven whose temperature is off can ruin your baked good, not to mention the time, energy, and money spent. The inexpensive remedy is an oven thermometer. Place it in your oven so you always know the actual temperature. Trust me!
TIP #7: 1 BATCH IN THE CENTRE
Only 1 batch at a time in the very centre of the oven. I know that sounds crazy!! But my reason is that you get the best possible results when the oven only concentrates on that 1 batch. If you absolutely need to bake more than one batch at a time, make sure you rotate the cupcake pans from the top rack to bottom rack a couple times in the baking process to encourage even browning. And turn the pans around as well. Ovens have hot spots!
But if you’re only baking 1 batch: centre of the oven. That’s the oven’s magic spot.
TIP #8: BOUNCE-BACK TEST
You can determine if a batch of cupcakes is done in the oven by testing with a toothpick, right? You know, sticking a toothpick into the centre of the cupcake and if it comes out clean, they’re done? Sure, that works. But here is what I always do instead. And you don’t need to waste time and fumble around for a toothpick!
Remove the cupcakes from the oven or leave them in, your choice. Gently press down on the cupcake. If the cupcake bounces back completely, they are done. If your finger left a dent in the cupcake, they need more time. So easy. I always do this! And this nifty little trick can be used on muffins as well.
TIP #9: ALLOW TO COOL COMPLETELY
This sounds like a no-brainer, but we’re often in a rush, I included. Especially when I need to photograph a cupcake recipe! Decorating cupcakes before they are completely cool is, well, a recipe for disaster. The frosting will melt. Whenever I need a batch of cupcakes to cool down on the fly, I let them cool for 10 minutes inside the cupcake pan. Then I remove them from the pan and stick each cupcake in the freezer for about 20 minutes. They’re cool and ready for decoration. Easy and quick.
TIP #10: STORE PROPERLY
Unfrosted cupcakes are wonderful left at room temperature for a few days. Cover them tightly and they’ll stay soft, moist, and fluffy until you’re ready to decorate them. After you frost them, they’re OK for a day or two at room temperature but should be refrigerated after that. I always let cupcakes come to room temperature before serving. The cupcake itself tastes best that way!

Currently, it is certainly not uncommon to simply go out and purchase your cookies for the New Year Celebrations. However, this year, you might consider attempting to make some of the cookies yourself. If you have absolutely no idea how to go about doing so, this article aims to provide you with some guidance. Adding a little practice into the mix, you should be able to whip up a batch of Chinese New Year cookies! If you want to be the popular host, here are some recipes for your favourite CNY DESSERTS!
1. NYONYA PINEAPPLE TARTBest traditional pineapple tarts recipe to bake during the festive season especially during Chinese New Year. I was told by my late Granny that in Malacca, the best pineapple tarts are made using homemade jam. If you are looking for flaky and crispy pastry that melts in the mouth, this is the recipe for you!
2. TRADITIONAL CHINESE ALMOND COOKIES They're Traditional Chinese Almond Cookies that are so buttery tasting, I can never eat just one! And after trying these, I'm pretty sure you'll pass on the store-bought kind.
3. HONEYCOMB COOKIES aka KUIH LOYANGHoneycomb cookies also are known as rose cookies, beehive cookies or ‘Kuih Loyang’ (in Malay) is not actually cookies! It is sweet but most of us would equate cookies as something bake not fried like chocolate chip cookies or custard cookies etc. In Malay language, everything is 'Kuih', regardless whether it's savoury or sweet, with exception of baked 'cookies' and that, we call it biscuits.
4. HOMEMADE CHINESE PEANUT CANDY
A Chinese New Year treats representing sweetness and happiness for the coming year welcomes a homemade Chinese Sesame Peanut Brittle and a Sesame Walnut Peanut Brittle.
5. STICKY CAKE (NIAN GAO)‘Nian Gao’ is a traditional Chinese New Year cake that is somewhat unique. It is steamed instead of baked and does not contain butter, eggs, or other ingredients normally found in a cake batter. This recipe is Westernized in that it is baked and includes the expected cake ingredients. It is also an ideal recipe if you are short on time, or don't like standing over the stove worrying if the steamer will boil dry, or if you want to share this dessert with non-Asians who might be used to a more familiar type of cake. Even with these alterations, however, this baked cake will give you the taste of traditional ‘Nian Gao’, if not the same texture.
6. EIGHT TREASURE RICE PUDDING
Eight Treasures Rice Pudding is a traditional Chinese New Year pudding. Eight treasures topping is made up of eight different kinds of dried fruits, raisin and sweets. You can choose any ingredients which are easy for you to buy. Of course, you don’t have to use “eight” different toppings but the number of toppings you use is down to personal preference.
7. CHINESE SESAME COOKIES Sesame cookies, like almond cookies and other types of Chinese cookies, were traditionally made with lard. Using butter/shortening (or a combination of both, as in this recipe) gives us a healthier cookie with just over 75 calories. For extra flavour, try incorporating a few tablespoons of toasted sesame seeds into the cookie dough before baking.
8. EGG TARTSBaked Egg Custard Tart is considered the all-time classic British tart. I have fond memories of my late mum baking Egg Custard Tarts for Sunday tea and it is something I cook regularly for my family. This recipe though is rather special and takes the humble baked egg custard to another level altogether.
9. TANG YUAN (GLUTINOUS RICE BALLS)
Tang Yuan is a dessert made of glutinous rice balls in a sweet clear soup usually served during the Winter Solstice Festival to mark the arrival of winter.
10. MA LAI GAO (CHINESE STEAMED SPONGE CAKE) A very easy-to-follow recipe for a Chinese dim sum favourite, ‘Ma Lai Gao’ or Chinese steamed sponge cake, that’s extremely soft and springy, fluffy & tasty!

All these recipes are collected and originally invented by 4 generations in my family starting from Great-grandmother (she was born & breed in Peru then moved to China), my late Granny Aishah, my late mother and at present ME! The second segment is 'SHC Tutorials & Tips'. This segment is divided into two sections which are 'SHC Baking Tutorials & Tips'. Mainly about all the BEST baking knowledge, skill and techniques that were passed on to me from the past 3 generations and what I have learned for the past 5 years from my mentors/senior bakers. Everything and anything there is you need to know about baking a great quality homebaked mainly on the BEST desserts guidance, advice and tips.

Sweetness Haven Creations (SHC), is a Blog for Best Homemade Dessert Recipes and Baking Tutorials/Tips based in Kuala Lumpur, Malaysia. As a single-mum/bakery owner turned home baker/food blogger, I aim to empower the everyday baker to take risks in the kitchen and try new things in the culinary world. I enjoy sharing my everyday successes and errors as a baker with 2 children in tow in my house. For me, it’s not always about getting the icing on a cake just perfect on the first try, but about testing out a new recipe or ingredient and flexing our creative muscles. I will be updating the recipes which were invented/collected by myself, my late mom Siti Rohani and my late granny Aishah at least once a week or as often as I can.
