It almost brings me back to my childhood when my mom would make some of the best lasagnas ever. Hers were always so cheesy and savory. Being low carb now I don’t get to enjoy the noodles of old and I get a wee bit tired of having to cut eggplant or zucchini into “noodles” though they are some of my favorites. This low carb lasagna recipe is still layered but it uses spinach or grated zucchini as a layer instead of noodle shapes. The change is delicious and doesn’t at all detract from the lasagna experience. Most of all, I hope you enjoy it as much as I do and that it helps you on your weightloss journey.     Low Carb Lasagna recipe 2 LBS Grass-fed Beef (or substitute Italian Sausage) 1 24-Ounce Jar No Sugar Spaghetti Sauce 1  8-Ounce Package Fresh Bella Mushrooms 2 TBS Oregano 1 Tsp Sea Salt 1 Tsp Onion Powder 1/2 Tsp Cayenne Pepper 1 Tsp Garlic Powder 1 14-Ounce Container Ricotta Cheese 2 Large Eggs 1 8-Ounce Package Cream Cheese 1 24-Ounce Package Frozen Chopped Spinach 8 Ounces Mozzarella Cheese 8 Ounces Extra Sharp Cheddar Cheese Parmesan Cheese     Directions: First, thaw the package of frozen spinach and allow the cream cheese to come to room temperature. Low Carb Shepherd’s Pie Recipe   Low Carb Shepherd’s Pie Recipe One of our favorite meals come fall is shepherd’s pie. In order for me to enjoy this meal, I had to give it a bit of a tweak to make it low carb so as to not bother my heart issues. I make my low carb shepherd’s pie recipe using grass-fed beef but it can be made with ground turkey or lamb. This meal is so easy to make and takes only a few minutes to whip together. Typically, I’ll make enough to throw a few single servings of it in the freezer for days when the family has pizza or spaghetti and I want an easy low carb meal. This recipe includes the original potato option as I usually make both since it is so easy.  Cut the recipe in half if you don’t want to make freezer meals.   Low Carb Shepherd’s Pie Recipe Serves 8 to 10 Total time: 30 minutes 1 TBS Bacon Grease 4 LBS Grass-fed Beef 2 TBS Minced Garlic 1 Large Onion Chopped 3 Cups Beef Broth 2 Cups Frozen Peas 2 Cups Mashed Cauliflower (my recipe) 4 Cups Mashed Potatoes Salt and Pepper Creole Seasoning   Heat the bacon grease in a large high sided skillet and add the chopped onion.
