Gluten-free Cashew Butter Chocolate Marble Cake Vegan Gluten free Cake. Peanut butter chocolate marble loaf. Soft, Moist, Delicious and Easy Gluten-free Marble Cake. Soy-free gum-free Recipe. 

Since I posted this Peanut Butter Chocolate Marble Cake, (which has been made so many times!), I have had the gluten-free version in my todo list. 

So this version is gluten-free, uses a mix of almond and rice flours and some chia for binding. No gums! I use cashew butter for the nut butter layer. You can use peanut butter, almond butter or other nut butter. Make the nut butter batter. Divide into 2 bowls. Add some cocoa to one and layer or swirl in and bake. You can also bake the batter swirled in a brownie pan for cake bars. Make these delicious nut butter chocolate marble cake and let me know how it turned out! Nut butter batter layered with chocolate batter to make a gorgeous and delicious loaf that is soft, not dry and impresses everyone, glutenfree or not. The cake takes 15 mins to put together and works wonderfully as dessert or snack.

What do you do when you want both a banana bread and carrot bread, You make Carrot Banana Bread!

I was playing around with my gluten-free fruit cake recipe for a no grain version banana bread. Too many Bananas can tend to make gummy results with a bit of error easily. Addition of some other fruit for additional moisture helps reduce that and also adds great flavor, moisture and texture to the bread. For with gluten(regular flour) version make my 1 Bowl Banana Apple Bread with shredded carrots and spices of choice.

This bread uses almond flour and coconut as the base. This Carrot Banana Bread is moist and textured with flavors from banana, carrot, spices and vanilla and great to snack on. Add icing to make into dessert.

Amazing Vegan Eggnog Pound Cake. This Eggnog cake has no eggs, or dairy, also doesn’t need premade eggnog, and is dense, pound cakey and full of winter flavor. Vegan Recipe. 

Ah well, I am still playing catch up and we still have a week of baking and sharing desserts to go! Lets make this easy and delicious eggnog cake.

This Vegan Eggnog Pound cake is dense but melt in the mouth, has flavor from nutmeg, cloves, nog spices and the eggy ness from chickpea flour custard (you have to try it!). You can bake the batter into a bundt, change up the spices for different flavor and use complimentary icing of choice. The cake doesnt need premade vegan eggnog, but you can use it if you have some for deeper nog flavor. This cake is soft, pound cakey, amazing and a great treat to serve after any meal.

Vegan Gluten free Christmas Cake Fruit Cake full of nuts, dried fruits, dates, seeds, candied ginger. Soft, Flavorful and great for gifting. Vegan Soyfree Recipe. 

I am not sure why fruit cakes have a bad rap. They used to be a treat we would wait for around Christmas. Soft, Sweet, full of fun stuff for us kids I guess. Maybe we just lucked out with a fabulous bakery.

I make versions of my Spelt spiced fruit cake if not baking a load of cookies every year. This version is adapted from spelt flour version. I use almond flour and rice flour to keep it gluten-free. The cake keeps well refrigerated for a few weeks if you use liquor or a week with orange juice. Serve as is or with a bourbon/rum glaze! Add nuts or seeds that you like, some dates, apricots, cherries. I also added some roasted sunflower seeds and chia seeds, so the cake is also great to snack on.

Vegan Pumpkin Cheesecake with graham cracker style crust. Easy Creamy Pumpkin Cheesecake to please everyone. Gluten-free with gluten free crust. Soy-free Recipe.

I made this cheesecake over Thanksgiving and I think I have found my favorite holiday dessert. It is creamy, lightly tangy, pumpkiny, spicy and all things holiday, fall and dessert. Its lighter, creamier and spicier than a pumpkin pie and oh so good. This has just the right amount of pumpkin and the cheesecake flavor balance which I like much more. 

Its a simple recipe. Blend the pumpkin with soaked cashews, non dairy yogurt sweetener and pumpkin pie spice. Bake to set, then chill  until ready to serve. Serve with whipped coconut cream, or vanilla ice cream or califlornia cabin (its a fabulous flavor from local Seattle vegan ice cream shop frankie and Jos). Make this cheesecake for a party or for yourself as you might not want to share!

It’s time to whip up food gifts, meet up with friends, cook together and spend the long (and generally wet out here) cold evenings by the fireplace. As much as I love Summer and long days, a bit of slow down and catch up is helpful to recharge for the new year. Lets start up some jar gifts with these warm, buttery, chewy vegan Cowboy cookies.

These Coconut, Oatmeal, chocolate chip cookies are super tasty and make a great mix to gift. Layer everything nicely in a jar. To Bake, empty into a bowl, add applesauce and oil, chill, shape and bake. I am wondering why it took me so long to make these cookies. They are just the right amount of chewy, fun, delicious and also make great snack cookies. 

Use small flaked coconut to make the cookies less chewy and less crumbly. The mix can keep for months!

Last few weeks of the year and of pumpkin and squash. I have been playing catch up the blog posts since book release and hopefully will have a list of posts lined up by January rather than running to post every week. Though I get most of my ideas when I am super busy, so more good food coming up.

I made these scones last week with coconut cream and no oil or butter, and they turned out fabulously. If you keep everything chilled, they turn out flaky and crisp and melt in your mouth. Pumpkin does add extra moisture, so they will soften eventually. These are best served right out of the oven. The glaze is a simple caramel-ish mix of pumpkin, coconut milk and sugar, all amply spiced with pumpkin pie spice.

Simple ingredients and ready within minutes.

Vegan Gluten free Cinnamon Roll Bread – Yeast-free (No added yeast) Gluten-free Grain-free Cinnamon bread Recipe. Soft, fluffy and amazing. Batter of Besan (chickpea flour) swirled with Cinnamon Sugar. Can be nut-free. 

When you cannot roll the batter, you make it into a swirled bread! This Soft and delicious bread is gluten-free, yeast-free, grain-free, but not taste-free. Never taste-free! A fluffy besan (brown chickpea flour) batter, and cinnamon sugar swirled in and baked for perfect Cinnamony, fluffy bites to start the morning. Serve warm with a drizzle of icing or vegan butter.

The batter for this Cinnamon Roll bread uses besan (brown chickpea flour) and uses citric acid to add air to the batter before baking. The principle of using citric acid in gluten-free baking is similar to aquafaba, To add air to the batter before baking. This method is used in Indian snacks and baking since decades. You can possible used whipped up aquafaba instead in this recipe. Whipping up aquafaba is not my cup of tea (too much noise and too long a process). Nor is the canned liquid. Hello changing metabolism. This recipe is far quicker, takes 15 seconds and easier! No elbow grease required, no 15 minutes of whipping, just mix in 5 strokes and done! Whats there to not like?

This recipe does not use any added yeast, but baking powder and citric acid for leavening. If you are sensitive to yeast, please check the other ingredients and use the versions that are safe for you. Vinegar uses yeast in the production process, and citric acid might as well. Use lemon juice and non yeast citric acid or all lemon juice like my gluten-free lemon donuts, Lets get to this amazing sticky bread.

One more before I head off to a small break. These easy Pumpkin donuts are quick to put together and bake up beautifully. Make the batter, get the family involved in squeezing it out into the doughnut pan. Bake, add toppings of choice. I use a simple cinnamon sugar topping. a pumpkin pie spiced glaze or Cream cheese glaze would work wonderfully as well.  These Baked doughnuts taste like fried! Try them.
