Your favorite breakfast dish baked all together in this easy French Toast Casserole. Don’t worry this isn’t an overnight recipe, it’s ready in an hour. You can make ahead the night before if you want!

Breakfast Anytime:

I can’t lie to you with this recipe. It’s completely meant for breakfast, but I totally made it for dinner! I mean who doesn’t love brinner am I right?

The best part is we had left over for breakfast, and I was able to sleep in and not have to worry about cooking in the morning. That’s what I like to call a win-win! Cooking breakfast for dinner is a favorite of mine, and we did it again tonight with this low carb breakfast casserole.

I think my kids would eat just about anything that I put syrup on! I topped this French Toast Casserole with syrup and powdered sugar and the entire family loved it. I used sourdough bread for this recipe, but you can use any thick sliced bread like a Texas toast or even a french loaf. This is. breakfast casserole you can eat at any time of the day!

How to make French Toast Casserole:

Step one: Preheat oven to 350 degrees F. Prepare a  9X13 baking dish with cooking spray and set aside. Whisk together eggs, milk, half and half, sugar, brown sugar, vanilla, and cinnamon in a large mixing bowl.

What Bread Should I Use:

Step two: Cut bread into bite-size pieces and add to bowl with egg mixture. Gently mix together until all bread is coated but be careful not to crumble bread. Once all bread has absorbed the egg then place it into your prepared baking dish.

For this recipe, I used sourdough bread. Any thick or heavy bread will work great for this recipe. A simple sandwich bread will fall apart when mixing.

Casserole Topping:

For my topping, I used a few simple ingredients and mixed it until it felt like sand. I find pinching it with your fingers it the best way to mix. You must use cold butter for this recipe make sure to keep it in the fridge until you are ready to mix and top.

Step three: For topping place all butter, flour, salt, brown sugar, and cinnamon in a small mixing bowl. Use a fork or your hands to mix together well until you form a crumble. Crumble this on top of your casserole.

Step four: Bake for 45-50 minutes until cooked through and a toothpick could come out clean.

Optional: I serve my casserole topped with powdered sugar or maple syrup.

Make Ahead Instructions:

Most french toast casseroles have to be made the night before but this recipe can be baked right away. Here are a few tips on how to prepare this dish the day or days before.

Refrigerate: Mix your casserole and top with crumble. Place plastic wrap over the casserole dish and keep in the fridge overnight. In the morning bake according to directions.

Freezer: Follow the directions and bake your casserole in a freezer safe dish. Allow cooling then top your casserole dish with plastic wrap and foil making sure to have no open areas air could get in.

Leave in the freezer for up to 3 months. When you are ready to serve to remove the casserole the night before and allow it to thaw in the fridge overnight. Bake at 350 for 15-20 minutes or until warm throughout.

I love a good breakfast casserole. Here are a few more recipes that you should try next.

These Teriyaki Pork Chops are my favorite way to make pork. It’s such a simple recipe to make and so full of flavor. The pork comes out moist and tender.

Easy Dinner:

I love a simple dinner recipe. With a busy life and three kids, I need easy dinners in my life. This one is one of my favorites. I just put the pork in a casserole dish with a simple homemade sauce. Bake it and then it’s time to serve dinner.

How to make Teriyaki Pork Chops:

Step one: Preheat oven to 375 degrees F. Prepare a baking dish with non-stick cooking spray.

Step two: Place pork chops in your prepared dish. In a small mixing bowl whisk together your garlic, honey, soy sauce, rice vinegar, water, pepper, onion powder, and ground ginger.

Pour this over your pork and bake covered for 30-40 minutes

  • Tip: I bake this covered so there will be no splatter and to help the moister stay in the casserole dish.

Teriyaki Sauce:

Step three: Once the pork is fully cooked remove it from the baking dish and allow to rest for several minutes. Meanwhile, place the teriyaki sauce in the baking dish into a pan. Whisk in cornstarch and bring to a boil. Allow boiling while whisking until the sauce has thickened.

  • Tip: Don’t skip boiling your sauce. This sauce is perfect to go over your pork and even in rice.

Serving Options:

Step four: Pour your teriyaki sauce over pork and serve. I served mine with sesame seeds and green onion as garnish

Here are a few of my favorite things to serve as a side dish to this recipe.

Easy breakfast idea that can be made ahead for the entire week. I love how simple and yummy these Freezer Bagel Breakfast Sandwiches are!

Breakfast in the go:

Breakfast is the most important meal of the day but usually is the post rushed and neglected. I’ll be the first to admit that I love my sleep and sometimes that means less time to get breakfast together.

Making ahead breakfast saves me so much time and it means we get an awesome homemade breakfast in just a few minutes. These freezer breakfast sandwiches can be easily reheated and taken on the go.

How to make Freezer Bagel Breakfast Sandwiches:

Step one: Preheat oven to 400 degrees F. Place bacon on a foil-lined baking sheet and bake for 15-20 minutes or until it’s fully cooked and as crispy as you like.

  • Tip: Try bacon your bacon in the oven for crispy bacon and less mess. Here is my recipe for oven baked bacon.

Step two: Whisk your eggs and season them with salt and pepper. Cook in a skillet (like you would an omelet) then flip. Slice your eggs into 6 circles for your bagel

  • Tip: You can also use an egg ring to make the eggs but I find they are too small for a bagel.

Step three: Build your bagel with egg, bacon, and cheese. Once you wrap your bagel your hot egg and bacon should melt your cheese.

Freezing and Reheating Instructions:
Step four: Keep in the freezer for up to 60 days. To reheat, remove bagels from foil or wrap and wrap in a paper towel and microwave 1-2 minutes. Or place in the oven at 400 degrees for 8-10 minutes.

Are you ready to try the BEST, yes I said it the BEST, side dish recipe? I have to limit making this Cheesy Potato Casserole to holiday time, or when guests are over because I could eat up the entire thing!

Potatoes covered with cheese and melted butter, yep it’s so good! Plus this recipe can easily be made in the slow cooker. Just Check out my recipe for Slow Cooker Cheesy Potato Casserole.

The BEST Side Dish:

My mom has been making this cheesy potato casserole for as long as I can remember. We make it every Thanksgiving and Christmas. The entire family loves it!

It’s my favorite side dish at both holidays, heck I could probably skip the turkey, and just eat a plate of this! You may think I’m overreacting with this, but I promise I’m not. Just try it for yourself!

The best part is this recipe is so easy to make and can be easily made ahead of time and baked when you are ready to serve.

The Ingredients:

This casserole is a classic and made with simple items found in any store.

  • Southern Style Hash Brown Potatoes Frozen: You can use any frozen hash brown style potato but I prefer the southern style for this recipe. You could also make homemade but the changing time would vary if they are not frozen.
  • Onions: For this recipe, I only use a few onions but they make a big difference.
  • Sour Cream: I used a regular sour cream for this recipe.
  • Cream of Chicken Soup: For this recipe, I use 10.5 oz of soup which is the standard size 1 can.
  • Butter: Melt your butter to mix with your potatoes.
  • Salt: I use just a teaspoon of salt but you can add more to taste.
  • Cheddar Cheese: The best part, the cheese. I used shredded cheese and added 2 cups inside the casserole and used the rest on top.
How to make Cheesy Potato Casserole:
Step one: Start by preheating your oven and then preparing a 9×13 casserole dish with nonstick cooking spray.
Step two: In a large mixing bowl place frozen hash browns and minced onions and mix.
Step three: Add sour cream, cream of chicken soup, melted butter, salt, and 2 cups shredded cheese. Mix well
Step four: Place your mixed ingredients into your prepared casserole dish and top with 1/2 cup remaining shredded cheese.
Step five: Bake for 40-45 minutes uncovered until casserole is bubbly and warm throughout. Remove from oven and serve.
Make Ahead Instructions:

Refrigerating Instructions: To save you some time on a busy cooking day try mixing this the day before. Prepare everything but instead of baking top your casserole with foil and place it in the refrigerated for up to two days.  Remove from the fridge and remove foil and bake according to directions.

Freezing Instructions: Mix your casserole according to directions in a freezer-safe casserole dish. Cover with plastic wrap then foil and freeze up to 3 months.

Serving Options:

This side dish is my favorite and I could eat it with any meal. Here are just a few of my favorites to serve with this casserole as a side dish.
