30 Minute Crispy Tofu Tacos You Need to Make ASAP

Now that grilling season and summer BBQ’s are in full swing, I wanted to bring you all my new favorite spin on TACOS. While BBQ’s and grilling might make you think of burgers, shish-kabobs, the whole 9 yards, sometimes it’s fun to switch it up and throw something different into the mix.

Now, what are we making you might ask? My very favorite Crispy Tofu TACOS. This recipe is a bit different than your traditional Mexican taco recipe since it features a delicious Asian-inspired twist, but I swear, you won’t miss the salsa! We’re taking crispy strips of tofu marinated in a zesty hoisin sauce, and adding them with some fresh flavors like cilantro slaw (once you try this, you’ll never go back), ripe avocados, and green onions. Next time you think Taco Night, think this recipe.

Another great thing about these Crispy Tofu Tacos if that they’re easily doubled or tripled depending on how many people you are serving. You can also add your own spin on this recipe by adding extra toppings! Some of my other favorites are pickled onions, roasted peanuts, and sriracha mayo.

One of the reasons these Tofu Tacos have so much flavor comes from the marinated tofu. While I know a lot of people tend to write off tofu as they think it’s bland and boring, the truth is, it’s so incredibly VERSATILE. If you aren’t familiar, tofu basically takes on any flavor that you pair it with, so it’s perfect for marinating and creating different sauces and rubs for. Trust me, once you try it a few times, you’ll be tempted to switch it out as your protein of choice all the time in the future.

The marinade we are using here is homemade and full of delicious flavor. I know that the grocery store is stocked with a million marinades that are tempting to buy, but if you want to save a little $$ and try a healthier route, make your own! Most are made with things you already have in your pantry, and only take a few minutes to whip up.

This tofu taco marinade is made out of a few simple ingredients: Lee Kum Kee Hoisin Sauce (a must-have in my pantry), sweetener (can use anything here: agave, honey, brown sugar, etc), some vinegar for tang, ginger, soy sauce, and garlic! If you don’t already have these ingredients stocked in your pantry, I can promise that they are all very easy to find, and available in most grocery stores. While they come together to make this tasty marinade, they also all shine on their own so you will find yourself using them non-stop!

Since you guys know I’m a bit picky about the products I buy, I’m using this Lee Kum Kee Hoisin sauce since it’s premium quality and non-GMO. I use it in so many of my summer dishes and is so delicious! Aside from marinating, it’s great for stir-frys, or as a dipping sauce. Sometimes I even have it on pizza! Lee Kum Kee Hoisin is a must-have pantry staple and a great go-to solution for nights that I’m busy and am looking for some quick and easy flavor. I always order mine on Amazon here, but it’s also sold in Walmart stores!

30 Minute Crispy Tofu Tacos You Need to Make ASAP

Yields: 2-3 servings

Tofu ingredients:

  • 1 package of extra firm tofu
  • 1/4 cup Lee Kum Kee Hoisin Sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 2 tsp ginger
  • 1 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 2 Tbsp agave or honey

Taco toppings:

  • Tortillas
  • Cilantro slaw (Made of 2 cups of cabbage, 1/2 cup carrots, 1/2 cup of cilantro, 2 Tbsp lime juice, 1 tsp agave or honey, and 1 Tbsp olive oil)
  • Ripe avocados chopped
  • Green onions chopped
  1. First, prepare the tofu. To prepare, I am using the method explained here. I like to press my tofu first so that it has a more firm texture, but this step can be skipped to save time.
  2. Once the tofu has been pressed (or not if you skipped that step), add it to a bag. Mix all of the ingredients for the marinade in a small cup or bowl (all of the ingredients under the tofu) and pour all but about 1/4th cup into the bag. Allow the tofu to marinade for 30 minutes to an hour.
  3. When that time is up, remove the tofu from the bag and slice it up. I like to do this by cutting it half width wise, then into strips. Add the strips to a baking sheet and set the oven at 425 degrees. Pour the leftover marinade onto the pan with the tofu and cook for around 20 minutes.
  4. Once your tofu is looking nice and crispy, it’s time to assemble your tacos! Get out your tortillas, and pile each taco high with cilantro slaw, chopped avocados, and green onions. You can also add on the extra sauce to the tacos from the 1/4th cup you left out from the marinating process!

How to Take Better Instagram Photos (+ posing ideas)

While the most beautiful blogs and Instagram feeds tend to seem effortless, the truth is, they are FAR FROM IT. Shooting and curating photos can take a *lot* of time and effort, and are often way more thought out & intentional than they seem from the outside. While this may be true, since we live in a digital world where photos are often the first thing we see, learning to take and create good photos is totally worth the time. A photo is truly worth a thousand words and it’s been proven time and time again that on visual platforms like blogs and social media sites (Instagram, Pinterest, etc), having good photos is half the battle and can really help to set you apart from the crowd.

Today, I’ve outlined my top 4 tips for taking better Instagram photos and posing ideas you can try ASAP! Let’s get to it!

1) Move Around

My first and favorite tip for taking better Instagram photos is to MOVE AROUND. Throw your hands up, whip your hair around, and just move your body! Everyone laughs because I’m always running around when taking photos but I personally think movement makes them FUN.

A few things to try:

  • Stepping forward and backward to look like walking
  • Putting your hands in the air (this one is a lot of fun!)
  • Change up your feet. Put one in front of the other, spread them apart, kick one into the air.
  • Spin around! This is great if you’re wearing clothes that MOVE with you like skirts, dresses, big shirts, etc.
2) Try a New Angle

I for one know how easy it can be to get stuck in a rut of feeling like you’re taking the same photo again and again, so next time you feel bored, try to change it up with a new angle! Lately, I’ve been trying different angles than I’m used to and loving it. In both of these shots above, my camera was placed on the group and faced up. I love how big it makes the sky look!

A few angles that always look good:

  • Have your photographer sit on the ground facing you while you’re standing and snap some shots! This works great with certain outfits like big dresses, etc.
  • Find a fun wall or mural, and instead of taking the photo straight on, have your photographer get on a diagonal, creating a diagonal line with the wall behind you.
  • Take it from afar – Have your photographer stand across the street, and snap some shots as you’re walking by. This creates a really fun in the moment look.

3) Grab a Prop

Props are so helpful if you feel like you don’t know what to do with your hands (we’ve all been there!). Grab something easy like a coffee, hat, a purse, etc, and play around with it. It makes the photo look more natural! I’m always keeping my eyes open everywhere I go for the perfect props.

Some props I love for engaging photos are:

  • A drink – Coffee or tea works great here to look like you’re on the go, but you can also grab a more fun prop like a slushie, old school soda, etc.
  • A hat or scrunchie – This gives you something to touch and play within the photos.
  • Seasonal things for holidays, etc. – For example, knowing that I wanted to shoot a 4th of July photo, I opted for red, white, and blue popsicles and a bandana.
  • Food – Food always works great! Try to snap a photo when you’re out to brunch, or just grab a soft pretzel, an ice cream cone, etc.
4) Laugh Out Loud 

For me, I’m not super great at edgy, straight-faced photos. As someone who’s smiling 24/7, I decided to embrace that and try to make it shine through in photos. Talk to your photog about something funny, and laugh it out! This helps photos feel more natural and candid then super posed and stiff.

The best way to learn is to practice and try out new things, so don’t be afraid to experiment with each tip above and make it your own. You will only get better and better in time and become a pro before you know it!

One of things I love most about spring and summer is dining al fresco aka eating outside (I’m cultured sometimes you see ). Seriously, I can’t enough of it. While I did cut out dairy a few years ago from my diet (I am very lactose intolerant) that hasn’t hindered my love of ice-cream in any way, shape, or form. Honestly, it’s done the exact opposite. I like to think of it like a game. Who has the best non-dairy flavor? They have vegan custard at a coffee shop a half hour away?? Let’s GO. 3 Summer Trends you Need to Try Today

Summer is *almost* here, and you guys already know I am getting my wardrobe READY. Spring and summer are my absolute favorite seasons to dress for since there are so many fun colors, patterns, and exciting new trends rolling around.

I for one however, know how daunting it can be when shopping and trying to decide which trends are worth giving a try and which you should save your $$ on. Today with South Moon Under,  i’m breaking down the trends that are worth trying out and will give you a wardrobe thats perfect for any summer adventures in your calendar! These looks will take you from the beach, to the boardwalk, to the city, to the graduation party you will inevitably have to attend to for a family friend you haven’t seen in 15 years (lol). Summer Trend #1: Matching Sets Top: here | Pants: here 

First up for my favorite summer trends, we have matching sets. Matching sets or co-ords like some brands like to call them, are a total game changer. As someone who has a hard time deciding on any one outfit, I love sets. They totally take the guess work out of matching (which we all know can take forever on those “I have nothing to wear days”), and are really cute.

While the set i’m wearing here is pretty casual, it can easy be dressed up with some heels and jewelry, but just as easily dressed down with a sandal and sunglasses.  I like picking up a few matching sets every summer because they obviously look great together, but can be paired with other pieces you already have in your closet as well! It’s really a win win.

Summer Trend #2: Bell Sleeves Top: here | Skirt (similar): here

The second trend i’m an totally here for this summer is BELL SLEEVES. I’ve always been pro big sleeves, shoulders, puffy sleeves, etc. and i’m loving how easily they transition into summer fashion. Bell sleeves are great for a few reasons:

  1. They add a little bit of boho flair into every outfit!
  2. They’re very fashion forward. Literally every time i’m wearing a bell sleeved top, I get compliments. You know how there are just certain pieces that make you look like you “tried”? This is one of them.
  3. They’re cool in the summer! I for one hate wearing tops with tight sleeves in the summer since it gets HOT here. I love how bell sleeve tops allow for a nice breeze, while still looking good.

The bell sleeve tie top I am wearing here is one of my favorites for the summer. This look is fun since it can be worn alone, or worn layered. You could pair this with jeans and a top, or by itself with a maxi skirt! The possibilities are endless. Pick one of these tops up in a neutral color and you’ll be shocked by how often you wear it.

Summer Trend #3: Maxi Dresses

I’ve never met a maxi dress I didn’t like! While I used to think I couldn’t wear maxi dresses since i’m on the shorter side at 5’4, i’ve recently decided to embrace my height and wear them anyway! Personally, fashion rules and standards were met to be broken and it’s more fun to wear what you want! Confidence is KEY. A few tips for my fellow shorter girls when buying maxi dresses:

  • Check the length before purchasing. A lot of times if you’re buying online, the site will specify the length of the item. This is helpful in determining if it’s going to be too long or just right!
  • If you can’t find the length, just belt it! A simple belt goes a long when it comes to maxi dresses. For example, the dress i’m wearing here looked a bit big without the belt, but with the belt it looks to fit perfectly! Belts help to add a waistline illusion, and make the length a little shorter since you can pull out the portion above the belt.
  • Look to see if the item has adjustable straps! This is a huge one for me since things always tend to fall a little too long (hello unwanted cleavage lol). Adjustable straps are key for making pieces work no matter how tall you are.

Maxi dresses are awesome because they can be worn casually for a walk in the city or dressed up for a party or event! The length automatically makes them a bit “dressy” which I personally love since they make it look like you put some thought into your outfit even if you didn’t. They are definitely a trend you need to try this summer.

& that’s it! While there are so many spring trends i’m itching to try out (we’re talking tie dye, graphic band t’s, white on white, animal print swimsuits), these are a few that I can’t go without. I really believe that fashion and style should be easy and honestly, as long as you’re wearing something you like, you’re going to look great. My favorite outfits are the ones you can tell are a reflection of the person wearing them. Have fun with it and don’t be afraid to try something new, you might just love it!

Guys… I’ll admit, I’ve been such a slacker when it came to publishing this post, but today its *FINALLY* here!! As someone who is food obsessed and constantly sharing what they’re eating, one of my most requested posts is for Philly Vegan Restuarant Guide. This is a question I get asked about so often, and one that I could write forever on. One of my favorite hobbies is trying new restaurants. I am always the person stalking menus online, looking up new and upcoming restaurants to eat at, and searching for the best food places have to offer.

In Philly, I am incredibly blessed to live near so many amazing restaurants that serve everything under the sun. Philadelphia is a huge hub for foodies and has so much more to offer than just the cheesesteaks it’s traditionally known for. There is tons of American food, ethnic food, and food suitable for ALL diets. I’m seriously constantly thanking my lucky stars I live in a place that supports my diet, and constantly makes it easy/convenient for me to live the way I want to in terms of eating.

If you’re not familiar, vegan restaurants offer food free of animal products (aka meat, dairy, seafood, eggs, etc). I started dining at these places when I went dairy free when I was younger, and then when I went vegan a few years ago. These types of restaurants are also great for catering to gluten-free diets as well! If you have any allergies, it’s always worth checking out vegan restaurants since they make it a lot easier to find something to eat.

Aside from trying out vegan restaurants for dietary needs, they’re also typically healthier than other restaurants and truly DELICIOUS.I’ve had some of the best food of my life since changing my diet, and have absolutely loved exploring the different flavors, cultures, and ideas each of these restaurants has to offer.

FULL DISCLOSURE: I’m not just saying these restaurants are good because they’re vegan, I’m saying they’re good because they truly are – vegan or not. The reviews/ recommendations below are just my assessment based off of actually eating at every single one of the featured restaurants (saying that makes me realize I eat out a lot LOL). I didn’t get anything comped, spent all of my own $$, and these are my personal findings. I just wanted to mention that so you guys know my reviews are based on personal experience, and nothing else.

So, this one is for all of you Philly locals who have been passing these amazing places your entire lives and haven’t yet made it in or those of you who are planning a trip to the City of Brotherly Love and looking for the best place to get your grub on. I hope this helps you guys out, fills your stomachs, and keeps you coming back for more!

Bar Bombon ($$)

  • Bar Bombon is a small, but very cute with plenty of photo-worthy decor. The menu is to die for and takes a different/vegan spin on a lot of traditional Mexican delicacies. They also have amazing drinks to compliment any meal.
  • Recommendation: Buffalo Cauliflower Tacos + Nachos. They also have amazing cocktails!

Honest Toms ($)

  • Honest Toms is a delicious little Mexican Restuarant offering tacos, burritos, nachos, etc. It’s great for a quick and casual meal.
  • Recommendation: Sweet Potato Tacos

Cantina Los Caballitos ($$)

  • Cantina Los Caballitos has recently become a favorite of mine due to it’s diverse menu! There are meat/veggie (including tempeh, seitan, vegan chorizo) options for almost every dish. This all inclusive menu is great for when you’re dining with people of different diets. 
  • Recommendation: Seitan Burrito + Strawberry Margarita
  • Address: 1651 E Passyunk Ave, Philadelphia, PA 19148
Pizza:

Blackbird Pizza ($)

  • Blackbird is an entirely vegan pizza shop featuring everything from pizza to cheesesteaks, to wings, salads, and beyond. They have everything a traditional pizza shop would have. It’s heaven!
  • Recommendation: Balboa Pizza (Ricotta, sausage, red pepper, pesto, SO GOOD) + Cheese Fries
  • Address: 614 N 2nd St, Philadelphia, PA 19123

Uncle Oogies Pizza ($)

  • Uncle Oogies is a traditional pizza shop with a separate vegan menu. This makes it a great place to order when you have a bunch of different diets in the room.
  • Recommendation: Sausage + Pepper Pizza
  • Address: 2119 W Oregon Ave, Philadelphia, PA 19145

Higher end/sit-down:

Charlie was a sinner ($$$)

  • Charlie was a sinner is beautiful, dark, and moody. Their food is served tapa style so all of the plates are small but truly delicious. They also have some of the strongest drinks I’ve ever had, and I love going here on special occasions.
  • Recommendation: Ricotta (served with toast)  and the Buccatini & Meatballs
  • Address: 131 S 13th St, Philadelphia, PA 19107

Miss Rachels Pantry ($$$)

  • Miss Rachels Pantry is truly one of a kind! This restaurant offers a pre fix menu and a 5 course meal! While it’s a little on the pricer side, the restaurant only holds about 15 people so it’s a really delicious, intimate dinner. Great for special occasions!
  • Recommendation: Italian Night
  • Address: 1938 S Chadwick St, Philadelphia, PA 19145

Vedge ($$$)

  • Vedge is one of my favorite higher end vegan restaurants in Philly. It’s gorgeous on the inside and so delicious. Everything is served tapas syle, and is so beautiful and detailed.
  • Recommendation: Stuffed Avocado and Rutabaga Fondue
  • Address: 1221 Locust St, Philadelphia, PA 19107

V Street ($$$)

  • V Street is a vegan street food restaurant, hence the name. It’s tapas style, so plates are small but totally delicious! This is a fun place to go with a few friends so you can try a lot of different stuff.
  • Recommendation: KFT Tacos
  • Address: 126 S 19th St, Philadelphia, PA 19103

PS & Co ($$$)

FARMiCiA ($$$)

  • Farmicia is a beautiful, farm to table restaurant in old city. This is a perfect place to go with people of all diets as there’s a regular American menu, and 4-5 vegan options.
  • Recommendation: Mushroom Risotto Croquettes
  • Address: 15 S 3rd St, Philadelphia, PA 19106
Bar/restaurant:

Royal Tavern ($$)

  • Royal Tavern is a restaurant/bar. It’s definitely on the casual side so it’s perfect for watching the game, grabbing food after being out at night, or just getting a quick bite to eat. Offers vegan/non-vegan food.
  • Recommendation: Buffalo Seitan Wings (best I’ve ever had)
  • Address: 937 E Passyunk Ave, Philadelphia, PA 19147

Triangle Tavern ($$)

  • Similar to Royal Tavern, Triangle Tavern is a restaurant/bar. It’s very casual and comfortable inside. They offer vegan/non-vegan food but the menu is big eough that there are lots of options for both.
  • Recommendation: Vegan Mozzarella Sticks + Vegan Crab Cake Sandwich

  • Tattooed Mom is super fun and eclectic. It’s seat yourself, and there are all different random tables inside. There are also couches, and a few other comfy areas to sit if you come with a bigger crowd. Sadly, since there is a bar up front it’s normally packed and food takes a while to get to you. I’d recommendd calling ahead and taking food out – it’s what I normally do.
  • Recommendation: Perogies + Pickle Fried Chicken Sandwich

Royal Tavern ($)

  • The Royal Tavern has a very similar vibe to the Triangle Tavern shared above. It’s a typical bar with hip edge of having really delicious food! The Royal Tavern is great for after a night of being out when you’re hungry and just want some good ole’ bar food.
  • Recommendation: Vegan Wings + a beer

Second District Brewing Company ($)

  • Second District Brewing is so interesting and honestly such a delight. It’s a small place with a bar spanning the entire side, and offers tons of different beer on tap. They also offer flights of beer, and other fun tasting options. The best part about this place? The food. They offer a nice list of bar food classics, loaded with vegan/non vegan options. Second District is great to head to in the summer with some friends to get a beer and a cheap bite.
  • Recommendation: Vegan Pulled BBQ Sandwich + Buffalo Cauliflower

Dimsum Garden ($)

  • Dimsum Garden is a traditional Dimsum restaurant with tons of options! It’s fun to go with a big group and a bunch of different stuff. It’s also really inexpensive & budget friendly.
  • Recommendation: Veggie Soup Dumplings + Scallion Pancakes
  • Address: 1020 Race St, Philadelphia, PA 19107

Yamitsuki ($$)

  • If you guys follow me on Instagram, you’ve seen me post about Yamitsuki a million times. It’s my favorite ramen spot in the city! You never have to wait for a table, it’s super new and clean, and the food is amazing. Tons of veg/non-veg options.
  • Recommendation: Veggie Tempura Maki + Miso Yasai Vegetable Ramen

Stock ($$)

  • Stock is a quick dine in / take out ramen place. It’s small so there are only a few tables, but the food is really good. Decently sized veg/non-veg menu.

Indeblue ($$)

  • Indeblue is my favorite Indian place in Philly. It’s beautiful inside, always delicious, and the menu is huge.

While we all know Amazon is a godsend for just about EVERYTHING, did you know it was great for fashion as well? When Amazon Fashion first launched a few years ago, I was a little skeptical to say the least. When I thought of Amazon, I thought of household products, food products, and other items – but not clothing.

When I was browsing around & first started seeing apparel pop up, it’s safe to say that I was intrigued. Things seemed really cute *AND* really cheap. I thought, is it too good to be true? Is Amazon trying to play me here? After taking the plunge and ordering a few things, I became obsessed. Here’s my little unbiased review:

Is Amazon great for fashion? In my opinion, yes.

I’m a big Amazon Fashion shopper for a few reasons:

  1. Easy Checkout – This is huge for me. Their checkout is only about 2 clicks, and if you already have an Amazon account (which i’m sure you do), you don’t have to fill out any info. It’s simple as pie, truly.
  2. Easy Returns – This is another big one in my mind. As the most indecisive person to walk the planet, I always like knowing I have the safety net of getting my money back if I didn’t love my purchase. No one wants to be locked into something without the option to return.
  3. Great Price – Most Amazon Fashion items run for CHEAP as many are international sellers. Since you guys know i’m huge on budget fashion, this is a win.
  4. There are LOADS of reviews – 99.9% of the time, I won’t buy something if it doesn’t have reviews. Sure, brands are great at making items seem *worth the money*, but a candid review from a real person? You can’t beat it. If you scroll to the bottom of the page, for most products you will see 100+ reviews, many even containing photos.

5 of the Best Places to Buy Affordable Workout Clothes

Trying to get fit but don’t want to spend an arm and a leg on good workout gear? I HEAR YOU. When I first got really into fitness a few years ago, I felt overwhelmed with how expensive things were. How is a tank top i’m going to sweat in $45? Are Lululemon leggings really worth shelling out $125 for? Do I have to buy new running shoes every other month? Jeez.

After a while of trying out a few things here and there to see what was worth making an investment on and what wasn’t, I finally have some favorites that I wear day in and day out to the gym. Most of these pieces are super affordable, and are high quality enough that they will last throughout hard workouts, sweating, and being thrown in the washer time and time again. Getting fit shouldn’t be expensive, ya feel? Let’s dive in to some of my favorite places to buy affordable workout clothes.

  • Nike Graphic Training Tank – I’m not huge on logo tanks, but Nike does this one so right. It’s a high neck which i’m all about, and Dri-Fit material which n e v e r sticks to you. I hate nothing more than a workout tank that sticks to my butt or stomach when working on and ends up looking like a static-y mess. That’s why i’m obsessed with this tank – it moves with you and always looks flattering. Pick this up here.

  • Old Navy Cross Back Tank – Old Navy released an active wear line a few years ago, and i’ve been all about it ever since. One of the items I love is this Cross Back Tank. It’s perefct for high intensity workouts when you’re jumping around or yoga when you’re downward dog-ing and need your tank to stay in place.

  • Nike Women’s Victory Bra – In my search for the perfect sports bra years ago, I stumbled upon the Nike Victory Bra and haven’t strayed since. Seriously this will be your new favorite.

  • Under Armour Play Up Short – While I often opt for leggings for gym workouts, if I take my workout outside on a hot day, I wear shorts. A lot of workout shorts are too short and ride up your a$$ (excuse my french), but this beautiful pair doesn’t. They are long enough to cover your butt no matter how you’re jumping, crunching, or running, but not too long that they get in the way. These are my go to shorts and retail around $30.

3 Step Skinny Sangria you Need to Try Now (Easy and Delicious) A wise woman once said “let’s drink”.

Whenever the warm weather rolls around, I find myself getting excited about all of the fun things spring/summer bring. Spending time outside, festivals, picnics, parties, and of course since i’m a huge foodie: the fresh, seasonal flavors! I often find myself getting excited (probably a little too excited lol) about the all of the fresh produce in season when the warm weather comes around. This means tons of fresh veg to grill and juicy, tasty fruit for everything else.

Food has always been a social thing for me, which I think is why I love it so much. I love going out to eat with friends, having a date night at a new restaurant, or having my girlfriends over on a warm night for a glass of sangria. Food is something that brings people together in a really pure way, and I’m totally here for it.

Since warm weather has us all craving light, fresh meals, today I wanted to share *my favorite* EASY sangria recipe I’ve been making for years! This sangria is perfect to sip on for those warm, lazy nights outside with friends. It’s also so easy to make with things you already have in your pantry! All you need is fruit, a bottle of wine, Sparkling Ice® Mystery Flavor, and a little brandy! Once you make this, it’s going to be your go-to recipe. Thank me later.

While I know sangria is traditionally made with red wine, for this recipe, I decided to use white. I love how light and bright the white wine makes this drink and how well it pairs with the sparkling water. Here, I’m using Sparkling Ice Mystery Flavor—which adds a really nice tropical flavor to the drink. The Sparkling Ice has zero sugar and zero calories, which I love, but it’s packed full of flavor. I also love how it has just the right amount of fizz, and it’s a great alternative if you’re trying to kick soda! You can get your own at Acme in the drink isle. For the fruit portion of the recipe, you can honestly use whatever you have on hand! While I really love the combination of the lemons, oranges, and strawberries, there are so many other delicious combos as well! Here are a few others to try:

  • Pineapple, Mango

3 Step Skinny Sangria you Need to Try Now (Easy and Delicious)
  • 1/4th cup of brandy
  • 1 bottle of white wine (I used Sauvignon Blanc)
  • 1 bottle of Sparkling Ice® Mystery Flavor (love how tropical this tastes!)
  • 1/4th cup of sugar (I used coconut sugar)
  • 1 cup strawberries
  • 2 Oranges
  • 1 mango
  • 1 lemon
  • 2 kiwi
  • mint leaves (optional)
  1. Add your lemon (sliced) to a large pitcher. Muddle together with a muddler or wooden spoon (you’re basically trying to get the juices flowing here). Add the sugar.
  2. Next, add the brandy and fruit (strawberries, mangoes, oranges, and kiwi), and muddle again.
  3. Now, add in the wine and Sparkling Ice Mystery Flavor.
  4. Mix everything together, and taste and adjust as needed! Feel free to add more lemons or limes, sugar, or wine.
  5. Chill in the fridge until ready to serve.

Simple Buffalo Cauliflower Tacos
(so Easy Anyone can Make Them!)

Want to know the most requested recipe I’ve ever had? You’re seeing it.

Every time I make these tacos and put them on Instagram, SO many of you guys reach out and ask for the recipe. Honestly, I’m not even surprised – buffalo cauliflower wings are something everyone loves. Carnivores, your veggie friends, people who don’t care about food at all – everyone comes together for this recipe. After time and time again of bringing buffalo cauliflower to parties and hearing “I can’t believe it’s so good” makes the recipe feel pretty full proof. I’m telling you, even my friends/family who swear against liking vegetables are super into these. They’re special.

For this recipe, I decided to take the buffalo cauliflower a step further and add it into one of my favorite foods: tacos. If you’re like me and love Mexican food and flavors, this will be RIGHT up your alley. It’s a little spicy, a little cool, very fresh, and as always, pretty dang healthy. We *love* a meal that’s so multi-faceted (insert applause here).

As promised, in these buffalo cauliflower tacos, I’m using some of favorite Mexican flavors. While I love buffalo sauce, sometimes it can be a little overwhelming alone. A tip for those of you guys who don’t love spicy stuff: pair it with something cooling! Whenever I eat a spicy food, I make sure to have a cooling element on hand like an avocado, a dipping sauce, a lemon, etc. It really helps you to enjoy the meal in a whole different way! No burning mouths here, just delicious flavor.

The cooling elements I added to the tacos with the buffalo cauliflower were chopped lettuce, cilantro, green onions, Wholly Guacamole, and a vegan ranch. All of these flavors together are TOO GOOD. As someone who’s obsessed with avocados and guacamole but has a hard time finding ripe ones in the store (or they’re too ripe, it’s so frustrating!), I often opt for Wholly Guacamole because they take the guesswork out of enjoying delicious avocados and guacamole. We all know how annoying it can be to find a perfectly ripe avocado when you need it, so I love that with Wholly Guacamole, there’s no need to worry about under or over ripe avocados since they always use avocados at the peak of their ripeness.

I love using this guac on veggies, with chips, or in other recipes to give a fresh and cool flavor. You guys also know I’m picky about the products I purchase since I want them to healthy, so I love that Wholly Guacamole is made with hand-scooped Hass avocados, real ingredients, and no preservatives. Simple Buffalo Cauliflower Tacos (so Easy Anyone can Make Them!)

Serves: 4

Buffalo Cauliflower base:

  • 3/4 cup of flour
  • 1 cup of water
  • 1 tsp garlic powder
  • salt + pepper
  • 1 cup of hot sauce

Other taco ingredients:

  • whole wheat tortillas
  • Wholly Guacamole (my favorite addition to these tacos – so light & yummy!)
  • vegan crema (1/2 cup vegan mayo + 1/4th cup almond milk)
  • shredded iceberg lettuce
  • cilantro
  1. Preheat your oven to 450 degrees.
  2. Chop up the head of cauliflower into florets and put them into a large bowl. They should be bite-sized.
  3. Next, add the flour, water, and seasonings to a cup, and mix well.
  4. Pour the mixture on to your cauliflower, and mix everything together. You want the cauliflower to be covered in the flour mixture.
  5. Place the covered cauliflower on to a nonstick baking sheet, and roast in the oven for 20 minutes.
  6. While the cauliflower is cooking, mix the ingredients together for the ranch. If it looks too thick, add more milk.
  7. Once the 20 minutes is up, throw the cauliflower back into a bowl, and add 1 cup of hot sauce. Mix everything around until the wings are covered.
  8. Place the wings back into the oven for an additional 15 minutes to roast. When the 15 minutes have passed, take the cauliflower out of the oven and let cool.
  9. Now, assemble the tacos. Grab your lettuce, and add it to the taco.
  10. Then the buffalo cauliflower.
  11. Lastly, add on the vegan crema (if using), Wholly Guacamole, and cilantro.
  12. Serve & enjoy!
