It’s raining, it’s spring, and it’s asparagus season… so naturally, I made asparagus soup! I think this is the perfect spring soup because it’s lightly creamy and not at all heavy. The asparagus flavor is subtle and it has a nice sweetness from the peas and a fresh, herbal flavor from the basil. I like to serve this soup warm, but not piping hot so that the bright flavors don’t get muddled. Although, fun fact: my sister came over the other day and ate it cold out of the fridge like gazpacho, which I don’t totally recommend, but it works […]

This springy artichoke vegetarian pizza has my heart! 🙂 If you know me well, you know that I don’t often (or ever) make just a regular cheese pizza – so this one is as vegetable-tastic as they come. Inspired by the infamous spinach artichoke dip, this pizza embodies everything you love about the dip (creamy! delicious!), but it’s lighter, brighter, and even more flavorful. This recipe has a few layers of deliciousness starting with its base: a creamy artichoke spread. My goal was to create a luscious layer that doesn’t require a block of cream cheese (like the dip does) […]

Happy Monday! If you’re like me and you had a weekend full french toast, cake, and pancakes, then you’ve come to the right place! Today I have a fresh, delicious bowl of soba noodles to help set the week off in a healthy direction. The best thing about this bowl is that it’s super simple to make, yet has great zippy flavor. There’s a light sesame-ginger dressing that perfectly coats the soba noodles. On top of that, I chose to mix in a group of vibrant spring veggies, but keep reading for a few other suggestions to customize your noodle […]

When I go out to brunch, the French toast on the menu always tempts me. What could be more crave-worthy than thick slices of bread marinated in a warmly spiced custard and topped with fresh fruit? I know from experience, though, that eating super-sweet, indulgent French toast at a restaurant is a recipe for a post-brunch food coma. My solution? Making this recipe at home! I prefer a lighter version, with good bread, eggs, almond milk instead of heavy cream, warming spices, fresh fruit, and pure maple syrup. It’s fresh and every bit as delicious as what I might find […]

I hope you have some avocados left over from Cinco de Mayo because I have a whole LOT of ideas for how you can use them. Avocado is an ingredient that I use almost as often as I use lemon. Happy Saturday! Whether you’re a fan of the Kentucky Derby or not, you’ll be a fan of this minty fresh mint julep recipe. It’s so bright and springy! To be honest, I’m going to have a hard time choosing whether to celebrate my weekend with Margaritas or Mint Juleps – maybe I’ll make both.:) Mint Julep Ingredients A classic mint julep is made by muddling mint with simple syrup at the bottom of each cocktail glass before adding crushed ice and bourbon. Instead of muddling the mint, I like to make my mint julep by infusing the simple syrup with […]
