Real Sweet Onion BBQ Burger

Ingredients
  • 4 whole wheat hamburger buns
  • 1 cup baby butter lettuce
  • 4 tbsp. BBQ sauce
  • ½ cup pickles
  • 1 Shuman Farms “Real Sweet” white onion - peeled & sliced
  • 4 Campari tomatoes - rinsed & sliced
Method
  1. Over medium-high heat, in a non-stick pan, cook the onions until they begin to brown, stirring often. This will take about ten minutes.
  2. Remove the onions from the heat. Add the BBQ sauce to the onions and combine until all of the onions are coated in the sauce.
  3. Toast the hamburger buns in the toaster. Stack the BBQ onions, lettuce, tomatoes, and pickles on the buns to complete your burgers.

Mandarin Coconut Ice Cream Recipe

Ingredients
  • 1 14 oz can coconut milk
  • ½ cup sugar
  • 1 cup Mandarin oranges - well drained
  • 1 tbsp fresh sliced mint
  • 1 tsp ground cinnamon
Method
  1. In a large bowl combine all of the ingredients and cover well before placing in the freezer.
  2. Every hour for four hours, check the ice cream and scrape down the frozen sides of the bowl to incorporate the frozen portion with the still melted ice cream in the center of the bowl.
  3. Serve with an extra sprinkle of mint or a cookie or two.

Pumpkin Pie Hummus Recipe

Ingredients
  • ½ cup pure pumpkin purée
  • 1 - 15 oz can chickpeas
  • 2 tbsp creamy almond butter
  • 2 tbsp pure maple syrup
  • juice squeezed from ¼ of a fresh lemon
  • 1 tsp pumpkin spice
  • 1 tsp vanilla extract
  • ¼ tsp salt
Method
  1. Open the can of chickpeas, pour out the liquid into a container and place the chickpeas into a food processor (or blender).
  2. Add ¼ cup of the liquid drained from the chickpea can into the food processor (save the rest of the liquid for use in another recipe).
  3. Add the almond butter, maple syrup, lemon juice, pumpkin spice, vanilla extract and salt into the food processor and power on to blend until everything is well combined and smooth.
  4. Enjoy!
Notes
Store pumpkin pie hummus in a sealed container in the fridge for up to 1 month.

Ahhh…Biscuits and gravy. Definitely one of my favorite dishes growing up. Warm, fluffy biscuits smothered with a layer of creamy white gravy, YUM! Breakfast comfort food at it’s finest. Vegan Biscuits & Gravy Recipe

Ingredients
  • 1 14 oz package plant-based sausage
  • 2 tbsp plant-based buttery spread
  • 1 pkg refrigerator biscuits
  • 2 tbsp flour
  • 1 cup plant-based milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • fresh sliced scallions to serve
Method
  1. Bake the biscuits according to the directions on the package.
  2. In a large saucepan cook the butter substitute and the flour for five minutes over medium heat stirring often.
  3. Add the sausage, salt, pepper, and garlic powder, and continue cooking until the sausage has lightly browned and is broken up into small pieces.
  4. Pour the plant-based milk into the mixture and continue stirring until the milk begins to bubble and starts to thicken.
  5. Cook for one or two more minutes until the gravy is thick before removing from the heat.
  6. When the biscuits are cooked, break them in half, and spoon the sausage and gravy over the biscuits. Sprinkle with fresh sliced scallions and serve warm.

  • ¼ cup unsweetened Dutch process cocoa powder
  • ¼ cup coconut sugar
  • ¼ cup Dandies vegan mini marshmallows
  • ¼ tbsp vegan semi-sweet chocolate chips
  • 4 cups unsweetened vanilla cashew milk
Method
  1. Combine all the ingredients evenly together, except for the milk, to make the instant cocoa mix, which you can store in a sealed container at room temperature for long term use.
  2. To make 1 cup of hot cocoa, heat up 1 cup of unsweetened cashew milk or your favorite dairy-free milk beverage and simply add and stir in 1 to 2 tablespoons of instant cocoa mix.
  3. Enjoy!

Crazy Spaghetti Recipe

Ingredients
  • ½ package spaghetti noodles
  • 8 plant-based hot dogs - cut into bite-sized pieces
  • 2 cups cherry tomatoes
  • 2 cups sliced white mushrooms
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to taste
Method
  1. Break the spaghetti noodles in half so that they are about three inches long.
  2. Gently poke five or six noodles through each bite of hot dog.
  3. When you have all of the hot dog bites ready to go, cook them according to the directions on the box of spaghetti.
  4. Two batches may be necessary if there is not an extra large pot available.
  5. For the sauce, cook the mushrooms, cherry tomatoes, and spices, in a large saucepan, over medium-high heat, for eight to ten minutes, stirring often.
  6. Salt and pepper to taste.
  7. Drain the spaghetti dogs well and combine with the sauce.
  8. Serve piping hot.
