Vegan Mango Ice Cream Recipe with step by step images-Who doesn’t like to have yummy ice cream in this hot summer? The ice cream shops are overloaded and we definitely have plenty of options. But what about kids who love ice creams daily? Offering them store-bought ice creams wouldn’t be the right choice and you will find it for yourself if you run a google search of ingredients used.

Vegan Mango Ice Cream Recipe

I wanted to make a healthy version of ice creams which can be

*Animal Milk Free

* Sugar-Free

*No churner needed

*Store Bought Ingredients Free

*No cream/condensed milk needed

I was so happy when I came up with strawberry ice cream with just 2 ingredients but the recipe will be tricky and slightly time-consuming. So my hunt and experiment for a healthy, easy and yummy ice cream started. I wanted to have a recipe which would be safe for babies above 6 months of age.(No honey, sugar, salt & milk before one year). Finally ended up with this recipe.

I didn’t have any difficulties in curating the recipe or experimenting, but clicking them took a heavy toll on me. Since the recipe doesn’t have any artificial thickeners and Baroda is burning hot, they melted the second I took out for scooping. Hence I ended up with only okayish pictures. But the taste was rich,creamy and yummy. My son didn’t forget to even waste a speck of the mango ice cream

Vegan Mango Ice Cream Recipe:

Ingredients:

Serves 3 scoops

  • Mango-Half
  • Cashew Milk-1/4 cup
  • Thick Coconut Milk-1/2 cup
  • Jaggery-Optional




Vegan Mango Ice Cream Recipe:

Procedure:

1. Scoop out the pulp of mango and grind it with powdered jaggery. My mangoes were not tasty. So I added jaggery. Choose ripe and sweet mangoes. You can skip this step of adding jaggery. (No jaggery for babies below one year)

2. Add cashew milk and coconut milk. Blend together.

3. Freeze for 4 to 6 hours.

4. Take it out and blend it once more.

5. Freeze for 4-6 hours.

6. Mango Icecream is ready. Scoop and relish

Disclaimer: The recipes with healthy ingredients/no preservatives might not be the same as store-bought or restaurants in taste or similar shelf life. But I definitely guarantee a high health quotient.




P.S:

Place the container in the freezer overnight before commencing with the recipe

Refer coconut milk recipe here

For cashew milk, soak 15 whole cashews in warm water. Blend it smooth.

You can store this for a week.(Freeze)

Coconut milk and cashew milk must be thick and without any impurities.

I skipped the usual milk, condensed milk, sugar, corn flour in this recipe and gave it a try to make it even healthy and perfect for babies above 6 months too.

Ensure to have introduced all items before and eliminate allergies.

Vella Puttu Recipe:

Vella Puttu Recipe with step by step images and procedure-The vella puttu recipe which I am sharing today is a signature dish from my mom and this vella puttu is a must have dish along with urad dhal kali for teenage girls at the time of their puberty. Mom makes this very often and it is almost similar to the red rice puttu which I have shared earlier. Her preparation is unbeatable.

Vella Puttu Recipe:

Ingredients:

  • Rice flour-1/2 cup
  • Jaggery Powder-1/3 cup
  • Water-1/4 -1/2 cup
  • Ghee-2 tbsp
  • Cashews- 1/2 tbsp chopped
  • Coconut-1 tbsp (grated)
  • Salt-A pinch



Vella Puttu Recipe: Procedure:

1. Keep all the ingredients ready.

2. Roast the rice flour in low flame till aroma arises.

3. Allow it to cool and sprinkle some warm water, add salt and mix it well. Mix until you can hold it together as below.

4. Now sieve this using a sieve.

5.  After sieving well, it will be a wet powder without lumps now.

6. Spread this in a cloth and steam cook for 15 minutes. The consistency check is as shown below when you roll, it gets rolled as shown in the right.

7. While it is getting steamed, dissolve jaggery in water and filter it and make a syrup of single string consistency.

8. In pan heat ghee and saute cashews and coconut.

9. Once the flour is steamed, remove it from cloth, cool it and break all lumps with your fingers.

10. To this add the flour(steamed) and add the jaggery syrup by continuously stirring. To enable easy stirring, add melted ghee then and there.

11. Ensure to mix until it reaches a crumbling texture.

12. Finally, add the cashews and coconut and mix everything together.

13. Vella Puttu is ready.



P.S:

The Vella Puttu can be stored for 3 days at room temperature.

Before storing ensure to completely cool down.

Add a dollop of ghee before eating.

Ensure that the rice flour has no lumps before adding to the jaggery syrup.

Cook in low to medium flame.

If the syrup is watery cook for some more time.

If jaggery has impurities please filter it before boiling it for syrup.

Pumpkin Dosa Recipe:

Pumpkin dosa Recipe with images and step by step procedure.

Yellow Pumpkin is my favourite vegetable and I love the way amma cooks without loss of the colour and crunchy. We don’t get it easily here at Vadodara and we grab it whenever we find in the market. When I was wondering what I should make with them this time, I went ahead with instant pumpkin dosa. I soaked rice last night, made the batter today morning and this yellow pumpkin dosa was our breakfast today morning.

Pumpkin Dosa Recipe

I was sceptical about how the pumpkin dosa would turn out but hubby was so confident. This pumpkin is almost similar to my other recipes of bottle gourd and cucumber dosa. The pumpkin dosa doesn’t need any fermentation. The feedback from both the boys was “We need more”.I hope you love them too.


Pumpkin Dosa Recipe

Ingredients:

Idly Rice(Boiled rice variety)-1 cup
Pumpkin-1 cup(Roughly chopped)
Green Chilly-1
Coconut-2 tbsp
Onion-1/2 finely chopped
Salt-To taste
Coriander Leaves-Finely Chopped
Coconut-Finely chopped
Oil-To cook



Pumpkin Dosa Recipe

Procedure:
1. Wash, rinse and soak the idly/dosa rice overnight or 3 hours.
2. Drain the soaked rice.


3. Grind the pumpkins, coconut grated, green chilly once and then add the rice, salt and make a thick batter.
4. Sprinkle water if needed and make a semi coarse batter.


5. Add the chopped onions, coconut and coriander leaves and mix well.
6. Carefully spread the batter on a greased dosa tawa and cook by closing one side.


7. Flip and cook the other side.
8. Pumpkin dosa is ready.



P.S:

Skip the salt for babies below one year.

This is ideal for babies above 6 months.

Be careful while spreading the batter.

Ensure that the batter is not too watery.

Musk melon ice pops recipe or mini popsicles recipe with step by step images
Cooking in this hot summer is too difficult but eating healthy is essential. Here is a quick fix summer recipe which kids will love for sure. And it will not take much of your time and you don’t need any special types of equipment. I came across this idea in this space and I wanted to try for my son. The portion is small and you need not bother about excess intake and as I have mentioned in musk melon smoothie recipe, this is rich in Vitamin C.

MUSK MELON ICE POPS RECIPE:

Ingredients:

Muskmelon Smoothie-1 cup

Ice cube tray



MUSK MELON ICE POPS RECIPE:

Procedure:

  1. Keep the musk melon smoothie ready

2.Pour in an ice cubes tray and cover with a foil. Insert the tooth picks.

3.After freezing for 8 hours, dip the bottom of the tray in water or show the bottom in flowing water.


You will be able to demould.

4. Enjoy the musk melon mini pops.



P.S:

Prick a hole and then insert the toothpicks. Else the tiny bits of foil gets into the smoothie and gets frozen. So please take care in that step.

This can be offered to babies above 6 months.

The musk melon ice pops is a perfect treat for babies who are teething.

You can pour the same into popsicles mould and make them like orange or sugarcane popsicles

The super hot summer needs some super special foods. The market is loaded with all summer special products. They might satisfy your thirst for time being but will become a threat if used for a longer time. I even see advertisements targeting kids asking to replace water with packed drinks. It deeply hurts and aches to see such poor marketing and influential tricks. Kindly don’t fall prey to such worse tactics. Nothing can replace nature and natural foods.

The women group which I am in is eagerly waiting for me to share summer special beverages but I am really not great in fulfilling their expectations. The reason being, I prefer whole fruits as such to juices/smoothies. But today I have musk melon smoothie recipe for you. I learnt the different variants of melons and the difference between smoothie, juice, shakes as I began writing this post along with the health benefits of musk melon.

Health Benefits Of Musk Melon:

Muskmelon is known for Vitamin A and Vitamin C content. It has 100% of the daily requirement of Vitamin C and almost 52% per cent of Vitamin A. It greatly helps in building immunity and keeping kids away from cold and infections. The folate present in musk melon makes it a perfect food for pregnant women.ALmost 90% of musk melon has water and it is super perfect for summers.

In addition to this, musk melons prevent heart and kidney diseases. It is a perfect cure for constipation. It helps to treat menstrual cramps and insomnia. It improves eyesight and helps in curing hypertension.

Musk Melon Smoothie For Kids:

1. Wash and cut the melon into two halves.

2. Remove the seeds using a ladle and filter the juice from it.

3. Scoop the flesh using a spoon.

4. Add some water and blend.

5. Serve the muskmelon smoothie.

Have I told you that I am a huge fan of wraps & Kathi rolls?Kathi Roll is a famous street food of Kolkata and they use all-purpose flour for the wrap. Paneer Kathi Roll Recipe|Paneer Frankie|Paneer Wrap Recipe which I am sharing today is a simpler version of it and a very yummy on-the-go breakfast/snack option. My son loves them so much.

You can make n number of variations to it. I roll even paneer jalfrezi or tomato thokku or potato sticks and wrap them.

Ingredients:

To make 4-5

  • Paneer-100 grams
  • Capsicum-1/2
  • Onion-1 sliced
  • Tomato-1 small sliced
  • Oil-To cook
  • Garam masala powder-1/2 tsp
  • Salt-To taste
  • Roti-5
Paneer Kathi Roll Recipe|Paneer Frankie|Paneer Wrap Recipe



Procedure:

1.In a pan,add oil and saute the onions first.

2.Then add Capsicum and tomatoes and give a quick stir .

3.Add salt, garam masala and mix them.

4. Switch off and add the paneer and mix.

5. Roll this to the roti and serve the Kathi rolls

You can add spices and vegetables of your choice.

I prefer the inside stuffing to be dry. You can add a layer of mint chutney or make it a slightly damp stuffing.

This is an excellent finger food.

So I would suggest to offer you from six months without salt.

How Often can I have this?

Adults can have it thrice a week(Max one glass a day). Despite the numerous many health benefits, it is not recommended to have much of it. Moderation is the key. Always consume the juice fresh or immediately store in the refrigerator. It is not advisable to store sugar cane juice beyond 15 minutes at outside temperature and consume. Adding a dash of ginger and lime will prevent acidity issues.

Steamed Corn Puttu Recipe|Chola Puttu Recipe with step by step images- With the heavy summer waves, steamed foods and natural coolant dishes are a must in a daily routine and they are so so apt to combat summer. This corn puttu was prepared long ago and I had also loaded the images. But I somehow had forgotten to write the recipe.

Corn Puttu Recipe|Chola Puttu Recipe

Serves 3

Ingredients:

  • Broken Corn(Semi Coarsely Powdered) – 1 cup or Corn Puttu Podi-1 1/4 cups
  • Salt-To taste
  • Water-1 cup to 1.25 cups
  • Grated Coconut-1/4 cup

Corn Puttu Recipe|Chola Puttu Recipe

1. Measure the ingredients and keep them ready.

2. Boil water until it becomes warm.

3. Add salt and mix well.

4. Sprinkle water to the flour and keep mixing.

5. The flour should slightly be wet and when you hold with your palms it must get held and fall apart when dropped. This is the consistency required. So add water accordingly.

6. In the puttu maker, add a layer of coconut grated, then the flour and then coconut and flour and coconut.

7. Steam cook for 10-15 minutes.

8. The stick attached will come out clean when the puttu is completely cooked.

9. Serve it warm with Nendran Banana and Kadalai Curry

10. We had corn puttu with potato gravy.



P.S:

Babies above 8 months can have this.

Ensure to have introduced all items before and eliminate allergies.

Skip the salt for babies below one year.

The flour should be slightly coarse.

You can even ask for Makki ka sooji or corn rava and slightly powdered it and use. We used to get it predominantly when we were at Hubli.

Eggless Savory Muffins Recipe- Baking an eggless savoury muffin has always been on my mind. But when I kept hunting and trying I couldn’t find a perfect recipe which was eggless. I literally gave up for some time. And two days before when I was thinking about a quick evening snack for my son, this came up in my mind. I followed the recipe from here and tweaked it to suit us. My kid and his friends enjoyed munching on them. I hope you and your kids enjoy them too.



Eggless Savory Muffins Recipe

Please read your oven manual and all the tips for baking for beginners here before commencing with the recipe. This is a wholesome dish which can be your kids breakfast(Add some almond powder and more vegetables too)along with fruits and Sathumaavu /multigrain drink. Eggless Savoury muffins recipe doesn’t use any packed ingredients except cheese and the raising agents. Since this is going to be a occasional thing, I hope the least quantity will not make any harm. You can skip baking powder and baking soda just like I have done in this recipe. Use sour Curd and vinegar instead. The Savoury muffins are great choice for snacks, light dinner and travel food. You can make n number of variations with the recipe.

Ingredients:

This will make 16 to 18 muffins of below size.

  • Whole Wheat – 3/4 cup
  • Butter – 1.5 tbsp
  • Milk-1/2 cup
  • Grated cheese or paneer – 1/4 cup
  • Mixed vegetables-1/4 cup
  • Curd-1/4 cup
  • Baking powder-1/2 tsp
  • Vinegar-1/4 tsp
  • Baking soda-1/4 tsp
  • Salt-To taste
  • Italian herbs-1 tbsp
  • Garam masala powder – 1 tsp
  • Water – If necessary
  • Mint leaves – Handful

Vegetables can be of your choice. I made a batch with corn & Capsicum and another set with carrot & cucumber

Eggless Savory Muffins Recipe Procedure: 1. Measure all the ingredients and keep them ready.

2. Preheat the OTG to 175 degrees celsius. Line the muffin tray with the liners.

3. In a pan, add butter and heat. Slowly add milk to it and boil till the butter melts.

4. Cool the mixture.

5. After it reaches room temperature, add the herbs, salt, masala.

6. Then add curd, vegetables and whole wheat flour, baking powder and baking soda

7. Mix them together. If you find the batter thick, add water little by little and mix. Be careful while adding, you might not need more than 1/4 cup.

8. Add mint leaves, cheese and mix. Now the batter for muffin is ready.

9. Carefully scoop and add to the muffin tray.

10. Bake at 175 degree Celsius for 35 minutes.

11. Check for the doneness with a tooth pick.

12. The savory muffins are ready once they reach room temperature.




P. S.

Please set the temperature and mode as per your oven settings.

I have used whole wheat flour made at home. It is red samba variant. Hence the colour.

You can store this in an airtight container and use for 3 to 4 days.

The are soft, smooth and porous.

The batch got finished in no time hence I couldn’t click the inner layers.

Adjust the spices as per your taste.

You can skip salt if you are offering this for babies less than one year. And use homemade paneer.

Eliminate the allergies of individual ingredients before trying this recipe.

Always consult your doctor before introducing any new food to your baby.

  • Ingredients:
  •  Jack fruit Seeds-8
  •  Shallots-8
  •  Oil-to cook
  •  Coriander leaves –To garnish
  • Thick tamarind extract-1/2 cup
  • To sauté & grind:
  •  Coriander Seeds-1/2 tsp
  • Red Chillies-2
  •  Coconut-1 tbsp(grated)
  •  Gram Dhal-1/2 tsp
  • Salt-To taste
  • Tomato-1 small

To temper:
• Mustard Seeds-1/4 tsp
• Urad Dhal-1/4 tsp
• Curry Leaves –Handful

Palakottai Kuzhambu Recipe|Jackfruit Seed Gravy




Procedure:

1.Measure all the ingredients and keep them ready.

2.Peel the white skin of the jack fruit seeds.

3.Pressure cook them for 3 whistles.Set them aside.

4.In a pan,add oil.

5. Add the items mentioned under “to sauté & grind” and fry them till they turn soft.

6.Cool them and grind into a smooth paste

7. Now add oil to the same pan, temper and sauté shallots and jack fruit seeds.

8. Add tamarind extract and cook.

9.Now add the ground paste and allow them to boil for 5 minutes.

10.Add salt & simmer.



11.The palakottai kuzhambu is ready to be relished with smoking hot rice or rotis or dosa/idly.

P.S:

Certain seeds turn out to be hard even after pressure cooking for 3 whistles.In such cases cook for 2 more whistles.

You can chop the seeds into two and then add to the curry.

I have added salt to the paste.

You can also add ginger,garlic and fennel seeds to the paste for a different taste.

Adjust spices according to your taste.

This can be offered to babies above 6 months without salt.

Always have a word with your paediatrician before trying new foods for babies.

Rule out the family history of allergies before trying new ingredients.
