It’s Victoria Day Long Weekend and I’m here for it! Although we’re having a serious lack of sunshine here in Ottawa, the May long weekend is the unofficial kick off to summer season, and I’m not letting the cooler temperatures or missing Mr. Sun rain on my parade. Well, I mean, there might actually be rain but I’ll try not to let it bring me down. We can always barbecue in the rain!
So even if it’s a grey weekend where you’re at too, why not make your own sunshine? All you need for a fun long weekend party are some bright decorations, tasty drinks, satisfying snacks, and yummy treats. Like these sweet and delicious Lemon Coconut Bars!
If You Love Coconut, You’ve Come to the Right Place
You may have noticed, I’ve been digging coconut this season. It’s helping to satisfy my near insatiable appetite for summer on a subconscious level. This past month, I’ve made coconut pancakes, coconut macaroons, and now these lemon coconut bars. And I’m not mad about it, because they’re all scrumptious.
These zesty bars are bursting with lemon and coconut flavour! They capture sunshine rays and tropical vibes in every, single bite. Nom, nom, nom.
These Lemon Coconut Bars are Gluten-Free, Dairy-Free, and Keto-Friendly too!
The base of the bar (aka crust) is coconut flour, so if you’re gluten-free or looking for a keto-friendly dessert recipe, score! I made these using monk fruit sugar, which was a first for me. I love how they turned out! Have you tried monk fruit sugar before? Of course, feel free to use regular sugar or….coconut sugar! Ah, coconut, you are a wonder.
Everyone Loves A Dessert Table
I highly recommend making these sweet, slightly tart bars to enjoy this long weekend! With the addition of some festive plates, a fruit platter and thirst-quenching drinks (we love the fizzy variety around here!), your dessert table is set. I personally opted for the tropical theme with palm leaves, lemons, and one happy pineapple. I might even put sunglasses on him because, how cute would that be!?

Happy Victoria Day Long Weekend friends! I hope you have a fantastic one. If you live here in Ottawa or are visiting, make sure to stop by the Tulip Festival, it’s the last few days before they wrap it up.
And of course, make these scrumptious Lemon Coconut Bars, you’ll be glad you did!
1/2 cup unsweetened shredded coconut (you can use sweetened if you prefer)
For the base
Preheat the oven to 350 °F. Line with parchment paper and grease an 8×12 inch baking pan (you can also use 9x 13 inch for more bars that are slightly thinner, they may require less baking time so watch closely).
In a medium-sized bowl, whisk eggs and combine with melted (room temperature) coconut oil and pure vanilla extract. Stir in the monk fruit sugar (or other sugar).
Add in the coconut flour and pinch of salt. Mix until a dough forms. If it seems liquidy, just wait a few minutes as the coconut flour will absorb the liquid.
Press the dough into the prepared pan. Bake for 10 minutes. Remove from heat and let cool until you’re ready to add filling.
For the filling
In small mixing bowl, beat the eggs, monk fruit sugar, lemon juice and baking powder until combined. Pour over crust and sprinkle with coconut.
Bake 20-25 minutes, until edges are golden brown. Cool on a wire rack. Cut into bars and enjoy!

5 Helpful Tips To Host A Mother’s Day Celebration
1 // Prep the night before. If you’re hosting a brunch, why not set the table the evening before. You can layout the tablecloth, place settings and decor so it’s already prepared. Then in the morning if you’re being spoiled with coffee and presents in bed you don’t have to think about everything you need to get done before guests arrive.
2 // Opt for low key. Whether it’s the menu or the decorations, think simple. You can even incorporate pretty paper plates to make clean up easier (try and find ones that are recyclable or biodegradable). I like to use faux flowers or subtle scented blooms as to not overpower the food or bother guests with sensitivities. Just one or two vases add softness and colour to the decor. Table confetti is also an easy way to jazz things up and when you’re done with it, pass it on to your kids. They’re sure to find a creative way to use it in a craft.

3 // Choose a colour palette. When it comes to decorations try picking two complementary colours as the focus. To tie them in use neutrals like white, grey, or linen. A springy green and peach are a pretty combo to consider. Or perhaps lavender and teal! Just a few pieces in your theme colours, like napkins, a runner, hanging lanterns, or flowers is enough to set the scene.
4 // Make easy desserts. Even though my husband and kids are insisting on doing everything for our intimate Mother’s Day celebration, I like to prepare a few treats to add to the party. My mom is also joining us and I like to contribute something too! It’s actually really hard for me to sit on my hands and not help out, haha. I like to make a few easy desserts I can prepare in advance that my hubby and kiddos can set out. And sometimes we make them together and simple recipes are great for their age. I highly recommend these 3-Ingredient Coconut Macaroons. They’re easy-peasy to make and absolutely scrumptious! Other favourites include: mocha cupcakes, trail mix cookies, andchocolate cornflake clusters.
5 // Keep the menu simple. Use your tried and true recipes. The no-fail ones that everyone loves! Maybe it’s your famous buttermilk pancakes, or family favourite roasted chicken. Whether it’s breakfast, brunch, lunch, or dinner, think simple. Choosing options you can prepare the day before takes the pressure off the actual day, when you should be celebrating, not running around the kitchen. Some foods you can prepare in advance that are perfect are: tea sandwiches, salads (three bean salad, potato salad, pasta salad, broccoli salad), french toast casserole, frittata (you can even serve that cold or reheat just before serving), scones, or deviled eggs.

Well, they are made with only 3 ingredients and they are the best macaroons ever! With each bite you taste beautiful coconut flavour with hints of vanilla and friends, they’re delectable, delicious, and divine.
Feel Free To Get Fancy Or Keep It Simple
Feel free to dip these in chocolate, or add some cocoa powder to the recipe to make a chocolate version. I haven’t gone there, yet. For this recipe, it’s all about that 1, 2, 3, done! But their simplicity does not make them any less decadent and elegant! I mean, just look at them.
Not only are they pretty on the eyes, they are tasty on the tongue. My husband, who’s not usually a fan of macaroons, loved these. So did my mom and my kiddos. So basically, all my go-to taste testers approved of this recipe, big time!
All you need are three basic ingredients and you’re good to go. They are made in no time at all and really, the hardest part is patiently waiting for them to cool down.
With Mother’s Day coming up in just a few days, these beautiful macaroons are a lovely addition to a brunchor dessert table. As I mentioned, you can get fancy and dip them in melted chocolate, like dark chocolate, or you could use coloured chocolate melts and choose a pretty pastel hue to drizzle on top!
With each bite into these heavenly macaroons you taste beautiful coconut flavour with hints of vanilla. They’re delectable, delicious, and divine.

5 1/2 cups unsweetened shredded coconut
14 oz sweetened condensed milk [ Most Canadian cans tend to be 300 ml (10.1 oz) so you need to buy 2 ]
3 tsp pure vanilla extract
Preheat the oven to 325 F. Line the baking sheets with parchment paper.
In a large mixing bowl, add in all the ingredients and mix until well combined.
Using a tablespoon or cookie scoop that’s been sprayed with cooking spray, begin to scoop up mounds of the mixture to drop on to the cookie sheets. Depending on your cookie drop sizes you should be able to make anywhere between 36-48 macaroons. If they are on the smaller size, bake for minimum time, if you make them a bit bigger, give them extra time to bake but watch them closely.
Cookies should be spaced out by about 1 1/2 inches. Keep going until all the mixture is used up.
Bake for 10 to 13 minutes, or until lightly browned around the edges.
Once out of the oven, let cool for 5 minutes then gently transfer to a cookie rack to cool completely before you storing them or serving.
I made this batch slightly on the larger side and got 36 macaroons. I baked them for around 13 minutes, watching them the last minutes as they browned.

You Can Prepare This Salad in Advance
These days, I find myself busier than ever with work projects, home projects, and family activities. Meal prepping healthy food for myself and my family is important to me. Not only because I want us all to eat balanced meals and snacks, but also because having ready-made food (that I’ve made!) in the fridge that I can pull out and serve is a big stress-reliever. Especially on those extra packed days.
This broccoli salad keeps fresh in the fridge for 3 days (it could keep longer, but fresh is best). When we get a chance to do meal prep on Sundays, it’s easy to grab to add to our dinner table or lunches for the next few days, along with other prepared foods. Hard-boiled eggs, egg cups, energy bites, muffins, granola bars, and macaroni casserole are just some of the other snacks and dishes I might prepare in advance for the week ahead.
Make This Salad Your Own
My mom is the one who introduced me to this broccoli salad, and I’ve been a fan ever since. We’ve made it several different ways, using a variety of additional ingredients, or simply broccoli and bacon with a creamy dressing. When you do add more toppings, you get lots of crunch and lovely texture. And if you like a touch of sweetness, try dried cranberries to complement the rest deliciously!
As You Already Know, Broccoli is Good For You
Broccoli is packed with antioxidants, fiber, vitamin C, and vitamin K. When prepared in different ways like roasted, in a stir-fry or in this salad, its flavour really pops. Personally, I’m not a fan of plain boiled broccoli, it just doesn’t do it for me.

We’ve made it to May, that beautiful bridge between spring and summer! Now if only we could get some seasonal weather in Ottawa. These sub zero temperature mornings are kind of getting old and I’m ready for spring blossoms and sunshine.
Speaking of blossoms, this is the perfect time to plant seeds! You can start them indoors and when you’re absolutely sure there will no longer be any frost, transplant them outdoors. Usually nearing the end of May we’re in the clear, in Ontario, for planting outside.

May is one of my favourite months to just get out and have adventures. Especially when it’s sunny, birds are chirping, and cherry blossoms are in full splendour. It also happens to be my wedding anniversary month, which makes it extra special. My husband and I will be celebrating 10 years this year!

A Random List of Simple and Joyful May Activities:
Visit a vineyard – we have so many amazing vineyards here in Canada, especially in Ontario, travelling and having a nice glass of wine is a wonderful treat!
Rent a bike – since 1956 May has been National Bike Month. Riding a bike is a great form of exercise, it is also a fun way to discover more about your city by travelling in a new way!
Visit a new local restaurant – dining out can be such a fun and enjoyable experience, try a new cuisine to make it more exciting!
Watch a Star Wars movie – may the fourth be with you, a perfect fan-driven holiday to watch or rewatch this fun movie franchise.
Celebrate and experience the Mexican culture – learning more about a new culture is a beautiful experience and Cinco de Mayo on May 5th is a great opportunity to learn more about our North American neighbours.
Take a baking class – regardless if you have been baking for a while or a beginner, you can always learn more to help you create yummy treats.
Dance – you don’t have to go to the club to cut a rug and let loose. When you are at home put on your favourite music and dance. Dancing is an amazing way to express your creativity and get in some healthy exercise, it is also fun to do as a whole family!
Take a ceramic class – if you love handmade pottery then take it a step more and learn to make your own, this is also a great way to meet new people and connect.
Make a mother’s day craft – a lot of us did this in elementary school but you are never too old to make special handmade gifts for the important people in your life. With mother’s day around the corner, this is a perfect time to unleash your inner crafter!
Visit the Canadian Tulip Festival – May 10th is the start of the Tulip Festival here in Ottawa and it is a perfect time to visit our capital and see all the beautiful tulips!
Find a local paint night – painting is a wonderful way to convey your creativity. It doesn’t take a lot to learn enough techniques to begin and finding a local paint night is a fun way to start.
Celebrate Mother’s Day – May 12th is Mother’s Day and I hope that you are able to celebrate it with your loved ones!
Visit an agricultural museum – learning about how we make food connects us better to the world we live in. For years now it has been a tradition of ours to visit Ottawa’s Agricultural and Food Museum, it is a great activity for a day trip if you are visiting Ottawa!
Try shadow boxing – if you are looking for a fun way to workout and blow off some steam shadow boxing is a great option. You can also add some jumping jacks and body weight squats for a harder workout!
Listen to Opera – there have been a few claims of benefits like lessening stress and anxiety by listening to classical music. I love listening to classical music like opera because it requires my attention and focus. Making me take more time to enjoy the music instead of putting it on in the background.
Cook with carrots – here in Ontario carrots are in season this month. Carrots are rich in vitamin A, antioxidants, and other vitamins and minerals. They are also a wonderful star in many dishes and desserts like carrot cake or carrot coleslaw.
Plant a garden – I have been planning my garden all winter long, now is the time to plant those seeds and grow something wonderful!
Make your own cold brew coffee – we’ve been making cold brew coffee in our home for a couple of years now. With the warmer weather, it is a perfect way to cool off and get a caffeine kick: add a couple of spoons of ground coffee in a mason jar, fill it with water, leave overnight for around 12 to 18 hours, in the morning filter out the grounds and you will have a perfect cold brew coffee. You can add more water, milk, almond milk or something else sweet to match it to your taste!
Upcycle something – upcycling is reusing materials to make something new like creating bookshelves, tables, or chairs out of objects that meant for recycling or worse, thrown away.
Celebrate Victoria Day – for a lot of Canadians our Victoria Day long weekend kicks off summer activities so I hope you find yourself surrounded by friends, fireworks, and great barbecue! It is also the last weekend of the Tulip Festival here in Ottawa!
Visit a farmers market – if you are here in Ottawa Lansdowne farmers market moves outside for the summer season, and it is such a great way to buy fruits, vegetables, and discover some amazing homemade products!
Update your wardrobe – with summer around the corner it is a perfect time to add a few items to your wardrobe. I find it best to work within your budget from second-hand stores to your favourite shops, a few pieces can freshen up your look!
Visit a tree nursery – right now is a perfect time to pick up spring bushes and flowers to plant!
Join a race – if you love jogging right now is a good time to sign up for any summer or fall races and begin to train!
Cook with mushrooms – these wonderful vegetables are in season here in Ottawa and I love using them to make mushroom risotto!
Play hopscotch – when the snows melted here in Ottawa my kids were outside with chalk, drawing hopscotch in the driveway or a playground is such a fun way to enjoy the outside with your kids!
Go bowling – this classic game is perfect for any season, but when spring comes around you want to get out and about. Bowling is a perfect option especially if you are stuck with a rainy weekend!
Make paper airplanes – this craft is a blast with kids and May is a perfect time to get outside and throw things in the air (remember to pick up the paper airplanes after the fun).
Play with a yo-yo – I remember the comeback of playing with yo-yos when I was a teenager in the 90s. Crazy enough these toys have been around at least since Ancient Greece. They are such a fun toy to reacquaint yourself with or share with your family!
Enjoy a fruit sorbet – I love changing how I eat and prepare food seasonally, in spring I cannot get enough homemade fruit sorbet!
Take a train ride – even if it is just for a daytrip, train rides are a fun way to explore a new area!
There’s a few repeat ideas on this list I’ve shared over the past few months, just because they really resonate with me as a great activity to try. Hehehe, but that might just be me. My hope is you’ll read this list and add some joy and adventure to your calendar this May.

These gluten-free pancakes are naturally sweet, deliciously flavourful, fluffy, and oh so very satisfying. Made with just three simple ingredients: bananas, eggs, and coconut flour.
We Can’t Get Enough of These Pancakes
Pancakes are always a favourite food in our home. Honestly, we could probably eat them everyday! What’s not to love? They’re warm, comforting, and delicious. I enjoy making all kinds of pancakes from more traditional buttermilk pancakes to a hearty buckwheat variety. These banana coconut pancakes are no exception! I love the naturally sweet, and slightly tropical flavour that you get in each bite.
A Delicious Gluten-Free, High-Protein Breakfast
If you’re looking for a gluten-free, high-protein pancake, these are such a great option! They are made with three simple ingredients: bananas, eggs, and coconut flour. Are you a fan of banana baking like banana muffins or banana bread? If so, you’ll love these! They are fluffy, moist, filling and energizing. I love that they give you a boost instead of weigh you down, thanks to the protein content.

Coconut flour is so light and airy; it works as a great substitute for wheat flour, especially when it comes to fluffy baked goods, like pancakes and muffins. Coconut flour is high in dietary fiber, which makes you feel full in a good way. Compared to wheat flour, coconut flour contains fivetimes the amount of fiber. Coconut flour also boasts more protein, so if you’re looking to up your protein intake, it’s a great choice.
Combined with the nutritional benefits of eggs and bananas, these simple 3-ingredient pancakes pack a healthful punch!
You can enjoy these coconut banana pancakes just as they are, or topped with your favourite toppings like maple syrup, fresh fruit, honey, jam, and whipped cream. You can also pair them with more savoury ingredients for a whole new twist.
Feel free to use this recipe as a base and play around with it! Add a little cinnamon or vanilla. Make them chocolatey with some cocoa powder, or seasonal with a scoop of cooked pumpkin (reduce banana).
They also taste yummy cold and work well as a snack too!
This recipe makes about 8 5-inch pancakes. You can reduce the diameter if you’d prefer to make more servings of smaller pancakes. Take your time cooking them on medium-low, and wait 2-3 minutes for each side to cook (keep your eye on them, as they cook differently than traditional pancakes – if they’re browning too quickly, reduce the heat). Use a wide spatula to help you flip them easily and put a cover over the prepared stack as you’re cooking, to keep them nice and hot when it’s time to serve them.

These naturally sweet and healthy protein pancakes are flavourful, fluffy, and very satisfying.

3 ripe bananas
6 large eggs
1/3 cup coconut flour
1/4 cup coconut oil or butter for cooking
In a medium-sized mixing bowl, mash bananas until as smooth as possible. Add in eggs and whisk until blended. Add in coconut flour and stir until combined. Alternatively, place all ingredients in blender or food processor and blend until smooth but not liquified.
Batter should resemble a traditional pancake batter consistency (some bananas lumps might remain). If it’s too runny, add another teaspoon or so of coconut flour.
Place a pan on medium-low heat, spread a bit of coconut oil or butter to grease the pan. Once heated, pour your first pancake, around 3-4 inch diameter and spread just a bit with a spoon (to 4-5 inch). Cook for 2-3 minutes, check the bottom for browning and watch carefully. Flip and do the same on the other side. Repeat until all the batter is used.
