Cheesy potato crescent rolls are an easy and delicious kids lunch box recipe. Cheese and potato filling rolled in the buttery crescent rolls and baked.

Easy Lunch Box Recipe:

These stuffed potato crescent rolls are an excellent lunch box recipe for the kids. You can use your own creative ideas on the stuffing, the sky is the limit. I use simple sliced boiled egg as a stuffing for my son’s lunch box when I am running out of the time. It is easy for the kids to have on the short lunch break without making a mess.

I prepare the potato filling on the evening and store in the refrigerator. Next day morning just stuff the crescent rolls and bake for the lunch box.

These three are my favorite stuffing so far, leftover chicken and veggies also work best!!

My favorite Stuffing for the Crescent Rolls:
  1. Cream cheese spinach stuffing: It serves as a delicious breakfast, cream cheese mixed with the spinach, garlic powder, sour cream, salt, and pepper.
  2. Cheesy scrambled egg stuffing: Scrambled eggs with veggies and cheese are the healthy and protein-packed stuffing. It serves as an excellent breakfast, brunch or lunch.

  3. Nutella stuffing: Who doesn’t love Nutella? Nutella spread on the crescent dough rolled and baked for a delicious stuffing. It tastes just like a dessert.

You could able to find the crescent rolls in every other retailer shop, in the refrigerator section. It is available in different flavors, like cinnamon roll crescent, sweet Hawaiian crescent rolls, honey butter crescent rolls,… I used the regular buttery crescent rolls for this recipe. Scrambled egg breakfast cups are the cute and delicious breakfast recipe using the crescent rolls.

Cheese Potato Crescent Rolls

Cheesy potato crescent rolls are an easy and delicious kids lunch box recipe. Cheese and potato filling rolled in the buttery crescent rolls and baked.

  • 1 Can Crescent Rolls (8 rolls in one can)
  • 1 no Large Potato (Boiled and Mashed)
  • 0.50 cup Shredded Cheese (any cheese of your choice I used
  • 2 tbsp Oil
  • 1 cup Onion Chopped
  • 1 tsp Salt
  • 1 tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • 0.25 tsp Turmeric Powder
  1. For stuffing: In a pan, heat oil, add chopped onion and cook until the onion becomes soft.
  2. Add turmeric powder and cook until the turmeric powder loses its raw smell.

  3. Add mashed potato, red chili powder, coriander powder and cook until the spices lose its raw smell. Let the stuffing to cool.

  4. Roll out each of the crescent rolls and arrange on the baking sheet. Place a spoonful of shredded cheese on the wider part of the crescent roll, potato filling on top of the cheese and roll.

  5. Bake according to the package direction. I baked for 12 minutes on a preheated 375 degrees oven. Cheesy potato rolls are ready to serve.

How to serve cheesy potato crescent rolls?

Serve cheesy potato rolls for breakfast or lunch with some sliced fruits and grilled meat for a balanced meal. I usually pack these crescent rolls for my 7-year-old son with a boiled egg and some sliced strawberries.

Oats, peanut butter and honey together make a wonderful post-workout snack. It together provides an energy to our system. Kids would also love this energy balls, a great after school snack for them. My son loves to eat them for breakfast too. These energy balls are loaded with fiber, protein and good carbs that makes us feel filling and energetic for a longer time.

It is a perfect snack to eat on the go. We carry these energy balls for long road trips too. It stays good for a week at room temperature and in the refrigerator for a couple of weeks.

Smart Cooking Tips:

  2. Adjust adding the peanut butter for binding the energy balls.

  3. You could replace the peanut butter with almond butter and honey with maple syrup.

  2. Add peanut butter, honey, vanilla extract and blend again until all the ingredients combined well.

  3. Shape them into small balls and serve or store in the refrigerator.

Tortilla pinwheels are the easy party appetizer recipe. You can choose fillings according to your choice. Simply seasoned cream cheese and bell pepper combo is enough to make the delicious pinwheels.

Choosing the good quality tortillas is important to make delicious pinwheels. Usually, store-bought tortillas are not my favorite. It won’t taste fresh and good just like the homemade tortillas. At friends home, they hosted a get together with around 35 to 40 people for Halloween and they asked me to prepare an appetizer. And that’s when I need to buy the store-bought tortillas.

I found Maria and Ricardo’s soft corn tortillas at whole foods that really taste fresh and delicious just like the homemade ones. They are easy to wrap around the fillings without getting crack or break. These tortillas are made with simple and wholesome ingredients.

No-GMOs, no artificial flavors, colors or preservatives. Just fill with Mucho Goodness. They have different varieties of tortillas like the white flour tortilla, white corn tortilla, soft yellow corn tortilla, sprouted grain tortilla, whole wheat tortilla, and multi-grain tortilla.

  • 4 no Maria and Ricardo's Soft Corn Tortillas
  • 1 tbsp Cream Cheese
  • 1 no Avocado
  • 0.50 tsp Salt (to taste)
  • 0.25 cup Chopped Cilantro
  • 1 tsp Lemon Juice
  • 1 no Jalapeno Pepper Seeded
  • 2 tbsp Onion Chopped
  • 2 tbsp Tomato Chopped
  • 1 lb Chicken Boneless, Skinless
  • 1 tsp Salt (to taste)
  • 1 tbsp Soy Sauce
  • 1 no Onion Sliced
  • 1 no Green Bell Pepper Sliced
  • 1 tsp Coriander Powder
  • 1 tbsp Red Chili Sauce
  • 2 tbsp Oil
  1. For pan seared chicken: Slice the chicken breast thinly. In a pan, heat oil, add onion and cook until soft. Add bell pepper, chicken, soy sauce, coriander pepper, salt, and cook on high heat until the chicken is done. Add red chili sauce and mix well. Pan seared chicken is ready.
  2. For the creamy guacamole: Blend cream cheese, avocado, salt, lemon juice, jalapeno pepper, and coriander leaves together. Add chopped onion, tomato and mix well.

  3. Warm the tortillas for 30 sec on the skillet. Spread creamy guacamole, add chicken and roll. Cover the roll with plastic wrap or foil and refrigerate for at least 30 mins.

  4. Cut them into small pieces using a sharp knife and serve.

How to serve tortilla pinwheels:

Serve tortilla pinwheels as an appetizer or snack. It is great for the kids’ lunch box too.

Quinoa coconut rice is an easy, delicious and healthy recipe in just 30 minutes. It is an excellent lunch box recipe for everyone.

How to cook quinoa?

Quinoa is easy to cook similar to white rice. Rinsing the quinoa several times is the important step because quinoa is coated with the natural bitter coating. To get rid of the bitter coating rinsing the quinoa many times is important.

Quinoa – 1 cup
Water – 2 cups
Salt – 1 pinch

  1. Rinse quinoa thoroughly under cold running water using a fine mesh strainer.
  2. In a deep saucepan, add water, salt and bring to a boil. When the water starts boiling, add quinoa, cover and cook until the quinoa becomes soft and all the water gets absorbed the quinoa.

  3. Uncover the lid, mix gently and serve.

Smart Cooking Tips:
  1. Let the quinoa cool down before mixing with the coconut mixture that helps to mix evenly.
  2. Adding cashew nuts are optional.

  3. You could replace the quinoa with white rice.

Indian Style Quinoa Recipes:

Quinoa is known as Thinnai in Southern parts of India. It is a healthy replacement for white rice in pulao, idli, dosa, and pongal. Being a South Indian, rice is the main part of an everyday meal. I replaced white rice with quinoa in my diet and trust me I reduced 20 lbs in 5 months with moderate workout 3 days per week. It helped me with the weight loss, the protein and fiber content in the quinoa make us feel fuller with the smaller quantities and keep us fuller for a long time.   • 1 cup Quinoa
  • 1.50 cup Coconut Grated
  • 0.50 tsp Mustard Seed
  • 1 tsp Urad Dal
  • 1 tbsp Oil
  • 3 no Dry Red Chilies
  • 1 pinch Asafoetida (Hing)
  • 1 spring Curry Leaves
  • 0.50 tsp Salt (to taste)
  • 2 cups Water (to cook quinoa)
  1. In a saucepan, add water, salt and bring to a boil. Add quinoa, cover and cook until the quinoa becomes soft and all the water gets absorbed by quinoa. Uncover the lid, mix gently and let it cool.
  2. In another saucepan, heat oil, add mustard seeds and let it splutter. Add urad dal, asafoetida, curry leaves, dry red chilies, cashew nuts, and roast until the cashew nuts color changes to golden brown.

  3. Add grated coconut and cook until the coconut gets roasted slightly. Add quinoa, mix well and serve.

How to serve quinoa coconut rice?

Serve quinoa coconut rice with any of favorite side dish. Simple boiled egg goes well with this dish.
