Cold, yummy creaminess. Everything ice cream should be!
This one-ingredient, creamy treat is not only approved by my 5-year-old son, it's super easy to make, dairy-free and made from whole fruit with no added sugar or artificial anything. A mom's dream come true!
My son loves, loves, loves his ice cream. A couple of summers ago he woke up asking for ice cream for breakfast which led to early morning conversations about why it's important to start our day with something a bit more nutritious. This year, I want to be prepared when summer gets here with a healthier option - banana ice cream. I took a whirl at making banana ice cream and it's delicious! And I love that it has only one ingredient - frozen banana!
One-Ingredient Banana Ice Cream Recipe
Ingredients:
2-3 Ripe Bananas (ripe bananas will taste sweeter)
Directions:
Peel the bananas, cut them into chunks and freeze until fully frozen.
Use a high-speed blender or food processor and blend until the bananas have a creamy consistency that resembles ice cream. (I use my food processor.)
If your bananas seem dry and not at all creamy, you can add a little non-dairy milk.
Eat immediately and store any left overs in the freezer. I find that if you leave banana ice cream in the freezer overnight the consistency will be firmer and resemble hard serve ice cream.
Optional: Sprinkle your banana ice cream with cinnamon, a drizzle of raw honey, homemade granola or serve with your favorite ice cream toppings.
