Clear veg soup recipe is ideal recipe for weight watchers. This recipe is completely loaded with vegetables which are high in fibre .The veggies used in this recipe is open ended.You can use any vegetables of your choice.This is perfect recipe for winter season.

INGREDIENTS:

-1tsp butter

-2-3 cloves of garlic (chopped)

-1 carrot sliced

-5-6 mushrooms sliced

-3 spring onions sliced and  chopped green part

-1/4 cup shredded cabbage

-salt as per taste

-1/4 tsp black pepper

-1tsp lemon juice

-4 cups water or vegetable stock

PROCEDURE:

1. In a pan heat butter and saute garlic on high flame for a minute.

2.Add sliced spring onion and continue saute .

3.Further add sliced mushrooms ,carrot and saute for 2 minutes.

4.Add vegetable stock or water.

5.Get the soup to boil for 10 minutes or till vegetables are partially cooked.

6.Simmer for 5 minutes .

7.Add shredded cabbage .

8.Now add salt ,black pepper and lemon juice.

9.Finally serve clear veg soup piping hot.

INGREDIENTS:

-1 tsp butter

-1 small sliced onion

-4 cloves of garlic

-small piece of ginger (chopped)

-1bay leaf

-2 medium carrot chopped

-6 tomatoes chopped

-salt as per taste

-5 corn of black pepper

-5 cups of water

-2 slices bread for croutons

PROCEDURE:

1. In a kadai heat butter and saute onion slices,garlic ,ginger and add one bay leaf.

2.Add chopped carrot,tomatoes ,pepper corn and salt.

3.Cook for 5 minutes.

4.Add water ,cover and boil it on high flame.

5.After one boil cook it on low flame for 10-15 minutes or till tomatoes turn soft.

6.Now remove the bay leaf and cool the mixture.

7.Now sieve the mixture and blend to smooth paste. Save the water.

8.Sieve the tomato paste and add the saved water or you can add more water to adjust the consistency.

9.Boil the soup on low flame for 5 minutes.

10.Finally serve hot creamy tomato soup with bread croutons.

How To Make Croutons:

1.Cut the slices into small square pieces.

2.Heat the pan ,add little butter and bread pieces.

3.Roast it on low flame till bread turn brown.

4.croutons are ready.

INGREDIENTS:

-1 french loaf

-4 tbsp soft butter

-8-10 cloves of garlic (finally chopped)

-1 tsp oregano

-1 tbsp chilli flakes

-1/2 cup mozerella cheese

-1/2 cup processed cheese

-1 small chopped capsicum

Procedure:

1.Firstly, In a bowl mix soft butter,chopped garlc and oregano.

2.Make sure everything is mixed well.

3.Now cut diagonally slices of french bread loaf.

4.Spread the butter on the slice ,put chopped capsicum over it.

5.Sprinkle oregano and chilli flakes over it.

6.Combine both cheese (mozzarella and processed) in a bowl.

7.Spread cheese over the slice .

8.Bake it on 180 degree celsius for 10-12 minutes.

INGREDIENTS:

-2 kacche kele /unripe banana

-2tsp oil

-1/4 tsp jeera/ cumin seeds

-1 chopped green chilli

-1/4 tsp red chilli powder

-Sendha salt as per taste

PROCEDURE:

1.Peel unripe bananas and cut in round slices.

2.Put oil in a pan ,add cumin seeds,green chilli, saute it.

3. Add banana slices ,saute it well.

4. Cover and allow to cook for 5 minutes .

5.Add salt and red chilli powder ,mix it.

6.Sprinkle 2 tbsp water ,cover and cook till bananas soften.

7.Serve it hot and immediately.

INGREDIENTS:

-1tbsp. clarified butter

– 1/2 tsp shahi cumin seeds

-1 small cinnemon  stick

-2 green cardamom

-1 small bay leaf

-1 clove/laung

-1 black cardamom

-2-3 black pepper corn

-1 tsp crushed fennal seeds /saunf

-1/4 tsp ginger powder

-1 cup long basmati rice (soaked for 30 minutes)

-1/2 cup yogurt

-5-7 strands of saffron

-2 cups water

-salt as per taste

-2-4 tbsp clarified butter

-10-12 cashews

-10-12 almonds

-10-12 pistachioes

– 10-12 rasins

-1/4 cup pineapple dices

-1/4 cup pomegranate seeds/anar

PROCEDURE:

1.Soak the rice for 30 minutes.

2.soak the saffron in warm milk .
3.Heat the clarified butter or ghee in a kadai or pan.

4.Add cumin seeds,cinnemon  stick,green cardamom,1 small bay leaf,1 clove/laung,black cardamom,2-3 black pepper corn, crushed fennal seeds /saunf, ginger powder.

5.Saute it for 30 seconds or release the aroma.

6.Add the drained rice and saute it for 30 seconds.

7.Add yogurt on low flame ,saffron mixture and water.

8.Cover it and allow to cook on low flame till water evaporate.(stir ocassionally)

9.In another pan ,heat the clarified butter and fry all the nuts one by one.

10.Now check the rice ,if all water is absorbed,rice is ready.

11.Now add all dry fruits and fresh fruits ,mix it and serve it.

INGREDIENTS:

-1 cup green moong dal

PROCEDURE:

1. Wash and soak the dal for 5-6 hours.

2. Sieve the dal and wash again.

3. Place the dal in a collander and cover with a damp cloth.

4. Place the collander in a warm place in your kitchen (for example, in the oven or microwave) for 6-7 hours (in hot weather) or 12-14 hours (in cold weather).

5. Sprouts are ready!

INGREDIENTS:

-1 cup gram dal (chana dal), soaked for 2 hours

-3 potatoes, boiled and grated

-6 Tbsp oil

-Pinch of heeng (asafoetida)

-1/2 tsp cumin seeds

-1 small green chilli, chopped

-1 tsp chopped ginger

-Salt, to taste

-1/4 tsp red chilli powder

-1/4 tsp chaat masala

-1/4 tsp amchur (dry mango powder)

-1/4 tsp garam masala

-8-10 raisins

-1 Tbsp cashews, chopped

-1 Tbsp fresh coriander leaves (cilantro)

-4 Tbsp corn flour (or All Purpose flour, or a mix)

-Green (mint) chutney

-Tamarind chutney

PROCEDURE:

Prepare Stuffing:

1. Soak gram dal for 2 hours.

2. Cook gram dal in pressure cooker until 2 whistles. Release the pressure and sieve the dal.

3. In a frying pan, heat 2 tsp oil. Add pinch of heeng (asafoetida) and cumin seeds, and stir well. Add green chilli and ginger, and stir well.

4. Add boiled gram dal, mix well, and cook until all moisture is absorbed.

5. Add salt, red chilli powder, chaat masala, amchur powder (dry mango powder), garam masala, and mix together well.

6. Add raisins, cashews, coriander leaves (cilantro), and mix well. Remove from heat and let cool.

Prepare Outer Layer

1. In a bowl, place grated boiled potatoes, corn flour (or All Purpose flour, or a mix of flours), salt, and mix together to form a smooth dough.

Prepare Tikki (Potato Chop)

1. Grease your hands, take a portion of the potato dough, and make a large ball. Flatten the ball from the center.

2. Place 1-2 tsp stuffing in the center and seal it very well.

3. Roll on a cutting board to smooth the edges and form a nice circle.

4. Dust cutting board with flour, and place your tikkis on the board as you shape them.

Cook Tikkis

1. In a pan, heat 4 Tbsp oil on medium heat. Place tikki in the pan for a shallow fry. Cook for 2-3 minutes, then flip and cook for another 2-3 minutes, until golden brown.

2. When nice and crispy, remove from heat and place on paper towel to absorb extra oil.

3. Serve hot with green (mint) chutney and tamarind chutney.

TIPS:

1. You can adjust corn flour or All Purpose flour quantity, according to potato’s quality. If the potato is sticky, add more flour.

INGREDIENTS:

-1 cup wheat flour

-1 cup ground sugar/ jaggery powder or crumbled

-3/4 cup -1 cup clarified butter/ghee

-100 gm gond/edible gum

-1/2 cup almonds

-1/2 cup cashews

-1/4 cup melon seeds

-1 cuwalnutp makhana

-1/2 cup walnut

-1/4 cup grated coconut

-1/4 tsp nutmeg powder

-1 tsp cardamom powder

PROCEDURE:

1.Firstly, in a pan  heat ¼ cup ghee and roast  gond in batches on slow flame.

2.Crush the gond with your hands or with a help of rolling pin.

3.Roast makana also on slow flame. Crush it in chopper.

4.Now chop cashews, almonds,walnuts together and keep aside.

5.Add clarified butter in a pan, heat it and add wheat flour and roast it on slow flame.

6.Stir continuously and  after 50% roasting add chopped dry fruits .

7.Mix it and roast it properly, add melon seeds and grated coconut.

8.After proper roasting flour has changed the colour.

9.Now add crushed makhana , gond /edible gum, cardamom powder and nutmeg powder.

10.Turn off the flameand when it is warm add jaggery/ground sugar.

11.Now make ladoo with greased hands,when the mixture is still warm.

12.Finally enjoy gond ladoo for a month when stored in a airtight container.
