Kids and adults will love this Cheesy Noodle Casserole made of cream cheese, shredded cheddar, cottage and parmesan cheese.

Ingredients:

  • Inn Maid Extra Wide Egg Noodles – 1 (16 ounce) package
  • Marzetti Garlic & Butter Croutons – 1/2 cup
  • Cheddar cheese soup – 1 (10 3/4 ounce) can
  • Half & half – 1 cup
  • Cream cheese – 1 (8 ounce) package
  • Shredded cheddar cheese – 1 (8 ounce) bag
  • Salt & pepper, to taste
  • Butter – 2 tablespoons
  • Cottage cheese – 1 tub (16 ounces)
  • Shredded parmesan cheese – 1/2 cup

Directions:

  1. Preheat oven to 375°F. Cook noodles in steps as per directions on package.
  2. Mix together noodles and cottage cheese in a 13″ x 9″ baking dish, set aside.
  3. Medium heat the saucepan, melt together soup, half & half, cream cheese, cheddar cheese, salt, pepper and butter in it and stir continuously.
  4. Pour the mixture on noodle mixture and stir together.
  5. Sprinkle Parmesan cheese and croutons on top.
  6. Bake for 10 to 15 minutes.
  7. Ready to serve.

The Maggi noodles pie is an easy recipe to cook with less ingredient which is readily available in almost everyone’s house.

Ingredients:

  • Refined Flour – 1 Cup.
  • Maggi – 1 packet.
  • Butter – 25 gms.
  • Cheese – 25 gms.

Directions:

  1. Cook Maggi noodles as per the instructions on the packet and keep it aside.
  2. Mix butter and refined flour in a bowl till breadcrumbs consistency.
  3. Add cold water to form a tight dough.
  4. Spread the dough in a greased baking dish and make sure the dough covers the inside of the tin completely.
  5. Place the cooked Maggi in the center of the tin.
  6. Grate cheese from the top.
  7. Put it in Air Fryer for 10 min at 180 degrees.
  8. Serve Hot.

Maggi Pakoras/Fritters is a special rainy day recipe inspired by pakoras. It is often served hot with tomato sauce or with pudina chutney.

Ingredients:

  • Maggi Noodles – 2 pkts.
  • Maggi Seasoning – 2 pkt.
  • Refined Flour – ¼ cup.
  • Sliced Onions – ¼ cup.
  • Green chillies (chopped) – 2 nos.
  • Yellow peppers (chopped) – ¼ cup.
  • Capsicum (chopped) – ¼.
  • Red peppers (chopped) – ¼ cup.
  • Italian Seasoning – 2 tsp.
  • Chilli flakes – 1 tsp.
  • Garlic (chopped) – 2 tsp.
  • Coriander chopped – 2 tsp.
  • Grated cheese – ½ cup.

Directions:

  1. Heat up the noodles alongside the Maggi flavoring, let them chill off and exchange to a bowl.

Capellini Thai Beef Salad is an advance version of the Thai dish “Larb” in which angel-hair pasta (capellini) has been added to turn it into salad.

Ingredients:

  • Capellini – 1/2 pound.
  • Cooking oil – 2 tablespoons.
  • Asian sesame oil – 3 tablespoons.
  • Sliced almonds – 1/2 cup.
  • Pepper, seeds and ribs removed, minced – 1 jalapeño.
  • Minced fresh ginger – 1 teaspoon.
  • Ground beef – 1 1/2 pounds.
  • Salt – 1 teaspoon per as per taste.
  • Asian fish sauce (nam pla or nuoc mam)* – 1/4 cup.
  • Scallions with green tops, chopped – 4 nos.
  • Fresh mint finely chopped – 1 cup.
  • Lime juice (from about 2 limes), plus 1 lime, cut into wedges, for serving – 1/4 cup.

Directions:

  1. Cook the capellini for about 5 minutes in a large pot in salted boiling water.
  2. Drain the capellini thoroughly with cold water.
  3. Toss capellini in 1 & 2 tablespoons of the cooking oil and sesame oil respectively.
  4. Toast the almonds on low heat in a frying pan stirring frequently till they turn golden brown or else toast nuts in an oven for few moments and then chop them.
  5. Heat the cooking oil in a pan over a high heat then add jalapeno, ginger, beef and salt cooking the beef for few minutes till it turn golden brown.
  6. Remove the heat, stir occasionally and add sesame oil, fish sauce, scallions, mint and lime juice.
  7. Put capellini on plates and top it with the beef salad.
  8. Sprinkle plate with minced jalapeno, chopped almonds.
  9. Serve with lime wedges.

Maggi bonda / Vada or also known as Maggi balls is inspired from the famous Mumbai street food snack Vada pav or Wada pav. The ingredients used in the recipe is mostly from vada pav. I am pretty sure that this recipe will bring water in the mouths of the people who are missing vadapav and fond of maggi instant noodles. This recipe is good for a small party at your home and can be prepared in short time.

Ingredients:

  • Maggi or any other instant noodles – 1 packet.
  • Cooking oil – 1 tbsp.
  • Mustard Seeds – ½ tsp.
  • Cumin Seeds – ½ tsp.
  • Asafoetida – ¼ Tsp.
  • Potatoes (boiled & mashed) – 2 cups.
  • Green Chilly & Ginger Paste – 1 tsp.
  • Turmeric Powder – ½ tsp.
  • Coriander Leaves chopped – 1 tbsp.
  • Besan – 1 cup.
  • Baking soda – 1 pinch.
  • Oil – 1 tbsp.
  • Salt to taste.
  • Water as required.
  • Oil (for deep frying).

Directions:

  1. Cook instant noodles as per the instructions given on the packet. Keep it aside and allow it to cool.
  2. In a small pan, heat cooking oil and add mustard seeds till it crackles. Add cumin seeds and asafoetida. Switch off the flame. Keep the tempering aside.
  3. Mix well in a bowl, mix potatoes, green chilies and ginger paste, turmeric powder, coriander leaves, lemon juice, salt to taste, and the prepared tempering.
  4. Add instant noodles and mix gently do not break the noodles. Make small equal sized balls from the mixture. Keep in the refrigerator until required.
  5. Make thick batter using water in a separate bowl mixing besan, oil, baking soda and salt to taste (approx 1 cup).
  6. Heat oil for deep frying.
  7. Dip balls into the thick batter. Coat the balls well with the batter and gently slide the balls in the hot oil.
  8. Fry till golden brown.
  9. Once golden brown remove the balls on paper towel to get rid of excess oil.
  10. Serve hot with tomato sauce.

Instant Noodle Cutlet/Croquette is a delicious croquette noodle recipe. A special recipe to surprise your kid and an attractive snack to your guests.

Ingredients:

  • Maggi masala noodles or any instant noodle packet – 1 packet.
  • White/Wheat Bread slices – 2 nos.
  • Potato – 1 no. (big).
  • Fresh/frozen green Peas – 1/4 cup.
  • Carrot, finely chopped – 1 no.
  • Capsicum, finely chopped – 1 no.
  • Onion, finely chopped – 1 no.
  • Green chili, finely chopped – 2-3 nos.
  • Ginger-Garlic paste – 1 tsp.
  • Fresh coriander leaves chopped – 1/4 cup.
  • Garam masala – 1/2 tsp.
  • Chaat masala – 1/2 tsp.
  • Lemon juice- 1/2 lemon.
  • Oil – 1 tsp.
  • Salt to taste
  • Oil for shallow frying

To coat:

  • All purpose flour/cake flour – 2 tbsp.
  • Bread crumbs – 3/4 cup.

Directions:

  1. Break the noodles into small pieces (do not drop the whole noodle block) before preparing them. Prepare instant noodles with taste maker according to the instructions given on the pack. Let it cool.
  2. Boil potatoes and green peas in microwave or cooker. Mash the boiled potatoes and peas well lightly.
  3. Drop finely chopped carrots and capsicum in hot water for 2 mins and strain.
  4. Heat a tsp of oil in a pan. Add finely chopped green chilies, fry well.
  5. Add finely chopped onions with ginger-garlic paste and fry slightly till they are translucent. Cool the mixture.
  6. Mixer the bread slices to a coarse powder.
  7. Mix well all the ingredients (mashed potatoes and peas, carrot and capsicum, mixture of chilies, fried onion and garlic-ginger paste, lemon juice, powdered bread) in a bowl.
  8. Add salt, garam masala and chaat masala as per taste and mix well.
  9. Add cooled cooked noodles to the bowl and mix. (Mix gently to avoid the noodle turn into paste).
  10. Make croquette of 2 ” wide and 3/4 ” thickness approximately with the mixture.
  11. Make a slurry out of all purpose flour and whisk well to form a thin paste. It should neither be very thick nor very thin.
  12. Drop one croquette at a time in the slurry and coat it with bread crumb.
  13. Add a few tbsp of oil on a thick hot frying pan and shallow fry the croquette on both sides until golden and crisp.
  14. You can even deep fry (make sure you rest them in fridge for an hour at least before frying).
  15. Repeat the process for all the croquette.
  16. Sprinkle chaat masala over the cutlets and serve hot with tomato sauce.

Tips:

  1. The process of dipping the cutlets in slurry and coating them with bread crumbs is optional.
  2. If croquette is not holding its shape mix another bread slice (run in the mixer to powder).
  3. Adding taste maker while making noodles is optional.

Egg bacon ramen is a quick to cook recipe when you are hungry, the brilliant combination of ginger and vinegar gives it an unique taste.

Ingredients:

  • Homemade or low sodium chicken broth – 1 quart
  • Fresh ginger – 1 inch
  • Garlic – 4 cloves
  • Smoky slab Bacon – 3 ounces
  • 1 piece about 2″ from a stalk of lemongrass
  • Ramen noodles – 1 packet
  • Dark soy sauce – 2 tablespoons
  • Black vinegar – 1 tablespoon
  • Eggs – 2 nos
  • Scallions chopped- 1 handful
  • Srirachia or your favorite hot sauce – 1 drop
  • Julienned mustard greens, baby spinach leaves, or kale – 1 handful

Directions:

  1. Place bacon, ginger, garlic & lemongrass in a pot. Add stock and bring to a simmer. Simmer for 30 to 45 minutes.
  2. In a separate pot, bring water to a boil and cook ramen noodles according to directions. Drain and set aside.
  3. Remove bacon, lemongrass, and ginger. Reserve the bacon for later. Add in greens (unless using baby spinach), soy sauce, and vinegar. Taste and check for salt, then add salt and pepper to taste.
  4. Slice the bacon. Add sliced garlic cloves to a pan with the bacon, and fry both until crisp.
  5. Drop eggs one at a time into the stock. (if you crack them in a bowl first, it is less likely that you will accidentally get a shell in your soup.)
  6. Place ramen noodles (and baby spinach if using) in a bowl. Carefully remove the eggs before they are completely cooked (a slotted spoon works best). Ladle the hot broth over the eggs and noodles.
  7. Cover with Bacon, fried garlic, and scallions. Garnish with a squirt or two of hot sauce.

Ingredients:

  • Maggi Masala – 1 packet
  • Green Chili (Chopped) – 1 no.
  • Onion (Chopped) – ¼ cup
  • Ginger (Chopped) – 1 tsp
  • Red Bell Pepper (Chopped) – ¼ cup
  • Yellow Bell Pepper (Chopped) – ¼ cup
  • Green Peas – 1 tbsp
  • Carrot (Chopped) – ¼ cup
  • Cheese (Pizza Cheese 1 inch sticks) – 150 g
  • Oil – 400 ml
  • Breadcrumbs (for frying)
  • Water – 1½ cup

  1. Heat oil in a pan.
  2. Add onions, ginger and green chilies, saute for a minute.
  3. Continue preparation for another 2 minutes adding remaining vegetables.

  5. Crush the Maggi noodles and add to the boiling water.
  6. Cook and reduce the water, mash the noodles.
  7. Take a small ball of the noodle mixture and flatten it out on your palm.
  8. Place cheese in center of flattened noodle mixture and fold sides to form a cylinder.
  9. Coat poppers with bread crumbs.
  10. Deep fry till golden brown.
  11. Serve with ketchup or Schezwan sauce.

Thai-Style Peanut Dressing Spicy Soba Noodle Salad is a lighter, brighter & spicier soba noodle recipe. This peanut noodle can be refrigerated upto 2 days.

Ingredients:

  • Vegetable oil – 1 1/2 tbsp
  • Vidalia or other sweet onion finely chopped – 1/4 cup
  • Jalapeño, seeded and minced – 1
  • Garlic cloves, minced – 2
  • Peeled fresh ginger minced- 1 tbsp
  • Creamy peanut butter – 1/4 cup
  • Thai red curry paste – 1 1/2 tbsp
  • Unsweetened coconut milk – 1/2 cup
  • Chicken stock or low-sodium broth – 1/3 cup
  • Soy sauce – 1 tbsp
  • Sugar – 2 tsp
  • Fresh lime juice – 2 tbsp
  • Salt as per taste
  • Dried soba noodles – 1 pound
  • Finely julienned carrots – 1 cup
  • Finely julienned cucumber – 1 cup
  • Finely grated lime zest and chopped cilantro, for garnish

Directions:

  1. In a medium saucepan, heat 1 tablespoon of the oil until shimmering.
  2. Add onion and cook over moderate heat, stirring occasionally, until softened and just starting to brown, about 5 minutes.
  3. Add jalapeño, garlic and ginger and cook until fragrant, 1 minute.
  4. Add peanut butter and red curry paste and cook over moderately low heat, stirring, until smooth, about 2 minutes.
  5. Whisk in the coconut milk, chicken stock, soy sauce and sugar and simmer until thickened slightly, about 3 minutes.
  6. Remove from the heat.
  7. Whisk in the lime juice and season with salt; let cool completely.
  8. In a large pot of salted boiling water, cook the soba noodles until al dente, about 5 minutes.
  9. Drain and rinse under cold running water until cooled.
  10. Shake out the excess water and blot the soba dry.
  11. Transfer the noodles to a large bowl and toss with the remaining 1/2 tablespoon of oil.
  12. Add spicy peanut dressing and toss well to coat thoroughly.
  13. Add carrots and cucumber and toss again.
  14. Garnish the soba with the lime zest and cilantro and serve.

Ingredients:

  • Maggi Noodles / Instant noodles- 1 packet
  • Chickpeas – 1/2 cup
  • Boiled Potatoes – 1/2 cup
  • Tomato – 1 no. chopped
  • Onion Small – 1 no. chopped
  • Coriander leaves – 2 tbsp finely chopped.
  • Green sauce – as per taste.
  • Date sauce – as per taste.
  • Tamarind sauce – as per taste.
  • Chat masala – as per taste.
  • Salt – as per taste.
