This little number was inspired by a girl’s trip to Nashville last November.  If you haven’t been to Nashville – it’s a must – so fun!  We enjoyed these moonshine lemonades on the rooftop patio at Acme Feed and Seed.

Here’s our version which we think will be a great addition to your summer cocktail menu. It’s refreshing, great tasting, and if you make your own lemonade, not too high on the calories.

Ingredients: (drink for two)
– 2 1/2 Cups fresh, homemade lemonade* (you could also use Simply Lemonade or Minute Maid Light Lemonade from the refrigerated section of your grocery store (not the frozen, canned stuff.)
– 4 oz moonshine (we used Tennessee Mellomoon shown below)
– ice – this will depend on how slushy you want these drinks..

Instructions:  Add ingredients to blender and blend away.  Top off with a lemon and a fun straw.  Enjoy this outside on your deck, patio, or bring to a friend’s outdoor space!  It’s a great summer cocktail

*Make-your-own-lemonade:  1/2 C Lemon Juice (concentrate), 4 oz simple syrup, and water to taste.

Now that summer is almost here, many of us are trying to shave off some winter weight and tone those muscles.  While there are so many benefits of getting in the gym or out on the trail, the extra workouts (and let’s face it, just getting older) may be causing a few extra aches and pains.   Adding to this, the list of things you need to accomplish by the end of the school year can seem overwhelming and may be keeping you up later at night than usual.  If this is true for you,  you may want to add a soothing cup of Golden Milk to your nightly routine.

Not only does turmeric have many benefits, but almonds and honey (and some recipes call for ginger) will help aid in relaxation.  So, goldmen milk will help you enjoy a peaceful sleep while your body is healing and repairing.  It’s a pretty good deal

Below is Ashlee’s recipe for Cinnamon Gold Milk.  Try it and let us know what you think.

Cinnamon Golden Millk:

  • 1 cup coconut milk / almond milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond butter

Add all ingredients to pan stir heat and serve!

I’ll get to the reason why I used the word “empowering” in just a minute.  But first, I want to tell you about Body by Cordoba’s coffee scrubs. I made enchiladas for the kids a few nights ago and not wanting to make a separate meal for myself, I tried to come up with a healthier option.  Yes, I know enchiladas aren’t that terrible for you, but my metabolism in my early 40s has decided that white, processed carbs (a.k.a. a tortilla) should be converted into fat just as fast as I can swallow it down.  So, like many of us trying to combat this slowing metabolism head on, I’ve decided to lower my carb intake, specifically processed carbs.  This Chicken and Black Bean Enchilada Stuffed Pepper recipe was my solution to have my enchilada and eat it too

Ingredients:
– 4 Red Peppers
– 1 lb Chicken
– 1 yellow squash diced
– Can of black beans
– 4 oz can of green chiles (mild or hot depending on your tolerance for spice)
– Can Enchilada Sauce (again mild or hot based on your preference)
– 1/2 Cup diced white onions
– 1/2 cup shredded mexican cheese (optional)
– Tbsp EVOO
– 1 jalapeño (sliced – leave a few slices out of mix to put on top)
– salt and pepper to taste

Directions:
– Preheat oven to 400F.
– Saute onions in olive oil.  Add chicken and continue cooking until chicken is almost cooked through.  Add yellow squash and cook until it is starting to get tender and chicken is cooked.
– Add chicken mixture to a large bowl and add remaining ingredients.

– Cut off the tops of the red peppers and deseed.  Stuff each pepper with the enchilada mixture.  You can top with extra cheese which I know my husband would have preferred.  Place your sliced jalapeño on top of each stuffed pepper.
– Spray baking sheet with non-stick spray.  Place your stuffed peppers on top of the backing sheet and cook for 15 – 20 minutes (until red peppers are soft and roasted).

Top each cooked pepper with salsa.  Add a dollop of sour cream,  greek yogurt, or guacamole for an added touch of flavor   Enjoy!

This beautiful, creamy smoothie is perfect to get you thinking about someplace tropical.  We recommend throwing in a fun straw, closing your eyes, and let your mind wander for a while!

The coconut in this smoothie is not only great as a dairy substitute, it is also good for you. Coconuts are rich in fiber, vitamins C, E, B1, B3, B5 and B6.  They also contain selenium, calcium, magnesium, and phosphorous.  Coconuts also help improve your immune system, help detoxify, and support your metabolism.

The mango in this smoothie is not just for taste, it also provides amazing health benefits like it’s co-ingredient (Is “co-ingredient” a word???).  Mangos are high in antioxidants which help fight against cancer.  They also contain high levels of fiber, vitamin C, and pectin which help combat cholesterol (especially the bad cholesterol).    They are also good for clearing your skin and improving eye health.

So, you’re not just escaping to the tropics with this smoothie, you’re actually improving your health at the same time!

Tropical Smoothie Ingredients:
– Handful of spinach
– Coconut chunks (found Frozen at Trader Joes)
– Plain Kefir*  – gets your probiotics
– Tbsp Hemp seeds
– Mango
– 1 – 2 Scoops Protein powder of choice
– Avocado (half)
-4-5 ice cubes
*You can use coconut kefir if you are dairy-free.  This will only enhance the coconut flavor

Instructions: Add your spinach, kefir, hemp seeds, mango, protein powder, and avocado to your blender.  Add the frozen coconut and ice last.  This order will help liquefy the smoothie faster and easier.  Blend until smooth.

Now, kick back and relax….that is, at least, until the kids start screaming for help for something really important…like “Mom! Where’s my sports headband???”

We are coming in hot with Mothers Day next week! We already gave you some awesome ideas (checkout that post) but here are a few spa treatments that you should consider gifting to the amazing mom in your life (especially if that is you!)

Last week we visited Santos Salon & Spa  and were lucky enough to try out The Essential Facial and Dermablading.

The Essential Facial is a personalized facial designed to meet your specific skin care needs.  Promotes and maintains healthy skin with a thorough deep pore cleansing, exfoliation, extractions, and a customized mask. And if that wasn’t enough, during your experience you will also receive a relaxing massage of the upper body, hands, and feet. Sixty minutes later my skin looked and felt great, and I felt relaxed and peaceful.  It was a great experience and felt like Mother’s Day came early:)

Dermablading is a procedure designed to exfoliate the top layer of skin as well as remove any and all peach fuzz on your face.  You are left with fresh skin that feels so soft. Your make-up will glide on easily and look better and over time after continually doing more dermablading you will start to see fine lines and dark spots disappear. So this is a no brainer if you are looking for those types of results. Sounds a bit crazy that this could be relaxing “a blade to the face?” but it is.

Threading – Threading I believe is better for you than waxing but people have their personal preference. My preference is threading for three reasons. Number one, I have the right girl ADITI! Number two, waxing over time can thin the skin and create wrinkles.  It also can cause pigmentation issues if you over wax. Number three, it is so precise, and I personally love that.  Do your research and find a good person and give threading a try instead of waxing. I mostly use threading for my brows but people use threading all over.

These treatments were given to Libby and I by one of their incredible aestheticians Aditi. Aditi is more than just an extremely knowledgable aesthetician, but also one sweet lady to boot! I have had the pleasure of going to her for eyebrow threading for the last 7 years.

My kids like the Pink Drink at Starbucks so I wanted to find a way to make it for them without all the cost. I know they will still get the actual drink from Starbucks –  because let’s face it, it’s the whole experience as much as it is getting the drink.  But it can be fun for them to make their own at home (and cheaper too!)

Starbucks Copycat Pink Drink Recipe:

Directions: Fill a cup with ice.  Pour in 3/4 tea, approx. 1 oz syrup, and top it off with a creamer of your choice. Then to make it fun, add fresh strawberries ( or freeze dried strawberries work too), shake and drink!  Add this drink to a cool cup with a lid and a straw!

I’m thinking this could also be a great birthday basket for your teen or one of their friends.
