We looooove some curries & dahls around here. You would seriously think we have an Indian or Thai auntie who influences our cooking.
We just love flavorful and easy dishes, and curry flavors are our go-to. I’ll be uploading a few of our all time faves soon (this Coconut Chickpea Dahl being one of them).
Oh, and also… our Instant Pot. It’s been a really cool addition to our kitchen over the past year. Now keep in mind, that not everything takes an “instant” (lol, yes I was upset when I found out that not everything cooks in an instant), but it’s a great kitchen investment. Now when I make soups, all I do is throw it all in the Instant Pot and press the SOUP button. I walk away and 30 minutes later it’s fully cooked.
Back to this Coconut Chickpea Dahl. I was first introduced to Dahl when my gf, Yvonne Ardestani, who is a vegan chef, made it when she was in Las Vegas visiting me. I LOVED how easy, yet how flavorful this dish was. I couldn’t believe that I had never heard of it before!
Growing up I never tasted any global flavors. The most global dish I had as a child was probably pizza. I am really grateful that we had a huge garden and fresh veggies in our home, but specialty spices were not something used often in the country towns of North Carolina.
It’s really interesting to think back as I feed Lily new foods and I realize I never tried the same things she is trying when I grew up… Like avocados! I never tried an avocado until I was out of high school. Pretty wild huh?
Anyways, I am very happy that I have expanded my palate and I now enjoy all types of global flavors. (Except spicy… Spicy and I do not jive).
So real quick, before y’all get to cooking, let’s talk about why this Coconut Chickpea Dahl is the bomb.
We know this recipe has TONS of fiber, but the thing that really gets me excited is the spices.
The warming spices in this Dahl are incredibly heath promoting AND they are a true beauty food.
Curry is a blend of many spices, with one of the main ingredients in this blend being Turmeric.
Turmeric is the goddess of spices. It’s so good for basically everything – treating acne, acting as pain pills, reducing inflammation, and studies show that it may be helpful in preventing alzheiners.
So for my beauty lovers, did you know how great curry is for your skin? Curry is well known for keeping skin clear and free of acne. Because of it’s anti-inflammatory properties, it can ease redness and the size of pimples.
Have any of you ever made a Turmeric face mask? I may be trying that one soon!
Instant Pot Coconut Chickpea Dahl
1 Cup Red Lentils
1 15 ounce can Chickpeas (drained & rinsed)
1 15 ounce can Coconut Milk
1 Tsp Garlic (chopped)
1 Tbsp Lemon Juice
1 Tsp Ginger (ground)
1 Tsp Turmeric (ground)
1 Tsp Cumin (ground)
1 Tsp Coriander (ground)
1 Tbsp Curry Powder
Handful Baby Spinach
Salt (optional )
Add all ingredients (except spinach and salt) to the Instant Pot.
Press the “Soup” button and let it do it’s thang. (This will take about 30 minutes.)
Once cooked, stir in spinach and add salt if needed.

Last Saturday I was invited to Galleria Sunset’s Spring Fashion Show (it was so fun!).
I am all about supporting local, so it makes me very excited when there’s cool things happening in Henderson.
Side note: Why weren’t there any cool fashion shows like this at my local mall when I was growing up?
So once I arrived to the show, I learned that this show was more than just about fashion. It was actually a fashion + charity league event, which makes it even cooler.
The National Charity League teamed up with Galleria Sunset to bring together this spring fashion show. The National Charity League is a non-profit organization comprised of mother and daughter members in chapters across the USA.
Daughters from the NCL at local high schools in the Vegas valley walked in the fashion show.
And… they had a few guys walk too! The cool thing is that the guys that walked the show were from the Childhood Cancer Foundation.
It seriously made my heart melt.
But before we get too sappy over here, let’s move along and talk about the fashion.
Because Lord knows I need to overhaul my closet for the spring!
From the looks of the show (and from what I’ve been seeing online), bold colors, off the shoulder tops (my fave), sheer skirts, ruffles, and asymmetrical hemlines are WHAT’S IN FOR SPRING.
I don’t know if any of you have noticed, but I almost always wear OTS tops. You know when you find a flattering look for your body type and then you don’t buy anything else EVER (bc why would you?!) Yeah, that’s me.
When I see OTS tops, I go crazy and I buy them all. (pictured above;Yes, I will be buying you!)
And then the prom dresses walked the runway! It totally made my heart smile – so nostalgic! I remember getting so excited looking for my prom dresses, so this brought back so many memories. I’ll have to be honest, I want an excuse to wear a dress like this again soon… because why can’t we wear fancy dresses like this to dinner? I see that as one of the cool things about living in Vegas!

Hey y’all! Hope your Saturday is going well. So today I am heading to a fashion show at the mall here in Las Vegas. I am writing this so quickly as my hair is drying and I multi-tasking trying to think what the hell I am going to wear.

This week, Lily and I have been under the weather. Lil had to get on an antibiotic for an ear infection AND because her toe got infected?!? (So odd!) I started feeling crummy too and on top of that the sides of my face were breaking out, which brings me to the topic of this blog post.
Growing up I had really bad acne. I had acne all over my face, my chest, my back and my arms.
I tried everything to cure my breakouts, but I didn’t know much about natural remedies. I actually thought that my skin was too problematic for natural remedies, and that they wouldn’t be strong enough.
As I grew older, I was introduced to a healthier lifestyle and I became really interested in natural cures. A friend introduced me to essential oils and I realized just how powerful these natural oils are! I wish I had known more about using plants as medicine when I was a teenager because I’m sure I would have been able to forgo many of the prescription drugs I used to treat my acne.

Instagram dropped a BIG announcement yesterday. Some of this gets a bit nerdy, but it matters to anyone trying to build a business or brand on Instagram. Members of my Infinite Influence program ask me all the time, “Should I switch to an Instagram Business Profile”.
The answer has been different for different profiles, but after Instagram’s announcement recently, the answer is a definite YES.
Here’s the short version why:
You’re going to be able to schedule Instagram posts.
You need a Business Profile to do it.
As someone who spends some of their time being anxious about what to post on Instagram next – THIS IS A BIG DEAL. I can’t wait to schedule my Instagram posts.
The nerdy details of this is that Instagram’s API has been more or less the same for developers since day one. In 2017, Instagram began the process of updating the Instagram API to the Instagram Graph API (which is built on Facebook’s Graph API).
They say this change helps businesses manage their organic presence more effectively.
Now I have a thing or two to say about Business Profiles. This might sound kinda crazy, but think about this logic for a second…
If I’m a big business like Instagram (Facebook) and all my revenue comes from more and more people spending money on ads on my platform, I’m going to do whatever I can to get people to start spending more money with me. I’m going to incentivize them in any way I can.
Here’s what I know as well… If you tell me that you’re a business (by switching to a business profile), I’m going to assume you have a budget or an interest in paying to grow your business. So then why wouldn’t I take the information I have about you and then make it harder for your message to be seen by your audience unless you pay for that reach. Why wouldn’t I change to a “pay to play” algorithm?
Now you might say, “Well Instagram and Facebook are great companies and they wouldn’t do that to their users!”
Are you serious? I’m not saying they’re not great companies. I’m saying that it’s in a corporation’s best interest to grow and be more and more profitable year after year. As an end user or an advertiser, being fair or not fair to you, is irrelevant.
If you use their platform, you’re forced to play by their rules.
.ANYWAY… Back to the scheduling.
I’m not going to discourage you or tell you that the secret to success is to remain as a regular profile as long as you can – I actually don’t believe that.
If you’re running a business properly (which involves planning, measuring and mentoring) the data and benefits that a Business Profile gives you is essential.
The one thing I am happy about with this recent announcement is that it DOES make it easier for businesses and entrepreneurs to manage their content on Instagram – a platform that we’re all spending so much time focusing on.
So if you are trying to create a profitable brand and business I want you to do two things:
