Ingredients
For KOFTA:
  • Potato - 1 peeled and grated
  • Paneer - 1 cup crumbled
  • Cumin Powder - 1 tsp
  • Red Chilli Powder - 1 tsp
  • Salt to taste
  • Coriander Leaves -1/4 cup
  • Cornflour - ¼ cup
FOR SAUCE:
  • Oil - 1 tblsp
  • Cumin Seeds / Jeera - 1 tsp
  • Fennel Seeds / Sombu / Saunf - 1 tsp
  • Tomato Puree - from 4 tomatoes
  • Red Chilli Powder - 1 tsp
  • Cumin Powder - 1 tsp
  • Garam Masala Powder - 1 tsp
  • Turmeric Powder - ½ tsp
  • Salt to taste
  • Sugar - 1 tsp
  • Kasuri Methi Leaves (Dried Fenugreek Leaves) - 1 tblsp
  • Cream - ½ cup
Instructions
  1. Mix all ingredients for kofta and shape into small balls.
  2. Deep fry till golden brown. Set aside.
  3. Heat oil in a pan. Add cumin and fennel seeds and let them sizzle.
  4. Add in tomato puree, spice and salt , sugar. Cook till oil separates.
  5. Add water and mix well.
  6. Bring it to a boil.
  7. Add kasuri methi leaves and mix well.
  8. Add in cream and mix well.
  9. Add in kofta and Simmer for 1 min.
  10. Serve.

  • Oil - 1 tblsp
  • Garlic - 4 cloves chopped
  • Onion - 1 large sliced
  • Capsicum / Bell Pepper - 1 sliced
  • Red Chilli Flakes to taste
  • Pasta Seasoning to taste
  • Cooked chicken - 2 cups shredded
  • Cheese Spread - ½ cup
  • Salt to taste
  • Chapati or Tortilla as needed
Instructions
  1. Heat oil in a pan, add in garlic and saute for a min.
  2. Add in onions and peppers and saute for 1 min.
  3. Add cooked chicken, salt, red chilli flakes, pasta seasoning and mix well.
  4. Add cheese spread and mix well.
  5. Take a chapati and spread with this mix and roll it.
  6. Serve.

  1. Heat milk and sugar and bring it to a boil.
  2. Mix custard powder with little milk.
  3. Add this to the boiled milk and mix well.
  4. Cook ill thickens.
  5. Pour this into mould and freeze.
  6. Run this mould under tap water. Unmould and serve.

  • Green Chillies - 3 to 4 chopped finely
  • Ginger - 1 tblsp grated
  • Curry leaves a handful
  • Onion - 1 chopped finely
Instructions
  1. Wash and soak rice, dals for atleast 4 hours.
  2. Drain and take it in a blender and grind till smooth.
  3. Transfer to a bowl, add all ingredients except oil and mix well.
  4. Heat a dosa tawa. Pour ladleful of batter and make dosa. Drizzle oil around the sides.
  5. Cook till golden on both sides.
  6. Serve.

Instructions
  1. Take milk in a sauce pan. Add sugar to it and bring it to a boil.
  2. Take sabja in a bowl and add water to it. Soak it for 10 mins so it plumps up.
  3. Mix cornflour with little water or milk to form a slurry.
  4. Add cornflour mix to the milk and cook till it thickens.
  5. Add sabja and vanilla and mix well.
  6. Pour it into popsicle mould and freeze overnight.
  7. Run the mould under tap water and unmould.

  • Eggplant - 1 sliced into thick slices
  • All Purpose Flour / Maida - ½ cup
  • Breadcrumbs - 2 cup
  • Oregano - 1 tsp
  • Basil - 1 tsp

  • Black Pepper - 1 tsp
  • Garlic Powder - 1 tsp
  • Oil for shallow frying
  • Pasta Sauce as needed (Recipe here)
  • Mozzarella Cheese - 2 cups shredded
Instructions
  1. Preheat oven to 180 degree C.
  2. Mix flour with water to a batter.
  3. Mix breadcrumbs with seasoning, salt and pepper and mix well.
  4. Dip eggplant in the flour batter and coat with breadcrumbs.
  5. Shallow fry till crispy.
  6. Take a baking dish. Spoon some sauce in the bottom.
  7. Place eggplant slices. Top with more sauce and cheese.
  8. Again place a eggplant layer. Spoon some sauce and top with cheese.
  9. Bake for 15 to 20 mins.
