Upside down cakes are so delicious because they have a moist caramel topping over it along with the fruits. The fruits tend to get golden and syrupy. This cake is best served warm with a scoop of vanilla icecream.

Ingredients
For Sauce:
  • Brown Sugar - ½ cup
  • Orange Juice - 3 tblsp
  • Butter - 3 tblsp
  • Orange - 2 peeled and sliced thinly
For Cake Batter:
  • Unsalted Soft Butter - ¼ cup
  • Sugar - ½ cup
  • Eggs - 1 large
  • Vanilla Extract - 1 tsp
  • Orange Zest - from one orange
  • Orange Juice - ⅛ cup
  • Yogurt / Curd - ½ cup
  • All Purpose Flour / Maida - 1 cup
  • Baking Powder - ¾ tsp
  • Baking Soda - ¼ tsp
Instructions
  1. Preheat oven to 180 degree C.
  2. Take brown sugar and orange juice in a sauce pan and heat gently till it comes to a bubble. Add butter and mix well.
  3. Take a nonstick spring form pan and pour the sauce in the base. Top with orange slices.
  4. Take butter in a bowl. Add sugar, vanilla, eggs and mix till creamy.
  5. Add in orange zest, juice and yogurt and mix well.
  6. Add in flour, baking powder, baking soda and fold gently.
  7. Spoon this into the baking pan over the oranges. Spread evenly.
  8. Bake for 40 to 45 mins.
  9. Remove and cool completely.
  10. Slice and serve.

Ingredients
  • Butter - 2 tblsp + more
  • Cabbage - 2 cups shredded
  • Capsicum - 1 sliced thinly
  • Potato - 2 cooked, peeled, mashed
  • Oregano - 1 tsp
  • Pasta Seasoning - 1 tsp
  • Red Chilli Flakes - 1 tsp
  • Green Chillies - 2 chopped finely
  • Mayonnaise - ½ cup
  • Salt to taste
  • Black Pepper to taste
  • Bread Slices as needed
Instructions
  1. Heat butter in a pan, add in cabbage and chillies and saute for a min.
  2. Add in capsicum and mix well.
  3. Add in oregano, chilli flakes, pasta seasoning, salt and pepper and mix well.
  4. Add in mashed potatoes and mix well.
  5. Add in mayonnaise and mix well.
  6. Spoon this into the bread slices and sandwich with other slice.
  7. Cook in butter on a tawa till golden on both sides.
  8. Serve.

Ingredients
FOR CAKE:
  • Unsalted Butter - 150 grams
  • Brown Sugar - 250 grams (1¼ cup)
  • Honey - ½ cup (120 ml)
  • Eggs - 2
  • Dark Chocolate - 100 grams chopped
  • All Purpose Flour / Maida - 1½ cup (180 grams)
  • Baking Soda / Cooking Soda - 1 tsp
  • Cocoa Powder - 1 tblsp
  • Hot Boiling Water - 1 cup (250 ml)
FOR ICING:
  • Water - ¼ cup (60 ml)
  • Honey - ¼ cup (60 ml)
  • Dark chocolate - 1 cup (150 grams) chopped
  • Icing Sugar - ¾ cup (90 grams)
  • Fondant
  • Sliced Almonds as needed
  • Toothpick
Instructions
  1. Preheat oven to 180 degree C. Grease a 23 cm cake pan with oil and line with parchment paper. Set aside.
  2. Take chocolate in microwave for 2 mins and set aside.
  3. Take Butter, brown sugar, eggs, honey in a bowl and mix well.
  4. Add chocolate and mix well.
  5. Add in flour, cocoa, baking soda, Fold gently.
  6. Add in hot water and fold gently.
  7. Spoon this into the baking pan and bake for 45 mins to 55 mins.
  8. Remove it from oven and cool completely.
  9. While the cake is cooling, make icing.
  10. Take water and honey in a sauce pan and bring it to a boil.
  11. Add chocolate and mix till melted.
  12. Now add in icing sugar and whisk till creamy.
  13. Set aside to cool.
  14. Now make honey bee. take fondant and roll it into a oval shape, flatten it and use a toothpick to make stripes and eyes. place almond slices as wings.
  15. When the cake is cooled, pour the glaze over it and decorate with honey bee.
  16. Slice and serve.

Ingredients
  • Chocolate - 2 cups chopped finely
  • Butter - 50 grams
  • Cream - ¼ cup
  • Biscuits - 2 cup crushed roughly
  • Almonds - ¼ cup chopped
  • Confectioners Sugar as needed
Instructions
  1. Melt chocolate, cream and butter over low heat and set aside.
  2. Add in biscuits and almonds. Mix well.
  3. Set aside in fridge for 30 mins.
  4. Now take it out and transfer to parchment paper and press down to a log like. Roll it tightly and chill for 2 hours.
  5. Unwrap it and dust with icing sugar all over it.
  6. Slice to pieces and serve.

  • Mustard Seeds / Kaduku - 1 tsp
  • Urad dal / Ulundu paruppu - 1 tsp
  • Dry Red Chillies - 2
  • Curry leaves a sprig
  • Onion - 1 chopped finely
  • Chilli powder - 1 tsp
  • Salt to taste
  • Coconut - 1 cup grated
Instructions
  1. Heat oil in a pan, add spices and curry leaves and let them sizzle.
  2. Add onions and stir fry for a min.
  3. Add in beans and stir fry them for 2 mins.
  4. Add salt and mix. Cover and cook for 5 mins.
  5. Take the lid and add chilli powder and coconut. Stir fry on high heat for 5 mins.
  6. Serve.

  • Cardamom / Yelakai - 4
  • Onion - 2 large cubed
  • Tomato - 3 chopped
  • Chilli Powder - 2 tsp
  • Coriander Powder - 1 tblsp
  • Turmeric Powder - 1 tsp
  • Cumin Powder - 1 tsp
  • Garam Masala Powder - 1 tsp
  • Salt to taste
  • Cashews - 10
  • Melon Seeds - 3 tblsp
  • Jaggery / Sugar - 1 tsp
  • Frozen Peas - 2 cups
Instructions
  1. Take onion and tomato in a blender and puree till smooth.
  2. Heat oil in a nonstick pan. Add cumin, cinnamon and cardamom and let them sizzle.
  3. Add in onion puree and cook for 5 mins.
  4. Add in spice powders and salt and mix well. Cook till oil separates.
  5. Grind cashews with melon seeds. Add that into the masala. Add water and bring it to a boil.
  6. Add peas and sugar. Mix well.
  7. Cover and simmer for 5 to 10 mins.
  8. Serve.

    • Baking powder - 1 tsp
    • Baking Soda - ½ tsp
    • Milk - ¼ cup to ½ cup
    • Pomegranate - ¼ cup
    • White Chocolate Chips - ⅓ cup
    FOR FROSTING:
    • White Chocolate Chips - ¼ cup
    • Butter - 3 tblsp
    • Sweetened Condensed Milk - 4 tblsp
    • Milk - 2 tblsp
    • Icing Sugar - ½ cup

      1. Preheat oven to 180 degee C.m
      2. Cream together butter and sugar till creamy.
      3. Add in vanilla and mix well.
      4. Add in egg and beat till combined.
      5. Add in flour, baking powder, baking soda and milk. Fold gently.
      6. Add in pomegranate and white chocolate chips and fold gently.
      7. Spoon the batter into cupcake tray lined with baking cases.
      8. Bake for 20 to 22 mins.
      9. Remove and cool completely.
      10. For frosting, melt together white chocolate chips, butter and condensed milk together. Mix to smooth it out.
      11. Add in milk and mix well.
      12. Add in icing sugar and beat till thick.
      13. Now spoon this over cupcakes and decorate with sprinkles and pomegranate.

      • Almonds - ¼ cup chopped finely
      Instructions
      1. Preheat oven to 180 degree C. Line a baking tray with parchment paper. Set aside.
      2. Beat together butter, brown sugar and vanilla till creamy.
      3. Add egg and mix well.
      4. Add in flourm cinnamon, baking soda and mix well to form a dough.
      5. Take small portion of dough and roll it into ball.
      6. Place it over chopped almonds and flatten it slightly. Arrange in a baking tray.
      7. Bake for 15 mins. Cool completely and serve.

      Ingredients
      • Ghee - 2 tblsp
      • Oil - 4 tblsp
      • Cumin Seeds / Jeerakam - 2 tsp
      • Fennel Seeds / Sombu / Saunf - 2 tsp
      • Cinnamon / Pattai - 1 piece
      • Cardamom / Yelakai - 4
      • Cloves / Krambu - 4
      • Bay Leaf - 1
      • Start Anise - 1
      • Mace - 1
      • Onion - 2 large sliced thinly
      • Salt to taste
      • Ginger Garlic Paste - 2 tblsp
      • Tomato - 2 chopped
      • Mushroom - 200 grams chopped
      • Chilli Powder - 2 tsp
      • Coriander Powder - 2 tblsp
      • Turmeric powder - 1 tsp
      • Garam Masala Powder - 1 tblsp
      • Mint Leaves - ½ cup chopped
      • Coriander Leaves - ¼ cup chopped
      • Seera Samba Rice or Basmati Rice - 2 cups
      • Water - 3 cups
      Instructions
      1. Soak rice for 30 mins.
      2. Heat ghee and oil in a pressure cooker. Add in whole spices and let them sizzle.
      3. Add in onions and cook till golden.
      4. Add in ginger garlic paste and mix well.
      5. Add tomatoes and mushroom and mix well.
      6. Add salt and spice powders and mix well.
      7. Add in mint and coriander leaves.
      8. Add in rice and water. Bring it to a boil.
      9. Cover and pressure cook for 1 whistle.
      10. Turn off the flame and let the steam escape by itself.
      11. Open the flame and fluff the rice.
      12. Serve.
