My idea of a good dinner is one that starts with doing minimal actual cooking and ends with something that’s completely delicious – Oh hey there, Cheesy Slow Cooked Beef + Bean Pasta Bake. 

To be perfectly honest, slow cooked anything has always been a weeknight no-go zone for me. My mornings are generally more snooze induced frenzy, than lets calmly chop some meat and veg and set the slow cooker for dinner tonight. But then something magical happened. Perfectly Balanced came along and rocked my world with their ready to eat Mexican Style Slow Cooked Beef with Beans.   

Guys. This stuff is A-M-A-Z-I-N-G. Just 5 minutes on the stove (or 3 minutes in the microwave) and you’ll be dealing with a big ole’ pot of super tender, bursting with flavour, slow cooked beef ready to serve with all your favourite recipes – think stews, soups, curries, burritos, tacos, jacket potatoes. You name it. It’s yours. In actual minutes. It’s the perfect blend of convenience and deliciousness. And the very reason you can have this delicious Cheesy Slow Cooked Beef + Bean Pasta bake on the table in less than 30 minutes.

It’s officially the best thing in my food life right now. Period.

Okay. So now we’ve got the slow cooked beef organised, let’s get the pasta bake part of this recipe sorted.

If too simple was an *actual* thing. This recipe would be too simple. Let me break it down for you: 

  1. Cook pasta.  
  2. Stir through slow cooked beef + beans, spinach and cheese.  
  3. Sprinkle with more cheese (cos, if there ever enough cheese?).  
  4. Put in oven.  

I wasn’t kidding when I said this could not be easier. And although it’s probably obvious by now. Just in case you had any doubts… 

Welcome, to Yum City.  Population: Taste Sensation! 

This dish is literally the perfect blend of all the warm, comfort food things you love – think meat, cheese AND pasta. And thanks to some sneaky spinach, those beans – which count toward your 5 a day – and a side salad, this pasta bake is pretty much healthy disguised as the tastiest dinner you’ve eaten all year…this decade even. Yep. That good.

Bottom line guys. You are going to love this recipe. It is the BEST kind of easy weeknight food there is.

Cheesy Slow Cooked Beef + Bean Pasta Bake

Description

Cheesy Slow Cooked Beef + Bean Pasta Bake. AKA all the warm comfort food things that you love in a simple, healthy and delicious – no slow cooker required – weeknight recipe.

Ingredients
  • 400g rigatoni pasta
  • 1 pack Perfectly Balanced Mexican style slow cooked beef with beans
  • 2 cups baby spinach
  • 1 cup grated mozzarella cheese
  • 1 tbs finely grated parmesan cheese
  • 5 thin slices mozzarella (optional) 
  • Mixed salad leaves to serve
Instructions
  1. Preheat oven to 180C (fan forced). Cook rigatoni in a pot of boiling water according to packet directions. Drain and transfer the pasta to a large baking dish.
  2. Add the slow cooked beef with beans, baby spinach and grated cheese. Stir until well combined. Sprinkle with parmesan and scatter with thin slices of mozzarella (if using).
  3. Transfer the baking dish to the oven and bake for 15-20 minutes or until the slow cooked beef has warmed through and the cheese has melted.
  4. Divide into 4 serves. Serve with mixed salad leaves. 
Notes
  • No rigatoni in the pantry? No worries. You can use any type of pasta in this recipe. I can vouch for penne and spiral pasta being just as delish.
  • If you’ve got leftovers pop them in an air tight container and stick them in the freezer. This recipe reheats perfectly.

Confession: This recipe was a total snaccident. I was aiming for peanut brittle and I got 4 ingredient peanut butter fudge. And you know what? Not sorry about it. AT ALL!

This fudge is kinda incredible. The perfect blend of creamy, smooth peanut butter goodness, with the salty crunch of yummy whole peanuts.

In summary (aka get me to the recipe fast) this is pretty much what you’re dealing with:

  • 4 ingredients – peanut butter, rice malt syrup, butter and salted peanuts. Nothing more. Nothing less.
  • 1. Stir. 2. Freeze. 3. Watch an episode of [insert favourite Netflix show here] while it sets. Fudge making doesn’t get easier.
  • If you’re thinking about cutting down on refined sugar. Thank me now. This 4 ingredient peanut butter fudge. Refined.Sugar.Free.
  • It’s also the perfect after dinner treat. One little piece. Oh so satisfying.

And I haven’t actually tried this. But I reckon if you topped it with some melted dark chocolate and popped it in the fridge, you would be in complete brain cell blowing territory.

4 Ingredient Peanut Butter Fudge

Description

The perfect blend of creamy, smooth peanut butter goodness, with the salty crunch of yummy whole peanuts. Super easy. And with only 4 ingredients. Be warned. Addiction risk high.

Ingredients
  • 1/2 cup smooth 100% peanut butter
  • 1/2 cup butter
  • 1/4 cup rice malt syrup
  • 150g salted peanuts (approximately 1 cup)
Instructions
  1. Line a slice tin with baking paper and chop butter into cubes.
  2. Melt the butter and rice malt syrup in a small saucepan over medium heat, stirring occasionally. Add the peanut butter and keep stirring until all the ingredients are well combined. If the mixture starts to bubble remove from heat and turn the cook top down a fraction.  Once the mixture has cooled, return it to heat and continue stirring..
  3. Remove from heat and stir through the salted peanuts. Pour the fudge into lined tin.
  4. Transfer to the freezer and freeze for at least an hour or until firm.
  5. Cut into 14 squares and enjoy the yum!
Notes
  • You will need to keep these babies in a sealed container in the fridge. That is, if you don’t eat them all first

I have many talents. Rolling rice paper rolls…not one of them.

And since I hate sucking at stuff, I came up with a non-faff alternative.

Oh hey there, rice paper roll in a bowl.

It’s kind of brilliant, when you think about it. Let me elaborate.

  • All the yummy taste of a rice paper roll, but you literally can’t go wrong making this recipe.
  • Legitimately, could be the most delicious 10-minute meal you ever eat.
  • You can fit more in a bowl, than you ever could in a roll.
  • Fully flexible. Adding your favourite rice paper roll ingredients, highly encouraged.
  • Gluten, dairy and refined sugar free, without even trying, or compromising on taste. Cos, that’s how I [rice paper] roll.

The other thing I LOVE about these bowls. No actual cooking. They are literally the perfect summer dinner. Because delicious and filling without having to turn on a hot oven or stove. Amen.

If had to describe my rice paper roll in a bowl in 3 words it would be – Fresh.Crunchy.Yum. I rest my case.

Description

All the fresh, tasty yum of a rice paper roll, in half the time. Oh hey, there rice paper roll in a bowl.

Ingredients

Salad

  • 100g vermicelli noodles
  • 1/2 supermarket roast chicken
  • 1/4 red cabbage
  • 1 carrot
  • 1/2 continental cucumber
  • 1/2 avocado
  • 2 tbs peanuts
  • 1/4 bunch mint
  • 1 long red chilli (optional)

Dressing

  • 2 tsp fish sauce
  • 2 tsp rice malt syrup
  • 1 lime (zest and juice)
  • 1 small clove garlic
Instructions
  1. Boil the kettle
  2. Place the noodles in a large heat proof bowl. Cover with boiling water. Set aside for 5 minutes to soak. Drain.
  3. Shred the chicken. Crush the peanuts. Grate the carrot, peel and chop the avocado into two quarters and thinly slice the cucumber, cabbage and chilli. Pick the mint leaves. Set aside.
  4. Crush the garlic and juice and zest the lime. Add the fish sauce, rice malt syrup/honey, lime juice and zest and garlic to a jar. Secure the lid and shake until all the ingredients are well combined.
  5. Divide the noodles, cabbage, cucumber, carrot and mint between two bowls. Pour half the dressing over each bowl. Garnish with crushed peanuts and sliced chilli (if using). 
Notes
  • Cheat alert. Use a bag of prepared coleslaw mix instead of slicing the cabbage and grating the carrots separately. Who said cheaters never win?
  • The easiest way to crush peanuts? Pop them in a paper bag and pound them with a meat tenderiser. Bonus points for doubling as a stress release.

Okay. So, how does this sound?

Creamy chocolatey fudge, flecked with crunchy pistachios and a sweet/tangy burst of cranberry with every bite.

If you said…creamy, dreamy. Oh my GAWD, that sounds completely delicious.

Guess what?

You are SO right!

Guys. This cranberry and pistachio fudge recipe. It’s pretty much everything. So, let me break it down for you, real quick:

  • Only a handful of ingredients – dark chocolate, butter (or coconut oil), almond butter, pistachios and cranberries.
  • Super easy to make – seriously, if you can stir…you got this.
  • You can take this to a party feeling smug and proud, cos it looks impressive, but it’s so darn easy to make.
  • Cranberry and pistachio fudge is the perfect treat for the holidays. I mean red and green IS Christmas, right?
  • If you use a good quality dark chocolate its low in sugar. Plus, it’s easy to make dairy free by switching the butter for coconut oil.

It’s really a no brainer. You must make this. Share it, don’t share it. You decide. But, I know what I would (or wouldn’t) do.

Description

Creamy chocolatey fudge, flecked with crunchy pistachios and a sweet/tangy burst of cranberry with every bite. SO easy to make, it’s dangerous.

Ingredients
  • 100g of 85% or above dark chocolate regular or dairy free depending on your dietary requirements
  • ¼ cup of butter or coconut oil, depending on your dietary requirements
  • ¼ cup of almond butter
  • ¼ cup of pistachios
  • ¼ cup of dried cranberries
Instructions
  1. Grease a small baking tin and line with baking paper (I use a loaf tin).
  2. Melt the butter or coconut oil in the microwave and roughly chop the pistachios and cranberries. Set aside.
  3. Break the chocolate into pieces and pop them into a microwave safe jug or bowl. Put the jug in the microwave and cook on high for 1 minute. When done, give the chocolate a stir and then keep microwaving in 10-20 second bursts until the chocolate is fully melted. It takes a total of 1 minute and 30 seconds in my microwave. If you don’t have a microwave, don’t worry. You can melt the chocolate using a double boiler on the stove.
  4. Mix the butter/coconut oil, almond butter, and half of the pistachios and dried cranberries into the chocolate (don’t forget to reserve some cranberries and pistachios to sprinkle on top) until the mixture is smooth. If your almond butter is on the dry side, you might need to smoosh it into the mixture with the back of a spoon.
  5. Pour the chocolate mixture into the lined tin and sprinkle the remaining pistachios and cranberries on top.
  6. Refrigerate for at least 1.5 hours or until set. If you’re in a hurry, pop it in the freezer so it sets more quickly.
  7. Once set, cut the fudge into 16 pieces. Store it in the fridge until it’s ready to be eaten.
Notes
  • Creamy and chocolately means deliciously melty. It’s best to leave your fudge in the fridge until you’re ready to eat it.
  • This fudge is fully flexible. You could use milk chocolate instead on dark chocolate. Or switch up the pistachios and cranberries for other stuff you love, like coconut, almonds, sultanas. Anything you want really. Just go with it!
  • If you suffer food intolerances or allergies, please make sure all the ingredients are safe for you to eat.

Easy Berry Scrolls.

There are some recipes that change your life, and this is one of them.

Because…….SO EASY!!!!

The dough. No yeast. No resting. Absolutely no fancy bread maker. Just yoghurt and milk. That’s it.

Add the berries, and you are 30 minutes away from your very own freshly baked soft and doughy scroll, chock full of sweet, juicy berries – all hot, jammy, dripping down your fingers – ohmygoodness, so so YUM!!!!! Yes, we definitely need all those exclamation marks. Cos, that good AND that easy.

And if that wasn’t enough to convince you to get your bake on, here are some other things I know you will love about these, easy berry scrolls:

  • You can enjoy them all year round. When fresh berries aren’t in season, just switch to frozen berries.
  • They are awesome for using up any leftover berries hiding in your fridge at the end of the week.
  • No nuts, means they make a totally awesome lunch box friendly snack.
  • But, they’re also the kind of breakfast that makes getting out of bed on a work day worth it.
  • They freeze like a dream.
  • They are refined sugar free, but taste like a regular yummy sweet treat.

Of course, you don’t HAVE to make them. But, there’s that awesome feeling you get when you cook anything from scratch. Especially things involving homemade dough and fat juicy berries. And no one. Except for you.  Needs to know just how simple they are. Go forth. Be smug. I won’t tell anyone…pinky swear.

Easy Berry Scrolls

Description

Hot juicy berries wrapped in a thick, soft dough, made with just yoghurt and flour. You won’t believe how easy it is to make these delicious berry scrolls.

Ingredients
  • 3 cups of mixed berries fresh or frozen
  • 3 cups self-raising flour
  • 2 cups natural yoghurt
  • 1 tsp vanilla essence or vanilla powder
  • 50g butter
  • 2 tsp cinnamon
  • 2 tbs rice malt syrup or honey
Instructions
  1. Preheat your oven to 180C/355F and line a shallow baking dish (I used a 28cm/11inch dish) with baking paper.
  2. Melt the butter. Set aside.
  3. Slice the strawberries (you can use other berries like raspberries and blueberries whole), then transfer the berries, rice malt syrup and cinnamon to a small bowl and stir until combined.
  4. Next, add the flour and yoghurt to a large bowl and mix until they come together to form a dough. Turn out onto a well-floured bench top and knead until the dough is smooth and holds its shape. This should only take a minute.
  5. Use a floured rolling pin to roll the dough into a rectangle about 1cm/half inch thick using your hands to help shape the dough if you need to. Brush the top of the dough with butter, reserving a little for the top of your scrolls. Finally, spread the berry mixture on top of the dough, leaving a 2cm border around the edge.
  6. Starting from the long side, use two hands to roll the dough into a long log. Cut the dough into 12 equal pieces and place them in the baking dish, touching side by side. If they don’t quite touch, squish them down using the palm of your hand. Brush the tops of the scrolls with the remaining butter.
  7. Cover the baking dish with foil and transfer to the oven. Bake for 10 minutes. Remove the foil and bake for a further 20-25 minutes until tops are golden and the scrolls are cooked through.
Notes
  • Blackberries, blueberries, raspberries or strawberries. Work with what you’ve got. Because, any combo of berries is delicious in these buns.

I love me a chicken schnitzel sandwich. I mean bread, mayo, crunchy lettuce and crispy golden chicken. Just SO yum!

But there is one small problem with the ole’ chicken schnitty sandwich. Veggies. If you’re aiming for 5 a day. There’s just not enough of them.

So, enter my chicken schnitzel sandwich bowl. Yep its everything you love about a chicken schnitzel sandwich. Just in a bowl, so you can sneak in more of the good stuff.

Here’s the deal:

  • Chicken Schnitzel: Crispy.Golden.Delicious. Enough said.
  • Pan-fried bread. Because when you think about it, pan fried bread is so much better than regular toasted bread. We should really be eating it that way all the time.
  • Loads of crisp, fresh crunchy salad – think cos lettuce, cherry tomatoes and cucumber to make your chicken sandwich in a bowl healthyish. There’s also a little bit of avo, cos good fats rock.
  • Oh, then there’s mayo, because is it even a chicken schnitzel sandwich without it?

Now, I know oil freaks some people out. So, if chicken schnitzel is not your jam, you could definitely substitute it for a regular chicken breast. Sprinkled with herbs and seasoned with salt and pepper, that could be really yummy. The rest of the ingredients are fully flexible too. Life’s too short not to eat your favourite veggies for dinner.

Plus, gluten free peeps. You don’t miss out. Just use gluten free chicken schnitzel -yes they are a thing– then add some gluten free bread and you, my friend, are good to go.

And one last thing. This meal is quick AND easy. Think 3 steps and no more than 20 minutes. It’s official – weeknight wonder status achieved.

Everything you love about a chicken schnitzel sandwich. Just in a bowl. Think crispy chicken schnitzel, crunchy salad and pan fried bread. Yum!

Ingredients
  • Olive oil for shallow frying
  • 2 chicken schnitzel, regular or gluten free depending on your dietary requirements.
  • 1 baby cos lettuce
  • 12 cherry tomatoes
  • ½ continental cucumber
  • ½ avocado
  • 2 slices of bread
  • 2 tablespoons of mayonnaise
Instructions
  1. Heat oil in a large frying pan over medium-high heat. Cook chicken for 4 to 5 minutes each side until golden and cooked through. Transfer to a plate lined with paper towel. Meanwhile, rinse and chop the lettuce, cherry tomatoes, cucumber and avocado.
  2. Discard the oil from the frying pan and place it back on medium-high heat. Place 2 slices of bread in the frying pan and cook until one side is golden, then flip to cook the other side. Remove from the pan and set aside.
  3. Cut the chicken schnitzels in half then divide the schnitzel, lettuce, tomatoes, cucumber avocado and pan-fried bread between 2 bowls. Finish with a dollop of mayonnaise.
Notes
  • Want to get a bit fancy? Add some spice to your mayo. Hot tip. Smokey paprika is really good.

Remember my 15-minute chicken fried rice?

Quick, tasty, yum…super reliable.

I love that recipe. It never lets me down. But, some nights I feel like I something extra. A little zhoosh, to make the mid-week feel less like the mid-week.

And that’s where my special friend rice comes in. It’s all the same good stuff, with just a little more yum. I’m talking:

  • Ham
  • Baby prawns
  • Eggs
  • Corn
  • Peas
  • Carrot
  • And all the deliciousness that comes from adding garlic, sesame oil and soy sauce to just about anything.

Now the next bit is optional, but highly recommended. And, if there is something more convincing than highly recommended, then that. Serve this recipe with a side of prawn crackers. It’s what puts the SUPER SPECIAL into my special fried rice. And no one. I repeat no one will refuse to eat a meal, that comes complete with a bribe…oops I mean a side of prawn crackers.

And thanks to the miracle that is steamed microwave rice, just because this rice is ‘special’, doesn’t mean it takes ages to cook. I’m talking, a total cook time of 15 minutes.

Quick. Easy. Delicious. That’s special fried rice.

Oh and other vital, and equally important, stats for this recipe are: dairy free, gluten free option, and loads of veg so it’s good for you without tasting good for you. Oh, and there’s the optional prawn crackers. I just thought I’d mention that again. In case you had forgotten.

  • 1 250g packet steamed microwave rice
  • 4 tsp sesame oil
  • 2 eggs

  • ½ cup frozen peas
  • 200g tinned baby prawns (shrimp)
  • 2 tbs soy sauce or tamari, depending on your dietary requirements.
  • 2 handfuls of prawn crackers
Instructions
  1. Cook the rice according to packet directions. Meanwhile, cut the carrot into small pieces and mince the garlic. Set aside.
  2. Heat a large frying pan over medium heat with 1 tsp of sesame oil. Whisk the eggs in a small bowl and then tip the eggs into the hot frying pan. When the eggs begin to set, use a spatula to break them up. Remove the egg from the frying pan into a small bowl.
  3. Add another teaspoon of sesame oil to the frying pan (there’s no need to wipe it out) then cook the carrot and garlic for 5 minutes or until the carrot is just soft.
  4. Next, add the rice, peas, corn, prawns and egg to the frying pan and stir until all the ingredients are combined and warmed through. Mix through the soy sauce/tamari and remaining sesame oil.
  5. Remove from heat, divide between 2 bowls and serve with a handful of prawn crackers.
Notes
  • Cooking for a family? Just double the ingredients, except maybe the prawns. Unless you really like prawns. Then go for it.
  • Speaking of prawns. If you don’t like them, throw in some supermarket roast chicken instead.

Choc Chunk Peanut Butter Cookies.

You know the ones. Crunchy on the outside. All soft, chewy, peanut butter-chocolately goodness, on the inside.

Guys, these cookies are good. Very good. My husband ate one and then wanted more. Generally, that wouldn’t be worth sharing, except in this case, we’re not talking regular cookies. Ah-uh! We’re talking cookies that are healthyish, but still completely delicious.  They have that awesome cookie taste and feel, but are low in refined sugar, gluten and dairy free. And hubby ate them. Voluntarily. No sweet talking required. I feel strangely triumphant. But, also disappointed. I mean, now I have to share my cookies. It’s a cruel world sometimes.

If you’re a person that likes the highlights, this is what you need to know about my choc chunk peanut butter cookies.

  • Perfect cookie texture/taste.
  • But heaps less sugar than a regular cookie.
  • So easy! I’m talking, a Dump – Stir – Roll – Bake scenario.
  • Oh hey, 20 minute-ish, not so naughty, treat.
  • Nothing crazy inside, like cauliflower… promise

Peanut butter and chocolate in cookie form. It is a thing of pure joy, which you must experience. Because, it’s no fun being on a cookie high by yourself. Let me know how you go. Do they taste like low sugar cookies Yes/No?

Healthyish Chocolate Chunk Peanut Butter Cookies

Description

Crunchy on the outside. All soft, chewy, peanut butter-chocolately goodness, on the inside. These 4 step, super quick and easy, Choc Chunk Peanut Butter Cookies, make low sugar,  next level YUM!

Ingredients
  • 1 cup natural crunchy peanut butter (smooth would work too)
  • ¼ cup corn flour (plus extra), regular or gluten free depending on your dietary requirements
  • ¼ cup rice malt syrup
  • 1 egg
  • 1 tsp vanilla essence
  • 50g dark chocolate, regular or dairy free, 85% cacao or above depending on your dietary requirements.
Instructions
  1. Preheat your oven to 160C (fan forced) and line 2 baking trays with baking paper.
  2. Chop dark chocolate into small pieces and transfer to a large mixing bowl. Next add the peanut butter, egg, corn flour, rice malt syrup and vanilla essence. Mix all the ingredients until they are fully combined and form a dough.
  3. With damp hands take a teaspoon of dough, roll it into a ball and place it on the baking tray. Use your fingers to flatten the dough into a cookie shape. Repeat with the remaining mixture.
  4. Transfer the cookies to the oven and bake for 10-12 minutes until they just start to go golden on the edges. Remove from the oven, leave to cool for 5 minutes and enjoy!
Notes
  • If the peanut butter you use is extra oily, you might find that the dough is too sticky to roll into balls even with damp hands. Just add some extra cornflour one tablespoon at a time, to get the right consistency.
  • The tops of the cookies will be soft when you remove them from the oven. That’s totally okay, they will firm up as they cool.
  • I wouldn’t count on it, but if you have any cookies left over, store them in an air tight container, for 5-7 days.
  • You can easily make your chocolate chip blondies totally refined sugar free, by using a sugar free dark chocolate, like Lindt No Added Sugar Dark Chocolateor Loving Earth Chocolate for a dairy free option.
  • If you suffer food intolerances or allergies, please make sure all the ingredients are safe for you to eat. I used White Wings corn flour and Pure Harvest rice malt syrup, which say they are gluten free on the packaging.

A crusty roll, stuffed with lightly spiced minced beef cooked to perfection in a rich tomato sauce, sprinkled with grated cheese and popped under the grill.

Yes, my friends. That’s a Sloppy Joe. Warm, comforting and oh so delicious!

And, while delicious is a perfectly good reason to cook Sloppy Joes for dinner, here are some other reasons you should put this recipe on your meal plan stat:

  • 30-minute weeknight meal
  • Literally anyone can make them.
  • They will fill you up without breaking the bank – beef mince recipes are brilliant like that.
  • They are made out of regular stuff, you probably already have in your kitchen.
  • You can make the sauce ahead of time – total busy weeknight buster.
  • The risk of anyone complaining about eating something topped with melted cheese is negligible.
  • Things that you eat in your hands in front of the TV taste better* and require less washing up.

*May or may not be scientifically proven, but almost certain to be true.

Now truth be told, Sloppy Joes don’t have a reputation for being all that healthy. But, these guys aren’t your regular Sloppy Joe. This is the basic equation: 5 hits of veg + kidney beans for extra goodness + no sugary ketchup or added sugar + all food groups covered = pretty darn good for you.

And if being *that* healthy doesn’t sound appealing, you can always pimp your Sloppy Joe’s with extra toppings. I can personally vouch for crumbled corn chips and sour cream. It’s somewhere you want to go. Trust me.

If you’ve lived your entire life thinking being sloppy is a bad thing, get ready to have your mind (and tastebuds) blown. Quick. Easy. Healthy. Yum. Sloppy Joe’s are the BEST.

Healthy Sloppy Joes

Think, a crusty roll, stuffed with lightly spiced minced beef cooked to perfection in a rich tomato sauce, sprinkled with grated cheese and popped under the grill. This healthy version of the classic American Sloppy Joe, is a guaranteed weeknight winner.

Ingredients
  • 2 tsp olive oil
  • 250g beef mince
  • 1 brown onion
  • 1 green capsicum
  • 2 portbello mushrooms
  • 1 small zuchinni
  • 1 tin chopped tomatoes
  • 1 cup kidney beans
  • 2 tbs tomato paste
  • 1 tbs Worcestershire sauce
  • 2 tsp Dijon mustard
  • 2 long crusty rolls
  • ¼ cup tasty cheese
  • Handful of rocket (optional)
Instructions
  • Line a baking tray with baking paper. Finely dice the onion, capsicum and mushrooms and grate the zuchinni. Set aside.
  • Heat the olive in a large frying pan over medium to high heat. Add the onion and capsicum and cook for 5 minutes, until soft.
  • Next add the mince and cook until it has browned breaking up with a wooden spoon as you go. Drain any excess fat from the frying pan
  • Place the frying pan back on heat and stir through the mushrooms, zucchini, kidney beans crushed tomatoes, tomato paste, Worcestershire sauce, Dijon mustard, and bring to boil. Reduce to a simmer for 10 minutes, or until any remaining liquid from the tomatoes has reduced.
  • Put your oven grill on high. Slice the rolls down the middle (make sure you don’t cut all the way through) and place them cut side up on the baking tray. Spoon half the Sloppy Joe mixture into each roll and then sprinkle with grated cheese. Transfer the baking tray to the oven and grill for 2-5 minutes until the cheese has melted.
  • Transfer to a plate and serve with a handful of rocket, if using.
Notes
  • This Sloppy Joe recipe is fully flexible. Switch up any of the veggies for your favourites (think celery, carrot, or baby spinach) or ditch the veggies and serve your Sloppy Joes with a fresh and crunchy side salad. Either way, so YUM!
  • Just so you know. The serving is on the big side. If you can’t fit all Sloppy Joe mixture into your rolls there’s plenty of options – serve the rest on the side, feed the kids, put it in a container for lunch, or freeze it for later.
  • Sloppy Joes make great party/feed a group food. Just double or triple the recipe and pop it on the table with some rolls and extra toppings, like cheese, pickles, crispy bacon bits, corn chips, sour cream or coleslaw. Mmmm….I’m getting hungry just thinking about it.

I LOVE Dumplings!

But, somehow it doesn’t seem right to *just* eat dumplings for dinner. I like a big hit of veggies. Especially on a weeknight. I admit it. I’m kind of boring like that.

Well enter the incredible YTGT dumpling stir fry. It’s everything I love about dumplings, but with a good serve of just cooked (still a little bit crunchy, just how I like them) veg, coated in a flavour packed, easy to make, stir fry sauce.

This recipe is seriously simple and super yum. And, once you go there, you will be like, WHOA! Why aren’t we ALL eating dumpling stir fries, ALL the time??

And then there’s all the other things I love about this recipe, like:

  • No one ever turns their nose up at eating this, cos dumplings.
  • Pork, chicken, prawn, veggie – steamed, boiled, fried – you can do dumpling stir fry any which way you like it.
  • Just in case you didn’t know…gluten free dumplings exist. Not even kidding.
  • Easy. One Pan. Total weeknight dinner trifecta.

Okay so now, you’re convinced you need a dumpling stir fry for dinner, I bet your asking…where do I even buy dumplings? Well, fellow dumpling lovers. It’s officially the BEST time to be alive. You, my friends, can pick up frozen dumplings from your local supermarket. I’m talking, loaded with fresh ingredients, homemade, yummy dumplings right there in the freezer case. I know, right? Blew my mind. Changed my life. If you’re an Aussie look out for, Mr Chens (including their gluten free range). They are my fav.

Now, just putting it out there. If you would like to invite me over for a dumpling stir fry, I would probably say yes?

I like them pan fried with crispy bottoms. Just so you know.

How do you like your dumplings?

 

Dumpling Stir Fry

Cook 20 mins

Total 20 mins

Yield 2 serves

Think fat juicy dumplings, lightly pan fried with fresh veg, and a flavour packed sauce. This is not your average stir fry. It will actually change your life.

Ingredients
  • 12 frozen dumplings, any kind
  • 1 tbs sesame oil
  • 5 tbs water
  • 1 carrot
  • 1 red capsicum
  • 150g snow peas
  • 3 tbs soy sauce
  • 2 tbs rice wine vinegar
  • 1 clove garlic
  • Pinch chilli flakes
Instructions
  • Preheat the sesame oil in a deep frying pan over medium to high heat. Transfer the frozen dumplings to the pan and cook for 4 minutes. Reduce heat to medium, add 5 tbs water to the frying pan and cover with a lid or aluminium foil. Steam for another 4 minutes until the dumplings are cooked. Remove the dumplings from the frying pan. While the dumplings are cooking chop the carrot, capsicum and snow peas into thin matchsticks and mince the garlic. Set them aside.
  • Reduce heat to medium high and add the carrot, capsicum, snow peas and garlic to the frying pan and cook, stirring occasionally, until the veggies are tender, but still crisp. Meanwhile, in a small bowl whisk together the soy sauce, rice wine vinegar and chilli flakes.
  • Transfer the dumplings back into the frying pan and pour over stir fry sauce. Gently give all the ingredients a stir.
  • Divide the dumpling stir fry between 2 bowls and drizzle with any sauce remaining in the bottom of the frying pan.
Notes
  • Got your hands on some gluten free dumplings? Just use tamari instead of soy sauce and wal-ah! Gluten free dumpling stir fry. Pure magic.
  • If you prefer boiled or steamed dumplings, go for it. Just follow the directions on the pack to cook your dumplings any which way.
