Last week I posted a recipe for chicken called Slow Cooker Chicken and Gravy. This week I’m presenting you with another Low Carb, Keto, and WW friendly dish for French Onion Chicken. It is made in one skillet.

This is probably BY FAR THE best chicken recipe I’ve made in quite some time. If you love caramelized onions or French Onion soup then you will also love this chicken dish. 

Fall is quickly approaching and this dish for French Onion Chicken is going to be one that you are going to make or try when the temperature starts dropping. 

Caramelized Onions 

This dish isn’t considered quick and easy because caramelized onions take a good 20 minutes to make. But the good news is, everything comes together in one skillet. Caramelized onions are a low and slow cooking process. If you have never made caramelized onions before all you need is a good non stick skillet, some butter or olive oil, and onions. Next, all you need is to be patient. You kind of have to babysit the caramelized onions because they need to be stirred every few minutes. If you find the pan getting to be kind of dry add a couple of tablespoons of water at a time. 


How to Make French Onion Chicken 
  1. Add butter to pan. Melt.
  2. Add sliced onions and 3 tablespoons of beef broth.
  3. Cook the onions on low heat (between 1 and 5) for 15 to 20 minutes or until they are caramelized.
  4. Remove the onions from the pan and transfer them to a dish.
  5. In order for the chicken to cook evenly all at once, the thickness of each chicken breast should all be the same size. Pound them out evenly with a rolling pin or meat Mallet.
  6. Season chicken with salt, pepper, and olive oil. Add the chicken to the skillet and cook 5 to 7 minutes on each side. When chicken is done it should register at 165 degrees or no longer be pink in the middle. If the chicken is not done cooking yet, it will continue cooking when you place it back in with the sauce.
  7. Remove the chicken from the skillet and set them aside.
  8. Add the French onions to the skillet again with 2 tablespoons of cornstarch and 1 cup of beef broth. Whisk until everything is combined. The sauce should start to thicken after 2 minutes.
  9. Place the chicken back in the skillet and let it continue cooking in the sauce. 3 to 4 minutes.
  10. Lay one slice of provolone cheese on top of each chicken breast and cover the pot with a lid. Melt the cheese with the lid on top.
  11. Garnish the chicken with more cracked black pepper or chives.

  • When making this dish make sure your chicken breasts are evenly sized. You can pound them out with a meat mallet or rolling pin.
  • Cover the chicken up with plastic wrap for no messes and easy cleanup!
  • You might be tempted to make for sauce for this dish because it is so decadent and divine! Feel free to double the recipe. Next time, I’m going to.

French Onion Chicken

French Onion Chicken is made in one skillet. This is probably BY FAR THE best chicken recipe I’ve made in quite some time

Ingredients

1 tablespoon of butter

2 medium sliced onions

1 cup, 3 tablespoons beef broth (divided)

4 cooked skinless boneless chicken breasts

2 teaspoons of olive oil

Salt and pepper

1 cup of fat-free beef broth (reduced sodium)

2 tablespoons of cornstarch

4 slices of Sargento Ultra Thin provolone cheese slices

2 tablespoons of freshly chopped chives (optional)

Instructions
  1. Add butter to pan. Melt.
  2. Add sliced onions and 3 tablespoons of beef broth.

Slow cooker chicken and gravy reminds me of Thanksgiving dinner. This dish is one that doesn’t take hours and hours of prepping and cooking to make. The prep time is less than 5 minutes and the slow cooker does the rest of the work. Imagine shredded chicken smothered in gravy served over your choice of mashed potatoes, egg noodles, or rice. Doesn’t all-white meat taste like chicken anyway? Yes, and you can make this wonderful meal whenever you want. Soon instead of turkey for Thanksgiving dinner, chicken will become a thing. You just wait and see. Just kidding. 

The chicken can be served over egg noodles, rice, or my favorite mashed potatoes. I’m what you call a lazy cook in my kitchen and I just heated up some instant mashed potatoes on the stovetop along with some canned microwaved green beans.  Canned green beans are my favorite and I prefer them over fresh green beans. Crack some freshly ground black pepper over the chicken if you like for some more taste. 

Ingredients List 
  •  6 boneless skinless chicken breasts 
  • 2 (.87oz) packages chicken gravy mix 
  • 1 (10 ¾ oz.) 98% reduced-fat cream of chicken soup
  • 2 cups water
  • 1 tsp of onion powder
  • 1 tsp of garlic powder 
  • fresh ground pepper to taste
How to Make Slow Cooker Chicken and Gravy 
  1. Add the dry chicken gravy mix, cream of chicken soup, onion powder, garlic powder, and water to the slower cooker pot. Whisk to combine. 
  2. Add the chicken on top of the gravy mix. 
  3. Cook on high for 3 to 4 hrs or on low for 8 hrs. 
  4. Serve with mashed potatoes, egg noodles or rice.
Tips for Slow Cooker Chicken and Gravy
  • What to serve with chicken and gravy? As I mentioned above you can serve this dish with mashed potatoes, egg noodles, or rice. Some green beans or cranberry sauce can be would be good side dishes. 
  • Add in some sour cream for extra creaminess 
  • For those that don’t like using canned cream of chicken soup or gravy seasoning packets make your own gravy. You can cook the chicken separate in the crockpot until it is done, then add your homemade gravy to it instead. I don’t have anything against these types of prepared food because I don’t eat this every day.
  • Can I make this in my Instant Pot? If you plan on making this in your Instant pot use thawed chicken breasts and set the pressure cooker in manual mode for 15 minutes. Cover pot and set to sealing.

How is this a WW recipe?

NO FOOD is off limits on WW and WW themselves stresses that a lot on their social media pages. That is one reason why I love WW. You can pretty much eat ANYTHING to lose weight just as long as you stay in your daily points range for that.

How does Weight Watchers work? 

Each recipe or food has a Smart Points value. This is calculated using calories, saturated fat, protein, and sugar. It is best to stay away from foods that are loaded with saturated fat and sugar on the plan because those foods are higher in points. When you register with Weight Watchers you are given a daily set of points to target based on your age, gender, height, and activity level. Think of it as an easier way to track your macros.

Junk Yard Salad

Junk Yard Salad is just a goofy name for a recipe right? Have this salad in your recipe box ready, when you only have a few minutes to spare for dessert. Then you can get back to bing watching Stranger Things.

Kind of a goofy name for a recipe right?  Junkyard salad was one of those clickbaity type recipes that I saw on Pinterest.

That is the whole purpose of a recipe called a name like this right? Just the name makes you click on it. I clicked on the pin and read the comments since the title intrigued me a bit and it made me laugh a little inside. Most of the comments were about how this was not a Weight Watcher recipe at all and I agree with that. The person who created the pin was stating that this recipe was Weight Watchers and it isn’t. The ingredients list are below and you can clearly see that. I decided to try it anyway since I’m a fan of these type of salads. 

There isn’t any way this recipe can be deemed Weight Watcher friendly and I am being really open about that and stating that right off the bat. You could go and use sugar-free substitutes and fat-free ones but why? This recipe has cherry pie filling in it and I could literally eat that stuff right out of the can it is so good. This junkyard salad recipe also calls for a can of sweetened condensed milk and these cans are so full of sugar. Do you see what I’m getting at here? 

This junkyard salad recipe can be enjoyed at potlucks or summer BBQs. It is not the type of salad to be eaten while on a diet. 🙂 

How to make Junk Yard Salad

With these type of recipes, you don’t really need a recipe. Dump everything into a bowl. Then stir. If the recipe calls for pudding mix then it has to set in the fridge for a couple of hours or overnight. It’s that simple.

Hotdogs and burgers kind of go together in the Summer. Forget taking time to light up the grill! These Air Fryer Hot Dogs and Burgers are ready in 7 minutes.

I know the ideal place to cook burgers and hot dogs are outdoor on a grill but did you know you can cook these 2 items in your air fryer? Even at the same time? Imagine that it’s raining or pouring out and you don’t even want to go outside and light up those coals because you don’t want to get wet. Enter your air fryer. The perfect device to save you in this type of situation and if you don’t have an air fryer at your lake cabin yet why haven’t you bought one? 


I tried cooking both hot dogs and burgers in my air fryer. What’s nice about cooking hot dogs and burgers in your air fryer is that both items cook for about the same amount of time. So, on one side of the air fryer, you could have hot dogs cooking and on the other side, you could cook some burger patties. That is if you have a large enough air fryer basket. Who needs a grill anyway if you have an air fryer right? Since hot dogs and burgers are oftentimes served together (they are in my family anyway) I decided to just do one single post on both items. 

Speaking of air fryers I am working on compiling a recipe Ebook that has all air fryer recipes in it. I have been wanting to do this for a long time now and I have even been going through old recipes on this site and updating them with air fryer cooking times and temperatures. I don’t know why this has taken me so long to do this but I’m finally going to do it and hopefully, it should be ready by Fall. *Fingers Crossed*

Air Fryer Hot Dogs 

Let’s talk hot dogs. Some of you follow WW and might be wondering what hot dogs are low points. A regular beef frank hot dog is 6 points. Some brands like Hebrew National are only 1 point and so are some turkey dogs. Just use your scanner to find out points. For a low point bun, I prefer Village Hearth Wheat Light buns. They are only 2 points. So you can still have a low point hot dog this Summer and not feel left out while others are grilling and having a high point bratwurst or hot dog. Hot dogs take about 5 to 7 minutes depending on the size in your air fryer.

One thing that amazed me when cooking burger patties in my air fryer was that they did not shrivel up and shrink as burgers do on a grill. My burgers were well cooked in 7 minutes and if you are aiming for a medium-rare burger I do 5 or 4 minutes. 

For a long time, I couldn’t find the 96% lean ground beef, I could only find the 93%. Wal-mart and Aldis both have 96% lean ground beef and when I found out Aldis had that I was pretty stoked. No more trips to Wal-mart for that. Speaking of Aldis, I also picked up some very good brioche buns there and a burger seasoning I found near the spices. The burger spice blend made the ground beef very flavorful. 

I tested air fryer burgers using ground beef and not frozen burger patties. I’m sure the frozen burger patties will take longer than the ground beef ones. Just check the temperature 

93% lean ground beef is 3 oz for 4  points 

96% lean ground beef is 4 oz for 2 points

That to me is an incredible difference in the points so if you can find 96% go ahead and try it. I bet you’d really like it.

Air Fryer Burgers and Hot Dogs

Ingredients

Air Fryer Hot Dogs 

4 Light Hot Dog Buns 

4 Beef Franks such as Oscar Meyer

Air Fryer Burgers

1 pound of 96% lean ground beef 

1 tablespoon of Aldis Burger Seasoning 

4 slices of American Cheese 

4 Brioche Buns

Instructions

Hot Dogs

  1. Place hot dogs in air fryer basket and set the timer to 380. Cook hot dogs for 7 minutes. 
  2. Serve with a bun and some ketchup if desired.

Burgers: 

  1. Set air fryer temperature to 380 degrees
  2. In a bowl mix together the ground beef and burger seasoning. Divide the ground beef into 4 equal portions and shape each portion into patties. 
  3. Set the burger patties into your air fryer and close the basket. Air fry for 7 minutes. 
  4. After the 7 minutes is up open the air fryer and place a slice of cheese on top of the burgers. Continue cooking until the cheese has melted. 2 minutes.

Air fryer corn on the cob is the perfect side dish to have with your burgers, brats, and steak in the Summertime. By the time your main entree is done cooking your corn on the cob will be ready in no time.

Aldis just opened up here in my town and I am completely in love with that store. The other day ago when I was shopping there, I found corn on the cob with the husks already removed so I decided to try making it in the air fryer. One thing I can’t stand about corn on the cob is removing all the husks and this was a nice surprise. One thing about Aldis is the low prices can’t be beaten and one of these days I’ll have to write up a post for a grocery shopping list there.

What is Mexican Street Corn?

Mexican street corn is typically brushed with mayonnaise or sour cream aka crema and then the corn gets seasoned with seasoning and cotija cheese. Aldis did not have any cotija cheese so good old queso fresco was the only other option. Mexican street corn is usually grilled but it can be perfectly made in your air fryer.

To make this dish more Weight Watcher friendly I used nonfat Greek Yogurt instead of the crema and reduced-fat or light mayonnaise. The corn, garlic, lemon juice, Greek Yogurt, and cilantro are all zero points. Just have to count points for the mayo and queso fresco. Queso fresco is a crumbly cheese that you can sub for cotija if you can’t find cotija. I cut a chunk of the queso fresco off and crumbled it with my fingers and sprinkled it over the top of the corn. The mayo and Greek yogurt is the glue that makes the cheese stick.

If you are looking for simple zero-point corn on the cob recipe season your corn on the cob with salt and pepper and spritz with oil spray. I like to use I Can’t Believe It’s not Butter spray for a more butter flavor taste.

When making corn on the cob in your air fryer it is so fast and easy and the corn gets done in under 10 minutes. You will have Mexican Street Corn ready in no time.

What is an Air Fryer? 

An air fryer is a kitchen appliance that cooks by circulating hot air around the food using the convection mechanism. It is a downsized version of the convection oven. 

Is air fried food healthy? 

When you compare air fried food to deep-fried food it is much healthier because there is hardly any oil used at all. The only oil I use is from my Pam cooking spray. I spray only the food once or twice because most air fryer baskets are nonstick. If you are concerned about using aerosol sprays for the environment or your health buy a Misto Brushed Aluminum Oil Sprayer can from Amazon and fill that with your favorite oil. 

What are the Best Large Size Air Fryers?

If you are researching air fryers and looking to buy the best ones out there on the market I have tried and tested 2 different ones before. Air Fryer Corn on the Cob

Ingredients

4 ears of corn on the cob

Pam Cooking Spray

Salt and Pepper to Taste

Cream Sauce:

2 tablespoons of Nonfat Plain Greek Yogurt 

2 tablespoons of fat-free Mayonnaise 

2 tsps fresh Garlic 

Lemon Juice 

2 tablespoons of chopped fresh cilantro 

1 oz of Queso Fresco for topping 

Instructions

Preheat your air fryer to 400 degrees. Spray each side of the corn with cooking spray and season with salt and pepper to taste. Place the corn on the cob in your air fryer basket and close it. Set the timer for 10 minutes. When the corn is done brush it with mayo and sprinkle it with queso fresco cheese.

While the corn is cooking in your air fryer whisk together the yogurt, mayo, lemon juice, garlic, and cilantro. Season with salt and pepper if you wish. 

Take the corn out of your air fryer and brush it with the sauce. (There might be some leftover) 

Sprinkle with Queso Fresco Cheese

I’ve been making super juicy and flavorful salmon in my air fryer for quite some time now and with this time and temperature it comes out perfect in the air fryer every time. I have to admit, I have a cheat sheet with air fryer cooking times in my drawer so I can go back to it when needed. Salmon, hard boiled eggs, smoked sausage and potatoes, potatoes, and frozen food I always cook in my air fryer. Heck, I don’t recall the last time I’ve used an oven. It’s been months! 

I keep on hearing from a lot of people that they don’t want to purchase an air fryer because it takes up a lot of space and they don’t need any more kitchen appliances. My air fryer is used EVERY single day of the week and it is one of the most common appliances I use now. My air fryer is a Power XL Air Fryer. It sits out on my kitchen countertop. I keep an old towel underneath it to keep things from overheating. I have had previous air fryers on me completely melt on the back vent before. Shocking I know. This is my 3rd air fryer and I just love it. 5.3 qt size basket for cooking more food. 

For making Salmon in the air fryer: You can use your favorite seasoning, marinade, or just good old salt and pepper to make this salmon in the air fryer. The salmon comes out perfect every time and there is no need to flip the salmon half ways through cooking. 

This dish is perfect for all kinds of diets. Keto, Low Carb, and salmon is zero points on WW. Salmon is super healthy and contains omega 3’s and healthy fat. 

How to make Air Fryer Salmon 

Air Fryer salmon is probably one of the easiest ways to cook this popular fish! Start by seasoning the salmon. Like I mentioned above, you can use a marinade, your favorite seasoning, or just some salt and pepper. No exact measurements are needed for this because some people use ingredients than others. 

Pop the salmon fillets in the air fryer basket. If your air fryer requires preheating then preheat it. Mine does not. 

Set the temperature of your air fryer to 350 degrees and cook the salmon for 12 minutes. In 12 minutes you will have perfectly cooked and flavorful salmon every time. 

Tips and tricks for Air Fryer Salmon 

Of course, it is always best to let your salmon defrost before cooking it in the air fryer. 

The temperature and time listed for my air fryer salmon recipe is 12 minutes at 350. If you are cooking salmon from frozen try 400 degrees for 15 minutes. I’ve cooked plenty of frozen chicken cordon bleu breasts from Sam’s Club in my air fryer and the back of the package has oven cooking temperatures. I find the temperature that the package suggests on my air fryer, and go half of the suggested cooking time. The chicken breasts turn out perfect every time. If your salmon has an oven suggested temperature and you wish to cook your salmon from frozen in the air fryer go by that method. 

Do not overcrowd the air fryer basket with salmon. They come in various sizes and shapes and the salmon might not be properly cooked then.

Sometimes I get really tired of posting recipes so I thought I’d share what my typical day looks like on WW. I’m the type of person that loves going grocery shopping and I get extremely excited whenever a new grocery store opens up in town. Aldis just had a grand opening here and I plan on doing a product post on that soon. Be on the lookout for that post.  The main stores that I shop at are Sam’s Club, Cash Wise (Midwest store) and now Aldis. I also LOVE easy convenience food that I can throw in my air fryer or just heat up in the microwave.  The 3 main cooking appliances I use are my stove top, microwave, and air fryer.

On top of WW, I also count calories. Zero point foods have calories too and that is one reason why I also like to track those foods. I have found from reading various Facebook groups and online forms that it is a personal preference. I also find that when I track 23 points a day that is roughly around 1,o00 calories.  I work out and swim in the morning and  I need a little more fuel to help me throughout the day, aka as activity points. So on days I work out I eat more than 23 points.

Hopefully, this post will give you some new meal ideas or inspiration. I’ve been honestly tracking my food for the last 2 months (instead of Yo-yo dieting) and I’ve lost 7 pounds and I plan to keep going until I hit 15 pounds. One account that has really helped me on Instagram is Syatt Fitness. His posts about weight loss and goals are so inspiring to me and help me stay on track. Weight loss doesn’t happen overnight. It takes time and that is one thing he’s taught me. Patient. Also, try listening to your body. It knows when you are full or when you’re hungry. You could just be bored and eating snack after snack like I was. It took me a long time to realize that too. Let me know if you want to continue seeing these types of posts. Maybe I can do 1 or 2 of them a month.

Breakfast

I LOVE watching What I Eat in a Day videos and recently I’ve discovered Felicia’s channel. She’s lost a tremendous amount of weight and she has a very inspiring channel. I saw her famous Felicia combo which is 1/4 cup of low-fat cottage cheese, 2 fried eggs, 1 1/4 cups of Ore Shredded Hash Browns and 2 slices of Turkey bacon. All of this is only 5 smart points and it is very filling. I can’t stop eating this combo because it is delicious!  My dogs end up having a slice of turkey bacon so I count it as only 4 points.

Cook the turkey bacon in the microwave between 2 sheets of paper towels.

Spray a nonstick cooking pan with Pam and add the frozen hash browns to the pan. I like to do this on a medium-low heat at 5. I watch for the hash browns to start turning brown on the bottom and that is when I flip them. I like my hash browns golden brown on the outside.

After I flip the hash browns that is when I add the turkey bacon to the microwave and set the timer to the 2 minutes. I add the eggs to the skillet and they are done by the time the bacon is done cooking. So stinking good and this is something I definitely don’t get tired of eating every day.

Lunch

Instagram is an awesome place to discover new food and ideas for meals throughout the day on WW. That is where I discovered these Don Miguel Chicken and Cheese mini tacos (refrigerated section at Sam’s). 1 mini taco is 1 point and they are good with Tostitos Cheese sauce for 1 point. Today I had 7 of them with 2 tablespoons of cheese sauce for 8 points. Air fry them at 400 degrees for 7 minutes. Add on some zero point food such as fat free refried beans or corn.

Dinner

For dinner lately, I’ve been loving these Barber Foods Cordon Bleu stuffed chicken breasts (Sam’s Club). They are so yummy and tasty with a side of french style green beans and unsweetened applesauce for 0 points. I prefer canned green beans over fresh ones. Air fry these frozen chicken breasts from frozen at 370 for 20 minutes. They come out perfect in my air fryer every time. 8 points

Snacks

Adis had a deal on grapes this week and my Mom and I split a bag of them. Grapes, of course, are zero points and I like to pair them with a Sargento Light Mozzarella Cheese stick for 1 point. Sargento has the best light string cheese in my opinion. Tried others and they just taste like garbage. 

So there you have it. This is roughly what I eat in a day when I’m seriously counting. Hope you like it.

Smoked potatoes are seasoned with salt and pepper and drizzled with olive oil then get wrapped in foil and cooked on a smoker. I love smoking my potatoes in foil for easy clean up after. I garnished my smoked potatoes with herbs such as parsley, dill, and chives that were growing fresh from my herb garden. Just use whatever herbs you have in your fridge. 

Smoked potatoes are the perfect side dish to have with your pulled pork or brisket this Summer. Potatoes take about 2 to 3 hours on the smoker. When your main entree is 2 to 3 hours close to being finished set these potatoes on the side to cook with your pork. 

Your Grocery List:  

Russet Potatoes 

Olive Oil 

Salt and Pepper 

Herbs such as chives, dill, and parsley 

How to Smoke Potatoes 

Preheat your smoker to 225 degrees. While your smoker is preheating get your potatoes ready. Cut your potatoes and place them in a bowl and drizzle them with olive oil. Season your potatoes with salt and pepper and toss until everything is combined. 

Cut a slice of tinfoil and fold up all for sides. Place the potatoes inside the foil. 1 potato should fit into the entire foil packet.  You might need more than one depending on how many people you are serving. 

Set the potatoes on the smoker and Cook at 225 for 2 to 3 hours or until the potatoes are soft and tender. You can test the doneness by poking the smoked potato with a fork, paring knife, or skewer.

Tips for Smoked Potatoes 

After the two hours of smoking is done take out one potato and gently press it with a fork to see if it is done. It will be soft and tender when ready. 

You can top these smoked potatoes with grated parmesan cheese or any other type of cheese you have on hand with the choice of herbs you use. If you wish to use a melty cheese like mozzarella or cheddar (smoked cheddar would be delicious) sprinkle the cheese on top of the potatoes and close the lid until the all the cheese is melted. 

Crumbled crisp bacon would be perfect to top these smoked potatoes as well or sour cream. Make sure the bacon is already cooked prior to adding toppings.

What to serve with smoked potatoes: Smoked potatoes need a main entree to go with them. I like to smoke a rack of ribs, make some smoked pulled pork, or a brisket. 

If you wish to do a smoked baked potato you can use this same method for smoking. They take about the same amount of time.

Ingredients
  • 4 large baking potatoes such as russets, chopped into 1 inch cubes
  • 2 tablespoons of olive oil

Instructions

Preheat smoker to 225.

Rinse and dry potatoes. Cut your potatoes in 1-inch sized cubes. 

Combine the potatoes with olive oil, salt, and pepper in a bowl. Toss to coat all the potatoes. 

Smoke for 2 to 3 hours, depending on how large the potatoes are. Potatoes can be smoked alongside whatever meat you are smoking.

Potatoes are done when they can be pierced easily to the center.
