Beetroot gravy recipe –  Exactly it’s a beetroot potato gravy. I love the potatoes with beetroot so I added in equal proportion. If you like to eat beetroots alone, go with it. I am sure this red colored attractive beetroot gravy sabzi is a twist than usual gravies for chapathi or poori. It’s a good accompaniment for Indian flatbreads you can also try with pulao of any kind.

Beetroots are a great source of fiber associated with numerous health benefits. If you consume regularly, it will increase blood counts. I have seen people take boiled beetroots before a workout as it will increase exercise performance.so try to include beetroots in your meal in any form like beetroot juice, beetroot rice, Beetroot chutney or anything in your favorite form. Also, give a try on this easy beetroot gravy recipe and write me your inputs.

How to make Beetroot Gravy:
  1. Peel the outer skin of beetroot and potato using a peeler or knife. Wash and cut them into small sized cubes.
  2. Pressure cook for whistles and keep aside.
  3. Grind coconut and fennel seeds along with little water to a smooth paste.
  4. Heat a wok, add oil and ghee, once it gets hot add the spice seasonings one by one cinnamon, cloves, cardamom, bay leaf and finally curry leaves.
  5. Maintain the flame in medium-low to avoid burning. Now add finely chopped big onions. Saute until its transparent and add ginger garlic paste and stir till the raw smell goes off.
  6. Add finely chopped tomatoes and sprinkle some salt over it. Cook covered with a lid.
  7. After the tomatoes get cooked, add turmeric, red chili powder, and coriander powder and mix well.
  8. Add cooked beetroot and potatoes along with water. Add the salt as per taste.
  9. Cover with lid and let it boil for 3 to 4 mins.
  10. Add garam masala and give a quick mix. Add grounded coconut paste, mix and cook it for 4 more minutes.
  11. Once the gravy is semi thicken, switch off the flame and top with chopped coriander leaves. Serve hot with chappathi or any Indian flatbreads. I love it to have with pulao rice also.

Investing in the right kitchen equipment is the secret to enjoying cooking. Most people will claim they hate cooking, but it could be because they have not invested in the right cookware. For lemongrass, the stems are tough which makes the chef’s knife a perfect tool to trim them. Bruise them using the knife and trim them and use them for your stews.

Dates lassi recipeLassi with dates is quite interesting and lip-smacking combo to have a healthy yogurt drink. Dates are sweetness in nature, so adjust ur adding of sugar or jaggery accordingly. I love mild sweetness in Lassi. So I added a small dash of honey and it was yummylicious. In this homemade dates lassi, you can add rose water, vanilla essence or cardamom for flavor and top with chopped nuts, dried fruits or tutti frutti. Ingredients:

  • Dates –  6 to 8 nos
  • Curd – 1 cup
  • Milk – 3 tbsp
  • Chilled Water – ½ cup
  • Sugar/jaggery/honey –  as needed
  • Salt – a pinch of salt to enhance the taste
How to make Dates lassi recipe:
  1. De-seed the dates and soak in milk for 30 minutes to make it soften.
  2. In a mixer, add soaked dates along with milk, curd, chilled water, and sugar or jaggery which you are using.
  3. If you are using honey add it while serving.
  4. Process the mixer until it reaches creamy and smooth.
  5. Pour into glasses and serve chilled.

Andhra tomato dal / Andhra tomato Pappu – a traditional recipe of Andhra cuisine. This lightly tangy Pappu is a variation of usual spicy flavors of Andhra recipes. Dal is a common recipe of Indian cuisine and the cooking method varies from state to state. In Andhra, they will add little tamarind while making tomato dal. I am not so tangy person so I didn’t add tamarind. This simple Pappu rice is good too with mango pickle, and vadagams or pappad. Seasoning with red chili makes this tomato Pappu complete.

Ingredients:

Toor dal – ½ cup

Tomato – 1no

Shallots or small onions – 5 to 6 nos

Garlic – 4 flakes

Ginger – 1 inch piece

Green chilies – 2 nos

Red chili powder – 1 Tsp

Turmeric powder – ¼ tsp

Hing(perungayam) –  a generous pinch

Coriander leaves – few

Salt – as needed

To season:

Oil – 1 tbsp

Mustard – 1 Tsp

Urad dal – 1 Tsp

Cumin seeds(Jeera) – 1 Tsp

Red chilies – 3 to 4 nos

Curry leaves – 1 sprig

How to make Andhra tomato dal:

  1. In a pressure cooker, add washed toor dal, chopped tomatoes, shallots, peeled garlic and ginger, slitted green chilies, hing, turmeric powder, and red chili powder.
  2. Add 2 cups of water, pressure cook to 4 to 5 whistles.
  3. After the pressure releases, open the lid, mix well and add salt.
  4. Heat the seasoning pan, add oil, temper with mustard, jeera seeds, urad dal, red chillies, and curry leaves.
  5. Add this seasoning to cooked dal and mix well.
  6. Add some finely chopped coriander leaves to it and serve with hot rice drizzled with ghee.

Lemon uppu oorugai – A simple and always handy pickle to store for many months. It is made with just two ingredients salt and lemon. No oil and preservatives needed. It’s simply dried in sunlight. This salted lemon pickle is good home remedies for morning sorenes. You can eat with curd rice or porridge. I love it to have with sambar and bisibelebath as well. You can keep this homemade lemon pickle out without refrigerating for 6 to 8 months if properly dried. I usually don’t keep it in a refrigerator.

I should say this lemon uppu oorugai is my mom’s recipe. She made it and I shot the pictures. I gave the method as she explained. She made it in an authentic way. From my childhood, I used to see my mom and grandma preparing pickles and vadagams during summer and store for a whole year. They store this uppu elumichai oorugai and kidarangai oorugai in a big ceramic jaadi as it lasts well for a year. You can try in this summer and store it.

How to make Lemon uppu oorugai recipe:
  1. Slit lemon into 4 deep slits or cut into 4 wedges.
  2. Place the slitted lemons in a wide glass or ceramic jar.
  3. Add salt and mix well. Close and let it sit for 2 to 3 days.
  4. After 2 to 3 days you can see the water oozes from the lemon. Take the lemons alone and spread it in a tray and place in sunlight whole day.
  5. Keep the water in the same glass or ceramic jar. Put the lemons in water at the end of the day.
  6. Do the same for one week or until the skin of lemon becomes soft and it absorbs the water fully.
  7. Store in a glass or ceramic jar. Keep it in sunlight monthly once. It keeps remaining good for more than one year.

Cardamom Tutti frutti Cake –  when you are in need of aroma other than vanilla bean in cakes you can try these cardamom flavour. It was so yumm in flavour and taste. Addition of curd gives perfect moistness too the cake. This eggless tutti frutti cake fills your palate undoubtedly .

How to make Cardamom tutti frutti cake:

  1. Pre-heat oven at 180 degrees for 10 mins
  2. In a mixing bowl, add oil, and curd. Whisk together well.
  3. Add cardamom extract or powder and mix well.
  4. Add sugar,and whisk it thoroughly to incorporate well with curd and oil mixture.
  5. Add baking powder, baking soda and salt one by one and mix well.
  6. Now add the flour little by little and mix well.Make sure there is no lumps in the batter.
  7. Finally add some tutti frutti which is dusted with flour.
  8. Fill in a greased baking tray to ¾ th level. Top with some remaining tutti frutti.
  9. Gently tap the tray. Bake the cake at 180 degrees for 45 minutes.
  10. After 45 mins , check it with tooth prick or fork by inserting in the centre. If it comes out clean, your cake is done. If some batter sticks with it, go for another 10 mins.
