Good Morning!! Y'all I've got a CRAZY week coming up. I am flying out to San Francisco to teach a class at Pinterest! OMG! I am dying! I am teaching a class at their annual conference, KnitCon. KnitCon is where Pinterest the company brings Pinterest the website to life for its employees. There are classes on yoga, flower arranging, cooking, calligraphy - you know, all the pins you pin on Pinterest. I will be teaching Pinterest employees how to make a no-bake dip for Memorial Day. How To Make Squash CasseroleThis Southern Squash Casserole is very easy to make. The hardest part of the whole recipe is slicing the squash. I like to use a handheld mandoline slicer to slice the squash into thin slices. Having all the slices the same thickness helps the squash cook evenly. It also only takes a minute to slice the squash with the handy dandy handheld mandoline slicer.
After you slice the squash, you are going to quickly saute it in a skillet with some butter, garlic and onion. Once the squash is tender, you are going to transfer it to a colander to drain the excess liquid. Press down on it to really get all that liquid out. You don't want a runny casserole.
Once the squash has drained, finish mixing the remaining ingredients and transfer to a baking dish and top with melted butter, cheese, and crushed Ritz crackers.

Tips for Grilling Chicken on GrillThis Apple BBQ Grilled Chicken is marinated in a combination of apple juice, brown sugar, and BBQ sauce. Make sure to use a BBQ sauce that you like. It gives the chicken most of its flavor, so you want to use a good BBQ sauce. I let the chicken marinate overnight in the marinade. I think the longer the better!!! If you don't have that long to let the chicken marinate, let it hang out in the marinade for at least 2 or 3 hours.
My number one tip for grilling chicken breasts is to pound the chicken to an even thickness. We place the chicken in a ziplock bag and use a meat mallet to pound the chicken so it all the same thickness. There is nothing worse than a half juicy, half dry piece of chicken. Pounding the chicken breasts to an even thickness will ensure that the chicken cooks evenly.

There is a layer of streusel topping in the middle of this cake and on the top. The streusel topping is made up of chocolate chips, pecans, toffee bits, sugar, and cinnamon. You could even add some coconut if you like coconut.
I bake this Chocolate Chip Sour Cream Coffee Cake in a tube pan. You can also use a bundt cake pan. I spray the pan with some cooking spray with flour. I like Baker's Joy or Pam cooking spray with flour. Make sure to spray the pan really well so the cake doesn't stick.

I used cheddar cheese on the sliders. Feel free to swap the cheddar for swiss, pepper jack, or your favorite cheese. As long as you like the type of cheese, these sandwiches will be delicious!
The homemade BBQ sauce is very simple to make. There are only 5 ingredients and it only takes about 5 minutes to make. Can't beat that! I used regular Coke. I haven't tried this with diet drinks. I think the sauce needs the sugar from the regular coke.

I either put the sandwiches in a pan and cover with foil or just wrap the assembled sandwiches in a big piece of aluminum foil.
