One of my favorite easy things to make on a weeknight is a sheet pan dinner. I almost always have some kind of pre-cooked sausage in the fridge (Aidell’s is our favorite!). This Quick Sausage & Veggie Sheet Pan Dinner can be eaten alone or over salad greens or as part of a rice bowl.
It’s super versatile and easy to adjust depending on what you have on hand.
Yep. Another spaghetti squash bake. I’m kind of in love with these, much to my kids’ dismay. Mine are still warming up to spaghetti squash. Do your kids like it?
Mostly I make them for me and Steve to eat for lunch during the week. We’re still working on getting his chiro office set up, so he’s home most of the time.
Anyway, I think you’ll love this spaghetti squash bake, too. I used salsa verde (my favorite store-bought salsa) and some Paleo Ranch. Are you surprised? I’m basically a 6-year-old and put ranch on everything. More than my actual 6-year-old does.
Sheet pan dinners are the best. And so are sheet pans. I love my gnarly old pans. They remind me of how much I fell in love with roasted vegetables 10+ years ago — especially roasted Brussels sprouts. It was a total game changer for me, and I’ve been obsessed with roasting vegetables ever since.
Remember when I asked you guys if you wanted a Valentine’s treat or easy dinner ideas and you said “EASY DINNER IDEAS!” and then I posted some gorgeous beet brownie bowls which would have been perfect for Valentine’s Day, but I didn’t even get the post up until AFTER Valentine’s Day?
Hey, it’s been a while, hasn’t it? Between moving out of state, the holidays, and setting up Steve’s new chiro office (We’re still not done yet. Ugh.) I’m just about burned to the ground.
I’ve been in a weird place lately — a little restless, somewhat in a SAD funk (Boise, why are your skies so gray?!), and, more recently, recovering from pneumonia. While I was sick I got hopelessly addicted to Cooking Craze and Design Home. I’m not usually a phone game kind of girl, but dang.
So, instead of prepping stuff for Perry’s Plate, I’ve been assembling diner food for cartoon people that walk across my tiny counter. (Seriously, Cooking Craze is fun.) And not Instagramming.
And I’m not even sorry. I needed a break, guys, and I love that you still stick around even when my updates become sporadic. (more…)
