Good Monday afternoon to you CSF Members and we hope everyone enjoyed the Bluefin Tuna and Oysters last week. We have been hearing from a lot of our Members how they thoroughly enjoyed the Bluefin Tuna!

Our Catch of the Week this week is Atlantic Pollock. This is a cousin to the Cod and just as delicious!

CATCH OF THE WEEK-ATLANTIC POLLOCK

 

Atlantic Pollock is quickly becoming the new signature New England fish, tasting much like cod and haddock and very abundant. Check out the article which appeared on our Facebook page:http://www.concordmonitor.com/Misunderstood-pollock-a-key-to-New-England-seafood-s-future-2011708.

Atlantic Pollock is related to cod and haddock and sometimes referred to as "Green cod".  Our Pollock are found in the Northwest Atlantic Ocean and are most common on the western Scotian Shelf and in the Gulf of Maine. A different species of Atlantic Pollock, commonly known as saithe, is found in the Eastern Atlantic.

Atlantic Pollock differs from Cod in that they have a greenish hue and slightly darker flesh. Not to be confused with Alaskan Pollock, found in the Pacific Ocean and one of the most harvested fish in the world. Alaskan Pollock is often times found in frozen fish sticks and fish fillets and a main ingredient in seafood salad and many processed seafood products.

And according to the Gulf of Maine Research Institute (GMRI), Atlantic Pollock is also one of the five Gulf of Maine fish, that you really can feel good about eating!

COOKING INSTRUCTIONS

Our Atlantic Pollock has a white, firm flesh with a sweet and delicate flavor. It is low in saturated fat and a great source of B 12 vitamins! 

Pollock is great in fish chowder, broiled, baked for grilled. Welcome to Week 14 of our Spring/Summer Session and welcome to the many new and returning Members who have signed up in the past week!

This is a monumental week for us at NH Community Seafood, for the first time ever, since we started in 2013, we are offering our local Tuna species, Bluefin Tuna as our Catch of the Week this week! With the help of new Manager Linda Hunt at Yankee Fisherman's Coop and our local Tuna fishermen, we are proud to be making this finally happen!

Our Biweekly Shellfish Share this week is NH grown Oysters from the Little Bay, from our friends at Virgin Oyster Company.

 

CATCH OF THE WEEK-BLUEFIN TUNA

Our fish this week is Bluefin Tuna, a local Gulf of Maine species. When you hear about tuna fishing in NH, it is these tuna that the fishermen are targeting! Bluefin Tuna is best known as for its high fat content, sushi quality flesh, called Mahuro or Toro in the sushi world. 80% of Bluefin Tuna landed in the World goes to the sushi market, primarily to Japan.

U.S. wild-caught western Atlantic bluefin tuna is a smart seafood choice because it is sustainably managed under a conservation and management plan, by National Marine Fisheries Service (NMFS) that allows limited harvest by U.S. fishermen.

In NH, Bluefin Tuna are a migratory species and show up off our shores from  July-November. We have both recreational and commercial Tuna Fishermen in NH. As seen in the National Geographic series, Wicked Tuna, Bluefin Tuna are graded upon landing for the fat content in their meat. High fat content fish get immediately shipped to Japan overnight for the next day sushi-fish auction in Tokyo. Fish with more muscle and less fat, are sold to the "domestic" market, here in the US. We are serving up a domestic quality fish, not that it couldn't be used for sushi, it could. But it would not meet the high standards of the Japanese market.

KNOW YOUR FISHERMEN

One of our Fishermen this week is Aaron Diamond, of the F/V Jah Reel Fishing Charters, out of Hampton, NH. Aaron has been tunafishing for several years and is one of the regulars seen out in the Gulf of Maine and beyond during Bluefin Tuna Season. Aaron's tuna he caught for us is pictured at the top of our newsletter. 

We will not know our other Fishermen until Wednesday, when they land our second fish!

COOKING INSTRUCTIONS

Pan searing Bluefin Tuna is the best way to go

Bluefin tuna IS NOT THE TUNA YOU BUY IN THE GROCERY STORE! That is often times Yellowfin or Bigeye tuna, which tastes fabulous when you cook it fully.

Bluefin tuna flesh is the darkest and fattiest of any tuna. The flesh has the firmness and looks like beef steaks.

Bluefin Tuna is best in either ceviche, pan seared or barely cooked on the grill. IF YOU FULLY COOK BLUEFIN TUNA, it has a strong fishy taste and odor.

This week's Catch of the Week is Acadian Redfish, our New England Grouper species that looks like it's straight out of the tropics!

We will be serving up Great Bay oysters next week, for Biweekly Shellfish Week from Virgin Oyster Company, out of Dover, NH. Orders will be activated on Wednesday, look for your email for the link to order!

 

CATCH OF THE WEEK-ACADIAN REDFISH

Our fish this week is the Acadian Redfish, otherwise called "Red Perch" or as seen in many local Market Basket chains, "Ocean Perch". Often times, this fish is substituted for the tropical fish, Red Snapper. This is our northern Atlantic Grouper species! This big eyed fish looks like a tropical fish from the islands. A member of the Rockfish (Grouper) family, the Redfish is a deep water, goggle eyed, slow-growing fish that spans from Norway to Georges Bank in our Atlantic Ocean.

Not to be confused with Red Snapper, a southern species down south, the Redfish births live young (very rare with fish) and can live to be up to 50 years old! This species, once thought of as by-catch or lobster bait, is quickly becoming one of the more popular fish in the US, especially here in New England!

 

KNOW YOUR FISHERMEN

Our Fishermen this week for the Acadian Redfish are our friends from the Teresa Marie III,  out of Gloucester, Ma. Since Redfish are a deep sea species, most often times they are caught by "trip boats" as opposed to day boats, like most of our NH Fishermen. Trip boats stay out at sea overnight and bring back the catch after a long trip into shore.
 
 
The Gulf of Maine Research Institute (GMRI) Sustainable Seafood Division has an influential seafood branding (Gulf of Maine Responsibly Harvested) traceability and marketing division. In 2015, they declared Redfish among one of the five best fish to eat out of the Gulf of Maine, the waterbody that encompasses our NH shoreline.

Redfish fillets are thin and have the skin on. All the good Omega-3's are in the skin! Cook these fillets for just a few minutes, on each side if frying, grilling or sauteing! Season overnight for full flavor.

HOLIDAY PICK UP SCHEDULES

There will be just two Holiday delivery changes on Thursday, July 4th: Manchester and Brookford Farm Pick ups will be on Tuesday, same time and place.

CATCH OF THE WEEK

The Catch of the Week is White Hake. White Hake is a benthic fish species typically found in Atlantic Ocean from Cape Hatteras to southern Labrador and are primarily caught using gillnets by our NH Fishermen.

They are cousins to the Whiting and Red Hake and sustainably caught throughout the Gulf of Maine.

COOKING HAKE

 SHELLFISH SHARES

This week's Biweekly Shellfish Share is local Jonah Crabs. These are caught by our Portsmouth Lobstermen in their lobster traps.

Shellfish Share portion is 6 Jonah Crabs. Crabs will be live at your Pick up location, bags will be provided.

Jonah Crabs are local and delicious and have a lot of meat in them! They have a more delicate flavor than Blue crabs.

Welcome to Week 11 of our Community Supported Fishery and Welcome to all our new and returning Members this week!

Our Catch of the Week is delicious Monkfish again, please keep in mind that Monkfish is one fish in the Gulf of Maine that is plentiful and well managed. Our Fishermen have a larger amount of Monkfish "quota" than any other fish. We hope you love Monkfish, this will likely be the last week we offer it in the Summer Session!

CATCH OF THE WEEK-MONKFISH

Once caught as by-catch in otter trawls and gillnets, have quickly become one of the world's most popular fish. In the west, usually just the tail meat is eaten, but there is a large market for whole monkfish in Asian countries. Also known as "Poor Man's Lobster", monkfish tail meat has both the consistency and distinct taste of this famous crustacean. If you like lobster, you'll love monkfish! And if you don't like lobster, the firm, white fillet when cooked also tastes like a sweetened fish. The flesh is distinct and a purplish-brownish color when raw and turns white once cooked. 

Not at all attractive on the outside, Monkfish should not be judged by their outward appearance! They are a brownish color mottled with white spots on top and white on the underbelly. Their habitat spans from the Grand Banks and northern Gulf of St. Lawrence along the Atlantic shoreline south to Cape Hatteras, NC. Monkfish are voracious predators. They lurk on the sandy, muddy bottom and lure their prey with the spiny extension on their head. This "lure" attracts the prey, like bait on a fishing line, bringing the victim close in for the lunge of the monkfish. Our catch this week comes from our faithful supplier,  Jamie Hayward,  F/V Heidi & Elisabeth, landing in Portsmouth. Jamie and his crew, Josh Byrne  and Chris "Whitey" White, are bringing in our Monkfish this week. 
 
And a special thanks to our friend, Ward Byrne, land crew, who is always on call with ice ready  and a smile on his face, to land fish at the Portsmouth Commercial Fishing Pier.

COOKING INSTRUCTIONS
 
Cook Monkfish as you would any other fish, and remember the cardinal rule, 10 minutes an inch! The monkfish tails are wide and thick, because they are the tail meat. Marinating the tails and seasoning before cooking adds to the flavor. Baked, sauteed, broiled, roasted or grilled, these tails are fantastic!
