Dan and I are so excited to share with you a game changing dinner option that we just tried and absolutely loved! Ever since we moved to Sacramento, we have completed all of our grocery shopping at Raley’s. It is a store we trust for quality, freshness and affordability. With each visit to Raley’s, we find healthy and fast options to make our recipes come to life. This new discovery at Raley’s is our quickest dinner find yet and will completely transform how we do dinner in the near future. Raley’s has created new “quick kits” that are chef-created meal kit recipes. In one box, you can make a flavorful, healthy and fast dinner that is guaranteed to satisfy. Just add the rotisserie chicken (sold separately) for protein, and the quick kit brings everything you need to create a wholesome and speedy meal. When we got the opportunity to try the meals, we were blown away by the flavors and how simple they were to prepare. Each meal was so incredible and each bite made us so surprised that it was made so quickly in our own kitchen.

After trying all three of the delicious quick kits, Dan and I were sold on buying and making them on a regular basis. With a baby on the way soon and with our busy schedules, we need meals that are fast and convenient to make. We were also really impressed with the affordability of the product. Each meal kit is $14.99 and we were able to use one rotisserie chicken for multiple meals. That is much less than eating out, and the flavors tasted as if we were dining in at an upscale restaurant. Another aspect that we loved about the quick kits was the quality. Each box had extremely fresh ingredients that added great boldness to the dishes. These ingredients were not your typical additions to meals and made for impressive flavors. From roasted butternut sweet potatoes and caramelized onions, to sage butter, the high-quality ingredients created rich and wonderful flavors.

The first meal kit that we made was the Mole Enchiladas. Immediately, I was excited by the caramelized onions and the additions of the pepitas to add crunch to each cheesy bite. These were unique and delicious ingredients that are not seen in typical meal kits. The mole sauce was so rich and bold, and did not need any preparation on my part. In a few simple steps, I was able to put together an elevated dish that had so many delicious components. It took just 10 minutes to prepare and the oven did the rest of the work for the next 15 minutes. I was able to get a few things done around the house, all while the most amazing meal became bubbly and warm in the oven.

With roasted sweet potatoes, cotija cheese and cilantro, this incredibly fast dish really wowed us. We loved that it was filled with a tasty vegetable and that the spice was a perfect balance with the chicken and melted cheese. After we both quickly made and ate the Mole Enchiladas, we knew that we could have this meal on a regular basis.

Another quick kit that amazed us was the Greek Style Pasta Kit. I came home when Dan was making this meal, and was instantly excited by the amazing aromas. As I got out of my car in the garage, I thought that our neighbors were making something heavenly for dinner. To my surprise as I opened the door to come inside, I realized that it was our home that smelled like a fancy restaurant! Dan made this meal on his own and repeatedly praised how easy and fast it really was. 

This dish featured a decadent feta cheese sauce and had spinach, kalamata olives, dill and grape tomatoes. The combination of ingredients not only smelled divine, but each bite was so rich and creamy. While we make plenty of pasta dishes for dinner, this one had such unique flavors. It was a fun change to my regular pasta creations. When I looked at it in the skillet, it looked as if Dan had been making it for at least an hour. However, with the ease of the meal kit, he simply poured, stirred and plated the dish in under thirty minutes.

The last dish we enjoyed was the Sage and Butter Gnocchi. This quick kit featured potato gnocchi in sage butter and was accompanied with roasted butternut squash, shredded spinach and parmesan cheese. To us, this dish embodied fall and was the most comforting and tasty meal to enjoy after a long day. Better yet, it required almost no preparation on our part. Once again, this meal only needed a bit of chopping, pouring and stirring. It was really that easy! This gnocchi did not taste as if it came from a meal kit (or even from our kitchen), and reminded us of something we could purchase on a seasonal menu at a nice restaurant.

After making such high quality and healthy meals in a matter of minutes, we were convinced that these meal kits need to become a staple in our home. Adding fresh tomatoes, zucchini and corn to this garden macaroni and cheese, makes it so delicious! Giving this dish a healthy spin made it so irresistible and so hard to put down!

We are loving being back, cooking and creating more posts! Both of us missed cooking and creating so much, and it has been such a breath of fresh air to make and enjoy food again. Because we are expecting a little girl soon, I have been trying so hard to eat healthy foods that are packed with nutrients. This garden macaroni and cheese was a compromise to this goal. Of course, macaroni is a guilty pleasure, but by adding veggies, it made me more willing to devour it. Macaroni is something we make often when we do not know what else to make. It is something we have perfected and love to experiment with. We have added so many different things to macaroni, from avocado to hash browns. It is so fun to add familiar things in order to make a classic dish unexpected. 

This one was easy for us to dream up, because I have been determined to add vegetables to every dinner we create lately. When we added fresh tomatoes, zucchini and corn to this garden macaroni and cheese, we were so excited by this delicious twist. Giving this dish a healthy spin made it even more irresistible and so hard to put down!

The thing I love most about macaroni is that it makes the very best leftovers. When we make macaroni, it usually lasts a few days, and makes me look forward to lunch time. Once we had this garden macaroni and cheese for dinner, I looked forward to every time I could have it again. There was something so unfamiliar about adding tomatoes, corn and zucchini to macaroni, and yet it worked so incredibly well!

We cannot wait to bring you more dishes with an even healthier focus. With a baby on the way, I have worked hard to make sure I am getting plenty of healthy vegetables and protein into my diet. As we go on this journey, we will be bringing you more and more recipes that highlight this effort. This goal makes recipe planning and grocery shopping a bit challenging, but even more rewarding when it turns out to be amazing!

Garden Macaroni and Cheese

Ingredients

  • 1 pound Rotini Pasta
  • 3 cups Whole Milk
  • 1/2 cup Butter
  • 1/2 cup Flour
  • 2 teaspoons Salt
  • 1 1/2 cups Monterey Jack Cheese, grated
  • 1/2 cup Sharp Cheddar Cheese, grated
  • 1 1/2 cups Cherry Tomatoes, sliced in half
  • 2 Zucchinis, sliced
  • 2 Ears of Corn, cut
  • 1/2 cup Breadcrumbs
  • 1/2 cup Parmesan Cheese
  • Salt and Pepper

Instructions

  1. Preheat the oven to 350 degrees. Boil water in a large pot and add rotini pasta. In a medium-sized pot, heat milk until it starts to bubble and then reduce the heat. In a separate pot, add the butter. When melted, slowly whisk in the flour. Whisk continuously for about 3 minutes. Add the milk slowly into the flour mixture and whisk continuously. Whisk mixture for another 3 minutes.
  2. Add cheeses, salt and pepper to the mixture and stir. Add the cooked pasta and stir for 5 minutes.
  3. Place all contents into a pyrex dish. Add in the cherry tomatoes, zucchini slices and corn. Stir completely. Top with breadcrumbs and parmesan cheese. Place in the oven for 25 minutes. Enjoy!

Before introducing this healthy burrito bowl recipe, we have a little announcement! We have not posted on here in quite a while! We have missed cooking and sharing our recipes, but we have a very good explanation for missing out for a few months. We are so excited to announce that Dan and I are having a baby, due on New Years Day! We are over the moon and cannot wait to meet this little girl who is kicking up a storm! Because of this little cutie, we took a little break from blogging, but are looking forward to starting up again.

Our journey for this baby was a bit rocky, but we are so thankful for this little girl and the adventure will be starting very soon. We have been hesitant to share our experience but we know that telling others will only help people going through a similar experience. Our first stop to blogging in February came because we lost a baby this past New Years Eve. It was early on in the pregnancy but very difficult for me to process and work through. Getting excited about cooking, writing and posting was close to impossible for me, so we decided to take a little break. We want to expand more on miscarriage soon, and I am thankful for this blog to be able to do this when I am ready. It is a subject that is often quiet, and I know that more people talking about it would have really helped me while we were struggling with the loss. 

The second break from blogging happened the minute my morning sickness kicked in when we found out we were pregnant again in April. Making food, standing in my kitchen and even opening up my fridge made me so sick! My diet quickly shifted from delicious home cooked meals to whatever bread and cheese combinations I could find. Finally, at 22 weeks, I am excited to get back into the kitchen and start cooking amazing meals again!

Right before we found out about this little girl, we made this tasty and healthy burrito bowl. Before my appetite changed to only wanting super bland foods, this burrito bowl was my healthy go-to meal. We loved how simple, fast and delicious it was. Best of all, it can be made with very little preparation and enjoyed with big, bold flavors. With kale, beans and fresh corn and tomatoes, this healthy burrito bowl is a healthy and very filling weeknight meal.

Given that I can finally enjoy cooking again, we will be posting more and more recipes each day. Each of these recipes are healthy and simple foods. Due to this pregnancy, I am trying hard to make nutritious and simple meals that are fast to make on a weeknight. We cannot wait to start showing you these delicious meals and to be making even more again in our kitchen. Yield: Makes 2-3 Bowls

Ingredients

  • 2 cups White or Brown Rice, Cooked
  • 1 cup Pinto Beans
  • 1 cup Black Beans
  • 1 Corn, cut
  • 1 cup Cherry Tomatoes, sliced
  • 2 cups Kale, rinsed
  • 1 cup Guacamole
  • 1 cup Cheddar Cheese, shredded
  • For the Sauce
  • 1 cup Sour Cream
  • 1/4 teaspoon Chipotle Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Powder
  • 1 Lime
  • Salt and Pepper

Instructions

  1. In a medium bowl, whisk together all of the ingredients for the sauce. Mix well and set aside.
  2. In each serving bowl, begin assembling the burrito bowls. First place in the rice, followed by the beans. Add in the corn, cherry tomatoes and kale. Top with guacamole and cheese.
  3. Drizzle the sauce evenly on the burrito bowls. Enjoy!
