Banana Smoothie Bowl
Bahan-bahan:

  • 2 buah pisang beku
  • 40 gr blueberry
  • 1 sdm air jeruk lemon
  • buah-buahan untuk topping
  • 1/2 sdt chia seeds
  • 1 sdm almond panggang
  • 1-2 sdm Filippo Berio Extra Virgin Olive Oil

Pitaya Smoothie
Bahan-bahan:
  • 1 buah pisang beku
  • 1 buah naga merah beku
  • 1 sdm air jeruk lemon
  • 2 sdm madu atau sesuai selera
  • 50 ml air
  • 1/2 sdt chia seeds
  • 1-2 sdm Filippo Berio Extra Virgin Olive Oil

Tips:

Bahan-bahannya:
  • 1 botol Greenfields Yogurt Drink Blueberry
  • 1 sdm oat
  • 25 gr blueberry

It's delicious but really I could not finish one portion, yes thank's to the amount of mayo. So, let's just share. Mentai Rice, it's actually very easy to make as long as you have kitchen blow torch or use the oven to broil the mentaiko sauce. The sauce itself is made from mayonaise, preferably Japanese mayo like Kewpie and mentaiko (pollock roe / cod roe). If it's hard to find then simply replace it with tobiko (flying fish roe). Please do not skip the fish roe. Anyway, I bought the mentaiko from Tokopedia around IDR 270k for 500 grams, that's a lot, I know. Alternatively, take a look at Papaya Supermarket or other big supermarket as mentaiko is kinda hard to find here.

I made 3 dishes with this Mentai sauce, the first one is the one with crabstick served with rice that mixed with nori powder, you can also use furikake. The second is also with rice with salmon aburi. Lastly, sweet and savory beef with garlic butter shirataki noodles. Well, the last one is definitely my favorite.

The other option, go for garlic butter rice. Anyway, have a try and let me know which one is your favorite.

Mentai Sauce

Ingredients:
200 ml Japanese Mayonaise
1 tbsp Mentaiko (or Tobiko / Ebiko)
1 tbsp ketchup
1/2 tsp chili sauce (optional)
some chili powder if you prefer spicy

Crabstick Mentai Rice

Ingredients:
3-4 tbsp Mentai Sauce
3 Crabsticks
1 tsp Nori Powder or Furikake
1 bowl rice

Salmon Aburi Mentai Rice

Ingredients:
1 bowl Rice
1 tsp Nori Powder or Furikake
3-4 tbsp Mentai Sauce

Salmon Aburi:
150 gr Salmon Sashimi Grade
1 tsp Japanese Mayo
1 tsp soy sauce

Beef Shirataki Mentai

Ingredients:
3-4 tbsp Mentai Sauce
1 pack Shirataki Noodle
1 clove Garlic
1 tbsp Butter
salt and pepper to taste

Beef:
150 gr thinly sliced beef
1 tbsp Soy Sauce
1 tbsp Sugar
1 tsp Sesame Oil
1 clove Garlic

From Teppanyaki to Okonomiyaki, from Osaka style to Hiroshima style Okonomiyaki. Some people may familiar with Chibo as it's popular in Japan, also they have some branches in Asia and in Hawaii. Last week, I got a chance to make a visit to their very first restaurant in Indonesia, located in Gandaria City Mall, Jakarta. Customers can choose to sit at the bar table which allow you to watch the chef preparing food or at regular table with grill pan slash hot plates in the middle to keep the food hot.

Grill pan on each table definitely important to me especially when ordering Okonomiyaki. More, they have condiments available on every table from Okonomiyaki sauce, house made mayo, to katsuobushi. Okonomiyaki is Japanese style savory pancake with cabbage and various protein as filling, from beef to seafood.

Chibo Gyoza

Let's start with Gyoza (IDR 55.000), unlike any other gyoza I've ever tried before, it comes in flat shape with crispy edges yet not oily. Filled with shrimp, squid, and chicken. Teppan Cheese Japanese Spinach and Broccoli (IDR 40.000) the amount of cheese was overflow, covering all of the veggies. Teppan Tenderloin Steak (IDR 190.000), I must say this is just simply tasty, the beef was tender melt in mouth, like no effort to chew. Quite pricey to be compared with the other menu but you get good quality meat. Soboro Beef Omelette (IDR 45.000), soft egg, savory beef inside, topped with sweet savory sauce, don't forget to drizzle some mayo.

Teppan Cheese Japanese Spinach and Broccoli

Must Order! Teppan Tenderloin Steak

Soboro Beef Omelette

add some mayo

Osaka style Okonomiyaki is cooked by mixing all ingredients into the batter while Hiroshima style is cooked layer by layer and usually has some noodle in it. Chibo Okonomiyaki (IDR 100.000) - Osaka style Okonomiyaki with sliced beef, chicken, prawn, and squid. Cheese Yaki (IDR 105.000) - Hiroshima style okonomiyaki with some mozzarella cheese on top. I personally into Osaka style so Chibo Okonomiyaki is on the top of my list to order. Insider tip, go for the mayo, drizzle on anything it's just delicious even if you're not a fan of mayo, it's worth to try.

The portion was quite generous, perfect for one person but if you want to order various menu then it's good to share for 3-4 persons.

It's been a while, I finally made it to update this blog again. Also beside sharing recipes, it's a resto review. I've been very busy lately, well actually for the past few months (read: almost a year). Allow me to share, so for the past few months we, me and my partner, we got lots of project that we feel blessed. There are still many waiting to be finished. We made video content for social media, mostly cooking video. Not an easy thing, we're still learning anyway but hey I think we really can make it better day by day. As it's getting organized, I hope I can have more time to write here, also to make my own content especially for my Youtube channel. This year is gonna be fabulous.

Byron Selective. This place, located in Progo, close to some other cafes and restos. Precisely, it's beside the famous Jonas Photo Studio, and there's a connection door in between. I think I saw some pictures on Instagram about this place then

Truffle Fries

So, the uppermost to order like in any cafe is Truffle Fries (IDR 35.000). It's served in a bowl, portion size just right, the fries coated in sort of Cajun seasoning, with a tiny hint of heat. For me personally, the aroma of truffle oil was just so addictive. Next, Truffle Cream Wild Mushroom (IDR 55.000) served with a piece of garlic toast, Fettucini in creamy sauce, parmesan, wild mushroom, horenso, topped with garlic chips. I find it slightly under-seasoned, not much, a tiny pinch of salt should be just enough. It's a good dish anyway, to be compared with the Chicken Pesto Pamrigiano (IDR 58.000) I prefer the fettucini, thanks to the fragrant truffle oil.

I went here with my parents, surely they prefer to have rice dishes, typical Asian palate? Honestly, it's getting easier these day as they travel once a while so they get used to with western cuisine. Good thing, Byron Selective also offers plenty of Asian inspired dishes packed in such an attractive way, just like this one we ordered, Beef Yakiniku (IDR 75.000) served with mixed veggies, sunny side up, and lots of potato chips.

Hands up if you're into waffles other than pancakes, both are nice but waffles... it's just always good, sweet or savory. Hungry Chicken Waffle (IDR 65.000) served with sunny side up, grilled watermelon, and mushroom sauce. I didn't expect to find this kind of dish here, I mean it's common for places in Jakarta but not in Bandung, but really it's a good thing. The waffle was light, crispy on the edges, moist and soft inside, savory crispy chicken with sweet maple syrup. Fried Chicken Waffle is typical American dish that suits me well, it's probably weird for some of us as waffle usually serves in a sweet way.

Moreover, they also have enticing cakes to try such as Putu Pisang Cake, Es Campur Cake, and Kastengel Cake. Beers are available and they also have High Tea from 2 to 5 pm.

We managed to order the Kolak Pisang Waffle to share which sounds delicious, but really I could not take anymore, maybe next time, yes I'd love to revisit Byron Selective.

One of my favorite dessert, Mango Sticky Rice or called Khao Niao Mamuang in Thai. Sweet sticky rice, sweet mango, with creamy savory coconut cream, it's just a really good combination. A must to eat whenever I visited Bangkok, and finally I made my own this weekend, thanks to Mark Wiens for the video about how to make Mango Sticky Rice. This recipe is adapted from his, I like the aroma of pandan in my sticky rice so I added some. Please note that you need to soak the glutinous rice for 5 - 8 hours before steaming. Actually there's another option to cook the glutinous rice in a rice cooker but I've not tried it yet so, I will update this post later.

Anyway, you can also change the mango with durian (it really works).

Ingredients:

  • 400 gr glutinous rice
  • 250 ml coconut milk
  • 100 gr sugar or less
  • 1/2 tsp salt
  • pandan leaves
  • sweet mango
Coconut Cream Sauce:
  • 200 ml coconut milk
  • 1/2 tsp salt or to taste
  • 1 tsp cornstarch (optional)
Watch video for the directions.

Well it's just something I make at home, many times... I love Yakult, a child hood drink that reminds me of the times when I was a little kid. It started from my habit drinking Yakult or any other yogurt drink with some ice, because I found it too sweet to my liking, plus, I love cold drinks. So, one day I made this, I prefer plain jelly as I don't want the flavor to ruin the Yakult flavor, and you sure can add some simple syrup for extra sweetness.

Anyway, don't freak out if using colorful jelly... the color will fade, translucent just like plain jelly. I made this one and leave for a day in fridge, and end up with white jelly.

Ingredients:
  • 5 bottles Yakult
  • 2 tsp basil seeds, or chia seeds
  • 1 cup longan or lychee, remove the syrup
  • 1/2 cup plain jelly (unflavored), cut into cubes
  • 3 tbsp simple syrup or to taste
  • 1/2 cup crushed ice

I'm a big fan of sushi but personally not into sashimi but I love carpaccio and Poke of course, means I love raw salmon with a little or some seasoning. When it comes to poke, I usually go for salmon with plenty of sauce, and pineapple or mango.

So, if you have no idea what is actually Poke? It's Hawaiian by the way, not Japanese though yesss there are a lot of Japanese influence to Hawaiian cuisine.

The Base: Cooked brown rice / red rice / sushi rice / mix greens
The Sauce: Spicy Mayo (kewpie mayo + sriracha), garlic sauce (garlic dressing)
The Toppings:
  • cucumber
  • edamame
  • cabbage
  • pineapple
  • mango
  • lettuce
  • seaweed
  • green onions
  • pickled carrot
  • furikake
  • avocado
  • toasted sesame seeds
Tips: choose 5-7 toppings, make it colorful, pineapple or mango is a must for me because the sweetness of the fruit brings up the flavor

Salmon Poke:
  • 250 gr salmon, sashimi / sushi grade
  • 30 gr onion, sliced
  • 2 tbsp shoyu (japanese soysauce)
  • 1 stalk green onion, thinly sliced
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar

This chocolate pudding is just sooo good, silky smooth, just make sure to get a good quality chocolate powder. You can also use your favorite chocolate drink powder but you surely want to adjust the sugar measurement.

Instead of adding Marie Biscuits on top, I tried to put the marie biscuits crumbs into the vla mixture. Well, of course I also add an extra biscuit on top. I keep this recipe eggless but if you're into rich sauce then add an egg yolk into the vla and add some vanilla or rhum, though it's optional.

Ingredients:

Chocolate Silky Pudding:
  • 550 ml milk
  • 50 gr sugar
  • 40 gr chocolate powder (unsweetened)
  • 1/2 tsp jelly powder
  • 1/2 tsp agar powder

Marie Biscuits Vla:
  • 300 ml milk
  • 1 tbsp corn starch
  • 20 gr sugar
  • 5 pieces Marie Biscuits
  • 1 tsp vanilla extract or rhum for flavor
  • a pinch of salt

I love Mexican food!! From taco to burrito, and of course Pico de Gallo! Once I tried making fresh salsa using Kiwi fruit, it was yum. Rather than the classic tomato salsa, I prefer fruit salsa. Mango and pineapple are just amazing for making fresh salsa. I like it as a condiment for taco, burrito, or as a dipping sauce for tortilla chips.

My version of taco, I used chicken as protein, add some cheese, veggies, and topped with fresh fruit salsa. It's just so good, the sweetness of the fruit, unique combination, fresh, and somehow addicting, well you should try and let me know if you like it too.

Ingredients:
  • tortilla
  • red cabbage or lettuce
  • cilantro, chopped
  • sour cream
  • melted cheese of your choice

The chicken
  • 300 gr chicken fillet
  • 2 cloves garlic, minced
  • 1 tsp chili powder,
  • 1/8 tsp cumin
  • 2 tbsp cooking oil
  • 1 tsp sugar
  • 1/2 tsp salt or to taste

Mango Salsa Fresca
  • 250 gr sweet mango, diced
  • 1/2 jalapeno, minced
  • 2 tbsp tomato, diced small
  • 2 tbsp onion, diced small
  • 1 tbsp cilantro, chopped
  • 1-2 tbsp lime juice
  • salt to taste
