Travel to Calabria with Ferraro’s Italian Restaurant & Wine Bar during the next stop on its tour through Italy with the 2018 Summer Regional Menu Series. All summer, Ferraro’s is offering a changing rotation of prix-fixe menus inspired by Italy’s most renowned culinary regions; Calabria’s menu will be featured from June 29 – July 12. Each Summer Regional Menu is priced at $49 per person and select bottles of wine, chosen by Ferraro’s sommelier to complement the featured menu, are offered at special values as well.

Gino Ferraro, the family patriarch, immigrated to the United States from Calabria. The region is known for its produce and seafood, as well as preserved vegetables and meats and fish with enhanced with olive oil and spices. ‘Nduja sausage, spicy Calabrese peppers and caciocavallo cheese are among the ingredients from Calabria found in this menu.

Ciao, Tutti!

Join us for our next Taste & Learn event on Saturday, July 28, at 6 p.m. for a tour through some of Italy’s most intriguing “hidden-gem” wineries. Rarely are we able to encounter these lesser-known, but still amazing, wines here in the United States.

It’s July in Las Vegas and that of course means one thing—HEAT! We’ll cool off first with a Pinot Grigio from Friuli Venezia Giulia’s Jermann winery, located almost at the border with Slovenia. From there, we’ll sample a Barbaresco from the Langhe region of Piemonte, where rolling hills have been covered with vineyards for hundreds of years. Next, we’ll taste something truly remarkable – a Venetian Cabernet Sauvignon. Finally, we’ll conclude with  a Rosso from the Lazio region, which has been a wine center since Roman times.

Summer has arrived and, along with it, the bright and flavorful tastes of the season we will share with you at our June 23 Taste & Learn event. Beginning with a refreshing sparkling wine from La Spinetta, the evening will also feature three splendid wines from Tenuta Santa Maria di Gaetano Bertani. As always, each tasting will be accompanied by small plates prepared by our talented, award-winning Chef Francesco DiCaudo. (A favor: Don’t tell him I said that—his head is already so big!)

In any event, La Spinetta is an esteemed winemaker with vineyards spread between Piemonte and Toscana. The Rivetti family has been making wine at the original La Spinetta (which means “top of the hill”) in Castagnole since 1977. One vineyard eventually expanded into four and, in 2011, La Spinetta acquired the Asti’s historic Contratto winery, which has been in operation for more than 150 years. We will be tasting Contratto Millesimato, 2011, with our first pairing.

Tenuta Santa Maria di Gaetano Bertani, located near Verona in the Veneto region, is known for regional favorites such as Soave and Amarone Classico—both of which we will be pouring that evening. You will also taste its less-familiar Pràgal wine, which is a fruity and spicy blend of Corvina, Merlot and Syrah grapes. The Bertani family boasts winemaking expertise that dates back to as early as the middle of the 16th century—you can’t be more of an expert winemaker than that! Truly, you will love these wines.

I have something very exciting to share with you – a first for Ferraro’s after more than three decades in operation. For the summer of 2018, we invite you to join us for a journey through Italy’s most extraordinary culinary destinations with our Summer Regional Menu Series. You’ll be living La Dolce Vita without ever leaving Las Vegas!

Beginning June 15, we will feature a rotating series of mouth-watering, four-course menus prepared by our award-winning Chef Francesco DiCaudo for the unbelievable price of $49. Each of these prix-fixe menus will be offered for just two weeks and will spotlight a different culinary region. In this way, we will travel to the Piedmont, Tuscany, Veneto, Campania, Sicily and—my home region—Calabria. Each region offers its own traditional ingredients and tempting dishes, and Chef Francesco has been hard at work creating menus reflecting these regions I know you’ll find simply irresistible.

Our first region—the Piedmont—will be the focus from June 15 – June 28. We will offer two selections to choose from for the appetizer, pasta and main courses, and one unbelievable dessert to conclude. Tuscan favorites such as Manzo Tonnato, Sformatino Carciofi, Gnocchi alla Bava, Brasato, Millefoglie – these are just some of the unbelievable creations Chef Francesco has in store for you!

Of course, what is great Italian food without Italy’s superior wines? That’s why I’ve also selected wines by the bottle to offer to you at a special value to accompany each menu.

Enjoy Fine Wines by the Glass with the Enomatic Wine Dispenser

Plenty of restaurants serve wine by the glass, and for many wines, there’s nothing wrong with that. But for truly fine wines, serving by the glass can be difficult. A fine wine has a remarkably complex flavor profile, complete with a diverse concoction of aromas and flavors that are painstakingly balanced by the sommelier. When preserved in a corked wine bottle, these flavors can grow in depth and complexity, but the instant that bottle is opened, the bouquet starts to change – and eventually, to deteriorate. Opening a wine bottle exposes the wine to atmospheric oxygen, causing the wine to oxidize and lose the vibrancy and subtlety of its flavor.

Thanks to our new Enomatic wine dispenser, though, this isn’t a problem. The Enomatic machine was created by two Tuscan entrepreneurs to solve the problem of serving fine wines by the glass, and it takes an ingenious approach. The Enomatic houses each bottle of wine individually, connecting the bottle to a spout through a closed system and filling the bottle with nitrogen. Unlike air, nitrogen is an inert gas that won’t cause wine to oxidize, which means that the Enomatic system preserves even the subtlest flavors of a wine. With the enomatic system, we’re able to provide wines by the glass without fear of wasting a bottle by not using it fast enough. In fact, we can even sell tasting pours (1oz pours) of fine wines without concern!

The Enomatic allows us to offer fine wines in three pour sizes: 1oz, 3oz, and 5oz. 1oz pours range from $3 to $5, 3oz pours range from $9 to $15, and 5oz pours range from $15 to $25 – but no matter which size you choose, you can be sure you’re getting a world-class fine wine at the peak of its flavor. Thanks to the Enomatic wine dispenser, you can pair your Italian meal with an authentic, premium Italian wine – and you’ll never have to drink an oxidized, stale wine again.

On May 26 at 5 p.m., join me for a journey from Mt. Etna in the south all the way up to Valpolicella in the north, as we meet again for our monthly Taste & Learn event. We will be showcasing wines from the portfolio of Johnson Brothers of Nevada, which purveys an exceptional collection of Italian wines. Our award-winning chef, Francesco DiCaudo—who is himself from Sicily’s Mt. Etna—has prepared another exceptional menu to complement the selections.

Wineries featured include Sicily’s Tornatore Winery, whose vintages are relatively new to the United States. Tornatore’s grapes benefit from the region’s ample sunshine, high elevation, fertile volcanic soil and cool Mediterranean breezes. Its wines are known for pleasant acidity, structure and complexity.

Allegrini’s vineyards, located in northern Veneto region of Valpolicella, between the romantic destinations of Verona and Lake Garda, also benefit from warm sunshine and cool breezes. Finally, we’ll visit Allegrini’s newer label, Poggio al Tesoro, from Bolgheri, a young yet prestigious wine region located on the coast of Tuscany.

LAS VEGAS (April 2018) – Ferraro’s Italian Restaurant & Wine Bar introduces a bevy of new dishes to its dinner menu, each of which makes the most of spring’s best seasonal flavors. In addition to these new à la carte dishes, Ferraro’s Chef Francesco DiCaudo has created a tasting menu featuring five courses for $85. Wine pairings may be added for $50, while owner and Italian wine connoisseur Gino Ferraro’s premium Italian wine pairings may be enjoyed for an additional $75.

Ferraro’s Italian Restaurant & Wine Bar will present a first-ever wine, cognac and culinary event on Friday, May 11, at 6 p.m., when Feudi di San Gregorio wines and Hennessy cognacs unite for “Unparalleled Pairings,” an exclusive, four-course dinner.

Feudi San Gregorio, located in Irpinia in the Avellino province, has become one of the top wineries in Southern Italy’s robust wine-making region. Dedicated to utilizing local grape varieties and preserving the rigorous wine-making standards and traditions, Feudi di San Gregorio embarked on an ambitious architectural project in 2004. The owners enlisted noted Japanese architect Hikaru Mori to create a structure, while Italian designers Massimo and Lella Vignelli designed the interiors and furnishings. Feudi di San Gregorio aims to be more than an exceptional winery, becoming a place where people can meet, learn and meditate, a workshop of ideas and culture—as well as a place where oenophiles can find good wine.

Hennessy Maison, founded in Cognac, France, in 1765 by Ireland native Richard Hennessy is synonymous with high-quality brandies. Today, Hennessy produces half the world’s cognac and remains one of the globe’s most in-demand spirit. The varieties offered at this dinner will include Hennessy Cognac Paradis, which can retail for $1,000 or more, as well as Cognac XO.

The Sassetti family has been making wine for three generations. Livio was one of the founders of the Consorizio del Vino Brunello di Montalcino—the association started in 1967 between winemakers, dedicated to safeguarding their wine and on accentuating its qualities. His winery is located in Montosoli, one of the premier areas in Montalcino. Livio’s mission and passion has always been to produce wines in traditional Italian style.
