We so love these Spicy Lamb Koftas so easy to make and perfect served with a yoghurt and mint dressing. We eat them very often, both in winter and in summer. They are even great chucked on the BBQ from time to time, they are so perfect for a BBQ and they make a refreshing change to the sausages and burgers! I really do love lamb it’s one of my favourite meats. Here served with lots of lovely spices and herbs, including cumin, coriander, mink, chilli for that kick. It’s something different and makes a great change.
So what is a Kofta exactly? Well according to Wikipedia
Kofta is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine. In the simplest form, koftas consist of balls of minced or ground meat—usually beef, chicken, lamb, or pork—mixed with spices and/or onions. So there we have it!

I’m being really #HEALTHYEPLS but fancied doing a bake. So I trotted off to the supermarket and bought the ingredients and developed these Smoked Bacon, Mushroom Filo Tartlets .
I’m all for healthy eating, however for me it still has to taste ace! In my view there is no point in eating bland boring stuff. If you’re going to eat it then I say you should enjoy it!
So these little beauties are obviously a take on the traditional Cheese & Bacon Quiche, but a lighter version. So I can’t have shortcrust pastry etc. at the moment, so I thought about it and did a bit of research and found that filo pastry is really low and goes a long long way.
I made mine in tartlet tins. I think they would be great in a muffin tin too and they would probably be a little smaller so the Weightwatchers smart points might be a little lower too).
So these four Smoked bacon, Mushroom & Filo tartlets are 4 Weightwatchers Smart Points each and let me tell you that’s low. BUT they are also full of tasty goodness like eggs, cheese, bacon and mushrooms. Perfect! No compromise on flavour! Yey!
I think they would be amazing in the summer time for lunch outside, warm with a lovely big salad and maybe some home made coleslaw or potato salad, clearly with a nice glass of something fizzy and cold (They would also be ace in pack-up’s or for picnics)
Alternatively with baked beans (chips – eeek dare I say it) as a lovely quick tea. I’m sure the kids would love them too. So go on give these Smoked Bacon, Mushroom & Filo Tartlets a go. And don’t forget perfect at Christmas time too when you have to feed the masses.

So I wanted to make the tastiest ever Cottage Pie and I wanted to make it fit for the Sliming World regime! I set to and developed a recipe and packed in heaps of veggies. It consists of 5% Lean Minced Beef and a whole host of other stuff stuffed into a pie! So here it is – EPLS Cottage Pie Slimming World styleeeeee…
I have to say it’s super tasty and has every vegetable going from , onions, mushrooms, carrots, tomatoes, broccoli, potatoes and sweet potatoes! It would also have had leeks but somehow or other I lost the leeks on the way home from the supermarket? Not sure how that happened – too funny!
So you can make ahead and serve with even more speed food and you’re away! I usually do peas, sweetcorn, green beans – yum! (Actually you could serve with baked beans if you’re really hungry?)
It’s Syn free which matters for Slimimg World people. But really it doesn’t matter as it’s a stand alone, deliciously healthy dinner! I promise…
This Cottage pie is so easy to make, you just need a little time. I actively encourage you to make double the portion and make up some meals and freeze in portions before bake. That way you can grab one out the freezer in the morning and bang it in the oven when you get in from work, school or wherever! Then you have a delicious on-plan supper – just like that!
You can also just make the bolognaise and freeze than. You can then use it for a whole host of recipes, Spaghetti bolognaise or add Chilli flakes and kidney beans for a lovely Chilli Con Carne

I’m approached a lot these days to do so much stuff. You know for one reason or another I don’t and can’t do it all! So I have received a few copies of Nicola Graimes new book ‘I Love My Wok’ and I have reviewed. I have to say I really do like it, you know me honest! And always if I don’t like it I don’t blog it – it’s that simple.This book showcases simple, beautiful, delicious recipes that can all be made in the Wok. And let’s be careful here, let’s not just think about tasty healthy suppers! The wok is a tremendous tool in the kitchen, we are talking soups, salads and sides too. So check this book out (or have a go at winning one – see under) and rediscover how you can use just one pan to make lots of dishes.
The book is really great and offers over 100 recipes – some of my faves that I’ll be trying are Yakisoda Noodles, Aromatic Chilli Bean Lamb & Sunshine Chicken Stir-Fry – gosh there are so many nice ones.

So these lovey Halloumi Skewers with vegetables are delicious and such a change and are perfect for meat eater and vegetarians too. They are so so simple to make I was almost thinking about not even writing a recipe ha ha! And because it’s Halloumi on the skewers it doesn’t melt off the skewer as Halloumi holds its shape! Even when grilled or BBQ’ed – perfect
So I call Halloumi cheese, squeaky cheese, as it squeaks when you chew it!
Traditionally prepared from sheep’s milk in the Greek island of Cyprus, halloumi is a soft curd-like cheese free of rennet. It is safe for vegetarians who do not eat rennet.
You can basically add anything you like to these skewers – tomatoes, yellow peppers whatever! However these use courgettes, mushrooms, onions and peppers – yum!
I also brush with chilli and garlic marinade sometimes but not every time, depending on who’s coming round. So have a go, why not?
And remember if you’re making these using wooden not metal skewers don’t forget to soak those sticks so they don’t burn!

Our Kathy’s Strawberry & White Chocolate Shortcake
A true family favourite. It’s really easy and so tasty! Our Kathy’s Strawberry & White Chocolate Shortcake, a perfect dessert! So when it’s strawberry season use them!! I love to try and live by the seasons and there’s nothing better than the sweet delicious red sift fruit!
Lots of you have tried it and some of you have even made it with other fruits apart from strawberries. You could try raspberries or blueberries maybe? Anyway it’s the perfect summer dessert – with lovely juicy fruit! It’s also perfect as a BBQ dessert or for any special occasion – it always goes down a storm! White Chocolate, Strawberries Cream, Shortcake – oh yum what’s not to like?! Perfect when you’ve been strawberry picking and have loads – English Strawberries – you just can’t beat them!
The great thing is you can make it the day before and keep it in the tine. Tip out the lined loaf tine the following day when you’re ready and ta-dah a no hassle pudding! (And if you’re taking it to a summer party or a BBQ – there’s no need to worry about damage etc as you can transport it in the tin and tip it out when you get there!) I like it in a loaf shape but I have seen it made as a traditional round shape – looks pretty too!
