I have been wanting to do a blog post for a very long time. But I have been busy trying out other things .Cooking has been happening on a regular basis . I have been browsing a lot of recipes on Instagram and trying out some interesting stuff. I do post my kitchen trials on Instagram almost everyday.
Healthy baking happens regularly for the kids who loves to have cakes and cookies regularly. So I bake healthy instead of the store bought stuff. This recipe too has been one of those experiments. I have used carrots and walnuts. For sweetening ,dates syrup and raw sugar is used. I have tried powdered jaggery too in my bakes with good satisfying results. I have used pilsbury whole wheat baking flour which gives a good texture to the baked goodies.
My family loved it. I am sure going to create such healthy bakes again and again. The cake tastes even better the next day. I usually store my homemade bakes in the refrigerator. Do try it for your kids and you will love it too!!
Hello to all the readers of creative Saga.Its been a really long time since I opened my blog and decided to write a post. Things have been busy as usual and tiring. So I hardly get a chance and the determination to open the laptop and blog. I have been wanting to write a post for a very long time.So finaIly I decided to do it today. When I opened my blog, I realized that my food pictures are in my old phone and I hadn’t bothered to copy them into my laptop. But I was quite determined today to do a post. So when I scanned my phone, I found the picture of this plate which I had posted in my Instagram yesterday. I had a few people asking for the recipe too. So I decided to write about it today. I had no step by step pictures too, but decided to go ahead as the recipe is hardly complicated.Well this rice variety is quite delicious. Its not too spicy, but you can make it spicy if you prefer it that way by adding more green chillies and some red chilly powder. But we prefer it non spicy. I used the curry powder , we got in Srilanka during our visit there in December. Its mildly flavoured and has a obvious flavor of cinnamon. We visited a spice garden in Srilanka and there they showed us how they roast the different spices and then powder them using a stone mortar pestle. Cinnamon is a popular spice there and highly dominates the other spices in their food. We also visited a place called cinnamom island and there they showed us how they make different products of cinnamon. You can check out my video in youtube about the cinnamon island.
Meanwhile checkout the recipe for the rice below. Its very easy to make and takes very less time and is a ideal recipe to carry in your lunchbox.
Add green chilles and cashewnuts. When cashewnuts become slightly golden, add the ginger garlic paste and onions.
Saute till the onions turn slightly brown.
Add the tomatoes along with turmeric powder and salt. Cook for a few minutes till it turns mushy.
Add rest of the chopped vegetables. Mix well.
Add the curry powder and coconut milk. Mix and allow it to cook till the vegetables are cooked and the mixture is dry.
Add the cooked rice. Mix well.
Garnish with coriander.
I served with dal and curd.
I have used srilankan curry powder. Please use any curry powder or a combination of coriander powder and garam masala.
I love using mangoes in my cakes and desserts too. I also made an indian dessert with mangoes yesterday. I made phirni with mangoes. It was so so yummy. I did not take many pictures and not going to post it as you can find them in the internet easily.But you can find the picture of it in my instagram.
Though it has been a busy day, I decided to do the post as soon as possible. Its a mango cake and this one should be in the blog before the season is over. It would be useful for people who want to try it soon. Of course , you can use the store bought mango puree, but I always like to use fresh mangoes. Thats why I make mango cake atleast once or twice during the mango season.
Few days back , I was meeting some friends after a very long time. My friend asked me to bake a cake as she had not eaten a cake baked by me for many years now. So I decided to bake a mango cake. I used a simple vanilla cake recipe and adjusted the ingredients to include the mango puree. I used fresh indian mango(banganapalli) variety . I did not bother to try with the whole wheat flour this time and went ahead with the refined flour. The cake turned out to be very soft and spongy. It had a intense mango flavour and was super delicious. My friends loved it. I was glad to pack a few for my them to take back home.
I hope you do try this cake and let me know your feedback. Its really easy to bake and takes very little time. You can make this for your parties and can apply some cream cheese or mango frosting too. Kids will love it.
Preheat the oven to 180c.
Grease a cake tin with butter and flour it.
Beat the egg in a mixing bowl.
Add the sugar and oil and mix well.
Add the milk and mix.
Add the mango puree.
Combine the flour,salt and baking powder and whisk it a bit.
Now add the flour mixture slowly into the wet mixture stirring it in between till the whole flour mixture is combined with the wet mixture.
Add the vanilla essence and mix.
Pour the batter in the prepared cake tin.
Bake the cake at 180c for 35 -40 minutes. Insert a skewer in the center of the cake to check if it is done.
Allow it to cool before slicing.
You can add cardamom powder instead of vanilla essence.
I am happy that I am able to post my second recipe for this month. June has been a busy month, at the same time relaxing too. We all had a well deserved break and now things are back to routine with the school reopening. I am also refreshed and trying to involve myself in various other activities.
Todays recipe involves banana again. My previous recipe was healthy banana muffins using oats and chia seeds.
I managed to bake this cake last night, photograph it today morning and now I am posting it too. This is happening after a very long time. There were days a couple of years back when I actually used to cook for the purpose of blogging. Okay, I had one lone banana sitting on my kitchen counter and it was quite ripe. I did not think of any particular recipe and just went ahead with the usual healthy ingredients. I had no idea of blogging it, though I always post the pictures in my instagram.I did not even take step by step pictures. But the recipe just involves mixing the ingredients and baking it.Its that simple.The slices came out so beautifully and I was tempted to photograph it and then finally blog it.
The recipe uses whole wheat flour and no refined flour. I have used unrefined sugar too. It has a mild sweetness and is very apt for breakfast or mid morning snack. The recipe is a keeper. It came out quite soft and due to addition of egg and buttermilk, I felt the cake was not that dense as it usually turns out when whole wheat flour is used. I hope you try it. Healthy Banana bread recipe - Using wholewheat flour and unrefined sugar
Healthy breakfast bread recipe using healthy ingredients!!
Preheat the oven to 180c.
Grease a loaf tin with butter.
Mash the ripe banana to a smooth paste using a fork or with your fingers.
Add the oil and milk and mix well.
Beat the egg and mix it well in the above mixture.
Fold in the flour and baking powder.
Add the buttermilk (vinegar+milk) and mix well.
Add the walnuts and chocolate chips and mix in gently.
Pour the batter in the greased cake tin.
You can sprinkle more chocochips on the top.
Bake the cake in the preheated oven at 180c for 30 minutes.
Check if the cake is done by inserting a skewer in the center of the cake and it comes out clean.
Allow the cake to cool well and slice them.
I have been baking a lot during the holidays. It has been especially for outings with friends and their kids. They loved them and have been asking for more. But as I have been baking in a hurry , I have not been able to take pictures. I have been sharing them on instagram. But I will be making them for sure again and post them in the blog soon. June was busy in the beginning as we travelled a bit. Later I have been lazy to blog. But I did not want this month go without a post as I have resolved to post atleast one recipe per month this year.
I had baked this muffins some two months ago when I had some ripe bananas. I have used all healthy ingredients. My kids enjoyed them. I did not have the guilt of eating them and satisfied that kids were eating them too. I have just used oats and whole wheat flour along with it.This is the first time I have used chia seeds in my baking. It gives a nutty bite ,morever its another healthy ingredient which has gone in to the muffin. I have not added any refined sugar also. I look forward to using more of jaggery powder in my bakes. So do expect to find some more interesting healthy bakes in my blog soon.
The muffin recipe is super easy to bake. Its done within 30 minutes. This is definitely a must try recipe , eggless too. I hope you do try this recipe and give me a feedback too. Keep visiting !!!
Line the muffin pan with muffin cases.
Preheat the oven at 180c.
In a mixing bowl, add the ripe peeled bananas and mash it well with a fork.
Pour the oil and milk and mix well with a whisk.
Add the oats, whole-wheat flour and baking powder. Mix well.
Add the jaggery powder and mix with a spatula.
Finally add the chia seeds and mix everything well together.
Spoon the batter in lined muffin cases.
Sprinkle some oats on the top of each unbaked muffin if you prefer.
Bake them in a preheated oven at 180c for 20- 25 minutes.
Check if it is done by inserting a toothpick or skewer in the center of muffin.
Allow it to cool and serve.
Holidays have started for the kids. Though kids are enjoying, I find myself as busy as before. I have to keep them entertained and engaged the whole day with some or the other activities so that they don’t end up watching the television or a ipad for hours together. But things are less stressful as the exams are over. And I am able to post the third recipe for the month which I was unable for the past few months. So I has made this muffins on the last day of the exams. Kids had demanded that I make some yummy food to celebrate. So I had made this muffins and also got some icecream. So they had enjoyed thoroughly.
So this is a very easy recipe. It looks so appealing with the jam on the top and kids will surely enjoy them. So that day I decided to make the normal way without any healthy ingredients. I used all purpose flour and granulated white sugar. I used only half a cup of sugar and it was okay for us. There is sweetness of the jam too. But if you want it a more sweeter, feel free to add more sugar. Or sprinkle some sugar crystals on the top before baking. I hope you try this recipe for a change and give a feedback.

Jam muffins recipe
An easy recipe and looks delightful,kids will enjoy for sure!!!
Preheat the oven to 180c.
Line the muffin tin with muffin cases.
Combine the flour,baking powder and sugar. Mix with a spatula or a whisk.
Add the oil,milk and curd and mix well together with a whisk.
Add the vanilla essence and mix.
Pour the batter in the muffin cases till it is half filled.
Take the jam in a small microwave safe bowl and heat for 20 seconds till it becomes a bit soft and pourable.
Spoon in some jam on the batter.
With a tooth pick or fork, make some swirls of the jam.
Bake at 180 for 25 minutes.
Check if it is done by inserting a skewer in the center.
Allow it to cool completely. Serve.
I am baking quite regularly now and I feel so much satisfied serving the kids with healthy homemade snacks. I have a few recipes tried in the recent months and I will be posting them as and when I find some time. Things had been busy with the sons exams and daughters falling ill.My laptop is giving up too. But hopefully as the holidays starts next week and I will be definitely trying out a few things and will also try to blog a little more than usual. I do want to try making some food videos too.
I enjoy using healthy ingredients in my baking. Here in this recipe , I have used oats and whole wheat flour. It hardly takes any time to put the ingredients together and the whole thing takes less than 30 minutes. Its so easy to make. The taste was awesome too. Kids really enjoyed them. I have posted similar kind of cookies before in my blog. You can just have a look in the cookies section in the index. I change a few ingredients here and there though the basic thing remains the same. Most of my cookies are eggless and I prefer them that way.
Its easy to make a huge batch of this cookies and store them and is quite good and guilt free for the odd hours hunger pangs. I hope you bake them and do send your feedback too. Do keep visiting as I will be posting more of my bakes soon.
Preheat the oven to 180c.
Line a baking tray with baking sheet.
Combine the butter and sugar and mix well to a creamy texture.
Add the oats, wheat flour and baking soda.
Mix with a spatula or using your fingers so that the mixture comes together.
Add the chocolate chips and mix into a dough.
Pinch small equal sized pieces from the dough and roll them into a ball.
Place them on a baking tray. Flatten them a bit.
Bake them at 180c for 10-12 minutes.
Remove from the oven and allow them to cool.
Store in a air tight container.
Cookies may seem crumbly when they are hot from the oven.
I have been making snacks for the evening tea time quite often. Though it is not everyday, I try to do it 2-3 days a week. So have reduced the consumption of store bought cookies and chips . I hope I continue doing this. Kids love their snack time a lot and look forward to eat yummy goodies. So I have been baking atleast once a week. I try to combine a few healthy ingredients and turn them into some quick cookies or brownies. And kids like them too. I have a few more healthy recipes coming up soon.
So a couple of weeks ago, I had made this sprinkle cake. I have been wanting to make cookies and cakes using sprinkles /edible confetti and finally got to make it. I have seen in a couple of blogs featuring them and they looked quite tempting. I wouldn’t call this cake completely healthy. I have used an egg and the regular granulated sugar and the usual ingredients. Except that I have added more of whole wheat flour and a little of plain flour. But for a more whiter and a spongier texture, you can consider using plain flour completely.
The cake tasted nice and I was quite satisfied with the texture . It was approved by my kids too. You can even try frosting the cake with buttercream or whipped cream. Do remember to make it more appealing by sprinkling more confetti on the frosting.
