It is soup season in Australia and I am so happy to share with you a Mexican ancient recipe: Caldo Tlalpeno.

Caldo Tlalpeno is a chicken soup but not average soup, it is an outstanding, heavenly and super healthy chicken soup. It contains potatoes, carrots, zucchini and chickpeas. So full of goodness and a very satisfying meal!

The origin of this Mexican soup remotes to more than a hundred years back in time. It is believed that it was born in Mexico City in a very popular suburb called Tlalpan. The recipe has been passed down through generations making it an ageless family recipe and a staple Mexican dish.

I learnt to cook Caldo Tlalpeno in the traditional style a year ago during a cooking class in Mexico City. By that time I had the misconception that making this soup was difficult and time consuming. The reality is that is super easy to make. Yes, it takes time but good things take time right?

My sensei and maestro Yuri de Gortari said to me, “the secret in cooking is giving proper time to every ingredient you add to allow them to release all its flavour and texture”. And believe me,  by doing so it will make a huge difference in your cooking.

What I love so much of this soup apart of the chickpeas is the distinctive smoky flavour coming from the chipotle adobo. It provides a beautiful taste without making it spicy. So don’t be afraid of using the chipotle chilli, it’s yummy!

Caldo Tlalpeno is amazing when served with avocado some sour cream and few drops of lime.

Warm your soul with this beautiful traditional Mexican chicken soup. It is absolutely divine!

Ingredients
  • 2 chicken tights and 2 chicken breasts (with skin if wanted)
  • 1 large potato peeled and diced
  • 1 large carrot peeled and sliced
  • 1 zucchini sliced
  • 1 can of chickpeas drained
  • 1 small can of chipotle chillies or 4-5 pieces
  • 9 ripe roma tomatoes cut into large pieces
  • 1 garlic clove peeled
  • ¼ onion
  • 2 tbs vegetable oil
  • Salt and pepper
Instructions
  1. Blend tomatoes, garlic, onion and chipotle chillies. Strain the mix into a bowl.
  2. Heat oil in a casserole dish over medium-low heat.
  3. Add tomato mix and bring it to a boil, stirring.
  4. Add chicken meat and some water until meat is well covered.
  5. Add salt and pepper as desired. Bring it to boil, stirring.
  6. Add carrots and bring it to boil, stirring.
  7. Add potatoes and bring it to boil, stirring.
  8. Add chickpeas and zucchini. Bring it to boil and reduce the heat to a simmer (gentle bubbling in the pot)
  9. Allow the soup to cook for about 45 min or until chicken meat is soft.
  10. Serve soup with avocado slices and cream on top.

Winter is a call for eating lots of fruit and veggies to keep your immune and nervous system healthy, happy and strong.

A good way to do it is by preparing natural healthy drinks as this Rockmelon with strawberry Mexican style beverage (Agua fresca), that you can quickly and easily make at home and enjoy it with your favourite meal. 

In Mexico, aguas frescas is a family tradition and a very important part of our eating experiences. Every day along with the main meal we put on the table a big jar of agua fresca made with fresh seasonal fruit.

A mix of fruits with different kind of herbs like mint, rocket, rosemary and even vegetables such as cucumber, celery and others is also very common when making aguas frescas. 

This rockmelon with strawberry agua fresca is one of my favourite flavour combinations. For winter you can serve it at room temperature and it will still be tasting fresh and delicious. For warmer days, this drink will be amazingly good served over ice. 

Here there is why I love so much this agua fresca recipe:

  • Strawberries are an excellent source of vitamin C, low in calories and a great favourite with all generations. 
  • Rockmelon is also a great source of vitamin C and dietary fibre, it’s high in folic acid and it’s full of potassium. 
  • It is fresh, quick, easy and healthy.

Rockmelon with strawberry Mexican style beverage (Agua fresca)

Boost your immunity this Winter with a delicious and nutritious Mexican Agua Fresca with Rockmelon and Strawberry. It's a beautiful flavour combination!

Ingredients
  • 2 cups fresh rockmelon cut in small pieces
  • 200 gr fresh sliced strawberries
  • 1 lt drinking water
  • 3-5 tbsp agave syrup (OPTIONAL)
  • Ice (OPTIONAL)
Instructions
  1. Blend the rockmelon with 1 cup of water
  2. In a jar, add agave syrup and ice (if desired). Incorporate the rockmelon mix and stir until everything is well integrated.
  3. Add the rest of the water. Incorporate.
  4. Finally, add strawberry slices into the jar.
  5. Serve in individual glasses. Enjoy!
