In essence, all it is is ground up nuts and nutritional yeast. The nuts act as a great fatty carrier of the flavour of the yeast.

This recipe has been known to work with other nuts, but using walnuts are a great way to get some added Omega 3 into your diet, and they really do the job well!

Ingredients
  • 1 Cup Walnuts
  • 4 Tbsp Nutritional Yeast
  • 1/2 Tsp Black Pepper
  • A pinch of Salt (add more salt as necessary)
Instructions
  1. Place all of the ingredients into a high powered blender and pulse until you have a powdery parmesan consistency.
  2. Sprinkle on top of pasta

Earlier this year the top Italian American restaurant ran a survey to find out what their guests would like to see making a comeback to the menu. 

Research and hundreds of requests revealed that some dishes held a really special place in their hearts and so Frankie & Benny’s reacted quickly and in response included some as part of the limited edition summer menu, also launching today.

Vegan Nuggets and the Vegan Not Dog are the two vegan dishes that were most sort after and are here to stay (or for the summer at least).

But it wasn’t just food that guests felt passionate about – requests for the return of good ol’ tunes flooded in and the restaurant chain enlisted the help of their ‘top fans’ to help curate a special Frankie’s Favourites playlist to include classic tracks by Frank Sinatra, Aretha Franklin, Bobby Vee, Dean Martin and more (full playlist can be found at https://spoti.fi/2RBTqQN).

Frankie & Benny’s Senior Brand & Partnerships Manager, Gabriele Barysaite, said: “Our guests are at the heart of everything we do – so we wanted to make sure we’re always listening to them and have their favourites on offer.”

Frankie & Benny’s recently introduced 26 new dishes reflecting the UK’s changing tastes and drinking habits. The re-imagined menu is designed to appeal to not just families but adults on a date night or evenings out with friends with an emphasis on the Friday and Saturday night market.

Of the 26 new ‘grown-up’ dishes, SEVEN are vegan (making a total of 22 vegan dishes on the menu following success of new vegan additions in January), The new range also includes an innovative vegan full English fry-up, designed to expand the breakfast offering.

Frankie & Benny’s classics will still remain, but the new menu will see unprecedented expanded choice with customers at the heart of this change. The highlights include Vegan Loaded Skins, Viva La Vegan Cheeseburger, Vegan Cheese Fries, Vegan No-Cheesecake, Lotus Biscoff (vegan), Vegan Fry Up and Vegan scrambled eggs.

UK’s largest Mexican restaurant chain launches its exciting new vegan menu – taking vegan to the Mex-Level!

Banana Blossom Burger

Chiquito’s new vegan menu has been carefully researched and designed to reflect consumer trends, bringing exciting new vegan versions on their classic Fajitas, Tacos, Burritos and Burgers.

The vegan menu is launched at the same time as a brand refresh which focuses on bringing fun back to food in line with Chiquito’s belief that life always needs a little salsa!

The Chiquito team believe that Mexican food naturally lends itself to vegan cuisine and have used exotic proteins from around the world to deliver the exciting, ground-breaking and innovative menu for their summer menu launch.

The chefs have carefully selected new ingredients including jackfruit, banana blossom, palm hearts and soya protein Oumph to create their fiesta of taste-exploding vegan foods.

Banana Blossom Croquettes

The menu contains four vegan starters, five main courses with side dishes, three vegan desserts and even a vegan drinks list including beer, cocktails and wine.

Chiquito Managing Director Angelo Gabrilatsou said: “We are particularly proud of our new vegan menu. It stays true to our core objectives by driving innovation, accessibility and fun. Having guest choice at the heart and understanding growing trends, this menu allows Chiquito to be more accessible to guests that seek vegan options.”

Oumph Fiesta Fajita Our Review of the Menu

We at Vegan Food UK were very lucky to be invited to Chiquito’s to try out their brand new vegan menu. Here’s what we thought.

For those who don’t know, Chiquito’s is a Mexican food chain restaurant with over 80 branches across the UK. And up until now they have just had meals that can be made vegan by subbing non-vegan ingredients from the main menu.

Side of Guac, Salsa, Sour Cream and Cheese

What you will find with this new menu and style of food is plenty of spice, flavours, textures using a range of vegetables and plant proteins. We were particularly pleased to see banana blossom on the menu in a new format that has not been done at any other chain restaurants in the UK.

Chiquito’s have carefully selected Violife and Oatly as their dairy-free cheeses and creams of choice, respectively. The cheese melts and the creams really do the job of cooling the pallette.

Stuffed Sweet Potato Skins

What we were most impressed with at Chiquito’s however, was that although they do have vegan meats, cheese and chocolate on the menu, the majority of the ingredients are wholefoods. Showcasing exotic fruits such as banana blossom, jackfruit and palm hearts, eventuating into a real taste experience that you won’t find anywhere else in the UK.

Our Favourites

There is obviously a lot to choose from on the menu and we didn’t want to miss out on anything…so we tried the lot! We honestly feel sorry for anyone who has to select just one or two dishes, as it’s just too difficult.

We didn’t try anything we didn’t like, but below is a list of our absolute favourites off the menu:

Cassava Fries Topped with Jackfruit and Cheese

Cassava Fries – could easily be a main dish! Cassava is a root vegetable that we have eaten a few select times in our life in different countries around the world – and this meal definitely did not disappoint. The cassava fries are crunchy and filling, stacked high with jackfruit, salsa and melted vegan cheese. Probably our favourite thing off the menu.

Banana Blossom Burger – it’s a showstopper! What can we say, it’s crunchy on the outside and soft in the middle with strands of banana blossom flesh to give it a fragility and exoticness that you won’t find in any other restaurant. The whole thing works really well with a spicy undertone in a pretty stacked burger alongside some cassave fries and dipping nacho-y type sauce.

Vegan Fiesta Fajita – this is one of those dishes where you won’t believe it’s vegan. The development team at Chiquito’s have chosen Oumph! chicken pieces to replicate this famous Mexican dish, and we believe it was a really smart decision to do so. The fajita is chunky, spicy, tangy and extremely satisfying.

Chocolate Lava Cake with Dairy-Free Ice Cream

Churros and Chocolate Lava Cake – Ok, apologies for banding together two desserts here, but they were both just so good and it was very hard to pick a favourite. The churros are traditionally vegan but come with a delicious chocolate sauce. And the lava cake does exactly what you hope it would do: breaks open and spills gooey, hot chocolate sauce everywhere. Perfect with the smooth dairy-free ice cream that it comes with.

The Full Vegan Menu

(Starters)

Vegan Nachos (£6.49) – Loaded with guacamole, Pico de Gallo salsa, Violife vegan cheddar-style cheese and Oatly creamy oat fraiche.

Banana Blossom Croquette (£7.19) – Flakey, flavour-filled croquettes served with Oatly creamy oat fraiche and side salad

Sweet Potato Skins (£5.89) – Sweet potato skins topped with five bean chilli, Violife Cheddar-style cheese, Pico de Galla salsa, guacamole and Oatly creamy oat fraiche.

Cassava Fries (£6.49) – Fried Cassava root, cut into thick chips and loaded with jackfruit (South Western, Indian fruit tree) chilli, Pico de Gallo salsa, and Violife vegan cheddar style cheese.

(Main Courses)

Vegaritto (£11.69) – Salty smokey Oumph (plant based product made from beans), black beans, jalapeño slaw, rice and greens wrapped in a spinach tortilla. Served with a side salad, tortilla chips and a side of Oatly creamy oat fraiche.

Jackfruit Baja Tacos (£5.99) – Jackfruit chilli filled tacos topped with Violife vegan cheddar-style cheese, guacamole and Pico de Gallo Salsa.

Banana Blossum Burger (£14.49) – Flakey, flavour-filled banana blossum (tear shaped flowers at the end of banana bunches) patty topped with jalapeño slaw, greens and Violife vegan cream cheese alternative in a sourdough bun. Served with a side of cassava fries.

Palm Heart Baja Bowl (£13.99) – Palm Hearts (palm tree vegetable), pulses, black beans, greens and rice topped with jalapeño slaw. Served in a pull apart spinach tortilla bowl.

Vegan Fiesta Fajita (£12.99) – All of the favourite flavours from Chiquito’s classic fajitas filled with smokey salty oumph. Served with Violife vegan cheddar-style cheese and Oatly creamy oat fraiche.

(Sides – Rice (£2.99), Citrus Salad (£2.99), Sweet Potato Fries (£3.99), Skin on Fries (£3.49).

 (Desserts)

Ice Cream And Sorbet (£2.19 one scoop, trio £4.49) – Passion fruit sorbet or coconut ice cream

Churros With Chocolate Sauce (£4.99) – Our favourite churros served with a vegan chocolate sauce.

Chocolate Coconut Lava Cake (£5.99) – Served warm with a melting top  and choice of coconut ice cream or passion fruit sorbet.

Miami Burgers launch at Morrisons supermarket this week across the UK.

Louisiana Chicken Burger

Coined as being ‘tasty burgers that are good for you’, the new frozen, plant-based patties come in three different flavours: Classic; True Veg and Louisian Chick’n.

All of the burgers are GMO-free, palm and coconut-oil free and are made up primarily of beans, grains and veggies. Two of the burgers are soya-based and the chick’n is wheat based protein.

Classic Miami Burger

Furthermore, Miami Burger also pride themselves as having 100% plastic-free packaging.

Our Review

The Vegan Food UK Team were fortunate enough to be able to do an advanced taste-test of the burgers, before they reached the supermarkets. Below is a brief synopsis and video of what we thought.

Classic Burger – a thinner burger than, say a Beyond Burger, but equally as tasty. These burgers have a real fast food, diner taste to them. Lower in saturated fat than a lot of burgers out there, we were amazed that taste wasn’t compromised in the process.

True Veg Burger

True Veg – firstly it was nice to see more of a wholefood type burger in the range. These days most companies are going for the meaty burgers only, so this was a pleasant surprise. The burger held together very well despite it being rammed full of both root & green veg. The flavour was actually quite nice and you could taste the vegetables.

Louisian Chick’n Burger – we believe this maybe the burger that everyone will be talking about. It’s thicker than the rest and has a delicious breaded crust. We had it with some vegan mayo and it ticked all the right boxes. We were really pleased about the flavour, it definitely had that southern peppery kick to it.

Ingredients
  • INGREDIENTS
  • Linguine (Cooked)
  • Two Leeks (sliced into disk shapes)
  • One Tsp Minced Garlic
  • One Cup Broccoli (steamed)
  • Half Cup Parsley
  • Half Cup Vegan Parmesan
  • Juice of One Lemon
  • Two Tbsp Oil
  • Salt & Pepper
Instructions
  1. Follow your cooking instructions on the linguine pasta packet and place to the side until ready to use.
  2. Add the oil to a pan and put on medium heat.
  3. Add the leeks and lightly saute until soft.
  4. Add the minced garlic and broccoli and mix.
  5. Add the cooked pasta and fold the vegetables through.
  6. Squeeze over the juice of the lemon.
  7. Add the parsley, salt & pepper and parmesan & mix.
  8. Serve & enjoy.

Asian Raw Slaw is a wonderful, colourful, raw shredded salad with a delicious dressing.

This salad goes really well with all Asian dishes, especially Salt & Pepper Tofu.

Packed full of vitamins and nutrition, but it also tastes incredible. This Slaw captures most of the flavours of the Orient: sweet, spicy, tangy and salty. It should last a couple of days in the fridge too, if sealed.

  • THE SALAD
  • A Quarter of a Red Cabbage (shredded)
  • A Quarter of a White Cabbage (shredded)
  • Two Carrots (thinly sliced)
  • Four Spring Onions (chopped)
  • One Red Pepper (chopped)
  • One Red Onion (Chopped)
  • A Quarter Cup of Coriander (roughly chopped)
  • A Quarter Cup of Mint (roughly chopped)
  • THE DRESSING
  • A Quarter Cup of Sesame Oil

  • One Tbsp Maple Syrup

Instructions
  1. Add all the salad ingredients together and mix with your hand.
  2. In a bowl combine the salad dressing and mix. Pour over the salad and toss well.
  3. It really is that easy but wow the flavours in this salad are incredible!
  4. Serve as a side dish or as a main salad with your choice of plant-based protein. We recommend our Salt and Pepper Tofu

Ingredients
  • One Block of Firm Tofu (pressed if possible)
  • Two Tsp Cornflour
  • One Tsp Garlic Powder
  • Two Tsp Salt
  • Two Tsp Black Pepper
  • 1 Tbsp Oil
Instructions
  1. Chop the tofu into cubes and place in a bowl
  2. Add the rest of the ingredients (minus the oil) and using your hands, shake the tofu around so its all coated in the powder.
  3. Place a pan on medium heat and pour the oil in.
  4. Put the tofu in the pan and fry until all sides are a golden brown colour.
  5. Serve with a side salad or in a Buddha bowl. We enjoyed this dish alongside our Asian Slaw and they complimented each other beautifully.

To celebrate World Meat Free Week in June, Sainsbury’s are going to lauch a plant-based butchers pop-up.

The aim of the butchers is for it to look the same as a meat butchers, but all of the products are made with plants.

The butcher attending the pop-up will be trained in plant-based cooking and will be able to help, educate and inspire customers to go meat-free.

Customers will be able to choose ‘cuts of meat’ and have it weighed & wrapped before buying.

Lots of Sainsbury’s current vegan meats will also be sold at a discounted price for the event. But there will also be free samples for passersby to try.

The Meat Free Butchers Pop-Up will take place at Sainsbury’s at 146 Bethnal Green Road, London, 21 – 23 June.
