I initially bought too firm a mattress that has wreaked havoc on my hips, so we took it back.  
I am predominantly a side and back sleeper. Two other beds in my house are " plush" but still feel pretty darn firm to me.  
I put a 2" memory foam topper on them so I can sleep decently. 
But, I still wake up with overall stiffness in the morning, with the beds still feeling like a board underneath.

I am needing some softness on the mattress.

I weigh 210 and am 5'6". 
How I wish I could hold off buying a new bed right now. But, I need a king size. The other beds in the house are queen size.

My wife has been telling me that we need a new mattress.
The one we have is about 15 years old. It was an extremely well made Stearns and Foster, which I grant, isn't as comfortable as it once was.
But basically, there's nothing wrong with it. It's still firm and supportive.
I have no back pain sleeping on it, despite my advanced years. 
But, my wife complains about her hips being sore from it being too firm.
Certainly, I'd love to get away with spending only a few hundred dollars for a latex topper, as opposed to thousands for a new mattress.
If you're sure this will work for us, I'd be willing to give it a try.
The question is, "Which one?". We are average to a little above average in weight.

What a body needs to sleep well, is firm support and a comfortable sleeping surface.
You already have the firm support you need. A Plush Latex Topper will provide the comfortable surface that you are currently lacking.

It would be a shame to give up a well made mattress for something softer that will only last a few years...at most.
15, or so, years ago, it was difficult to buy a bad mattress. The mattress industry has changed, quite a lot, since then...and not for the better.
With all the memory foam used, it's extremely difficult to find a good quality mattress in today's market.

My wife has had a sore hip, as your wife has. We've been using a 2" latex topper, but have just ordered a 3" Plush one.
However, my wife is heavier than 'a little above average' in weight.
A Pure Talalay Bliss 2" Plush Natural Talalay Latex Topper is usually enough for most people. The 3" will provide a little greater depth of softness.
Frankly, you can't go wrong either way. Either one will breathe new life into the mattress you have.

I have 2 herniated discs in my lower back. 
On top of that, I get some pains laying in bed that will radiate down my left side to the outer side of my left knee.  
It's not only a pain, it's a kind of burning feeling.
I also have restless leg syndrome, for which I'm on medication. 
I also have Arthritis in BOTH my knees and am bone on bone, needing both knees replaced.

Your weight and disc problems demand firm support. 
You must start there, if you are to have any hope of the mattress lasting a decent amount of time.
That pain, you describe that radiates around your hip and down your leg, is called sciatica. 
It stems from a pinched nerve in the small of your back.
Keeping your spine aligned will help relieve that nerve from getting pinched.

How long a mattress lasts depends on three things:
1) The quality of the components in the mattress 
2) The weight placed upon it.
3) How well you take care of it...(Frequent rotating and using a waterproof mattress protector to keep the upholstery clean and dry)

At your sizes, a mattress made of high quality components is essential to longevity.
You will require a strong coils unit and resilient upholstery materials.

That you've had a mattress that you've enjoyed for so long, and that it is now causing pain, is a clear indicator that you need a new mattress.
Simmons doesn't make a mattress that is long lasting, anymore. 
Their plush models, in particular, are very short lived and the source of most of the complaints you read about them on internet reviews. 
This has been true for quite some time...over the last 10 years, or so.
To offset this reduction in quality, we've been recommending firmer Simmons Beautyrests and a soft latex topper to go with it.

My husband and I bought a Sealy mattress from well known furniture store. 
After 1 year we couldn’t stand to sleep on it anymore. So I opted for a Memory Foam mattress. 
We are 2 years into this one and we are both in pain...nothing but body aches.
My husband is a side and stomach sleeper and I am a side sleeper. 
We both have sciatica pain and he has some pain in his ribs from an injury. 
I was thinking of purchasing a mattress topper to see if that helps at all. 
But I know we should probably move away from the memory foam and opt for something better for our bodies. 
We recently stayed at the Palazzo in Vegas and both slept like babies. 
After that, I knew we should invest in a new mattress. 
Any help would be greatly appreciated 😊

It's a 2018 BeautyRest Silver Hybrid Kaysville Plush in king size.
Does it need to be flat and on top of the box springs?  
At first, I thought I would stand it up on end and put the 2 box set on the outside and rope it in place in the U-Haul.  
What do you think?  Individual coils might shift?

They should be stored flat if using a storage area.
The coils will shift if left on its side, long term.

To move from one bedroom to the bedroom in the new place, strapping the mattress to the side of truck.
Use the boxsprings on the inside to protect it from other cargo. It's is all you need do.
You can get a mattress bag at U-Haul.
You can further protect the mattress with a cardboard box...also available at U-Haul
