Vegetable fried rice is one of those things that sounds good but doesn’t always taste as good as it sounds when it’s made with too much grease. If the ingredients are less than fresh, that bowl of rice you’ve dreamed about can easily become something that you can scarcely even swallow. The good news is that you can make your own vegetable fried rice at home. Making great rice is actually a lot easier than you think. Once you taste your own rice, you probably won’t be going out and getting this dish any time soon.

It All Starts with the Right Ingredients.

When you make your own dish at home, you can tailor it to fit anything you want. There is a basic recipe provided here, but that doesn’t mean you have to follow it to the letter. In fact, this dish is versatile enough that you can add or remove certain vegetables at will. This allows you to create a dish that is customized to your individual tastes or to the ingredients that you already have at home. Check out the recipe below, but don’t be afraid to get creative.

Ingredients : 
  • 3 ½ Tablespoons safflower or avocado oil
  • 1 cup onion (white, chopped)
  • ½ cup carrots (chopped)
  • 3 chopped green onions
  • 1 cup additional greens, if desired
  • 2 cups additional vegetables (this can be anything you want)
  • 2 eggs (scrambled, cooked separately)
  • 2 cups brown rice (cooked separately)
  • 1 tablespoon ginger (fresh, grated)
  • Red pepper flakes (pinch)
  • 2 garlic cloves (minced)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt, to taste
  • Chili-garlic sauce, to taste (optional)
Method:

You need to cook the rice, eggs, and vegetables separately. Prepare the rice first, as detailed in the instructions directly below under the heading “preparing your rice.” Next, prepare your vegetables and eggs according to the headings “cooking the vegetables” and “making perfect eggs.” This will tell you everything you need to know in order to prepare your meal.

Preparing Your Rice

Even if you don’t have a lot of experience in the kitchen, this is one of the easiest dishes to make. Don’t believe all the hype about rice being hard to prepare. As long as you remember one simple rule, you won’t have any trouble making delicious rice. For every cup of rice you cook, add two cups of water. When you first put your pot of water on the stove to boil, add about one tablespoon of butter. It’s also a good idea to add a little salt to the water and rice mixture. These steps add flavor to your rice and help prevent it from boiling over. Allow the rice to boil but don’t overcook it. That’s all there is to it.

Cooking the Vegetables

This is where you will need to add some oil into a skillet. If you have one made from cast-iron, that’s great but if not, use whatever you have on hand. Add the oil to your skillet and get it good and hot. Make sure all of the vegetables you intend to use are finely chopped. Whatever you’re using, it needs to be chopped into small pieces in order for it to cook properly. Allow the vegetables to brown but don’t cook them until all you have is a mushy mess. When the vegetables are about halfway through cooking, go ahead and add the garlic and ginger. Be careful not to allow the garlic to burn.

Making Perfect Eggs

This is by far the easiest part of the entire dish, although there really isn’t any part of it that could realistically be considered difficult. All you need to do is cook the eggs in a skillet and scramble them. Just as you did with the rice, make sure you cook the eggs separately. You want them to be thoroughly cooked but you don’t need to overcook them. You’ll know they’re finished cooking when you can scramble them and the yolk in the middle is solid instead of liquid. You can then remove them from the heat and set them aside.

Bringing it All Together

At this point, the only thing that should still be cooking is the skillet full of vegetables. You’re ready to turn up the heat and combine both the rice and the eggs. Add everything into the skillet and mix it together. You want to keep the heat high, but only for a short time. Mix things together, keeping the ingredients in constant motion to avoid allowing anything to burn. Do this for just a minute or two, then immediately remove the skillet from the heat. Allow the food to rest for a couple of minutes and it’s ready to enjoy.

Variations in the Recipe

Remember, you are in charge of this recipe, so you don’t have to follow everything ounce for ounce. As a matter of fact, you can leave things out or substitute one item for another if you prefer. If you don’t have avocado oil, you can substitute canola oil or even vegetable oil. By the same token, you can leave out the sesame oil or the soy sauce, especially if you don’t really have a taste for either one of these ingredients. The same is true for both the vegetables and the greens. Add the things you like and leave out the rest. That’s one of the things that makes this recipe so good. It’s not written in stone so you can personalize it almost any way you wish. You can even use white rice instead of brown, provided that you realize this will cut down on the potential health benefits of this dish.

Healthy Food That’s Easy to Prepare

If you follow the base recipe fairly closely, you have a healthy dish that doesn’t take forever and a day to prepare. It’s also delicious, making it easier to get on board with the idea of eating healthier in the first place. If you do choose to substitute white rice for brown rice or vegetable oil instead of avocado oil, it won’t be quite as healthy. That being said, it’s still a far better option than eating fast food or something filled with tons of sodium and other preservatives. In addition, you can prepare a large amount of food and then portion it out to eat later on during the week. This helps you stay on track because you’re less tempted to eat a lot of junk food when you’re already pressed for time.

In closing, eating healthier doesn’t have to be difficult or boring. This recipe proves it. All you need to prepare it is some rice, a couple of eggs, and whatever vegetables you have on hand. Before you know it, you can be on the road to eating healthier and you don’t have to spend a lot of time in the kitchen in order to do it.

Instant Mushroom Masala / Mushroom ki sabzi - YouTube

Instant Mushroom Masala or Mushroom ki sabzi is prepared Using Homemade Premix in thick sauce and served with rice or Indian bread.

Homemade premix is number one item in my kitchen list lately and try to use them in most of my cooking which not only gives any recipe restaurant style taste but also helps you impress your family and guests . Plus you can make quick dinners on busy days.

Mushroom ki sabzi or Instant Mushroom masala is one of the easy and tasty recipe served in restaurants. Why I say this is instant because I use my homemade brown gravy premix which I always keep ready , stock it in my refrigerator and use for various gravies. I just have to mix water in it and use for preparing curries.

My son otherwise don’t like mushrooms , but after I prepared Mushroom masala, he was like ‘Wow’. Absolutely impressed. For mushroom masala you can use any mushrooms of your choice, but it tastes very good with button mushrooms. Just make sure they are washed properly and thinly sliced.

Instant Mushroom masala can be served with any Indian bread like roti, naan, kulcha. I prefer to eat it with kulcha. One of my favorite Indian breads.

Preparation Time: 5 Minutes Cooking Time: 15 -20 Minutes Serves :4 People Ingredients : 
  • 140 Grams Brown Gravy Premix (Homemade)
  • 1 Cup Water
  • 4 Tablespoons Oil
  • 200 Grams Any Mushrooms, Thinly sliced
Method:

Add water in brown gravy premix and make sure to mix it well so that no lumps are formed.

Heat oil in a pan and on medium heat sauté  mushrooms till they are tender. Will take 5-6 minutes.

Add the gravy, mix , cover and Cook for 5-6 minutes .

Once it comes to rolling boil, jus lower the heat and simmer for 5 minutes and remove from heat.

And our Instant Mushroom ki sabzi is ready to be served. If you like, can add some chopped Cilantro(Coriander leaves) for extra flavors. Enjoy with any Indian bread.

The Convection microwave ovens are considered as one of the most favourite kitchen appliances for men because it is easy to use, clean and keep. What is more interesting here is that the inventor of the convection microwave oven happens to be a man, Percy Lebaron Spencer: an American inventor and physicist. Hence, the most prevalent humour to this would be the quote, “Microwave is made by a man, for the men who hate cooking but have to cook anyway”.

Indeed, there is no doubt that it is the easiest to use a cooking appliance that has been designed and manufactured in the last century. Now that particular factor is not made on the basis that you can only heat up and prepare the ready-to-eat food or re-heat (many times) what you cooked.

There is a significant advantage with a microwave that it saves a lot of time, which would otherwise have gone in cooking conventionally. Cooking with a good convection microwave oven is extremely easy for a novice who has never stepped foot in the kitchen or toasted a piece of bread, even.

However, before going ahead to cook with Convection microwave ovens, you must know two things.

1) Microwave Usage: Every microwave is different from another, and they cook differently, depending on their wattage range, which starts from 500 and goes till 1000. However, many microwave models have the built-in sensors which can detect if the food inside has started to burn. But most of the microwaves don’t have such sensors. Hence, do thorough research and go through the various features that would prove to be useful to you.

Also see if you want to use the microwave for cooking complex delicacies or simple ones, for the wattage and temperature specifications along with the cooking time, will make a lot of difference. Thus, knowing clearly what you need and what the microwave will be used to cook would give you a fair idea on what Convection microwave oven you will need to buy.

2) Tricks & Tips: When you are new with microwave usage, you will certainly make a bundle of blunders. There could be terrible disasters which could end in not just spoiled food, but also a lot of cleaning. Thus, knowing the much-applied tricks and fundamental tips would keep the possibilities of unpleasant experiences away. However, some of them are;

–    The utensil containing the food should be placed at the glass tray centre, and only the microwave compatible utensils are to be used. Though, it is alright to use cardboard, greaseproof paper and paper towels.

–    Do use a bigger dish than the average size if you intend to bake something since the food will expand.

–    Avoid metal utensils or containers to cook because they may cause sparks in the microwave.

–    Never leave a sauce or thick-liquid in an open dish or utensil because it may spoil, while aluminium foil may not be the best thing to cover the top as well.

There are a plethora of great recipes for excellent food, which can be cooked in Convection microwave ovens.  Here are some of them, which you can conveniently cook in a microwave.

  1. Paneer Tikka

Something that the Indians love, paneer tikka, is made of white and soft cottage cheese cubes, which have been marinated for nearly 40 minutes. The cooking takes 10 more minutes and then it’s the perfect delicacy made in a microwave.

  1. Macchi Laal-Masala

This is a spicy chilli infused fish fillet that can be cooked within 10 minutes in the microwave. However, the fish requires hours of margination before cooking so that it might be a bit time taking.

The most ‘Sinful Sin’ that anyone can commit. This is the cake that takes the spotlight in the potluck parties, and it is loved by everyone.

The Convection microwave ovens can be picked and used for quick and hassle-free cooking experience. Especially, the men also like to cook, but they are not ready to do ‘lot’ of things in the beginning or end of the main cooking hours. Quick Creamy White Pasta is prepared using Indian style by adding few Indian spices which makes it different , tasty, and crave for more. Cooked chicken cubes can also be added to make the dish more interesting for non veg lovers.

It’s always my dilemma as to what to give in lunch for my teenager. He is choosy with food and goes for variety everyday. And me, a  health cautious mom, have to keep a note on what he eats, what he prefers . The other day we ordered white pasta from nearby restaurant and he really liked it. It had Italian plus Indian flavors, and I tried to replicate it at home. But no luck. Then got this no fail recipe from Smita, my teacher who runs her own cooking/baking  classes.

If you are organising kids party, then this quick creamy white pasta is the best option. So if you are looking for some party ideas , go for it . Also do not forget to serve some healthy dessert. I would prefer to serve Eggless Apple Cupcakes instead of going for heavy cream sugary cakes.

The spices used in this recipe can be used to make white gravy mix and can be used to prepare Malai Kofta, Navratan Korma, Methi Malai Mutter and many more which I will soon be putting on my blog.

Other Ingredients : 
  • 2 Cheese Cubes, grated or 2 Tablespoons any grated cheese
  • 200 Grams Boiled Pasta
  • 1/2 Cup Carrots , Chopped
  • 2 Cups Milk
  • 2 Tablespoons Butter
  • 1/2 Teaspoons oil
Method:

Mix all the main ingredients in a bowl.

Add in 2 cups milk and mix properly . Don’t allow lumps to form. Keep aside this prepared white gravy for pasta.

Heat butter and oil in a pan and add chopped carrots. Fry on medium heat till carrots are soft. It will take around 5 minutes.

Add prepared white gravy and mix. Cook on low heat mixing in between till gravy thickens .

Add pasta and mix.

Slowly pasta will sticky and creamy.

Switch off the heat and add grated cheese. Mix and serve.
