I was lucky enough to grow up in a really loving and accepting family. I was never taught racism or sexism or bigotry. I was taught to love and accept people for who they are, especially good people. And the month of June embodies what I was taught from an early age. June is Pride Month. And Pride Month is all about rallying together to protest for equal rights and celebrate the amazing people in the LGBTQ+ community. It’s a time to honor how far we have come as a community since the 1969 Stonewall Riots, and to understand how far we still have to go.

If you stop by any of the Pride parades around the world this month, you’ll quickly notice a few things –

  • Bright colors
  • Huge smiles
  • And some of the friendliest people you’ve ever met on a city street

Pride gives our communities the ability to express themselves, to lift each other up, and to rally together for a better future. These parades, rallies, and demonstrations all give people the confidence to be exactly who they are and to make connections with the community around them. It’s a time for celebration and it’s a time for love.

And right now, Express has partnered with with GLAAD and Out Magazine to launch the Love Unites collection to help spread the love! This collection features 35 all-gender pieces that celebrate unity and individuality. I LOVE trying new products. They use to intimidate me or I would be nervous that I would waste money on a product I didn’t like. But now I’m always ready to try something new just so I can tell you if I like it or not. Today I have something new that I LOVE. Actually I have two new products that I love! Both are from Tula, both smell amazing, and both work wonders.

Let’s first talk about about their newest product that launched today that I’m IN LOVE with – Tula’s new Face Filter Blurring & Moisturizing Primer. I just got my hands on this product earlier this week and began using it under my makeup, and guess what? It’s a thing of beauty! As soon as you rub this face filter into your skin, your face will immediately appear more luminous, less uneven, and it even helps to calm redness. Plus, unlike most primers on the market, this one is filled with probiotics and superfoods to help improve the look of skin over time!!

In each bottle of the face filter, you’ll find –

  • Chia seeds to increase the appearance of luminosity

There are a few things that I have strong beliefs in –

  1. Football is stupid.
  2. Dogs are way better than humans.
  3. You should be eating vegetables with every single meal.

There are I said it. Sure, most of these beliefs won’t be well liked by most people, but they should be. BECAUSE THEY ARE FACTS. Facts by Juli. But before people get all upset about the football comment, let’s just quickly get on to the belief 3 – vegetables. Vegetables are the best. And we should be eating them all the time. They are demonized in the media from an early age (i.e. – Arthur not wanting to eat boiled brussels sprouts…because WHO BOILS BRUSSELS SPROUTS?!), but we should really change that. Because vegetable are f*cking bomb. Especially when they are crispy, topped with a sauce, and full of flavor. And this cauliflower is exactly that. This cauliflower is a bomb ass b*tch. Sure, it may smell like farts when you’re cutting it, but luckily it doesn’t taste like it.

What I love about cauliflower is that it will take on any flavor you throw at it. And I also love that it’s somehow become tortillas, rice, tater tots, biscuits, and pizza. Favorite quote maybe ever – “If cauliflower can somehow become pizza, you my friend can be anything.” So you know what I need from you today? I need you to make this cauliflower side dish and afterwards, I need you to become whoever you want to be. That’s all I ask of you today. It’s a small request, ok? Make cauliflower, eat veggies at every meal, stop watching football, get a dog, and be the best version of yourself. IS THAT TOO MUCH TO ASK? Can you tell that I didn’t sleep much last night? I’m feeling like I can conquer the world…then will crash by 10am.

Since I’ve pushed cauliflower down your throat like Michael forced Kevin to eat broccoli for his New Years resolution, let’s take a step back. Give you a breather. Let you relax for a moment. Instead, let me only slightly complain for a moment…OUR BATHROOM RENOVATION STILL ISN’T DONE. This bathroom start April 1st which means it will most likely be a 3 month job. When it was suppose to be a month and a half. It’s insanity. And it all came down to a fabricator who took our money then wouldn’t take our phone calls. At one point, my husband was calling his 10x a day. He hit ignore every time. So finally we got fed up and I sent him a super angry email letting him know that I would be calling the police and taking him to small claims court. He placed a check in my mailbox the next day. And to make sure it cleared, I cashed it. Miraculously, we got our money back!!! But that meant we had to find a new fabricator, get our vanity measured and get on their schedule, which added more time.

Moral of the story – when you’re doing a renovation, always double or triple the timeframe that they give you. Contractors don’t like to overestimate probably because they are nervous you won’t work with them given the lengthy timeframe. So overestimate since they won’t. And trust no one. Ever.

However, there is an end is sight, which is lovely. Once our bathroom is done, I may just sleep in there for a couple weeks so I can fully enjoy the time that was spent creating it. The only thing that sucks now is I want to redo the other bathrooms, which is now impossible knowing what renovations are actually like. This isn’t some Chip & Joanna sh*t. How their marriage lasts with thousands of children and a renovation business makes absolutely no sense to me. Are they robots? Maybe lizard people? Probably just good people, huh? Too bad they don’t show the fights. I would watch that.

Ok, I have cauliflower to eat and another veggie dish to create for you guys, so I must go. Don’t forget – EAT YOUR VEGGIES TODAY!

Crispy Air Fryer Cauliflower
Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Serves 2-3
Ingredients For the tahini dress
  • 1/3 cup tahini
  • juice of 2 lemons (~1/2 cup)
  • 1 tablespoon honey
  • pinch of salt
  • 1/2 cup water (this measurement will depend on how much oil is in your tahini - I did not have much oil in mine so I needed extra water)
For garnishes
  • 1/4 cup pine nuts
  • 1/3 cup pomegranate seeds
  • 1/4 cup cilantro, roughly chopped
  • 3 sprigs of dill, roughly chopped
Directions
  1. In a large bowl, toss cauliflower florets in avocado oil, then add tapioca flour, salt, garlic powder, mustard seed, turmeric and cayenne pepper, and toss until completely coated.
  2. Add cauliflower to air fryer. Press temperature to 360 degrees F and timer to 15 minutes. Every 5 minutes, pause the air fryer and toss to help cook the cauliflower evenly. 
  3. While the cauliflower cooks, place all ingredients for the tahini dressing in the blender and blend until smooth.
  4. Place pine nuts in a small sauté pan over medium heat and cook for 4-5 minutes, until fragrant and toasted.
  5. Once the cauliflower is done cooking, top with toasted pine nuts, pomegranate seeds, cilantro, dill, and pour the dressing on top before serving!

Thai Watermelon Salad
Prep Time 25 minutes
Cook Time 0 minutes
Total Time 25 minutes
Yields 6-8
Ingredients For the salad
  • 1 small watermelon, cubed
  • ½ large English cucumber, quartered
  • 1 medium carrot, quartered
  • 1 stalk of celery, sliced
  • 3 small radishes, thinly sliced
  • 1 medium orange bell pepper, chopped
  • 2 green onions, chopped
  • ¼ cup lightly packed cilantro, roughly chopped (plus extra for garnish)
  • 8 mint leaves, roughly chopped (plus extra for garnish)
  • ¼ teaspoon fine salt
  • ¼ cup cashews, finely chopped
For the dressing

Directions
  1. Combine all watermelon, vegetables, and herbs in a large serving bowl. Sprinkle with salt and mix to combined.
  2. Place all ingredients for the dressing in a large jar and shake until completely combined.
  3. When ready to serve, pour the dressing on top of the watermelon salad, mix to combined, then top with chopped cashews and garnish with fresh cilantro and mint leaves. Serve immediately.

I’ve been thinking a lot about fitness lately, more so than usual. I think because I’ve been trying to identify what I want to do on this earth and how I want to make a difference. And for me, I want to be a great influence. Sure, I cuss a sh*t ton and I have an attitude more days than not, but I want that positive influence to come from how I treat my body, day after day. Because I want others to do the same. I want someone to see my regular workouts, the healthy meals I create, and the confidence I exude because of the choices I make day in and day out.

When we look at social media, we are drowning in images of lean people, strong people, people getting ready for fitness competitions, and so on, and so on. And for me, those images aren’t motivational, they are demoralizing. Because I know I’ll never get there. You know why? Because I don’t have the same genetics, I don’t want to injury my body more than I already have with some of my choices in the past, and I want to continue to enjoy my life with food, drink, and not much stress about being leaner.

When I look at fitness nowadays, sure, I want to be fit and feel fit, which I think are great things to strive for. But what I’m concentrating on even more so now is long term health. That’s what motivates me every day. I want to be able to get out of a chair easily, up and down stairs quickly, and I want to be able to take care of myself as long as possible. When people ask how to find motivation – that should be one of the factors. Your 60, 70, 80 year old self should motivate you to take care of your muscles today. It’s hard to know what the future holds, but working towards a healthier tomorrow will set you up for success.

Let’s work together to stop the obsessing over cellulite and worrying over the place you store fat the most. Let’s work together to prove that health is so much more than physique. It’s hard with social media nowadays, but remember that your healthy eating choices, your tough workouts, and your constant self improvement will pay off long term. Your 70 year old self is going to be hella thankful for the choices you’re making now. I promise you that! Motivate yourself today so you can feel fantastic 40 years from now. That’s what I plan on doing! Now…it’s time to work out! Happy Monday!

I recently went to the Florida Keys, and even though I wasn’t a huge fan overall, I did enjoy wearing the cutest white dress I ever did see while I was there. And it especially came in handy since it was midi length and the wind was trying to crush our souls that weekend. But it could not crush my-bum-is-showing-soul. Nope. I kept that part of my body a secret, even when the wind was trying its best to make sure that wasn’t the case. Wind is so dumb.

Since spring and summer is the time that so many people get married, I thought it was the perfect opportunity to share some white dresses for any of you that are on the hunt! And let’s be real, I haven’t gotten married in years now but I’m still wearing white dresses every week. I think white dresses look so good in summer and really pop whenever you wear them. I personally love when everyone is requested to wear white to a wedding. I think it looks so fresh and bright. But since brides seem to hate that, it rarely happens. Let’s change that. Let’s start asking our engaged friends if we can wear white to the wedding.

I don’t really like salads with actual lettuce. The lettuce gets in your teeth, it doesn’t fit in your mouth so it hits you in the face, and it’s just not filling. It also reminds me of my diet days as a teenager when I constantly forced myself to eat stupid, sh*tty salads. Not looking for that life again. But a salad like this one…I LOVE. No lettuce is involved – just a crap ton of vegetables that hold up really well under a crap ton of dressing. And I’m a high fat lover over here so the more dressing, THE BETTER. When I made this recipe the other day for you guys, I was a bit distracted prepping for an IG Live so I completely forgot to add mandarin oranges, toasted sliced almond, and toasted coconut. It was a big mistake, I get it. If you can’t trust me ever again, I completely understand. But I did add the toasted nuts and coconut later on for dinner and it was BOMB! Don’t be a failure like me – add the toppings and live your best life.

Did you tune in for my latest IG Live last night? Recently I decided to talk a slight step back from my podcast (recording once a month instead of once a week) and begin to record more video. So every Wednesday, I’m doing an IG Live to talk with you guys and answer your questions. Which means I’m going to get in trouble every week. Last week I got in trouble for talking about our farms and crops in the US…and this week I talked about marriage and not having children, so angry messages are bound to come in. Next weeks topic is going to be about exercise, the ups and downs, and getting to a place where exercise is a healthy act, not a punishment! It’s been so fun seeing you guys tune in!! But if you can’t tune in, I’m currently in the process of figuring out how to upload the video to my site so you can watch it past the 24 hours! Stay tuned.

It’s been so rad to be home and be back to a new normal routine. After traveling most of May, I never want to leave my house again…except for the fact I booked a flight to Bali!! I was suppose to go to Bali a couple years ago but things didn’t work out, but since my friend just quit her corporate job and is hitting the road for a while starting in Bali, we thought it was the perfect opportunity to book a trip there! We are going in August and I could not be more excited!! Have you been to Bali?! What do you recommend? Any favorite places to stay, favorite spots to eat at, must-sees?! Tell me everything! We really have no plans as of yet so I’m open for any recommendations.

In the meantime, I currently have a bathroom renovation that STILL ISN’T FINISHED and a fabricator I may be taking to small claims court. So I really need some Bali daydreaming right about now.

Total Time 30 minutes
Serves 4-6
Ingredients For the salad
  • 1/2 head of purple cabbage, thinly sliced
  • 1 head of napa cabbage, thinly sliced
  • 3 medium carrots, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons chopped fresh mint
  • extra add-ins: mandarin oranges, toasted almonds, toasted cashews, toasted almonds, toasted coconut
For the dressing For the pork
Directions
  1. Chop all veggies and herbs then place in a large mixing bowl (along with any other add-ins you prefer).
  2. Place all ingredients for the dressing in a blender and blend until smooth and combined.
  3. Lastly, add ground pork and a bit of salt to a large nonstick pan, breaking into small pieces and cooking until no pink remains. While the pork cooks, place a small saucepan over medium-high heat then add coconut aminos and sriracha, whisk together and cook for about 4-5 minutes, until bubbly and reduced. When the pork is cooked through, add the sauce to the pan and mix until the pork is coated.
  4. Toss veggies in the dressing and top the salad with the pork mixture! Easy peasy!

Something I’ve tried to do over the past few years is spend more of my money and time traveling, instead of using it on little things back at home. I’m lucky enough to have a schedule that lets me do that, and now I have an unemployed husband to do it with me!! Him being unemployed is my favorite. We have no idea what the future holds, which means I’m trying to travel as much as I can, while I can! And with all that recent international travel to Aruba, then Cabo, New Zealand, then France, I’ve learned A LOT about what to pack with me. These items below are my must-haves to make sure I’m comfortable throughout the flight, when I’m stuck in an airport, or when I’m running to a connecting flight. The last thing you want to do is be unprepared for a 32 hour travel day(s).

I’ve mastered what to pack with me…which means my new goal is to master how to rack up points and fly first class or business class everywhere I go. I haven’t mastered that yet, but I’m trying so I’ll keep you updated as I learn more this year! I’ve already taken out new credit cards to work on that! Moving and grooving!

In the meantime, check this list out below and let me know if you have any must-haves when you travel. I’m sure someone will say they have to have a travel pillow with them, but I have yet to find one I actually like. They all suck. Am I the only one out there that likes having a neck that isn’t cramped from an awkward position with a weird shaped pillow? If you have a pillow that isn’t shaped like a half donut pillow for when you have hemorrhoids, I’d love to hear more. Less about your hemorrhoids, though.
