An appointment ceremony was held on 9 February 2018 to celebrate this important role. Receiving the title from HKTB Deputy Executive Director Ms Becky Ip, Jackson shared with guests and members of the media his personal attachment to Hong Kong. Jackson also introduced to the attendees several of his favourite hangouts and places not to be missed. As Chinese New Year is just around the corner, the pop idol gave his blessings to visitors and the people of Hong Kong by showing off his calligraphy skills, composing hand-written couplets in Chinese and English.

Sautéed Bird's Nest with Egg White 百鸟迎春 – 炒芙蓉燕窝
Everyone at the table unanimously approved of the gooey goodness of this mouth-watering Chef Chan’s creation! This dish was perfect in every way from the smell, temperature, texture and taste! Sprinkled with minced garlic to add crunch and taste, each bite was bursting with flavour. The jelly-like bird nest complemented impeccably to create this delicious and nourishing dish.

Superior Treasures Fortune Pot in Peking Style 京式御级盆菜
As a symbol of abundance and prosperity, this luscious pot of goodness was layered with premium ingredients such that each scoop was a surprise; revealing a new set of ingredients. Unlike many pen cai that are served in thick braised gravy, this pot was on a portable stove akin to a steamboat and instead of thick gravy, it ingredients were simmered in a clay pot of delectable and rich soup. Authentic Barbecued Peking Duck 贺岁填鸭 - 烤北京填鸭
Being an established restaurant known as an icon of authentic Beijing cuisine, one can look forward to completing the meal this aromatic delicacy, the Barbecued Peking Duck. Watch the kitchen crews freshly slice the crisp and perfectly roasted duck skin and wrap them in two types rice flour crepes, namely plain skin and egg skin. The duck skin was fragrant with minimal seasoning and I would personally prefer it to go with the thinner plain skin as compared to egg skin.
Sautéed Longevity Noodle 福禄长寿 – 长寿面线
Enjoy a bowl of springy noodles that comes with large, plump and crunchy prawns. The noodle was not too oily, fragrant and prepared with some wok-hei smokiness.
Soufflé Balls with Red Bean Stuffing 金银满屋 – 高丽豆沙
Spice up your dessert with these soufflé balls that were filled with red bean paste. It was served hot and as you bite into the soft and airy dough, you can appreciate both sweet and savoury goodness all at once. For those who would like it sweet can also dip them in sugar. A dessert the makes the heart feels warm and fuzzy, one that will appeal to all ages.
