It’s a SUPER-SIZED edition of my Friday Favorites!
I don’t know what it is…but I wrote down a lot of fun and favorite things this week PLUS, Nordstrom reached out and asked if I wanted to share some of my favorite gifting ideas today and since basically all of these things would make great gifts, that was an easy partnership to say YES to!! Easter is almost here!
It always sneaks up on me when Easter is in March or early April. In my mind, Easter should always be like the third week in April. Alas, it is not this year…it’s in about a week, so if you’re not ready, you should probably get ready stat!
If you’re looking for quick and easy recipes to enjoy this holiday, I have them here! I have breakfast ideas, side dishes (to go with that Easter ham!), and all sorts of sweets.

My Maple Orange Salmon will be on the table in no time flat. I served mine with roasted cauliflower, sweet potatoes and orange slices. Easy as that!
This recipe serves four to six.
Shopping List 4 to 6 salmon fillets (I got mine from behind the fish monger’s counter)
1/4 cup maple syrup
2 tablespoons Worcestershire sauce
1/4 cup Extra Virgin Olive Oil (EVOO)
the zest and juice of one large orange
a good pinch of both salt and pepper
1 teaspoon garlic powder
chopped parsley to garnish
In a gallon-sized baggie, add in your salmon followed by the syrup, Worcestershire sauce, EVOO, zest, juice, salt, pepper and garlic powder.

Every year, it’s not Easter unless there is a coconut cake. For my family, there must be coconut and there must be carrot cake on Easter Sunday. Last year, I made a CARROT BUTTERMILK LAYER CAKE and then the year before that a STRAWBERRY BUTTERMILK LAYER CAKE, so it only made sense to make a coconut one this year. These are my favorite cakes to make!

Friends, I don’t even know where to start. We had the BEST time on our Disney Land & Sea vacation with the Slaughters last week and cannot wait to share all of the pics with you. If you recall, two spring breaks ago, we went on a Disney Cruise with the Slaughter family and right then and there, Erika and I planned our family vacations out for the next 20 years.
