We’re hoooommmmmmeeeee!!!! It only took 8 hours of travel with one very tired threenager, but WE DID IT.

And it was a blast. I mean, I may never speak to either of our mothers for at least a month (for the sake of their well-being and mine), but other than that it was definitely a success. Remy is a Disney Queen and absolutely loved meeting all of her favorite princesses, as well as her favorite characters from Cars, Wreck It Ralph, and Monsters Inc. I actually don’t think there is a Disney movie she doesn’t like, so all in all it was a dream come true for her.

But now it’s back to real life and healthy eating. I’m pretty sure my child thinks a french fry is now a food group, so we will need to rectify that ASAP.

Here’s what we’ve got for you in this week’s meal plan!

  • white bean zucchini burgers – perfect veg option for Father’s Day!
  • kale, cherry, and bulgur with savory granola – a celebration of seasonal ingredients
  • healthy pasta salad – yes, it’s a thing.
  • farmer’s market forbidden rice bowls – eat the rainbow!!!
  • easy coconut curry with tofu – SO craving these flavors.

A thin-crusted pizza bianca (aka white pizza) topped with roasted potato slices and a rich layer of herby mascarpone cream.

The carb on carb action in this pizza is crazy and real and SO NECESSARY.

A Persian zucchini frittata that is rich with spices, tart barberries, and floral orange zest. It is truly an explosion of flavor.

Probably one of the best things about knowing how to cook (or at least how to follow a recipe) is that it saves a lot of money I would otherwise spend on travel.

Like, HELL YEAH, I would love to go to the Middle East and shack up with an Iranian grandmother for a few weeks and learn all of her secrets/eat her out of house and home, but it’s just not feasible at this point in time for a whole slew of reasons.

I’m in the final countdown of night shifts (only three more to go!!!!) and it feels so good. I’m THRILLED to be done with nights forever after this. Tuesday can’t come soon enough.

A spring salad of fried halloumi, asparagus, zucchini, and roasted cherry tomatoes with basil oil.

This three day weekend was super confusing for me on a number of levels, but mostly because I was working nights, didn’t quite sleep enough, and have no sense of what day it is. And OF COURSE because I had off last night, I totally flipped my schedule back from nights to days. Just as I was getting used to it.

Sleeping at a time that my circadian rhythm intended felt so good in the moment, but tonight when I have 8 admissions to do…it’s going to feel so bad.

Oh well.

Happy Memorial Day weekend!! Hope you’re out in the sun, wearing good sunscreen, eating ice cream, etc. It’s supposed to get to NINETY DEGREES here on Sunday, which sounds alternately disgusting and amazing. Fingers crossed they turn the sprinklers on at the kiddie parks, because this mama is going to need it. ALSO fingers crossed that a lot of people will be leaving town for the weekend and so the hospital will be less busy. I’m working the night admitting shift all weekend long and it would be SUPER if I could have some down time to sleep. We’ll see.

I’m sure you’ve all got your bbq plans figured out, but here’s some other fabulous summery inspiration for the week!

    • vegan mediterranean chickpea “meat”balls – pass me a big bowl.
    • make ahead bean burritos – would love these for easy breakfasts
