homemade Vanilla cake mix in Cooker Ingredients
  • 1/2 cup warm condensed milk
  • 1 tablespoon vanilla extract/ vanilla essence
  • 1 cup all-purpose flour/ maida
  • 1/4  cup butter/oil
  • ¼ cup milk warm
  • 1 tablespoon vinegar
  • ¼ tablespoon baking soda
  • ½ tablespoon baking powder
  • 1-1/2 cups sugar
  • pinch of salt
Instructions
  • Firstly Spread 1 or 1½ cup Salt at the bottom of the pressure cooker.

  • Now close the pressure cooker lid without keeping the gasket and whistle
  • Now place a stand in the bottom of the pressure cooker to prevent the cake from burning on the bottom (if you don’t have stand use any bowl or wire rack)
  • heat the empty pressure cooker on high for 2-5 minutes as gives a preheat oven atmosphere
  • In a large bowl, beat 1 cup Milk, sugar, butter and vanilla essence, vinegar until blended.
  • In another bowl, whisk flour/Maida,  baking soda, baking powder and a pinch of salt. Gradually beat into mixture.
  • do not to over mix the cake batter as it turns rubbery.
    Transfer the mixture in cake batter and carefully place the cake tray into the cooker.

  • Lock lid; make sure vent is closed. Without gasket and whistle. simmer for 40 minutes
  • When finished cooking, allow pressure to naturally release for 10 minutes,
  • A toothpick should come out with moist crumbs. If desired, serve warm eggless Vanilla cake.

  • Cool before frosting. add Cream for decoration.

  2. Add onion, garlic-ginger paste. Saute till brown & softened about 3 minutes.

Pahadi kaphal Sag

The Kumauni kaphal/Kafuli Saag made with fresh pahadi green vegetables/ spinach Fenugreek and flavors. Green vegetables are rich in Vitamin K and minerals. It will be awesome If we use black Jakhiya Tadka. Small, dark brown or black, this Jakhiya Seeds is also known as wild mustard or dog mustard. Jakhiya seeds are used for tempering almost all types of vegetables and curries in the Garhwal/pahadi region.

INGREDIENTS

  • Pahadi Spinach (पालक )-250 grams
  • Onion chopped-1
  • rice powder -1 tablespoon
  • coriander seeds powder -1/2 teaspoon
  • turmeric powder- 1 Tsp
  • asafetida-  1 pinch
  • Black Jakhiya seed- 1 teaspoon  (a pahadi
  • 1 teaspoon ginger
  • 5 garlic, cloves
  • 2 tablespoons mustard oil
  • 2 green chilies
  • Salt to taste

Method

  1. First, wash the pahad spinach leaves and put green chilies in the cooker and cook until a whistle comes in a low flame. Do not put water with the leaves in the cooker at all. Now cook in the cooker, grind it after cooling the mixture.
  2. After grinding well, heat mustard oil in the Kadai/pan. Then Add jakhiya tadka
  3. Then add garlic ginger paste until it turns brown.
  4. Add Chopped onions, hing, turmeric powder, coriander powder, red chili powder, and salt. Once the spice is roasted.
  5. Now add paste to the powdered leaves and mix it properly.
  1. Now add water to boiling it. After that add roasted rice paste and mix it right. Finally, cover the embroidery for five to seven minutes after adding curd. If the mixture is used then you can add more water to it. Your dish is ready. Serve it with bread and rice.

  3. Pinch small portions out of the mixture and shape them into balls. Carefully slide the all balls into the hot oil as many as they can fit the pan without overcrowding. Fry them on medium flame until they turn golden brown. Remove them with a slotted spoon and drain them on absorbent towels.
  4. Repeat this process with all the remaining balls.
  5.  Serve them hot with green coriander chutney or sauce and masala tea as per your choice.

How to make Aloo Gobhi Recipes

Aloo Gobi (cauliflower & potatoes) is a popular veg Indian dish in which we have cooked this vegetable with tomato, onion, and different raw spices. Quick Method for Aloo Gobhi Recipes for 04 people:

Ingredient:
• Total 02 cup vegetable oil
• 2 large onion, peeled and cut into small pieces
• 1 bunch fresh coriander leaves and roughly chopped
• 2 small green chili, chopped into small pieces (or one teaspoon chili powder)
• 2 medium cauliflower, leaves removed and cut evenly into eighths
• 3 large potatoes, peeled and cut.
• 4 (8 ounces) cans diced tomatoes
• 30 pieces of Cashews (Kaju) soaked in hot water for 20-30 min
• 3 tablespoon cream.
• 2 tablespoon deghi Mirch
• Some whole spices like Dalchini, Tej Patta, green cardamoms, cloves, Javitri
• fresh ginger, peeled and grated
• fresh garlic, chopped
• 1teaspoon cumin seed
• 2 teaspoons turmeric
• 1 teaspoon salt
• 2 teaspoons garam masala

  1. Firstly heat some water with salt for Gobhi and keep them immersed in the hot water for 15-20 mins. This is the get rid of the insects or worms.
  2. Then drain the gobhi and rinse once again with fresh water
  3. Drain and blend cashews a smooth paste with some water.

         Make Aloo Gobhi Masala

  1. Heat oil in a pan and add whole spice or whole gram masala listed as above sauté till they become fragrant
  2. Now add chopped onions and sauté till become golden
  3. Now add Ginger-garlic paste sauté till the raw aroma of the garlic-ginger goes away.
  4. Now add chopped tomato and sauté till become soft and pulpy it takes approx 5-7 minutes.
  5. Now add the cashew paste and all the spices powder one by one.
  6. Sauté all masala till fat coming from the sides of the masala paste it will take 8-10 minutes.
  7. Keep stirring often so that the masala does not stick to the pan.
  8. Now add fry Cauliflower and the potatoes stir well, pour some water and salt
  9. If the gravy (sauce) thickness too much then just add a few tablespoons of water and simmer for 2-3 minutes.
  10. Lastly, add the Garam masala powder Crushed Kasuri methi and cream
  11. Simmer aloo gobhi curry for half a minute without the lid. And garnish with fresh coriander leaves.
  12. Cream or butter sprinkled and dotted with a pinch of garam masala.
  13. Serve restaurant style  Aloo Gobhi  with roti, naan or phulkas  and jeera rice

  • 3 tsp Corn
  • 3-4 cubes ‏ Cheese fine Grated

Making Bread pizza on tawa recipe: Step by step method
  1. add all the veggies in a bowl (onions, capsicum the deseeded tomatoes, Corn and the olives)
  2. If you want you also add mushrooms,  paneer, etc whatever you want as per flavors.
  3. So first goes in some black pepper, then some chili flakes and its up to you how spicy as per your taste if you are making this for kids you can also skip adding the chili flakes.
  4. Mix all and let the spices and herbs get incorporated with all of these vegetables. Keep it aside and let’s work on the instant pizza sauce.
  5. The Schezwan Sauce add in a bowl, followed by the tomato sauce, salt, mixed herbs, Chilli flakes and some black pepper.
  6. Mix until everything is one with each other.
  7. Now apply this sauce on the bread slices cover every corner of the bread.
  8. Now add the veggies mix or you can even call it the pizza toppings on the same side of the bread. Let’s do that for all of our bread slices.
  9. Now add the grated cheese.
  10.  Now put everything together, for this take a thick bottom pan or nonstick Tawa.
  11. Now, Carefully, Very gently place this bread on the pan/tawa.
  12. cover the pan/tawa and Turn the flame on low, and let it cook for 2-3 minutes or until the bottom of the bread starts to brown.
  13. Make sure to check in intervals so that the bread doesn’t burn from the bottom. Once the cheese has melted remove carefully cut it in between and serve hot.

  • 1 pinch Eno Salt/ soda bicarbonate (whatever to be available in the kitchen)

  • 1 green chili, chopped fine
  • 2 Boiled Potato
  • ¼ cup chopped coriander leaves
  • Plain yogurt (curd or dahi): 1 cup,
  • Salt to taste

For Tadka/tempering

  • Oi-1tspl
  • Urad dal -1 Tsp
  • 1 teaspoon chana dal
  • Mustard seeds – ½ teaspoon
  • Curry leaves: 8 -10,
  • Water 1/2 cup
Quick & Easy Method:
  1. Mix sooji, Curd, and salt. Soak for 30 minutes.
  2. Now prepared tadka, heat little oil in a frying pan with medium heat. Add mustard seeds, chana dal, urad dal, and curry leaves. Then add boiled potato and green chillis saute for few seconds. Cool the slightly After adding rava batter to this mixture  Add the soda bicarb/Eno to the batter just before steaming.
  3. Now add water slowly to this mixture (if required) to make a thick smooth batter.
  4. Grease idli plates with oil, transfer the batter to idli stand and steam them for 10-15 minutes.

Serve hot and yummy idlis with coconut chutney and sambhar!!!

 Pahadi Gahat Dal ka Paratha ! awesome breakfast

My kids always waited for summer vacation in their Nani,s (Grandmother) house in Uttrakhand for a simple reason of getting mouth-watering breakfast of Gahat dal ka paratha with Makhan , Nani making this in the stove ( चूल्हा) with fresh Til ki chutney, Hmm awesome! This dish is a grace in Kumaon region of Uttarakhand. It is very filling and nutritious too.

Ingredients for Gahat dal Paratha
  • Horse gram (Gahat)- 1 cup
  • Wheat Floor ! cup
  • Garlic- 4-5 cloves
  • Ginger- 1 inch piece
  • Chillies-1-2 nos.
  • Salt- to taste
  • Dry mango powder or leman Juice 2 TSP (optional)
  • Cooriender leave (Chopped)
  • Wheat flour dough – to make parathas
Method to make Paratha-

Soak gahat ki daal overnight or for 4 to 5 hours.
Cook until the dal mixture is dry. Let it cool
Drain excess water
Grind the boiled pulses with garlic, ginger, chillies, and salt.
Make it thicker and add chopped coriander leaves and 1 tsp. of lime juice or dry mango power.
Prepare wheat dough separately and fill this mixture inside each ball to make fine parathas.

Serve parathas with chutney and fresh curd and makhan.
