Ginger and garlic cauliflower. I have made this as chicken and cauliflower and it’s surprisingly hard to tell the difference. It’s strict aip too! Not the rice though. Lol.

I don’t only eat shrimp I promise lol. Tonight is deer steak covered in onions and sauteed brussel sprouts. I used the droppings from the steak to cook the onions, I added a little bit of arrowroot flour and made a gravy. I flavored the steak with a steak seasoning that I found at BJ’s. It’s in a grinder and is all natural. Delicious!
Another thing I learned… I can have potatoes! But only a small amount. I made a coconut milk version of zuppa tuscana and it was delicious. The only problem is the potatoes. This is my only meal this week that can contain potatoes, otherwise I “go on a potato rampage” according to my husband. Lol. I think next time I might try sweet potatoes instead but I’m worried it will ruin the feel of the soup.

Well, I made it through the first day of school! Thank the Lord. Lol. Now I’m dealing with the quietness of the house, I’ll get used to it.
BTW, I can eat rice! Yay! I love rice! It’s quick, it’s filling, and it compliments almost anything. If you can’t have rice, cauliflower rice is a great alternative and I still make it sometimes. For this dinner though, I went with white rice boiled in chicken broth to go with this honey ginger shrimp.
First I want to apologize for my absence this summer. Life got a little crazy. As any parent knows, when the kids are off from school life gets 10 times busier. I have had barely any time to stop and think for far too long… Even on “vacation.” I’m still here, still on my journey and will write a blog post in the near future.
Second I would like to say that this dish here is absolutely amazing and I will definitely be posting the recipe very soon on the blog. Coconut shrimp with cauliflower rice… Aip style. So yummy!
