Yep. We’re turning up the nostalgia a bit and sharing some things from Disney World’s days of yore that we miss, or that have changed somehow that just doesn’t quite capture the magic the same way as it used to. But don’t worry! We’re ALSO sharing a few things that are better (or will be in the near future)! Lots and LOTS of changes are taking place at Disney’s Coronado Springs Resort! Though the current construction of a tower — which will bring 500 additional guest rooms and rooftop dining to the Resort — will deliver the biggest transformation, there are other subtle and not-so-subtle changes taking place, too.

One of those not-so-subtle changes is the addition of an on-the-water lounge, which guests will be able to visit by way of a series of bridges from various areas of the Resort. And now, this upcoming bar and grill has a name: Villa del Lago!

Villa del Lago will serve “cold drinks and light fare” in what appears will be a uniquely lovely setting. Look for this spot to seat 60 guests, while designated group areas will be able to seat 90 more. It will open alongside the 15-story tower in 2019!

Among those more subtle changes is the recent transformation of what was formerly Rix Lounge into Rix Sports Bar & Grill, which serves breakfast, lunch, and dinner to guests at Coronado Springs right now! Unicorns are everywhere at the Disney Parks these days, and there’s no better place to find them than atop a cupcake! Most recently we visited this sparkly beauty from the BoardWalk Bakery!

And before that we found them at Gasparilla Island Grill, where the unicorn trend met the rose gold trend in full Disney food trend fashion!

And now unicorns have landed at Disneyland Resort’s Jolly Holiday Bakery! Thanks to our forever Disney food friend Heather Sievers (@DiningInDisney!) we’ve got the details on this towering sugary beast!

The base of this cupcake is confetti cake — colorful and sweet and trend-worthy! The frosting? Holy mountain of rainbow buttercream, Batman!

Totally awesome for frosting lovers (like us!). The unicorn’s horn is crafted from chocolate, and the filling of the unicorn cupcake is mango — sweet and tart and fun for summer.

It’s not an over-abundance of mango filling, so you’re still getting plenty of that traditional confetti cake flavor, but with the super sweet frosting, the filling works!

Yup, unicorns are here to stay — at least in cupcake form. Until the next trend. Which is probably forthcoming in the next month of so.

The Monte Cristo Sandwich at Woody’s Lunchbox in Hollywood Studios’ Toy Story Land has become the first “blink and you miss it” item in this new Land. The Monte Cristo is no longer available on the Lunch/Dinner menu.

Initially we were excited to see this on the menu thinking about the signature must-have Monte Cristo in Disneyland’s Cafe Orleans. However, we found this did not measure up to the Disneyland sandwich as it was more a grilled sandwich with a side of raspberry jam.

We found the brioche bread on our sandwich kind of tasted and felt like old French Toast. It was weird and rubbery and just wasn’t working. And while this sandwich tasted OK, it definitely didn’t come close to Disneyland’s Monte Cristo; and it certainly was not the best thing on Woody’s menu.

The BBQ Brisket MeltGrilled Three-Cheese Sandwich (MY FAVORITE!), and Smoked Turkey, Tomato, and Lettuce on Multigrain Bread are still available and very tasty alternatives to the Monte Cristo.

As the 2018 Epcot Food & Wine Festival approaches (it kicks off on August 30th, my friends!), we are looking forward to all the noshes, specialty events, and even sounds of the Festival. With so much going on, it’s always fun to commemorate the occasion. So here’s a little peek at the upcoming Festival merchandise!

The popular Taste Your Way Around the World line is returning with its focus on kitchen products as well as apparel. But there are a few FUN changes! And now, we’re getting our first look at it for 2018! (I think I even spy a wine glass Christmas ornament above!)

Mickey will be featured on more than the adorable bowl above! It’s no secret we are fans of Disney’s Halloween treats, so naturally, we were excited to see some of our favorites on these ADORABLE moccasins!

Lamplight Lounge opened earlier this summer on Pixar Pier at Disney California Adventure and it’s serving up “California Gastro Pub” eats in a playful atmosphere!

The menu features small plates and entrees, and the Potato Skins are a fun twist on a standard bar-and-grill item.

The dish features Crispy Yukon Gold potatoes served with brown butter-caper yogurt, smoked paprika aioli, and Manchego cheese.

These would make a great addition to your next party menu!

Lamplight Lounge on Pixar Pier at Disney California Adventure

POTATOES
8 cups cold water
9 cloves garlic, peeled
2 shallots, peeled
2 sprigs fresh thyme
1 lemon, halved
1 tablespoon coarse salt
1 pound small gold potatoes (12 small potatoes)
1 cup cornstarch
1 teaspoon Spanish paprika
1 teaspoon ground cayenne

CAPER YOGURT
2 tablespoons butter
2 tablespoons capers, drained
1 (5.5 ounce) container plain Greek yogurt
1/2 lemon, zested and juiced
1 teaspoon coarse salt
Freshly ground black pepper, to taste

SMOKED PAPRIKA AÏOLI
3/4 cup mayonnaise
1 teaspoon smoked paprika
1/2 lemon, juiced and zested
2 teaspoons chopped chives
1 clove garlic, minced

POTATO SKINS
Canola oil, for frying
1/4 cup capers, drained
1/2 cup shredded Manchego cheese
Micro cilantro

FOR POTATOES
1. Combine water, garlic, shallot, thyme, lemon, salt, and potatoes in stock pot. Bring to a boil and simmer, covered, for 12-15 minutes, until potatoes are tender.
2. Drain potatoes and cool for 10 minutes.
3. Combine cornstarch, paprika, and cayenne in a small bowl. Set aside.
4. Smash potatoes gently between two baking sheets until they are in slightly flattened circles.
5. Line a baking sheet with parchment paper.
6. Roll smashed potatoes in cornstarch mix and coat on all sides. Place on parchment lined baking pan and freeze for at least 2 hours.

FOR CAPER YOGURT
1. Heat butter in small skillet over medium heat until melted. Add drained capers and cook for 5 minutes. Remove capers from butter and cool for 15 minutes.
2. Combine Greek yogurt, lemon zest, and juice, and salt in a small bowl. Add reserved capers. Season with pepper, to taste. Refrigerate until ready to serve.

FOR SMOKED PAPRIKA AÏOLI
1. Combine mayonnaise, smoked paprika, lemon juice and zest, chives, and garlic in a small bowl. Refrigerate until ready to serve.

FOR POTATO SKINS
1. Preheat oil in deep fryer to 350°F.
2. Drain capers and fry for 3-5 minutes, until crispy. Drain on paper towels.
3. Remove potatoes from freezer and fry for 3 minutes, until crispy.
4. Top potatoes with Manchego cheese, fried capers, and micro cilantro.
5. Serve with caper yogurt and paprika aïoli.

Makes 12.

Wine Bar George in Disney Springs just announced they are hosting a wine tasting with Master Sommelier George Miliotes this Friday, July 20, 2018!

The event is a blind tasting of six wines presenting an opportunity to learn to taste wine like a Master Sommelier! “What’s a blind tasting?” you may ask. The identities of the wines you taste will be kept a secret until the end of the tasting. This method is used regularly by sommeliers to insure impartiality while evaluating a wine.
