Nowadays more people are starting to live and eat healthy despite that white rice is a common staple in many Asia country.

In this post I would like to share how we incorporate different type of rice and grains in our daily diet. And to start off you might want to try mixing white rice with either assorted grains; brown, red or black rice then slowly decrease the white rice to suit your preference and body condition since fibers might not be easily digest.

Brown rice is a great option for diabetics and hyperglycemic individuals. It has a low glycemic index (GI) which is helpful in reducing insulin surges and assists in the stabilization of blood sugar levels in the body. Brown rice also helps maintain weight control for the people combating with obesity as well as prevention of neurodegenerative complications such as Alzheimer’s disease.

How To Cook Brown Rice
Brown rice takes longer cooking time and requires more water than the usual white rice because of its outer fiber coating. For one cup brown rice, you may use one and half to two cups of water plus prior soaking of 30 minutes to an hour to cut down cooking time.

Overall brown rice is a super grain packed with healthier components in terms of higher fibre, vitamin and mineral content compared to white rice. It also contains beneficial effects to most of the organs including heart, digestion, brain, bones, cholesterol and blood pressure. So perhaps you can start replacing 10 - 20% of your usual white rice with brown rice to helps reduce the risk of diabetes.

Red Rice is a special variety of rice that has 10 times the antioxidants of brown rice whereas on the other end a spoonful of Black Rice contains less sugar, more fiber and vitamin E antioxidants compared to blueberry.

There are a few brands of multigrain rice available in the supermarket and the above is from Hakubaku that come in either 12 or 16 grains packed in individual packet which you can add into your usual white rice and cooked together.

Some of the grains in it are barley, sprouted brown rice, black & red rice, auzki bean, black beans, quinoa and etc which add extra flavour, nutrition and fibre to your usual white rice.

Mixed Rice With Chestnut and Sweet Potato (yield 3-4 severing)
- 1 1/4 cup white rice + 2 tablespoons black rice
- 1 medium purple sweet potato + handful of roasted chestnut

Rinse rice twice then fill water level between the mark 1.5 and 2 then soak for at least 30 minutes to an hour. Before cooking top with purple sweet potato, roasted chestnut and a knot of pandan leave (optional).

Mixed Rice With Chestnut and Sweet Potato (yield 3-4 severing)
- 1 1/4 cup white rice + 1 tablespoon each of red and black rice
- 1 medium purple carrot, cut into 4 thick strips

Rinse rice twice then fill water level between the mark 1.5 and 2 then soak for at least 30 minutes to an hour. Before cooking top with purple carrot and a knot of pandan leave (optional).

Mixed Rice With Chestnut and Sweet Potato (yield 3-4 severing)
- 1 1/4 cup white rice + 2 tablespoons red rice
- 100g pumpkin, cubed

Rinse rice twice then fill water level between the mark 1.5 and 2 then soak for at least 30 minutes to an hour. Before cooking top with pumpkin cubes and a knot of pandan leave (optional).

Mixed Rice With Chestnut and Sweet Potato (yield 3-4 severing)
- 1 1/4 cup white rice + 2 tablespoons red rice
- handful of roasted chestnut

Rinse rice twice then fill water level between the mark 1.5 and 2 then soak for at least 30 minutes to an hour. Before cooking top roasted chestnut and a knot of pandan leave (optional).

Short Grain Rice With Chestnut and Sweetcorn (yield 3-4 severing)
- 1 1/2 cup short grain rice
- 1/2 sweetcorn (halved)  + handful of roasted chestnut

Rinse rice twice then fill water level between the mark 1.5 and 2 then soak for at least 30 minutes to an hour. Before cooking top with sweetcorn, roasted chestnut and a knot of pandan leave (optional).

Multigrain Rice With Purple Sweet Potato (yield 3-4 severing)
- 1 1/2 cup white rice + 1 packet of Hakubaku 16 grains
- 1 knot of pandan leaves

Rinse rice twice then fill water level between the mark 1.5 and 2 then soak for at least 30 minutes to an hour. Before cooking stir in multigrain, top with sweet potato (whole) and a knot of pandan leave (optional).

Cooking with mixed rice and grains can be fun if you are willing to make some changes in your diet. For example our childhood "Cabbage Rice" that cooked with cabbage, mushroom, pork and etc can also be improvised by using mixed rice

There are still many ways to make your mixed rice taste better such as replace water with soup broth when cooking the rice or top it with your favourite veggie such as orka (ladyfinger), mushroom or even add in some frozen mixed vegetables plus a spoonful of tomato base paste sauce to make tomato rice. After all cooking is about experimenting new food and just try to be adventure and innovative.

With power of 250W and capacity size of 3.5-quart, this gorgeous baby is retailing at SG$649 from all Mayer showrooms, TANGS, Harvey Norman and Taksashimaya Shopping Center B1. Although Mini might be on the low end of the Kitchenaid mixer power scale when compared to the 5-, 6- and 7-quart but it has enough capacity to mix up to 5 dozen cookies or even a loaf of bread.

I guess nowadays with space constraint in the modern kitchen plus increase of smaller household of 2 - 4 members, the shrinking in size might be the key reason behind a need for a smaller and light weight stand mixer to suit their needs and requirements.

Overall I am very satisfy with this new stand mixer when compared to my previous Artisan model which is heavier and quite difficult to whip up smaller quantity recipes.

Philips Avance Noodle Maker - HR2365/05
I often envy those friends who are able to make their own noodle/pasta that comes in various flavour such as carrot, spinach, pumpkin and etc. Now with my new Philips Avance Noodle Maker (飞利浦爱面机) which I received as a review set from Philips (Singapore); I so excited to create my own healthy homemade noodle/pasta with nutritious ingredients like egg, juice (vegetable/fruit) and/or herbs in just 10 minutes.

Here is a short clip of the Philips Avance Noodle Maker retailing at SG$329 that comes with a power of 200W and capacity size of 500 grams. With its user-friendly touch screen digital control panel, everyone at home including young kids can help up with the noodle making process with just a few touch on the buttons.

As you can see from the above, there are only 4 buttons on the control pan such as:-
- Power on/off button
- Extra extrusion button
- Bounciness control button
- Start/pause button

To begin the noodle making process:
1. Measure the flour and liquid for making either 1 (250g) or 2 (500g) portion of the noodles.

2. Press the power on/off button to switch on the noodle maker.

3. Remove the chamber lid and pour the flour into the chamber then close the lid properly.

4. The default kneading time on display is 5 minutes but you can press the bounciness control button to set the kneading time from 5 - 8 minutes for different type of noodles or your personal preference.

5. Press start/pause button to start processing (the appliance will beep once and the kneading indicator starts flashing).

6. Slowly pour in the liquid along the entire length of the slot on the left side of the chamber lid.

7. When the program finished, the noodles will come out from the shaping disc on the front panel and you can use the flat cleaning tool cut the noodles into desired length.

- After the noodle making is completed if you notice any leftover dough inside the chamber, you can press the extra-extruding follow by start/pause button for extra extrusion.

At the bottom of the appliance you can find this "smart storage drawer" where you can easily store the shaping discs and cleaning tools in it so in a way you won't tend to misplace them after using/washing.

The appliance comes with 4 default shaping discs for making Spaghetti, Penne, Angel Hair and Fettuccine. And by using different shaping disc together with your choice of flour plus extra ingredients like egg, herbs or juice (example: spinach, carrot, beetroot) you can easily make various type and flavour of noodle for the family in 10 minutes.

Measuring cups comes in handy to help you mix flour and water at right ratio without using a kitchen scale. Example: one full level cup of flour (scrap off any excessive flour from the cup edge with the flat cleaning tool) is approximately 250g.

For liquid measurement, please take note there are two sides of measuring lines (for making 1 or 2 cups of flour) on the cup such as liquid (water/juice) or egg + liquid for making egg noodle. So make sure you use the correct side of the measurement when making your preferred noodles.

Above are some example of flours that you can use to make your choice of noodles from plain, wholemeal to buckwheat with the help of the noodle maker.

After adding in flour and liquid into the mixing chamber, kneading and extruding process will finished in just 10 minutes after which you will get about 250g of fresh homemade noodle with 100% natural ingredients in it.

Cleaning the appliance before first and after every use is essential in order to keep it clean as well as removing the residues while making the noodle. By the way, don't worry about the leftover dough in the mixing chamber because they can be easily remove before washing.

To clean the noodle maker:
1. Press the power on/off button to turn off the noodle maker then and disconnect it from the power outlet.

2. Remove the chamber lid then loosen the front panel control knob to disassemble the front panel then follow by the shaping disc, shaping disc holder, mixing paddle and the mixing chamber in order.

3. Next use a dry cloth to clean flour residue in the hole, where the mixing paddle is placed.

*4. Clean the shaping disc with the supplied cleaning tool to remove dough residues stuck on it before cleaning it with water (refer to the cleaning process below).

- For better cleaning result, put the shaping disc into freezer for 2 hours or above, then use the cleaning tool to poke the dough in the holes out.

5. Clean and dry all detachable parts before assemble them back to the appliance.

*Besides the shaping discs, there are also two specially designed cleaning tool which match the shaping discs for Spaghetti and Fettuccine in order to make cleaning an easy one-push job.

Whereas the flat cleaning tool is use to cut the noodles away from the shaping discs or as a tool for cutting dumpling skin and lasagne sheet. As for metal pin on each end, it works as the same function as the pin shown above for removing the residues that stuck in the shaping discs (especially for angle hair and penne).

After cleaning the parts and accessories dry them thoroughly before assembling them back onto the appliance like what shown on the step-by-step photo above.

To assemble:
1. Push the mixing chamber into the appliance.

2. Position the mixing paddle to the hole in the main unit.

3. Attach the disc holder onto the front part (in line with the disc holder safety switch) of the appliance

4. Put the shaping disc onto the disc holder making sure it is firmly fixed.

5. Attach the front panel to the main unit and make sure the front panel knobs is fastened tightly.

6. Close the chamber lid properly.

Freshly made noodles can be store in the fridge for a few days (although eating them fresh will be great) by packing them separately for easy cooking on individual portion. But just take note to dust freshly made noodle with some flour to prevent strands from sticking when *storing in the fridge. Alternately dry noodles by hanging on noodle rack or stick in a dry place before storing.

* Note: Use air-tight container (instead of ziplock bag) to store packed noodles before putting them into the fridge.

Depending on individual preference and type of noodles; below is a guideline of the cooking time for noodles made using the Noodle Marker.
  • Thin noodles (angel hair) require about 4 - 5 minutes cooking time.
  • Thick noodles (spaghetti, fettuccine, udon) requires 6 - 8 minutes cooking time.

Besides the 20 tasty noodles/paste recipes included with the noodle makers there are still many interesting recipes which you can explore with this new appliance. Above is a quick demo on how to make spinach noodle (with angel hair / mee kia shaping disc) for my spinach wanton mee using Philips Avance Noodle Maker.

I also made a few other flavoured noodles like; [from left] Wholemeal Carrot Spaghetti, Lemon Scent Egg Noodle, Beetroot Carrot Fettuccine, Lemon Beetroot Penne and Spinach Angel Hair/Mee Kia to test out some recipes. (All coloured noodles are made using natural vegetables juice and no artificial colouring added)

Last month I was given a set of the BOSCH MaxxiMUM Kitchen Machine (MUMXL40G) by BOSCH Singapore to participate in their product review which I have attended their launched and hands-on session earlier this April (read more here). After much considerations, I decided to take up this offer because as a self-taught home baker who likes to explore new recipes I am sure this powerful kitchen machine will be a great helper to me.

This new kitchen machines comes in two different models such as MUMXL40G (RP: SG$1,699) and MUMXL20T (RP: SG$1,499). Furthermore the MaxxiMUM range comes with 1,600 watts featuring the professional silicon stirring whisk and a 3D PlanetaryMixing accessory which moves kneading hook and whisk in three directions simultaneously.

Here is a short Instagram clip on our new Bosch MaxxiMUM Kitchen Machine. For this MUMXL40G model it also comes with a continuous shredder that includes four discs such as Reversible shredding disc, Grating disc, Asiatic-vegetable disc and the Professional Supercut reversible disc to assist with chopping, dicing and shredding of ingredients for both Asian and Western delights. Beside the mentions, its 1.75 litres ThermoSafe blender also comes in handy while preparing any recipes from pasta sauce, hot soups to smoothies and juices.

1. Base Unit
- "Easy Armlift" or also known as the Multi-function arm (figure 2; mark 5) supports the simple and effortless operation of this Multi-function appliance.

  • 0/off = Stop
  • M = Instantaneous switching at maximum speed, hold switch for required blended duration.
  • Setting 1 - 7; operating speed with 1 = low/slow speed and 7 = high/fast speed.

- Drive Cover (figure 2; mark 1 and 2) is used to cover the various attached drive when they are not in used. To remove the drive cover, press on the front area to eject the cover and removed.

- Cord Store (figure 2; mark 3) enable the cord to store automatic with the cord winder.

    One of the features for MaxxiMUM Kitchen Machine is to enable easy cutting of cheese, fruits, vegetables and etc using the continuous-feed shredder that comes in 4 different cutting disc. The discs usually works with setting 5 - 7 depending on its purpose.

    • Professional Supercut reversible disc for slicing fruit and vegetables.
    • Shredding reversible disc for shredding vegetables, fruit and cheese.
    • Grating disc coarse for grating raw potatoes for pancake or dumplings.
    • Asiatic vegetable disc for slicing fruit and vegetables into fine strips for Asian dish.

  • citrus press; and

- Drive for tools:
  • Stirrer: use to stir dough and batter for sponge / mousse mixture as well as folding in beaten egg whites or cream.
  • Whisk: use for whisking egg whites, cream and light dough.

Important Notes Using The Whisk:
The whisk should almost touch the bottom of the mixing bowl to ensure that the ingredients are optimally mixed. For example if whisking 2 egg whites (minimum amount); the whisk should just touch the bottom of the mixing bowl whereas for large amount (8 - 12 whites) the whisk should position higher.

To adjust the height of the whisk:
  1. Remove mains plug.
  2. Press release button and move multi-function arm to position shown in "figure 3" (left).
  3. Insert the whisk into the drive until the whisk locks into position.

  4. Hold whisk in place and loosen nut clock-wise using enclosed key (on the base of the appliance)
  5. Set the whisk to the optimum height by rotating the whisk; turning clockwise to raise and anti-clockwise for lower.
  6. Press release button and move the machine to position shown in "figure 3" (right), check the height and proceed.

  • Kneading Hook: use for kneading heavy dough (approx 4kg) and folding in ingredients which are not to be cut like raisins and chocolate chips. Between in order to attach the kneading hook into the drive, first you need to insert the dough deflector (refer to the figure above) before the kneading hook.
  • Mincer: use to cut fresh meat for steak tartare or meat loaf.

To Operate The Blender
Cover all the unused drives then remove the diver cover for blender mark "1" shown right figure above, screwed the blender in the position mark "3" and turn all the way in an anti-clockwise direction to the right (towards the rotary switch). And the appliance cannot be switched on unless the Mincer and Adapter have been attached correctly.

  1. Only allow maximum 0.75 litres of hot or frothing liquid to be processed in the blender.
  2. Optimum processing amount of solid ingredients should be around 100 grams.
  3. Insert blender holder with seal into the blender jug, make sure the line is under the arrow.


With this new kitchen machine, I will be sharing 1 - 2 recipes each month introducing the functions and parts of the machine so that you could have an idea on how it work if you are planning to get one this coming festive season as gift or home use. Basically I would be featured all the tools included such as the beater, whisk, dough hook, blender and shredding disc which helps act a multi-function gadget in the pantry.

Philips Avance XL Airfryer
Every since I uploaded a video clip over at my Instagram (shown below) on my new kitchen gadget; the New Philips Avance XL Airfryer. I have been receiving comments and requests on sharing my reviews as well as related  recipes made using this gadget. And for myself who loves "to collect" kitchen gadgets that enables easy and healthy home cooking for the family, I am sure this new appliance will makes wonder in our kitchen.

Furthermore this new Philips Airfryer also comes in handy to replace my 12 years old Philips Oven Toaster which served us well over the years whipping up yummy dishes like baked chicken mid-joints/drumlets, baked rice, pizza and etc.

Here is a short video clip of the new Philips Avance XL Airfryer with a power of 2100W and capacity size of 3.0 litre (1200g) which is much bigger (400g more) than two previous two models. Plus with its digital touch screen control it also make cooking easier for everyone at home. Besides that it also has a new preset button which comes in this new model too.

Likewise for those who owned or intending to get a Philips Airfryer (depending on the models such as Avance XL (latest), Viva Digital and Viva), this handy gadget actually runs on an unique Rapid Air Technology that enables user to fry with air in order to make food crispy on the outside and yet remain tender on the inside (tested this with my homemade sweet potato fries and avocado fries). On top of that, user can also choose to add in little oil (or omit totally) to perfect the end result depending on their preference.

Above shows the Cooking Basket where food are place onto it to cook in the Airfryer. But in order to achieve best cooking result, food place on it must not exceed the MAX indication or the maximum amount shown on the table of the instruction menu included with the purchased.

Secondly with this digital touch screen menu it makes cooking easier when user need to increase or decrease the temperature or cooking time within a sensor touch. There is also a "preset" button beside the "start/stop" button on the left side that allows user to pre-program the cooking time and temperature of their favourite ingredients within a touch of the preset button.

And for safety purpose this appliance is also equipped with an automatic switch-off function.

For example: If you do not press a button within 30 minutes, the appliance switches off automatically and you have to press the power on/off button to switch it on again.

There is a cord storage compartment at the back of the appliance to keep the cord neat and tidy for storage purpose.

Cleaning the appliance after every use is essential (unless you are baking cake or cooking food in a ceramic bowl or aluminum case)  in order to remove oil from the bottom of the pan as well as dirt and grease form on the basket lines.

For Cleaning:
1. Let the appliance cool down before removing the basket and pan for washing.

2. Using a moist cloth, wipe the outside and inside of the appliance; remove any food residues on the heating element or on the sides of the interior.

3. Wash the basket and pan with dishwashing liquid and a non-abrasive sponge (the pan, baking tray and basket are dishwasher-proof too).

Before First Use:
1. Remove all packaging material such as foil form the control panel or any stickers label from the appliance.

2. Open the drawer by pulling at the handle to remove the basket by lifting the handle then follow by the pan by tilt it backwards off the rails.

3. Thoroughly clean the basket and pan with hot water and some dishwashing liquid and a non-abrasive sponge.

4. Next wipe the inside and outside of the appliance with a moist cloth before placing the pan in the drawer and basket in the pan.

Lastly for those who are keen in baking but without a proper convectional oven, you can try baking some simply bakes such as muffin, mini cake, loaf of bread (if you have a electric stand/hand mixer). For your information you can easily grab hold of these ceramic or disposal bakeware from Daiso or leading baking supply outlets to use in your Airfryer.


There are many recipes that a Philips Airfryer can do beside cooking / reheating common frozen food like fries, nuggets, chicken wings, pizza and etc which shown during their product demo at roadshows. But here in order to justify and review the availability of my new Airfryer I decided to try out a few recipes by baking a pound cake, air-fried sweet potato and avocado fries plus whipping a cafe style breakfast with croissant and cheesy baked egg which you could find the recipes links below.

Recently I saw these two new items; Gluten Flour Coconut Flour and Organic Coconut Oil from one of my grocery trip with mum and with much hesitate I decided to grab them back. These two ingredients are often being named in those organic or gluten free baking websites which I get to know from some of the related posts from Foodgawker and Pinterest.

Just to share Organic Extra Virgin Coconut Oil (EVCO) is known for it's anti-viral and its benefits include healthier skin and hair, lower cholesterol levels, weight loss, increased levels of immunity, proper digestion and etc. And there many ways which you could incorporate coconut oil in your daily life such as use it for cooking, baking, add it into your beverages (smoothie or fruit juice) or even apply it to your hair, face and skin.

Whereas on the other hand Coconut Flour is popular on shelf which is gluten free and low-carb baking as well as they are high is fiber too. On top of that, it also has a lovely coconut scent that add bonus to coconut fans. These flour is made from the flesh of mature coconuts after coconut oil has been extracted leaving only about 15% of the oil from the original coconut.

Coconut flour can replace up to 20% of the total flour in a recipe but the liquid used will need to be increased by 20% as well. And if the batter appears to be too runny, just let it settle for a few minutes to absorb the liquid before baking. Or alternatively you can also use it in cooking to replace all-purpose flour or cornflour mentioned in the recipes too.

- Organic Coconut Oil can be found at most FairPrice finest or Xtra (organic goods section). They comes in different sizes and with the smaller bottle (120ml) at S$6+ each.

- One of readers shared with us that purchase through online stores like www.iherb.com (they do provide shipped to Singapore at a flat rate of S$4 up to 6300g per shipping) is much cheaper when compared to the price which I bought from local supermarkets.
