Wintertime means cozying up to a piping hot bowl of soup to soothe the soul and warm the body. But winter is well behind us and the warmer weather is making us smile. We still love soup, but a hot bowl isn’t what we’re craving…we want something cool and refreshing.

That’s why chilled soup is so satisfying. You get all the flavor and goodness of a hot soup, but you won’t sweat while you’re slurping! Plus, making chilled soup is simple, especially when you use a blender and whip it up in a snap.

These three chilled soups are great for kids and adults alike, filling bellies with deliciousness spoonful by spoonful. Read below for the recipes – each makes two servings.

Chilled Creamy Chickpea

Chickpeas are high in protein and delicious. This soup is filling and flavorful, similar to hummus.

Ingredients:

¾ cup canned chickpeas (garbanzo beans) rinsed

½ cup heavy cream (or whole milk)

¼ cup vegetable stock

3 hard-boiled egg yolks

1 tablespoon dried parsley

Salt and pepper to taste

Incorporate everything well in the blender and place in the fridge to chill for a few hours. Serve up with warm pita bread or carrot and celery sticks and enjoy!

Roasted Red Pepper Puree

Roasted red peppers are complex in flavor, making this soup interesting to the palate. Makes for a great marinade too.

Ingredients:

2 large red peppers, sliced and roasted (you can get this pre-jarred if you don’t want to roast yourself)

¼ cup vegetable stock

¼ cup tomato juice (unsalted)

¼ cup plain Greek yogurt or sour cream

1 teaspoon paprika

Pinch of red chili flakes

Salt and pepper to taste

Blend all ingredients in blender, chill, and serve. Tastes great with grilled cheese sandwiches. Dunk away!

Sweet and Sour Spinach Soup

The balance of sweet and sour makes this spinach soup special. Serve with crunchy Chinese noodles for fun.

Ingredients:

1½ cups chopped cooked spinach (fresh or canned {drain})

¼ cup vegetable stock

¼ cup “Duck Sauce” (sweet and sour sauce – we like Dai Day)

1 tablespoon soy sauce (low sodium)

Black pepper to taste

Place everything in the blender and blend, allow to chill, and serve with noodles on the side for dipping or right on top for garnish.

When kids are “wired” or overtired, or perhaps in the throes of a tantrum or fit, calming them down and doing it quickly is on the mind of any parent seeking peace. Perhaps the kid’s not listening or paying attention or they’re running around when you want them to settle down. This is the perfect moment for a fast fix, getting them to calm down without a battle.

Parents know that it’s not always a breeze to get a child to go from full speed to slow motion. Even if they can get there, it usually takes a while. But when time is of the essence and calming the child down quickly is a necessity, here are some tips to try that may just do the trick.

Turn Off the Lights

Obviously, this tip is only doable at home, but isn’t that where we often need the kids to take a breather? The sudden change of ambiance will startle the child and get them to refocus for at least a moment as they try to get a grip on why the lights went out. You can take this time to huddle everyone together, get quiet, and perhaps even sit on the floor. With no bright lights to keep the kids going, they’ll calm down for the moment so you can say what you need to or ask them to do what you’d like them to do. After a couple of minutes, everyone is ready to move along, but this jolt will take them on a new path. Give it a try and see what happens in the dark!

Beverage Break

Kids always want some sort of snack or drink, but that doesn’t mean that every time they’re too wild we feed them. But a healthy beverage could be just the thing that gets them to reel it in and calm down for the time being. A warm cup of tea, a bit of milk, or something not too sugary are some good suggestions. But in order for the kids to get their special drink, they are required to slow down and sit down. After a few soothing sips, the kids will be a bit more relaxed and not as ready to get all riled up again. If you can get them to sit for a while, try reading a book or doing something that doesn’t require another round of energy.

PJs

Again, this one’s for home. When it’s approaching time for supper or sleep and the kids are still operating at full blast, it’s time to get them in their pajamas fast. First of all, they’ll need to stop running around in order to put them on. And once they’re all comfy cozy, you can suggest a new activity like reading, coloring, a bit of TV (if you allow some time each day for that), or something else that is low key. Once those PJs are on, the kids will fall into a different vibe, perhaps because they associate the clothing with down time.

Hey moms! Mother’s Day is just around the corner, and as a busy and dedicated parent, you deserve some “me time.” While one day per year to celebrate mom doesn’t even come close to what you’re worthy of, taking this day to give yourself a break is a gift you’ve earned.

You may have some presents coming your way, but what about a little pampering? A piece of jewelry or a bouquet of flowers are lovely gestures of gratitude, but you’re tired and could use some relaxation, right? While you won’t want to spend a lot for a little luxury, there are ways you can unwind without breaking the bank. This Mother’s Day, thank yourself for being such a great provider, role model, teacher, shoulder to cry on, and so much more. You do it all, so now it’s time to “do you.”

Foot Massage

You may go to the nail salon for mani-pedis every now and then, but you can go in just for a tension-relieving foot massage. Most places don’t charge much for this service, and as little as 15 minutes can make a world of difference. Sit back, close your eyes, and let the masseuse tenderize your toes, heal your heels, and soothe your soles.

A Decadent Dessert

Perhaps you’re watching your weight or just don’t indulge much, but this Mother’s Day, dig into something sweet and sinful. Go out and grab a slice of the richest chocolate cake you can find. Maybe cheesecake is your thing, so slowly savor every forkful. If ice cream puts you in a great mood, go to the nearest parlor that serves up your favorite sundae or banana split. Oh…and don’t bring the kids, at least not this time!

Sleep In

Send the kids for a sleepover at grandma’s or convince your spouse or partner to keep the kids quiet on Sunday morning so you can sleep in ‘till whenever you finally decide to start the day. If you’re extra lucky, someone will come to your bedside with breakfast when you’re ready for a bite. You can certainly use the rest and the refreshments.

Delish! What’s more wholesome and belly-filling than a piping hot bowl of oatmeal first thing in the morning? Indeed, oatmeal is healthful, hearty, and makes kids happy. They love to swirl in some milk and enjoy it by the spoonful. But what if a basic bowl of oats can be taken up a notch with mix-ins that make it even better than before? With some amazing additions, a plain bowl of oatmeal can be outrageous. Your kids already love it as is, so imagine how thrilled they’ll be when their bowls get a boost.

Here are three ways to add some “oomph” to oatmeal. Unique and unbelievable, these recipes will rev up the morning with mouthwatering excitement. Kids won’t ask for that sugar-laden cold breakfast cereal ever again when their oatmeal is taken to the max. Check out these easy-to-prep recipes and give breakfast the star treatment. (Each recipe is for one bowl of oatmeal).

Easy Cheesy Oatmeal

For kids who like something savory before school, cheese is always ready to please. This bowl of easy cheesy oatmeal is so tasty and tangy. And for cheese lovers, this dish makes for a great lunch or dinner too. Here’s how to make a bubbling bowl.

Ingredients:

1 pack of instant oatmeal (plain)

1/8 cup low-fat milk

¼ cup shredded cheddar cheese (use Swiss or another style if you prefer)

1 teaspoon dried parley

Salt and pepper to taste

Prepare oatmeal as directed and swirl in remaining ingredients. Serve hot. Top with some extra shreds of cheese for garnish. If you want to sneak in some veggies, cooked chopped broccoli tastes great with the cheddar.

PB & J Oatmeal

The classic sandwich now comes in oatmeal form. Kids will love the sweet flavor and fun idea. Here’s how to make a bowl of the classic with a twist.

Ingredients:

1 pack of instant cinnamon flavored oatmeal

1 tablespoon smooth peanut butter (you can substitute another nut or seed butter)

2 tablespoons grape or strawberry jam or jelly

1 tablespoon honey

1/8 cup low fat milk

Prepare oatmeal as directed and swirl in remaining ingredients. Top with crushed nuts and raisins if desired for texture. Serve up hot and watch ‘em eat it up!

“Banana Bread” Oatmeal

The comforting taste of banana bread is always a winner. Kids love the scent and savor the flavor. Bring the goodness of this old-fashioned recipe to your kid’s oatmeal bowl. Here’s how to make a bowl.

Ingredients:

1 package instant oatmeal (plain or cinnamon)

1 overripe banana – smashed

½ teaspoon ground cinnamon

¼ cup maple syrup (or pancake syrup)

1 tablespoon chopped pecans or walnuts

¼ cup vanilla yogurt (not Greek)

Prepare the oatmeal as directed and mix in the rest of the ingredients. Serve hot with sliced bananas on top for an extra serving of fruit. Kids will go bananas for it!

Your kids will be asking for oatmeal every morning. Take these ideas and whip up your own creative concoctions.

There are many ways kids can practice being “green.” It is smart to start teaching kids at a young age how they can be eco-friendly. Every person’s habits make a difference, and as a whole, we can protect the world we live in. Here are four fantastic books that have an eco-friendly theme, teaching kids why their actions have an impact.

The EARTH Book by Todd Parr

This book provides numerous examples of how we can protect the environment. The pictures are powerful and the tips are so timely. Plus, the book itself is printed with recycled materials.

Why Should I Recycle? by Jen Green

Recycling is a must-do these days, with so much waste destroying the planet. This book is a no-brainer when it comes to explaining the importance of recycling to children.

We Planted a Tree by Diane Muldrow

Two families from different sides of the world plant trees to embrace the Earth and provide cleaner air. Kids will be intrigued by this book’s message and become interested in planting a tree as well, to do their part in protecting the environment.

10 Things I Can Do to Help My World by Melanie Walsh

When kids want lots of options to choose from, this book gives them the perfect 10. There are plenty of things we can do to make a dent, so start with one and do all 10!

Alas! Spring is in full bloom. The weather is warming up and the winter coats get put away for another season. As the sun shines in the clear blue sky and flowers reveal their vibrant colors, we realize how much we’ve missed this miraculous time of year.

While there are thousands of reasons spring is spectacular, here are three which especially stand out.

Outdoor Play

Sure, kids love building snowmen and sledding, but before long it’s time to come inside to warm up. Too much time outdoors and those little hands, noses, and feet are near freezing. But springtime means the outdoor fun can last for hours, where kids can run around and be active. Those first few warm days have kids forgetting about video games and TV shows as they can’t wait to play with wild abandon.

Picnics in the Park

Warmer weather lends itself to dining outside under a shady tree. Pack up some sandwiches and other simple snacks and a midday meal is served. The temperature is just right for comfort – not too hot and not too cold. Even after school snacks can be enjoyed on the front steps watching the passersby.

Evening Walks

The sun sets later in the evening come spring, allowing families to take post-supper strolls through the neighborhood. This is a great bonding experience where parents and kids can catch up and connect. It’s also a nice way to slip in some exercise, something that’s important for everybody.

Kids love wraps for lunch for their versatility and deliciousness. And parents like to prepare them because they’re so quick and easy. So, why not take this lunchtime favorite and bring the goodness to breakfast? Wraps can be wholesome, filling, and fun, making “the most important meal of the day” one to wake up looking forward to. Here are two variations kids will love, whether they eat them at the kitchen table or on the go. Each recipe is for one wrap.

Cheesy Egg Twist

Eggs are a great source of protein, and what kid doesn’t love cheese? Mix ‘em up in a wrap and breakfast is served. Here’s a tasty recipe you can make in minutes.

Ingredients:

1 whole wheat (or plain) 10 inch tortilla

1 egg

¼ cup shredded cheese of choice

1 teaspoon chopped dried parsley

1 tablespoon butter

Salt and pepper to taste

Scramble the egg with the cheese in a heated pan with melted butter. Toss in parsley and season with salt and pepper. Once cooked, place the egg scramble in the middle of the tortilla and roll up like a burrito. For a toasty tortilla, slice in half and place back inside the pan until each side is golden brown. Serve with ketchup for dipping if desired.

Honey Banana Mash

For kids with a sweet tooth, the combo of honey and bananas will hit the spot. Energizing and delicious, this wrap is sure to be a first-thing-in-the-morning favorite.

Ingredients:

1 plain 10 inch tortilla

2 tablespoons honey

1 medium super-ripe banana

½ teaspoon cinnamon

1 teaspoon brown sugar

Mash the banana with the other ingredients in a bowl. Spoon onto the tortilla across the center and roll up. Slice down the middle or cut into 1-inch “pinwheels.”

Note: You may use maple syrup, agave syrup, or jam in place of honey.

Parents hope their children will grow up to be confident individuals. High self-esteem and a sense of self-worth is something little ones need to embrace from early on, so their confidence can build over time.

Some kids are born with their chins held high and the feeling that they can conquer the world. Others need direction, guidance, and support to teach them their value. No matter your child’s personality, they have potential. Confidence is the key to doing well in all sorts of situations from social relationships to schoolwork. As they get older and enter adulthood, this confidence will drive them in their careers, family life, and in their personal endeavors.

Here are the 4 “Rs” to raising confident children. When kids have their parents to show them the ropes, their confidence will climb!

Relax

A high-strung parent only makes their child anxious. While it’s only natural to worry about our kids, parents would benefit from taking a deep breath and backing off. There’s no need to breathe down your child’s neck in terms of schoolwork, sports, etc. Your child will feel more confident if you let them know how much you trust their decisions and dedication. This doesn’t mean you should be completely hands-off, but when you chill out, your child will feel the shift. They’ll be inclined to achieve because they want to, not because you want them to.

Reinforce

Many parents tend to focus in on what their kids do wrong rather than commend them on their accomplishments. We all make mistakes, so let it go and focus your energy on the good stuff. Kids won’t gain confidence by being put down or reminded of their failures. Confidence comes from learning from those missteps to make it to the next level. So, reinforce the positive things your child does, including how they’ve successfully overcome obstacles.

Rally behind

Be your child’s greatest cheerleader. No matter their interests or talents, when a parent is in their corner, a child feels more confident in their choices and capabilities. Your preconceived “plan” for your child may not be what they choose to do. That in itself is a sign of confidence. Now it’s your chance to rally behind your child and boost their spirits even further.

Remind

Even the most confident child can have their moments of doubt or insecurity. This is when a parent’s perspective can turn the situation into something positive. Remind your child of how far they’ve come and how much more there is to achieve. Talk about when they first picked up a tennis racket or a paint brush and how much better they are now. Show them test scores that went from Cs and Ds to As and Bs. When something goes south, kids can quickly forget how great they were before. A reminder from you will get them back on track and more confident than ever.
