With it being the middle of January already, just enough time has passed since our trip to Miami over the holidays for me to be dreaming of sunny beaches. I really think the sand and sun is a therapy for my soul.  It gives me an energy boost mentally and physically.

A little time in a new location does wonders for my creativity and positivity. It also gives me a chance to eat out at so many wonderful restaurants and get some new ideas for recipes to re-create at home. As you can imagine in Miami they do a great job tossing together fabulous, beautiful and delicious salads.

When you are running around in shorts and a swimsuit all day a salad makes for the perfect lunch. One salad that I ordered at the restaurant pool was an Arugula salad topped with dried cranberries, grilled chicken and this creamy Avocado Lime Cilantro dressing.

I loved the salad so much that I went back several more times and ordered it again.

When I got home I wanted to recreate that salad, but when you are looking to make a salad at home, you want it to be a quick and easy throw together kind of thing.

And marinating and grilling up chicken breasts, though I love to do, is not a quick and easy kind of thing. BUT, thanks to Tyson® Fully Cooked Grilled Refrigerated Chicken products, you can have delicious grilled chicken in minutes.

This dressing is so creamy and flavorful, it goes perfect with salad and grilled chicken. I threw the ingredients in my smoothie blender (a full blender works) and after a minute blending, you get a healthy, good for you, great flavor dressing.  If you blend and the dressing is too thick for your liking, just add a tablespoon more of water and blend again.

Of course Brutus the ever curious Doberman puppy couldn’t help taking a sniff of what I was doing when I was plating up everything. He kept his chin there supervising through the whole photo shoot.

Avocado Lime Cilantro Dressing

A creamy good for you ready in minutes dressing.

  • 2 cups Arugula
  • 1 tbsp dried cranberries
  • 4 strips Tyson® Fully Cooked Refrigerated Chicken
  • 1 avocado (peeled and pitted)
  • 1 teaspoon garlic (minced)
  • pinch salt
  • pinch black pepper
  • 2 limes (juiced)
  • 1 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro leaves
  • 2 tbsp water
  1. Cook your Tyson® Fully Cooked Refrigerated Chicken according to the package instructions.
  1. Toss Arugula in a bowl, top with cranberries and Tyson® Fully Cooked Refrigerated Chicken. Drizzle dressing over top. 

  1. Put all the ingredients together in your blender and blend until smooth and creamy.  If too thick add 1 tablespoon of water at a time blending until comes to the consistency that suits you. Serve immediately or store covered in refrigerator for up to 2 days.

The days are shorter, but the weather has been magical here in Cincinnati! I have been walking the dogs, running and even got in some kayaking in last week.

Kroger has introduced some new recipes to their Prep+Pared line and they continue to be delicious and easy to prepare.

I recently tried their Athena’s Lemon Chicken Saute that took minutes to prepare and made a delicious and light dinner.

We are back into the swing of back to school, and the relaxing long days of summer are fading in our rearview mirror.  With our days busier than ever and become shorter by the minute making a healthy dinner for our family is tough.

With the decline of the American home cooked meal I think all of us feel like there is a need for options to help make dinnertime possible on a limited time schedule.

Kroger has made it easier for all of us! With their Prep+Pared designed to deliver the ingredients necessary to prepare a meal for two in about 20 minutes.

Several months ago Kroger introduced prepared meal kits Prep+Pared.  The meal kits offered several different meal options with fresh ingredients that were already prepped and ready to cook.

They just introduced several new recipes to give us even more delicious healthy options to feed our families and ourselves.

Each box comes with all the ingredients you need, already prepared for you, minus a few pantry staples like olive oil, salt and pepper.

There is a list of kitchen tools you will need, such as skillet, bowls, cutting board, etc.  There is very little clean up, and the instructions are clear and precise so no need to worry if you are new to cooking.

Next time you are at your local Kroger store pick up one of their easy and convenient Prep+Pared meals: chicken, pork, fish or vegetarian. There is always a choice that suits you and yours!

Athena's Lemon Chicken Saute

Mediterranean recipe with Chickpea salad and Tzatziki sauce

  • 2 Lemons
  • 1/4 cup Red Wine Vinegar
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp garlic, minced
  • 8 ounce Chicken breast, diced
  • 1 small Cucumber
  • 1/2 cup Cherry Tomatoes
  • 1 cup Chickpeas, cooked
  • 1/4 cup Red bell pepper, diced
  • 1/4 cup onion, diced
  • 1 tbsp parsley, minced
  • 1 5.3 oz. Non-Fat Greek Yogurt
  • 3 stems fresh dill
  • 1/4 cup Feta Cheese, crumbled
  1. Cut one lemon in half. Divide garlic into thirds and set 2/3 aside for later use.

  2. In a medium bowl, whisk together juice from lemon, red wine vinegar, cumin, 1/2 of the oregano, 1/3 of the garlic, and salt and pepper to taste.

  3. Add chicken to bowl, and toss to coat. Heat 1 teaspoon olive oil in skillet over medium high heat and add chicken, reserving marinade.

  4. Cook chicken until browned on all sides about 3-5 minutes. Reduce heat to medium and pour reserved marinade into skillet and heat until warm, turning chicken to coat. 

  5. While chicken is cooking, chop cucumber into 1/4 inch pieces. 

  6. Toss tomatoes, chickpeas, red peppers, onions, parsley and 1/2 of the chopped cucumbers together in a medium bowl. 

  7. Cut the other lemon in half and juice 1/2 in a medium bowl, add 1/3 of the reserved garlic, remaining oregano, salt and pepper to taste and 2 tablespoons of olive oil. Mix and pour over tomato mixture. Toss to coat.

  8. In a small bowl mix yogurt, dill, remaining cucumbers and garlic, and juice from remaining 1/2 of lemon. Add salt and pepper to taste. Stir to blend. Set aside. 

  9. Divide between two plates 1/2 of the tomato mixture,1/2 of the chicken, and top with 1/2 the feta cheese.  Serve with tzatziki sauce

I don’t know about you but I am a girl who needs a little sweetness after something salty. I know it probably is habitual at this point, but man-o-man first thing I think about after a salty meal is chocolate. Yes, chocolate!

Coconut oil comes in two forms: unrefined and refined. Both types are mainly made up of a medium-chain fatty acid called lauric acid. Both refined and unrefined coconut oil contain the same amount of this beneficial fatty-acid. Unrefined coconut oil, however, is richer in phytonutrients than refined coconut oil. It also lends more of a coconut flavor, so when using in baking remember this.  That is why unrefined coconut oil works so well in this recipe.

I used Spectrum Organic Virgin Coconut Oil in this recipe because it is unrefined and great for baking up all your treats

As well as all the other wonderful things you can use coconut oil for… makeup remover, moisturizer, teeth cleaner. I could go on and on. I use the stuff A LOT!

You can find Spectrum Organic Virgin Coconut Oil as well as all the fabulous Hain Celestial brands at your local Kroger grocery store.

No Bake Peanut Butter Chocolate Coconut Bars

  • 1 cup smooth natural peanut butter
  • 1/2 cup honey
  • 1/2 cup unrefined coconut oil
  • 1 1/4 cup dark chocolate chips
  • 2 cups rolled oats (not instant) I used gluten free
  • 1 cup shredded unsweetened coconut
  • 1/4 cup chopped pecan pieces
  • 1 teaspoon vanilla extract
  1. In a large glass bowl add peanut butter, honey and unrefined coconut oil.

  2. Microwave on high for 2 minutes

  3. Add in chocolate chips stirring until melted

  4. Add oats, coconut, and pecans

  5. Pour into a parchment lined 9 x 9″ baking pan or glass pan.

  6. Stick into refrigerator for 3 hours or until chocolate is set. You can speed this up by placing in freezer.

  7. Cut into squares. Keep refrigerated for up to a week.
