I’m probably not the only one who can’t believe that fall 2018 is already here! It’s amazing how time flies so quickly. Even though I’ll always love summer the most, this year I’m especially excited about fall. Our baby will arrive during this season and I have never looked forward to anything more. I do love the change of seasons though, because it’s just that- a change. When the weather starts to change, no matter what season, I love cooking with seasonal flavors. The obvious flavor this season: PUMPKIN! I fell in love with the popular fall flavor a few years ago after making my first homemade batch of pumpkin bread. Then I learn all about the nutrients found in pumpkin and I’ve been hooked ever since.  It’s so versatile and can be used in a variety of dishes from savory to sweet and to me, it’s a real winner! This week we returned home from the most wonderful vacation. Wiley and I took our last trip with just the two of us, before sweet baby Jay arrives, and it was perfect. We knew we wanted to be at the beach where we could just relax and enjoy each other and that is exactly what we did! Since moving to Nashville, we have learned where the closest beaches are and 30a along the gulf coast is the quickest trip. We hopped in the car and headed down to Seaside Beach. We have stayed up and down 30a over the past couple of years but this was our first time staying in Seaside and I must say, it was a treat! We were steps away from the beach, spent our days staring at the water and our nights just walking around talking about life. Seaside is a small town along 30a (if you’re not familiar that’s just the main road that runs along the beach) that is full of beautiful beach houses, local restaurants and some of the most charming side walks you’ve ever stepped foot on. By now, you probably know that I am passionate about taking care of my body from the inside out. It is so important to know that health is not achieved just by eating the right food and doing the right exercises. When we take care of our bodies in every way possible we, in turn, are healthier. This is especially true when it comes to skincare. I grew up using the traditional pharmacy products that most people use to care for their skin and never thought anything of it. When I started learning about living a healthy lifestyle, I learned that not only did our food contain toxic ingredients, but so did our household products (i.e. lotions, soaps, spray cleaners, etc.). So I dove a little deeper to figure out what I could put on my skin to make it healthier. Because after all, our skin is our largest organ meaning it absorbs the most of what we put in or on it! Do you feel like the summer has just flown by so far? I do my best to soak up each day but I feel like it was just May and now August is almost here! We have busy with all things work, house and baby prep but it’s all so wonderful. I haven’t had as much time to focus on preparing recipes, which isn’t my favorite because most times, I would rather be in the kitchen than doing anything else. We have made some great progress on the house renovations so hopefully soon we will be starting on the KITCHEN! I can not wait! I’ve been cooking in the 1960’s kitchen and will be so thrilled to have a space that represents me and I feel great in. In the meantime, I’ve been making quick summer recipes that are filled with farmer’s market produce. I have been thinking about salads a lot recently so this week I was inspired to make this Barley and Arugula Salad which turned out to be so good.
