As part of our biodynamic practice, we will be spraying Bio Prep 500 and 501 at appropriate times of the year. We are now spraying Bio Prep 500!
What is Bio Prep 500?
Bio Prep 500 starts with placing cattle manure into a cattle horn in the fall and burying it under the soil. It remains buried over the winter, allowing earth worms and bacteria to do what it does best: cleaning the manure. By springtime, the manure has been transformed into fresh dirt, with no smell at all!
We dig it up in the spring, dilute it with rain water, and stir it by hand, alternating clockwise and counter clockwise, creating a vortex for 30 seconds each time. The goal is to create chaos and then calm.
We then spray it onto the soil, improving the soil health throughout the season. Our schedule suggests that we spray 8 times per season, following the biodynamic calendar for optimal results, including factors like when it’s a descending moon, and the time of day: late afternoon, when the earth is most receptive.

At Adamo Estate Winery, we are practicing biodynamics as part of our approach to viticulture and we will be increasing these practices as the vineyard grows. What is biodynamics? Here’s a little history…
Biodynamics is an approach to agriculture created by Rudolf Steiner in the beginning of the 20th century, essentially focusing on the moon, the cosmos and astrological and their effect on agricultural farming. Steiner’s approach has grown since its conception, as far as the invention of biodynamic calendars providing astronomical schedules for optimal planting, cultivating, harvesting (and much more).
As Shauna, our Winemaker says, “you can taste the energy in biodynamic wines.” Try them for yourselves and see!

Spring has officially arrived, so this is the time of year when we are looking at the vines and preparing for the season to come…
How have our vines fared through the winter? Well, with an unseasonably cold late fall and early winter, we saw -26° temps four times in December alone. However, despite those cold temps, through the practice of burying our vines and the use of thermal blankets, our vines stay nice and cozy throughout our cold winters.
Why bury? Or why blankets? Because of the cold temperatures we experience, burying the vines means that they are buried under the soil and are insulated by the soil and snow, picking up the ambient temperature from the soil. This has worked amazingly well for us in the past!
As an alternative, we have also invested in blankets for the vines, which is another way to insulate the vines, but without disturbing the soil. So as we continue to increase the number of blankets we use, we will bury less and less vines, lessening the stress that’s created when we disturb the soil for burying.

Pétillant Naturel (commonly referred to as Pet Nat) is an ancient form of sparkling wine.
How is it made? Our 2017 Pet Nat features Pinot Blanc grapes, and our process was as follows: pressing the grapes, followed by cold settling, then racking in a stainless steel tank. We used wild fermentation and once the fermentation was almost finished, we racked the wine a second time and then we bottled. The remaining sugar is what created the alcohol, carbon dioxide and the bubbles in the bottle. Because the fermentation is completed within the bottle, sediment (lees) falls to the bottom of the bottle.
