These slow cooker lentil and quinoa tacos are a super low effort dinner that’s also healthy, full of flavour, and endlessly customisable!

I need to use my slow cooker more often! It made these lentil and quinoa tacos an absolute doddle to prepare. Just cook the tasty filling in the Crock-Pot, then wrap it up in some tortillas or taco shells, pile them up with your favourite toppings, and you’ve got yourself an easy, healthy, delicious dinner.

If you’re not overly familiar with lentils (or even if you are!), I urge you to try this creamy roasted carrot dal. It’s a great introduction to cooking with lentils – super easy, super cheap, and most importantly, unbelievably delicious! Breaded mushrooms are one of those things that I always order if I spot them on the menu in a restaurant – especially if they’re served with plenty of garlic mayo for dipping. Juicy roasted mushrooms in a crunchy, crispy coating – who could resist?!

I made this simple homemade version in my Tefal Actifry. These easy Bombay potatoes are a simple and healthy side dish with tons of flavour – perfect to serve alongside your favourite Indian curry!

I don’t share side dishes here too often, but that’s mostly just because I’m often pretty boring with them – plain rice, salad, garlic bread, roasted veggies… I rarely get creative, and usually put my efforts into the main part of my meal instead. But I do think side dishes deserve to get a bit more love every now and then, and these easy Bombay potatoes are just the thing! I don’t make veggie burgers too often. I always think of them as being a bit of a faff, to be honest – so when I decided to make these cheesy lentil burgers, I knew my aim would be to make them as straightforward and easy to make as I possibly could, while still being completely delicious – and I succeeded! These lentil burgers were thoroughly, thoroughly enjoyable.

The day I made them, we ate them for lunch and again for dinner, and didn’t mind one bit.

A super simple vegetarian dinner in just 15 minutes! This halloumi piccata is an irresistible mixture of lemon, butter and capers, served over salty halloumi cheese.

Apologies for the third halloumi recipe in as many weeks! I seem to be going through a halloumi phase at the moment. It’s lasted about 10 years so far. No more halloumi until at least next week, I promise.

I just couldn’t wait to share this halloumi piccata recipe. If you’re a fan of garlic, butter, and cheese, you will love this easy 15 minute dinner.
