HMF (Hydroxy methyl furfural) is a naturally occurring substance in honey, and its levels can increase when honey is heated during processing or stored at high temperatures for extended periods. Ayurveda and modern science both suggest that heating honey can have negative impacts on its nutritional and medicinal properties. High HMF levels in heated honey are considered undesirable because they may indicate the degradation of sugars and other components, potentially leading to reduced quality and possible health concerns. Even freshly harvested honey will have HMF content however these levels ..read more

At Honey & Spice, all our honeys undergo pollen analysis under a microscope before bottling.  Pollen analysis is a process done to identify the pollen content in Honey. The bees collect pollen and nectar from flowers to make honey. The type of pollen present in the honey tells a lot about the honey.  Real honey has uniform density of pollen while fake honey has non-uniform or very low pollen count.  Here's a video explaining the difference between real honey and fake honey under a microscope.  When we sell you Lychee honey or Jamun honey, it's certified to contain high ..read more

We get asked this question a lot from our regular customers and new customers alike. The answer is Honey & Spice does test every batch of its honey in a German lab (Intertek) to ensure every batch of our Honey is 100% pure and natural like we claim it to be.  What do we test it for?  Our Honey is tested for any form of adulteration with corn syrups or rice syrups which are the two commonly used adulterants.  Here's a recent test report of Honey & Spice from Intertek in which you can see our Honey has been certified to be free of both these adulterants.  ..read more
