One-Pan Ginger Chicken & Rice

Whenever I see a recipe that starts with “one pan”, I’m IN. Sold. No need to say more. The less dishes, the better. And this meal has hardly any dishes at all PLUS it tastes hella good. And if you’re gonna have your life together enough to actually make a recipe, it better be hella good. I hope you enjoy it as much as I did! This year, cold and flu season hit me hard. I mean, hit-by-a-bus then smacked-in-the-face kind of hard. As soon as I would think I was getting better, I would have a few days of ease where I felt like I was 25 again, then BOOM, another bus. Bus after bus, short and long ..read more

Potato Leek Soup

This classic recipe never lets me down. It’s the creamiest soup you’ll ever eat and it’s easy enough to make when you’re short on time on a weeknight. When I was going through a big French food kick, I really didn’t get good at cooking any French food…except Potato Leek soup. And that’s because it’s incredibly easy to make and pretty hard to mess up. Which is very helpful when you’re juggling a baby who suddenly has become a toddler and is trying to climb onto the kitchen table to instantly WWE dive off of it. When I was new to baby life, I read the book ‘Bringing up Bébé’ and ‘French Kids E ..read more

Fiber is so important in our diet. Not only does it aid in digestion, regulate blood sugar and appetite, and reduce inflammation, but it may reduce risk of colon cancer while also ridding the body of excess hormones and cholesterol. The more fiber you can get into your diet, the better! It’s also very important if you are prioritizing your protein intake to ensure things are moving through your digestive tract. A great goal is to get 25-35 grams of fiber per day. Here are my top 8 foods to eat regularly to help you ensure you’re getting adequate fiber in every day. And I’m linking 5 of my favo ..read more

Tomato & Burrata Salad

It’s salad season biiiiish! I said last week that I’m feeling like it’s time for a salad series and I wasn’t lying. I made this tomato salad recipe last week when I had some random leeks, tomatoes, and burrata around. It has a slight kick to it with some delicious chili onion crunch and a bit of tart from vinegar. It’s the perfect easy side dish since it takes around 15 minutes to make and most of that time is the leeks cooking and you doing close to nothing. Sometimes cooking is a labor of love, but usually not in the summer. We got things to do this summer and they don’t include an oven or o ..read more

“Hello darling, my old friend. I’ve come to talk with you again.” Maybe that’s not exactly how the Disturbed lyrics go, but darkness just didn’t feel right in this scenario. I mean, look how bright this noodle salad looks. But a hello did feel right. I’ve been spending most of my time on my podcast, on my fitness app, and on instagram stories. I’ve had a baby for 10 months now and I still feel like I’m getting my footing. I want to do a million things, but only have time for a handful. It’s a hard balancing act that so many people seem to navigate…except me. I’ll get there. I believe it. But u ..read more

Got another week of meals coming your way! I am VERY excited for pasta night this week because the pasta dish I found sounds incredible. I’m very into cooking with lemon rind lately. I had no idea how much I had been missing out on amazing flavor by only ever using lemon juice or lemon zest. The whole lemon is a must! I also had lomo saltado at a restaurant over the weekend and it was so good, and reminded me that I have a recipe from years ago that needs to make an appearance at our table again. I hope these meals inspire you and get you cooking something new this week! Chicken Night Main ..read more

Eat Your Veggies – Miso Eggplant

Eggplant used to CREEP ME OUT. It’s slimy, it’s weirdly undercooked and inedible if you don’t cook it long enough, and there aren’t a ton of ways that I know of to make it super tasty. Eggplant parmesan…good. Babaganoush…good. Eggplant anything else…unsure. Until I had miso eggplant from a local sushi spot. We went there with friends and she said she wanted to order it. I felt unsure of that choice, but since I trust my friend, I also trusted her menu choices. And holy balls – miso eggplant is SO GOOD. At the restaurant, they deep fry it so it’s even more delicious, but this way is incredible ..read more

In case you missed it, I’m starting a new series on my blog that is all based around the recipes I make for us at home. This is a meal that I cooked in the evening for the fam, photographed as quickly as possible, all so I could eat a hot meal with our daughter before it got cold. This is quite different than how I normally make recipes. I normally make them in the day time and eat them at night when they are cold, soggy, and all freshness has been lost. But not with this series. This isn’t about the right photo or the perfect flavor combinations – it’s simply about what I enjoy making and eat ..read more
