For the “Sichuan dukkah,” you crush toasted coriander seeds and Sichuan peppercorns in a mortar, then crush in some roasted cashews and finally sesame seeds and salt. Fat bias (and its detriment to the health of 2/3 of the population) in medicine is well researched and published about at this point. There’s also a lot of published research about how “fat” people actually can’t lose weight as easily because of biological issues that prevent it, not because they can’t control themselves.
