I am always on the hunt for soup and chili recipes for a few reasons:
They are easy to make.
There are always leftovers that make for easy lunches and dinners during our busy week.
They are loaded with healthy ingredients.
After making some modifications, I think I have mastered my backyard chili recipe!
Ingredients
2 (28 oz) cans diced tomatoes with juice
1 (6 oz) can tomato paste
1 large yellow onion chopped
1 red bell pepper seeded and chopped
1 head of cauliflower

It is easy to overthink your meals, but it isn’t that serious. LOL. As you get better at cooking and knowing the flavors you enjoy, you can whip up anything with what you have! I loved this Mexican veggie bowl that was inspired by some leftover quinoa and refried beans.
INGREDIENTS:
1 cup cooked quinoa
1 head of cauliflower
10 small potatoes cut in half
1 can of refried beans
Taco bell hot sauce ( you can find at your grocery store in the salsa section.)
Salad ingredients of your choice. I used lettuce, avocado, and cheddar cheese.

There is no need to overthink breakfast! This is the world’s easiest breakfast burrito that I would say is perfect when you are “on the go.” But, maybe that isn’t as necessary right now. :) Either way, we love it and so does our three year-old!
INGREDIENTS:
Tortila
Eggs
Cheddar cheese
Taco Bell hot sauce (You can buy at the grocery story in the salsa section.)

Garlic powder, salt & pepper

This taco salad recipe is my JAM! The best part is you can roll over these ingredients into other recipes like enchiladas, nachos, or tostadas! Yum! Here is what you need:
INGREDIENTS:
1 pack of Trader Joe’s Beefless Beef
1/2 yellow onion, chopped
1/2 red onion, chopped
8 small bell peppers, chopped
1/2 packet of Taco seasoning
1/4 cup veggie broth
1 can refried beans
Lettuce, chopped
Any toppings like guacamole, sour cream, salsa, cheese etc.
I like to add some black bean chips from Trader Joes too!
