I am always on the hunt for soup and chili recipes for a few reasons: They are easy to make. There are always leftovers that make for easy lunches and dinners during our busy week. It is easy to overthink your meals, but it isn’t that serious. LOL. As you get better at cooking and knowing the flavors you enjoy, you can whip up anything with what you have! I loved this Mexican veggie bowl that was inspired by some leftover quinoa and refried beans. This taco salad recipe is my JAM! The best part is you can roll over these ingredients into other recipes like enchiladas, nachos, or tostadas!
