Here's a fruity, festive treat to keep you cosy over Christmas. Ingredients 4 juicy, sweet plums 30g raspberries 120mls dark rum (or apple juice) 1.5 tsp vanilla paste 100mls fresh cream 1 tsp mixed spice 4 tbsp pistachios 4-6 cardamom seeds 1 small orange Slice Plums, soak in 120 mls of dark rum, 1 tsp vanilla paste, 1 tsp mixed spice and leave soaking for 30 minutes. Roughly chop 4 tbsp pistachio nuts and leave to one side. My mum is a huge choc ice/ice cream sandwich fan and she especially loves Icebergers, so I created my own version made using only healthy, natural ingredients. These are truly scrumptious and are the perfect texture of both gooeyness & crunchyness. Aside from tasting incredible these are a great healthy treat in every sense of the word. They’re a mix of with protein, fibre, healthy fats and also contain magnesium rich cacao. I’m not one for adding syrups because they can still spike blood sugar levels. Gooey gorgeousness right here with these chocolate caramel rice puff squares. The base has a little crunch and the centre is a delicious, soft caramel topped off with chocolate. This is a stunning yoghurt cake that can be made vegan & keto all while being refined sugar free & gluten-free too... and did I mention it’s healthy & divinely tasty. If you’re keto you could swap dates for your preferred sweetener and if you’re vegan swap out yogurt for a vegan alternative. I’ve used coconut whipping cream in the past, it works well.
