‘Wonder’ Chicken.  A Chinese specialty from my favorite restaurant growing up.  Recreated for you and me, in a tummy-friendly, gluten-free, and low-FODMAP version! Blender oats make flourless oat-baked treats easy! I love using my blender for oat bakes, a technique that has been incorporated into personal sized recipes, tray bakes and muffins. I just took a trip to South Florida with my college student daughter.   She lives in a smaller town for school, and is a vegetarian that is addicted to pasta dishes. Her latest passion is ‘pasta alla vodka’.  We ate Italian for 3 nights so she could get this at every dinnertime, since she ‘can’t get it back home’.  Rich, creamy and so flavorful, I couldn’t help but sample.  However, all the onions in the dish certainly kept me from eating much. This is my EASY low-FODMAP Chicken Baked Ziti Casserole.  I can make this meal without a recipe, it is so simple.  You can prep in a Dutch Oven, or transfer to a casserole dish for baking. I call it ‘baked ziti’, but GF penne is usually easier to source.  Feel free to substitute, if you don’t have ziti. A classic.  Low-FODMAP Carrot Spice Muffins.  Top them with low-FODMAP glaze, or just enjoy them plain.  So good, moist, and packed with flavor.
